Zoet-zure pompoen pickle – sweet and sour pumpkin pickle (GF-DF-V)

1 butternut pompoen, ± 500 g schoongemaakt
1 rood uitje, fijngesnipperd
1 flinke teen knoflook, zeer fijn gesneden
5 cm gemberwortel, geschild
1 el rietsuiker
1-2 tl sambal oelek
1 tl geelwortel of kurkuma
½ tl fenegriekzaad
½ tl nigellazaad
2 el mangochutney (ik gebruik Patak´s)
1 handje verse koriander
zout

Eet warm of koud.

After the pumpkin party at my community garden I am quite busy to wrap things up before I go to travel to Thailand and Vietnam very soon. I look forward to it so much; I am going to visit friends in both countries and am curious about the food in Vietnam, which will be my first visit. I hope to gather loads of inspiration, cook with my friends there or maybe do a cooking workshop.

So I am going to be a bit short today, wanting to let you know Carola wrote a great review about my book here, but it is in Dutch. I am so happy people are enthusiast about the book!

Today I want to share with you a great side dish totally inspired by James Martin´s recipe on the BBC, using the sambal ulek I shared with you some weeks ago. And some links to inspire you for the coming time when I am busy travelling!

You need:
1 butternut pumpkin, about 500 g cleaned
1 small red onion, finely chopped
1 fat clove of garlic, very finely chopped
5 cm fresh ginger root, peeled
1 tbsp cane sugar
1-2 tsp sambal ulek
1 tsp turmeric
½ tsp fenugreek seeds
½ tsp nigella seeds
2 tbsp mango chutney (I use Patak´s)
1 big handful of fresh coriander
Salt

How to:
First clean the pumpkin, cutting it in half, deseeding it with a spoon, peeling and cutting into small cubes. Till you have 2x2 handfuls, if that makes any sense.

In a deep frying pan fry onion and garlic in some olive oil, add the cubed butternut and fry on moderate high heat. It must fry. Stir-fry all the way and after some minutes grate the ginger above the pan and add the cane sugar.
Stir well and add sambal ulek, turmeric, fenugreek- and nigella seeds, stir.
Add a bit of water when it tends to stuck to the bottom or just dries too much. Stir-fry till the pumpkin is al dente. Then add the mango chutney and fresh coriander, stir well.

Taste and season with a bit of salt when necessary.

Eat with a piece of grilled fish, or with a simple dal and rice or with some old cheese and a piece of flat bread. It is nice to eat warm and cold. Keep in the fridge when cooled down.

See you in december!!

Patatas guisadas con pimientas verdes – stewed potatoes with green peppers – gestoofde aardappels met groene paprika (GF-DF-SF-V)

Stewing your potatoes in this Spanish way is a very tasty way to eat this very versatile and I think underestimated vegetable. Potatoes are a rich source of fibers, vitamine B and C, potassium and phosphorus. It is low in calories and protein, there is no phytic acid, no gluten and cholesterol in them and they are easily digested by most people.

It’s the slow-cooking that brings out the full flavour of the ingredients. Next day it will even be better!
In this dish I used my last peppers from the garden, they were still green and give this a special, bitter flavour. You can use red pepper too, this will give a more sweet taste. Or both!

You’ll need:
3 tbsp olive oil
1 onion, chopped
1 ½ green pepper
1 very ripe tomato, or use one from a can
750 g potatoes, peeled and cut lengthwise in 8
1 clove of garlic, chopped roughly
1 nora pepper (optional), deseeded
1-2 branches of parsley, chopped up whole
Pinch of saffron threads
½ tsp sea salt

Heat the olive oil in a heavy casserole and fry the onion with a pinch of salt slowly for about 5 minutes.
In the meantime clean the pepper and cut in big chunks and the tomato in 8. Wash and peel the potatoes and cut lengthwise in 8 pieces.

In a mortar pound garlic, parsley, saffron, salt and the optional torn-up nora pepper roughly and add 2 tablepoons of warm water. Mix and set aside.

When the onions have a nice golden colour add peppers and tomato and stir well and let this mixture fry for another 8 minutes.
Add potatoes and the garlic mixture, stir well for 1 minute and then so much (boiling) water that the potatoes are just under. Bring to the boil and let the potatoes simmer on low heat till they are cooked, this will take about 20 minutes. The liquid will reduce a little.
Taste and add salt and pepper to your own needs.

Je hebt nodig:
3 el olijfolie
1 ui, gesnipperd
1 ½ groene paprika
1 teen knoflook, grofgehakt
1 nora peper (optie), zaad eruit
1-2 takjes peterselie, gehakt
Plukje saffraandraadjes
½ tl zeezout

Pumpkin pickles – pompoenpickles (GF-DF-V)

Another pickle!
Pickling, I like the word; it reminds me of picking fruits from trees or plants, but also refers to the sensation when you put a piece of pickle in your mouth: salt, sweet, bitter, tangy. It is all about the Umphhfff!!

In South-India you always get a little bit of home-made pickle as a side dish, to stimulate digestion. They don’t bother to peel or slice their pickles neatly, no way, often you bite in half a lime or a piece of unidentifiable bark; it is always a surprise. Sometimes it’s so hot your eyes start to cry by only the faintest whiff of the smell and the other time you ask for more because of the accomplished taste, so good with the rice and veggies on your coconut leave plate.
Indian people are always very happy when you ask for pickles, a lot of visitors don’t like it, so when they don’t give it to you in the first place: ask for pickles! You make friends forever.

Everywhere you come, people have some ingredients drying outside in the sun, leaves, bark or peppers and limes, mixed with salt and spices. Next year I am going to learn to make some.

After making you curious about Indian pickling, I today give you a very Dutch pickle:
I adapted the recipe from Yvette van Bovens’ great book Home Made.

Pumpkin pickles (1 big pot)

150 ml white wine vinegar
250 ml water
2 tbsp cane sugar(you can leave it out)
6 cloves
1 piece of mace
1 cinnamon stick
6 cardamom pods, crushed
1-2 red chillies
400g pumpkin, peeled, sliced in strips or  cubes

Bring all ingredients, except the pumpkin, to the boil and let it softly simmer for 10 minutes.
Then add the pumpkin and cook together for another 8 minutes. They will stay crisp!
Sterilize a big glass pot and pour or scoop the pumpkin in with all the lovely juices. Screw the lid on and place it upside down to cool completely.
Keep in the fridge for at least 3 days, the flavours will develop in this time.

You can eat the pickles on a sandwich, in a salad, with some French cheese, with polenta etc.

After opening always use a clean fork to get them out and the pickles will be good for at least 2 weeks, when they last that long;-)

Pompoenpickles (1 grote pot)

150 ml witte wijnazijn
250 ml water
2 el rietsuiker (kan ook zonder)
6 kruidnagels
1 stukje foelie
1 kaneelstokje
1-2 rode pepers

acar ketimun - atjar ketimoen - cucumber pickle(GF-DF-V)

I am in an experimenting mood, in my mind that is;  although I cook every day, I am mainly thinking about, rethinking, rereading, planning, organizing, writing, rewriting my recipes. Putting things together in a blogpost is the last thing I think about.
It is not the time that is lacking, or the drive. It's the time of year, I am in winter modus, the time for evaluating: What is ok, what is not, what do I want to share and what not, what is healthy and why do i care, etc.
Maybe it's a case of writers'block, maybe it's just the springtime I am waiting for, the renewal of the senses, of nature awakening, of fresh smells and new greens, the sprouting of the young leaves the awakening of creativity again. Sigh! Maybe!

That's why I am putting a lot of things in pots, not only literally; like pickles or seeds to sprout, what happens inside? I am experimenting with a bread from My New Roots; I am making pickles to boost my digestion, I made a turmeric paste to make golden milk with home made almond milk, as well  to stimulate and ease my belly.

Last week I made this easy cucumber pickle, it's a classic from the Indonesian kitchen.

Atjar/acar ketimoen is cucumber pickle, easy to make, easy to keep and really refreshing and tinglingly acid when you eat it. As a side  with a rice dish, in a sushi roll or on a sandwich.

Atjar ketimoen

1 cucumber
2dl vinegar
pinch of salt
1 tsp gula djawa or palm sugar
3 cm piece of fresh ginger, finely cut
6 peppercorns
2 coves of garlic, fine

Wash and halve the cucumber lengthwise.
You can deseed the cucumber so you get this nice half moon shapes, but I don’t bother I like the seeds too. Cut the halves in small slices. Put them in a bowl and set aside.

Cook the vinegar with the rest of the ingredients for some minutes, than strain through a sieve and let it cool. Add to the cucumber and leave it in the fridge for at least an hour before serving. You can also put everything in a sterilized pot with lid. Keep in the fridge for at least 2 weeks!

Atjar ketimoen

1 komkommer
2 dl azijn
 1tl gula djawa of rietsuiker
3 cm stuk verse gember, fijngesneden
6 peperkorrels
2 knoflooktenen

Blijft zeker 2 weken goed!

Komkommer banaan raita – cucumber banana raita (GF-SF)

This Indian salad is a delicious side dish with a hot vegetable curry or a simple dal with rice.
I eat it with my favorite khichadi. The nice thing about khichadi is that you can fill it with all kinds of veggies that you have left in your fridge, a carrot, a piece of cabbage, a potato, some green beans or peas, a stick of celery. When you make it with brown basmati rice, it’s a very healing dish for your belly. I eat it quiet often.

When you don’t eat dairy products you can leave out the yoghurt. The only thing that changes is the name: it will be kachumbar ;-)

Cucumber banana raita (2 pers)

1 ripe banana, in small dice
1 quart of cucumber, in small dice
1-2 tsp lemon juice
2-4 tbsp organic full fat yoghurt
2 tbsp raw peanuts, baked in some coconut oil, then roughly chopped
2 tbsp grated coconut
salt and pepper to taste
1-2 fresh green peppers, to your own taste, finely chopped
handful of fresh coriander, chopped
1 tbsp freshly ground golden flax seeds

Mix everything together, taste and add whatever is necessary. Let the tastes infuse for at least half an hour. So easy, so good!

Komkommer-banaan raita (2 pers)

1 rijpe banaan, in blokjes
1 kwart komkommer, in blokjes
1-2 tl citroensap
handje verse koriander gehakt
