Roasted cauliflower salad with millet and spring flowers dressed in a simple salsa verde (GF-DF-SF-V)


As promised here is the I-love-millet-salad I showed yesterday.

Now I have a small plot in the community garden in my neighbourhood, I can pick edible flowers every day. Pick them and eat them or just look at them and enjoy the multitude of colours and forms. Johan, the gardener, knows everything about flora: plants, flowers and vegetables. He is such a dear man, always interested, always helpful, always cheerful. Must be the green job he does for over 25 years ;-)

He loves the garden and his veggies, but he doesn’t like cooking at all, can you imagine? When he gave me some chard-babies he told me he never ate them himself. So I promised him to cook them for him once they are ready. I like to give something back to him.

Ok. Before we go into the kitchen I want to share with you this site. Check it out. I met Renate this weekend on the Zaaimarkt (Sow and Grow market) in Rotterdam, where she sold her hand-made gluten free Goodies with a sharp twist. They were so good, incredible!!



The millet salad recipe:

WE’ll need:

1 cauliflower, rinsed and in small florets
Some good olive oil
Salt and pepper

Pre-heat the oven on 200 °C and prepare a baking tray with a sheet of baking paper.
Mix the ingredients and bake in the oven till golden brown and almost tender, about 20-30 minutes.

In the meantime prepare the millet:
Cook ½ cup of rinsed millet in 1 cup of water with a pinch of salt, softly with the lid on till all water is evaporated. This will take 10-12 minutes. Take of the heat and let it rest with the lid on; this will help the millet steam a little further. Make the millet loose with a fork.
Set aside.

Make the salsa verde:
I had a big bunch of freshly picked cilantro and half the amount of flat parsley; cut it roughly and put it in a small processor. Add a small clove of garlic, cut roughly too, some salt and freshly ground pepper, the juice of half a lemon and about the same amount of good olive oil. Blend this into a smooth or a bit chunky sauce. Taste and add seasoning to your liking. Set aside.

Composing the salad:

In a big salad bowl mix together the millet and cauliflower and mix in salsa verde, as much as you like, from 2 to 6 tablespoons. Carefully add and mix in edible flowers and petals. I used borage flowers, tiny thyme flowers, calendula petals and the lila flower petals of chives. I added some toasted chopped walnuts too, for a bit of crunch.


This salad is very versatile, you could add some olives, spring onions, roasted bell peppers, you name it, check your fridge! Enjoy!


Geroosterde bloemkool salade met gierst en lentebloemen met een simpele salsa verde

Dit recept is simpel te maken, maar bestaat uit 3 verschillende onderdelen. We beginnen met het roosteren van de bloemkool:

Verwarm de oven voor op 200°C en leg een stuk bakpapier op een bakplaat.
Was en verdeel de bloemkool in kleine roosjes en besprenkel met wat olijfolie en peper en zout.
Bak in de oven tot bijna gaar en mooi goudbruin, dit duurt ongeveer 20-30 minuten.

Ondertussen koken we de gierst. 
1/2 cup gierst wassen en met 1 cup water opzetten en met een deksel erop zachtjes gaar koken. Ongeveer 10-12 minuten. Zet het vuur uit en laat gewoon staan, de gierst stoomt nog een beetje door. Voor het gebruik met een vork losroeren.

Voor de salsa verde heb ik een flinke bos koriander geplukt en de helft van deze hoeveelheid peterselie. Was beide blaadjes en stengels, snijd grof en stop ze in een kleine foodprocessor. Voeg een klein teentje, grofgehakte knoflook toe, wat zout en versgemalen peper, het sap van een halve citroen en dezelfde hoeveelheid goede olijfolie. Maal tot een enigszins grove maar mooie saus.

De salade samenstellen:

Meng gierst en bloemkool in een grote kom en voeg 2 tot 6 eetlepels salsa verde toe, zoveel als je lekker vindt.
voeg dan eetbare bloemen en bloemblaadjes toe, ik gebruikte komkommerkruidbloempjes, thijmbloemetjes, blaadjes van bieslookbloem en goudsbloem. Schep voorzichtig door elkaar.
Ook mengde ik nog wat geroosterde en gehakte walnoot door de salade.

Maar je kunt van alles toevoegen aan deze salade: olijven, lente ui en geroosterde paprika's, wat je nog in je koeling hebt!!

I love millet – salad (GF-DF-SF-V)


I was planning to give you a thorough description of my thoughts about millet and why I love it so much instead of quinoa, but hey, what was I thinking?

Doing the same as so many foodies, nutritionists and health-seekers? Singling out 1 particular food item and declaring it a superfood, without which you cannot be sane/healthy? Seeking out the best fitting scientific proof for my statements and leaving out the ill-fitting ones? Going with the vibe, created by the food industry?

No! I just love to eat millet; it’s a gluten-free grain which corresponds very well with my intestines, which quinoa does not. It makes my tummy ache and I dislike the taste, especially the taste of the flour. Besides, I love to eat more locally grown, read very local to European, products, so, literally quinoa is very far away from me.

Ok. One thing I believe is that I do not need a grain which is so rich in protein etc., because I don’t live on high altitude and I am not a poor farmer, labouring very hard on the fields every day, needing a (it used to be) cheap protein to live on.

Back to millet then.

I like the versatility of the grain; It’s super-easy to cook, you can make sweet and savoury dishes with it and the mild taste goes very well with all kinds of different flavours.

How to use it:

*Just cook it like rice; 1 cup of millet and 2 cups of water, bring to the boil, with or without a pinch of salt. Lid on, softly, about 20 minutes. Make it loose with a fork. Let it cool for use in salads or just eat as side dish of rice.

* When you want a more creamy millet, add ½ cup more water and maybe a cup of vegetables like carrots or cauliflower. When it’s cooked, mash it and you’ll have a wonderful creamy vegetable millet mash. Or use Sarah’s super recipe for creamy millet mash.

* For a bit more nutty flavour, first toast the millet in a cast-iron skillet for a few minutes till you smell it, stirring continuously. Then cook it like described above.

* grind the millet and use the flour in whatever you’re baking. Make a mixture with some other gluten-free flours like buckwheat or rice flour. Here is a Pinterest link to loads of lovely millet cookies!

Spring greens soup – Lente groentjes soep (GF-DF-SF-V)



Oh, how I love springtime!
The young, fresh, lush colours of greens are sprouting everywhere when I walk outside, in the park, on my balcony, and even on the streets where in every tiny spot between tiles there is something green growing.

I wanted to go out this morning to pick some fresh nettles and wild garlic, but didn’t make it in time. Instead I went to my local multiculti market over the bridge where I bought this very mustardy fresh rucola and watercress. In the Turkish community there is a lot of spring greens grown in communal gardens and sold there. I love it. Soon they’ll have sorrel too.



All these fresh greens have something special, the rocket is very pungent, the sorrel will be very sour and the watercress is a bit nutty and peppery. Very good for the intestinal spring cleaning! Detox by eating.

You can make really good green smoothies with them, but for me it’s still a little too cold for that, so I made this tasty spring greens soup, yummie!


Spring greens soup (4-6pers)

1 onion, chopped medium
1 clove of garlic
3 tbsp Arborio rice
1 small cup of leeks, sliced thin and washed thorough
1 celery stalk, in tiny cubes
1 l vegetable stock or water
1 big bunch of rocket, 150 g
1 big bunch of watercress, 125 g
Squeeze of lemon
Pepper and salt

In a soup pan warm some olive oil and sweat the onion about 20 minutes till it begins to caramelize. Stir once or twice.

Add finely chopped garlic and the Arborio rice and stir in. Let it cook together for 5 more minutes, stir.
Add celery and leeks, stir in too and after another 5 minutes add vegetable stock or water and bring to the boil. Let it simmer for 20 minutes with the lid on.

In the meantime wash and cut your greens roughly. Add to the pot and let it wilt in another 2-3 minutes. Remove from the gas and puree the soup. I leave mine quite rustic.
Taste and add a squeeze of lemon juice and pepper and salt to taste.

Enjoy your spring greens soup, pure as it is.


Lente groentjes soep (4-6 pers)

1 ui, medium gehakt
1 teen knoflook, fijngehakt
3 el arborio rijst
Handvol prei, in ringetjes, goed gewassen
1 stengel bleekselderij, fijngehakt
1 l groentebouillon of water
1 grote bos waterkers, 125 g
1 grote bos rucola, 150 g
Kneep citroensap
Peper en zout, naar smaak

Verwarm wat olijfolie in een soeppan en zweet daarin de ui, zeker 20 minuten, totdat de ui begint te karameliseren, terwijl je af en toe roert. De karamelisatie geeft een heerlijke smaak aan de soep.

Voeg dan de knoflook toe en de rijst, roer af en toe en laat 5 minuten heel zacht meebakken.
Voeg dan prei en bleekselder toe en roer alles goed door elkaar, nog eens 5 minuten.
Voeg dan bouillon of water toe en breng aan de kook. Zet het vuur dan laag en laat met het deksel erop de soep nog 20 minuten sudderen.

Ondertussen was je de lentegroentjes en hak ze grof.
Voeg aan de soep toe en laat in 2-3 minuten slinken.

Van het vuur af en pureer de soep met een staafmixer of blender. Ik laat hem lekker een beetje rustiek.
Proef en voeg naar smaak wat citroensap toe en eventueel nog wat peper en zout.


Geniet van deze heerlijke groene lentesoep, puur zoals-ie is!!

Beetroot 3 ways: soup, salad and spread – Rode biet op 3 manieren: soep, salad en spread (GF-SF-DF-V)





I am going to start a small vegetable garden!! JAY!!
There is an old community garden in my neighborhood, since 1932,  where they grow vegetables and flowers with school children and do all kinds of educational activities.
There is also a patch of ground for, what they used to call the elderly people in the community, to activate them, etc.  This policy changed a bit, and so I was offered a patch of land, ready to go, of 35 m². I am planning now, what to grow, how to do it, etc. I am really exited; it’s a long time ago that I had a real garden. I am thinking of growing heirloom carrots, kale, Brussels sprouts, sugar snaps, chard, sweet potato, summer squash, French beans, peppers and beets and herbs and celeriac and so on.
There is so much to choose from. So if you have any suggestions, please let me know!!

I hope you like beetroot! I love it, my son hates it.
Beets are very easy to keep in winter, so every now and then I find beets in my organic vegetable box.

For me beetroot is grounding and soothing, very versatile and the color always brightens me up. And beetroot is full of nutrients: potassium, magnesium and iron as well as vitamins A, B6 and C and folic acid. Beets also contain carbohydrates, protein, powerful antioxidants and soluble fiber.

I suggest 3 tasty, quick and easy recipes for you: a soup, a salad and a spread.

Cook your organic beets in a pan filled with just water, wash the beets first, don’t slice off  top or bottom. Bring to the boil and let it simmer with the lid on till they are done; this can take from 30 to 60 minutes, depending of the size, how old they are, the type. A winter beet takes time. You can do it in the evening and let them cool till next morning. Then slice off top and bottom and rub off the skin. Now your beets are ready to use.


Beetroot soup (2-3 pers)

2 big cooked red beets, peeled and cut in big chunks
1 onion, chopped
1 clove of garlic, chopped finely
1 carrot, chopped in small cubes
1 stalk of celery, finely chopped
1-2 tbsp of good olive oil
1 bay leaf
½ l of vegetable broth

Sweat the onion and garlic with a pinch of salt softly in the olive oil for 5 minutes.
Then add the carrot and celery and let it simmer for 5 minutes more.
Add the beetroot, bay leaf and the vegetable broth and bring it to the boil. Let it cook for about 20 minutes, remove the bay leaf and blender your soup.
Taste and add some salt and pepper.
You can leave out the salt and in your cup you can add a teaspoon of miso!
Some chives are nice, a scoop of crème fraîche too. I keep it simple.



Beetroot blood orange salad (1 pers)

1 cooked beetroot
1 blood orange
Handful of lamb’s lettuce
1-2 tbsp vinaigrette

Peel and cut the beetroot into thin slices.
Cut top and bottom from the orange and with your knife cut off, from top to bottom, the peel and white from the orange and cut into nice slices too.
Place them on a plate, lamb’s lettuce on top and sprinkle some vinaigrette on the salad.
Enjoy in the spring sun!

I make  a vinaigrette by pouring extra virgin olive oil in a glass jar, about 4 tablespoons, add 2-3 tablespoons of a nice vinegar, some thyme leaves, freshly ground pepper and a little salt together with a teaspoon of mustard. Lid on and shake it. Ready to use and store!!



Beetroot spread, really nice on my daily slice of bread

1 beetroot, 250g, chopped roughly
1 tin of butter beans, drained, 400g
A little olive oil
Pepper and salt
1 tsp toasted cumin seeds
Squeeze of lemon
Some chives or parsley

A very simple and quick recipe, when you have a cooked beetroot, that is.

Put beetroot and butter beans in a small kitchen blender, add pepper and a little salt, some good olive oil, lemon juice and the toasted cumin seeds. Mix till it forms a nice puree.
Scoop into a bowl and add some fresh green herbs, taste and season.





Bietjessoep (2-3 pers)

2 grote rode bieten, gekookt en in grote stukken
1 ui, fijngesneden
1 teen knoflook, fijngesneden
1 wortel, in kleine blokjes
1 stengel bleekselderij, in kleine blokjes
1-2 el mooie olijfolie
1 laurierblad
½ l groentebouillon

Fruit de ui en knoflook 5 minuten zachtjes in de olijfolie.
Voeg dan wortel en bleekselderij toe en laat samen nog 5 minuten fruiten.
Voeg dan bietjes, laurierblad en bouillon toe en breng aan de kook. Laat, met een deksel erop, 20 minuten zachtjes koken. Haal het laurierblad uit de soep en pureer de soep met een staafmixer. Proef en voeg naar smaak versgemalen peper toe en eventueel wat zout.
Serveer met wat bieslook, dille of peterselie. Een schep crème fraiche kan ook erg lekker zijn!
Ik houd het simpel vandaag.

Je kunt het zout en de bouillon helemaal weglaten en in plaats daarvan een theelepel miso in je kom doen als je de soep erop schept!

           de salade was zoo lekker! 

Bietjes bloedsinaasappel salade (1pers)

1 gekookte biet
1 bloedsinaasappel
handje veldsla
1-2 el vinaigrette*

Verwijder de schil van de biet en snijd de biet in dunne plakjes. Leg ze op een mooi bord.
Snijd boven- en onderkant van de sinaasappel en dan met een scherp mes volg je de sinaasappel en snijd van boven naar beneden de schil met al het wit eraf. Snijd ook de sinaasappel in mooie dunne plakken en leg ook op het bord.
Handje veldsla erop, besprenkel met wat vinaigrette en klaar. Dit is zoo lekker!!

* Ik maak een vinaigrette in een  leeg jampotje door 4 el olijfolie, 2-3 el mooie azijn, wat verse tijmblaadjes, versgemalen zwarte peper en wat zout met een theelepel mosterd erin te doen en flink te schudden. Makkelijk in gebruik en om te bewaren.


Bietjes spread, heerlijk op mijn dagelijkse boterham

1 gekookte biet, 250 g, grofgehakt
1 blik boterbonen, uitgelekt, 400 g
 Wat olijfolie
Peper en zout
1 tl geroosterde komijnzaadjes
Scheutje citroensap
Wat peterselie of bieslook

Een heel makkelijk gerechtje, als je een gekookte biet over hebt, natuurlijk.


Doe biet en bonen in een kleine blender, breng op smaak met olijfolie, citroensap, peper, zout en komijnzaadjes en mix tot een mooie gladde of wat grovere puree, precies zoals je hem lekker vindt. Schep in een schaaltje en voeg groene kruiden naar smaak toe.

Pumpkin and courgette tagine - pompoen en courgette tagine (GF-DF-SF-V)



This very easy and tasty meal is cooked in a traditional earthenware tagine. 
The name tagine or tajine refers to the pot as well as to the dish. Mine comes from Morocco and I use it on the gas; they can also be used in the oven or over coals. The dome-shaped top promotes the steam to return to the bottom of the pot, this gives the special taste to a tagine dish.

When you don’t have a tagine you can use a Dutch oven or another heavy bottom pot, but it’s really worth buying one, because cooking in clay pots gives a very distinctive taste.



Because it’s an earthenware pot you have to take care of it putting it on the gas. The first time using it, I recommend soaking the pot in water for at least an hour. Then put it on the biggest gas flame you have but put the gas down low.

Slowly heat up the tagine. This is to prevent your tagine to crack. Mine has a crack from the one time I was a bit impatient to heat it up, but it works still very well.

Cooking in a tagine is slow-cooking, so all flavours can develop. And when the pot is warm you just add your ingredients all at once or slowly, bit by bit, like in my recipe. 
After every addition, put back on the lid!

So let’s cook!!

Heat up your tagine slowly

Put on the bottom of a tagine:
1 onion, cut roughly
420 g cleaned pumpkin, in 3 cm cubes
2 tbsp olive oil
1 tin of chickpeas or 200g cooked
Black pepper
4 cloves
pinch of saffron
about 1-2 cm of water

Bring to boiling point and let it simmer with the top on for 10 minutes

Then add:
1 courgette in big chunks
4 chopped tomatoes
Big handful of parsley
Big handful of coriander
100g frozen peas
After 10 minutes sprinkle with:
Freshly grated nutmeg, a pinch of cayenne, ½ tsp of ground ginger, ½ tsp of cinnamon and salt to taste. mix in carefully and let it simmer for another 5 minutes.

Serve  and sprinkle with some more parsley and coriander on top of brown basmati or, I you can, with couscous!!

I love to give it some heat by adding a scoop of home-made harissa.
Enjoy your tagine!


Zet de tagine op en verwarm langzaam

Leg op de bodem van de tagine:
1 ui, grof gehakt
420 g schoongemaakte pompoen, in flinke stukken
2 el olijfolie
1 blikje kikkererwten of 200g gekookte
wat zwarte peper uit de molen
4 kruidnagels
plukje saffraan
1-2 cm water

Breng zachtjes aan de kook en laat, met het deksel erop ongeveer 10 minuten stoven

Voeg dan toe:
1 courgette in flinke stukken
4 grof gehakte tomaten
flinke handvol peterselie
flinke handvol koriander
100g diepvries erwten

bestrooi na weer 10 minuten met:
versgeraspte nootmuskaat, cayennepeper naar smaak, ½ tl gemberpoeder, ½ tl kaneel en zout naar smaak. Meng voorzichtig en laat nog 5 minuten sudderen.

Serveer en bestrooi met nog wat meer peterselie en koriander met bruine basmati rijst of, als je mag, met couscous!!
Ik hou van een beetje pittig dus neem ik er een schepje home-made harissa bij.

My daily bread – mijn dagelijks sneetje brood(GF-DF-SF-V)


I just realized I never wrote a post about my daily bread.
After making lots of gluten free, mainly flat breads and without yeast, I decided I don’t care a lot any more for bread and instead started eating oatmeal in the morning and making something warm, a soup, some left-over lentils, for lunch and cook again in the evening. Quite to my liking!

But last year I found this recipe for a bread. It’s called Life-changing loaf of bread and that’s it for me too since then.
I make it every week now or even twice a week, depending of the season and the things I have to do. It has great taste, it’s very easy to make, to keep, to take away, to make toast with, to freeze. And; more important even, this bread is super healthy, filled with, in my opinion, only good, wholesome, natural ingredients. And... people without celiac disease like it too!!
It made my tummy very happy, really!!

After years of let me say hard work in the morning, yes, my celiac disease made my intestines work very slowly and not fully functioning for a long time, eating this bread makes me go every morning, easy and smooth, effortless.


I now perfected it I think. The first time I made it, it fell apart completely. I am going to explain how it works for me now, but you can just follow Sarah´s recipe as well. All praise goes to her and just check out her website, she is so gifted, she is a big inspiration to me!


This is how I make it:

I use a glass Pyrex bread pan from 28 x 11 cm, but you can use a flexible, silicon one as Sarah does.

I place a 28 cm piece of baking paper along the long sides of the pan with the sides hanging over, so I can cover the bread dough when it’s in the mold.

In a big bowl mix the dry ingredients:

135g sunflower seeds or a combination of sunflower seeds and pumpkin seeds
90g of flax seeds, ground fine
65g of whole brown hazelnuts
145g gluten-free rolled oats
2 tbsp chia seeds or 2 tbsp sesame seeds(the chia adds more “glue” to the mixture, but at first I did without them, because they were not in my pantry, and the bread held very well too!!)
4 tbsp psyllium seed husks (they cannot be replaced, they hold the bread together!!
1  tsp sea salt

Then add the wet ingredients:

(The original recipe asks for maple syrup but I omit it; I don’t like any sweetness in my bread.)

3 tbsp extra virgin olive oil or melted coconut oil
350 ml warm water

Stir everything well. It becomes sticky and when you keep on stirring, the psyllium, chia and flax start to glue the dough together. Knead with your hand into the size of your mold and put it in. Press with your hand till the dough is evenly distributed. It will be 3-4 cm thick. Cover with the hanging over baking paper and set aside for at least 2 hours. I make mine in the evening and let it set overnight and bake the bread in the morning.

Pre heat the oven on 350°F or 175°C.

I take the bread out of the mold by holding the baking paper draped over the dough and place it directly on the middle rack into the oven. Bake the bread for 50-60 minutes, turn half way. The bread is ready when it sounds hollow when you tap it on the bottom.

Let it cool completely!! Slice with a very sharp bread/serrated knife. I hold the bread firmly when slicing, to prevent crumbling.

The bread is very good as it is, but toasting it makes it even better. I eat 2 slices every morning and it gives me energy till lunch!! The recipe makes about 14 slices.

You can freeze the bread as well, but beware of the slices sticking together, so freeze them flat or separate them with a piece of baking paper.


Ik maak het zo:

Bekleed een glazen Pyrex brood/cakevorm( 28 x 11 cm) met bakpapier alleen aan de lange kanten, zodat het overhangt. Of gebruik een flexibele, siliconen vorm zoals Sarah.

Meng in een beslagkom de droge ingrediënten:

135g zonnepitten of een combinatie van zonnepitten en pompoenpitten
90g gemalen lijnzaad
65g bruine hazelnoten
145g havervlokken
2 eetlepels chiazaad of sesamzaad als je geen chia in huis hebt (heb ik ook gedaan in het begin en het brood valt niet uit elkaar!)
4 el psyllium husks (de psyllium moet, anders geen goed brood!)
1 tl fijn zeezout

Meng goed door elkaar; ik doe er geen zoetmiddel in, niet nodig en niet lekker, het is brood!

Roer dan volgende natte ingrediënten toe:

3 el extra virgin olijfolie of  gesmolten kokosolie
En 350 ml warm water

Roer totdat het een samenhangend geheel wordt. Het psylliumzaad, lijnzaad en chiazaad zorgt voor binding van het mengsel. Kneed even door met de hand en vorm een langwerpige vorm die in de glazen of andere broodvorm past. Ik heb een glazen Pyrex vorm van 28 cm die ik bekleed met een stuk bakpapier over de lange kant. Druk het deeg aan in de vorm; het wordt ongeveer 3-4 cm hoog. Laat dan in ieder geval 2 uur opstijven of laat een nacht staan en bak het brood de volgende ochtend.

Verwarm de oven voor op 180 °C.

Haal het brood uit de vorm en plaats met bakpapier en al op het rooster in het midden van de oven, bak 25 minuten aan 1 kant, draai het brood voorzichtig om en bak nog eens 25-30 minuten aan de andere kant. Het brood is gaar als het een beetje hol klinkt als je er op klopt.
Helemaal laten afkoelen voordat je het snijdt met een scherp broodmes!!
Houd het brood goed vast waar je het snijdt, dan valt het niet uit elkaar.
Dit recept is voor ongeveer 14 sneetjes brood. Je kunt het zo eten, maar even geroosterd is het nog beter van smaak.

Je kunt de sneetjes ook invriezen, maar let op, ze plakken aan elkaar, dus plat, stuk voor stuk, of met een stukje bakpapier ertussen.
