glutenvrije teffkruidnootjes – gluten-free teff kruidnoten (GF-DFoption-SFoption)

Het is weer tijd voor kruidnoten, ook al liggen de winkels al sinds september vol met deze traditionele Sinterklaaszoetigheid. Voor mij begint het pas nu.
Het lekkere van deze kruidnoten is het teffmeel, dit geeft echt een extra smaakdimensie. Je kunt ze met iedere ander glutenvrij meel maken, boekweit vind ik ook erg lekker, maar teff en speculaaskruiden is voor elkaar gemaakt lijkt het wel. Probeer het zelf eens zou ik zeggen!


Teffkruidnoten

75 g zachte boter of kokosolie
50 g sucanat of 50 g bruine rijststroop
snuf zout
125 g bruine teffmeel
5 g wijnsteenzuur bakpoeder
5 g speculaaskruiden
1 tl water (zo nodig)

Meng de boter, suiker of rijststroop en het zout met een lepel goed door elkaar in een ruime kom.
Meng in een andere kom teffmeel, bakpoeder en speculaaskruiden en voeg dit toe aan het botermengsel. Roer eerst goed en kneed dan met koele hand tot een soepel deeg. Verpak in huishoudfolie en laat, het liefst 1 nacht maar zeker enkele uren, rusten zodat de smaak zich kan ontwikkelen in de koelkast of op een andere koele plek.

Verwarm dan de oven voor op 170 ˚C.
Bekleed een bakplaat met bakpapier.
Kneed het deeg licht door en vorm dan kleine balletjes die je op de bakplaat legt en nog even een duwtje geeft, zodat ze iets platter worden.
Bak de kruidnoten 15 minuten in de oven. Laat ze niet te bruin worden, zeker niet als je ze maakt met rijststroop, dan worden ze bitter!


What are kruidnoten?
Some of you might be aquainted with the Dutch tradition of Sinterklaas or St. Nicolaas; it has nothing to do with Santa-Claus, maybe Santa has his roots in Sinterklaas, but I am not an expert and will not argue about that.
Sinterklaas is a children’s tradition and on the 5th of December the anniversary of St. Nicolas is celebrated with small (it used to be small) presents and a lot of sugary sweets like pepernoten, kruidnoten, speculaas, suikergoed and borstplaat. Nowadays it is more like a big commercial thing, like Christmas, and it’s all about the gifts and not specially for children.
Anyway, the kruidnoten or you could call them mini gingerbread drops, are a real nice treat in winter because of the spices, and the tradition of course;-)

I made these with brown teff flour, because the teff gives them a real extra taste, I think.

Gluten-free kruidnoten/ mini gingerbread drops

75 g room temperature butter or soft coconut oil
50 g sucanat or 50 g brown rice syrup
pinch of salt
125 g brown teff flour
5 g tartaric acid baking powder
5 g speculaas/gingerbread spices
1 tsp water (if too dry)

In a large bowl mix butter, sucanat or rice syrup and a pinch of salt together with a spoon.
In a second bowl mix the teff flour, baking powder and spices and add to the butter mix. Spoon everything together and then, with a cool hand knead into a supple dough. Pack in cling film and let it rest on a cool spot or in the fridge for at least some hours, but preferably 1 night, to develop maximum taste.

Pre-heat the oven on 170 ˚C.
Dress a baking tray with a sheet of baking paper.
Knead the dough lightly and roll tiny balls that you put on the baking tray; give them a thumb, so they flatten a little.
Bake the kruidnoten in the warm oven for about 15 minutes, not too brown, especially when you use rice syrup, they tend to get bitter then! So delicious with some hot tea or a hot chocolate.

Dat is nu net wat ik van 't weekend wou maken; ik neem dan meestal een gewoon recept van kruidnoten en pas die zelf aan zodat ik glutenvrij recept heb. Ja, wij kunnen niet gewoon in winkel kopen, voor ons begint het inderdaad pas als we zelf maken!
