Miso spice paste/ bumbu– miso kruidenpasta/boemboe (GF-DF-SF-V)

I often make this beautiful spice paste or bumbu. The best thing about it is the taste, obviously, but after that it is so easy to make and it’s so versatile, you can make it up to your own desires. Like for my son I leave out the chilies, because he doesn’t like hot. For me I add green chilies or red, just according to the dish or my particular taste that day.

You can use the paste in any noodle soup, but it is also very good in stir-fry vegetable dishes or other Asian food. Just give it a try and see what you think of it.

Just beware of the fact that you buy a certified gluten-free miso, some are made of barley or wheat and even when you buy a rice-based miso there is a possibility of traces of gluten through cross-contamination!

Miso spice paste

6 candlenuts
1 small onion, chopped roughly or 1-2 spring onions
3 tbsp chopped garlic
3 tbsp fresh ginger root, peeled and chopped roughly or for a more explicit taste use galangal root or a mixture of the 2
1 big kaffir lime leave
1 tsp lime or lemon zest
chilies to your taste, red/green, deseeded or not
1 tsp coriander seeds
2 tbsp coriander stalks
1 big tbsp of rice miso

Put everything in a kitchen machine and blend to a smooth paste or use the mortar and pestle and grind to a more rustic paste.
Heat some oil in a wok and bake the paste( about 1 big spoonful a person) for a minute before adding the rest of your ingredients, like vegetables, coconut milk and noodles.

You can keep the paste for a couple of days in a closed pot or freeze it. The best is to make it and immediately use it all!!

Miso-kruidenpasta of boemboe

6 kemirinoten
1 klein uitje of 2 lente-uitjes, grof gehakt
1 groot kaffir lime blad
1 tl citroen- of limoenrasp

Green rice – groene rijst ( GF- SF)

At last the rain has come and the temperature is rising slowly!
Immediately nature is reacting: a week ago the common coots were almost nowhere nesting, but since yesterday it’s busy building nests in the water; there are three big woodpeckers chasing each other in the tops of the trees and at last the grass is starting to grow, my baby rabbits can start growing now. And the color of spring green is at last appearing, bit by bit.

To stay in this green theme I made a lovely bowl of green fake risotto, the recipe I once came up upon on the internet once but could not find again, so I made this interpretation.

Green rice/ fake risotto (2 pers)

1 big handful of rocket
3 tbsp salted butter, room temperature
1 spring onion
black pepper
a little lemon juice

2 cups of cooked brown basmati rice
1 tbsp of olive oil
1 onion, chopped
1-2 garlic cloves, chopped
small head broccoli, chopped and steamed
1 cup of frozen peas, cooked separately
10 cherry tomatoes, halved

Topping:
1 tbsp roasted pistachios
1 tbsp roasted pumpkin seeds or pine nuts
garden cress
smoked paprika powder

First make a nice smooth butter by blitzing rocket, butter, spring onion, pepper and lemon juice together in a small kitchen blender. Set aside.

Cook and steam the peas and broccoli, set aside.
Roast the nuts slowly for about 7 minutes in a dry pan, than set aside.

Heat the olive oil in a casserole and fry onion and garlic slowly with a pinch of salt. When they turn golden add the halved cherry tomatoes and bake together for some minutes. Than stir in broccoli and peas and heat together. Stir in the rice and begin adding the herbed butter, stir well and taste and add enough butter to your taste. When your satisfied with the taste, serve in a nice bowl and sprinkle with the nuts, seeds cress and smoked paprika.

Maybe serve together with a stuffed pepper.
I made this one from Hugh Fearnley- Whittingstal.

groene rijst/nep risotto (2 pers)

1 grote handvol rucola
3 el gezouten roomboter, op kamertemperatuur
1 lente uitje
Zwarte peper
Citroensap

2 koppen gekookte bruine basmatirijst
1 el olijfolie
1 uitje, gehakt
1-2 tenen knoflook, gehakt
kleine stronk broccoli, gehakt en gestoomd
1 kop diepvrieserwtjes, gekookt
10 cherry tomaatjes, gehalveerd

Topping:
1 el geroosterde pistachenoten
1 el geroosterde pompoenpitten of pijnboompitten
tuinkers
gerookte paprikapoeder

Spring salads - lente salades (GF-DF-SF-V)

Nature is holding its breath.
It is too cold and too dry after the long winter for the new sprouts to grow; everywhere I walk in nature I see just  tiny little starters of spring greens. Most of the cleansing herbs that grow around us are still in hiding; only a few nettles are starting to come up, the dandelion and the plantain only on some sunny spots, the birches show some buds, but no leaves yet.

We all long for spring!
From my window I see a family of rabbits, they have already 2 youngsters outside, they are really hungry, there isn’t any grass growing yet. I fear for their survival. The water birds are not nesting yet. Really, nature is on a hold. For weeks and weeks there is a strong north-eastern wind blowing, the winter migrating birds are staying in the south, they cannot cross the Pyrenees.

I feel the same. I am waiting for some juice to get flowing again. I feel restless, can’t sit behind my desk, concentrate well ( I cannot find the pictures of the grated salad below;-), I want to get out, to breathe in sun and new life. To get rid of the winter blues, I go out every day to walk, to get going, to keep my body supple. Besides my daily yoga this helps a lot, but now the time arrives that my body wants to get rid of all the heavy materials and expose to some natural warmth. My skin is dry and achy, my body wants to nourish from fresh food.

The other day I picked some, not much, just 2 handfuls of nettle tops and made this simple salad, with some Turkish rocket and mustard greens and a tangy dressing. Just to get the idea of spring.

Detox salad

2 handfuls of freshly picked dandelion leaves/flowers, plantain, nettle leaves, chickweed, etc.
2 handfuls of rocket or other mustard greens
1 spring onion or wild garlic leaves

Make a nice basic dressing:
2 tbsp first pressing olive oil
1-2 tbsp vinegar or lemon juice
1 tsp mustard
Pepper and salt
Fresh herbs

Mix everything well ( in a small pot with lid) and add to the salad leaves. Eat and enjoy the freshness of spring.

You can also add some roasted pumpkin cubes and goat’s cheese to enrich salad.

Another salad that I eat now is a grated winter root salad, very juicy:

Grated salad with celeriac and carrot
 (picture will follow)
For the dressing mix together:

2 tbsp lemon juice
2 tbsp olive oil
1 tsp honey
1 tbsp fresh thyme leaves
pepper and salt

maybe add some:

freshly chopped coriander or parsley
chopped walnuts or roasted pumpkin seeds
grated horseradish
a scoop of nice mustard
grated beetroot, at the very last moment added for a super yummie taste and divine looks

Grate a small celeriac  and a big winter carrot roughly, mix with your hand and add the dressing. Let it rest and come to taste for at least half an hour!

Detox salade

2 handjesvol versgeplukte brandnetel topjes, paardenbloem blad en bloem, weegbree blaadjes, duizendblad, etc.
2 handjesvol rucola of andere mosterdgroen
1 lente uitje of wat blaadjes daslook

Maak een simpele dressing van :
2 el eerste persing olijfolie
1-2 el azijn of citroensap
1 tl mosterd
Peper en zout
Verse kruiden

1 tl honing
1 el verse tijmblaadjes
peper en zout

Toevoegingen naar keuze:
Vers gehakte koriander of peterselie
Gehakte walnoten of geroosterde pompoenpitten
Geraspte mierikswortel
Lekkere mosterd

Banana bread with dates - Bananenbrood met dadels (GF)

This banana bread is so good; sometimes I am even tempted to buy extra bananas so they can turn brown before I could eat them all and I have to bake it again. It is an easy recipe, that I adapted from Allerhande, a cooking magazine from one of the biggest supermarkets here in Holland.

The fun thing from using less and less sugar is that you don’t need so much sweetness any more. The original recipe asks for 150 g sugar, I use only 50 g now; together with 3 bananas and 6 medjoul dates it’s sweet enough for me. I could do without the sugar, but my son is an addict so I leave some in for him. In this way he gets used to less sugar too. I hope, because outside my doorstep, at school, with his friends there is a lot of junk food coming in. And I hope that by cooking wholesome foods  at home and give him oatmeal for breakfast I give him the right example and together with all the junk he eats too, the balance will be a positive one?

As I am writing this post my oven is working hard, baking small flat breads to take with me to France tomorrow. Together with my dearest C. I am going to visit some friends in the Auvergne. They live rather remote so I have to take care of myself a bit, gluten-free food wise I mean. We’ll be travelling by train, such a good old-fashioned way to travel and a long time ago too, for me. Seeing a quick glance of Paris before we change trains to Clermond-Ferrand. And they say it’s gonna snow tomorrow!

I am really looking forward to it!

I’ll leave you with this delicious banana bread and see you when I'm back again!

You can easily make it vegan by using coconut oil or olive oil instead of butter and replace the eggs for a soaked flax mixture.

Banana bread with dates

I use a glass Pyrex mold of 28 cm

3 tbsp sesame seeds
6 Medjoul dates
250 g GF flour, I use a mixture of buckwheat and rice
125 g butter, room temperature
50 g rapadura sugar
2 organic eggs
3 really ripe, brown bananas, mashed
1 tsp cinnamon
2 tsp tartaric acid baking powder

I put a piece of baking paper in the mold, to ease the outcome of the cake.

First roast the sesame seeds in a dry pan till golden brown, leave to cool.
Stone the dates and cut lengthwise into thin strips, dust with a little flour, so they won’t sink to the bottom of the cake.

Pre-heat the oven to 170 ˚C.

Beat the butter and sugar with a hand mixer till light and fluffy.
Add the eggs one at a time and beat them through.
With a spatula mix in dates, mashed banana, cinnamon, baking powder, sesame seeds and flour. Scoop into the Pyrex mold and bake the banana bread for about 1 hour and 10 minutes in the middle of the oven. Check with a bamboo skewer in the middle of the bread if it’s done. Then let it cool for 20 minutes in the mold before taking it out and let it cool completely on a rack. Enjoy!

Bananenbrood met dadels

Ik gebruik een Pyrex vorm van 28 cm.

3 el sesamzaad
6 Medjoul dadels

Geniet!

Healing carrot soup – helende wortelsoep (GF-DF-SF-V)

I just made this healing carrot soup for my sick son. After 2 days of not eating, because of vomiting and nausea, he is a bit better today and starts to eat again. Bit by bit, a cracker, some yoghurt with mashed banana, and of course soup.

Soup made with the best healing ingredient: Love.

Yesterday I bought these lovely looking and smelling carrots in 4 different colors. They look amazing, but they taste amazing too and made this beautiful, healing soup with just a few ingredients. I put in some fresh gingerroot to warm the belly and eases digestion.

His belly agreed totally after eating a whole bowl!

It’s a bit tricky to start eating again, the stomach is always protesting a little. For that reason I eat white basmati rice tonight to ease the irritation, with a little of the mildly spiced tomato dal from Lakshmi. She has such a beautiful blog, so be sure to have a look!

Healing carrot soup

500g carrots, cleaned and chopped in slices
1 medium onion, chopped
1 tbsp finely chopped, peeled fresh ginger
1 handful coriander stalks, chopped finely
1 l hot vegetable broth
1 bay leaf
1 tbsp orange juice

Heat some oil in a soup pan and softly bake the onion and ginger for 5 minutes. Stir from time to time.
Add coriander and carrots, stir well and bake together for another 2 minutes, than add the vegetable broth and bay leaf and bring to the boil. Let the carrots boil till they are tender.
Remove the bay leaf and make a smooth soup with a stick blender.
Before serving I squeezed in some orange juice, to give the soup a little lift.
Taste and add pepper and salt, if needed. You can garnish the soup with some coriander leaves. Enjoy!

Helende wortelsoep

500g wortels, schoongemaakt en in plakjes
1 middel ui, fijngehakt
1 el verse gember, geschild en fijngesneden
1 handvol koriandersteeltjes, fijngehakt
1 l hete groentebouillon
1 laurierblad

Tajine with olive-almond meatballs – tajine met olijf-amandelballetjes (GF-SF)

Beginning to long for warmer days and fresh greens my appetite is also dreaming of springy summery flavors. Happily I have many cookbooks to read or just look through or see what other bloggers are dreaming about. Or scrolling back in my own blog, already 5 years of blogging and about 300 recipes!!
But sometimes I just can’t decide what to make, what I want to eat with what is in my organic veg box. I need some inspiration from time to time!

Anyway, I came upon my stoneware tajine, wich was standing a bit dusty on a shelf. Yes, there was my inspiration, a hearty stew, strong Moroccan flavors, olives, tomatoes, peppers. Easy, simple, honest cooking.
Adapting and putting together some recipes I came upon this lovely vegetarian version of Kefta Mkaouara.

Tajine with olive-almond balls (3 pers)

For the tajine:

1 tsp cumin
1 big onion, halved and in slices
1 red bell pepper, cleaned and in 1 cm long strips
1 yellow bell pepper, cleaned and in 1 cm long strips
1 bay leaf
1 tbsp fresh thyme leaves
1 handful of coriander, leaves and stalks, washed and chopped roughly
1 can peeled tomatoes, chopped
1 tsp paprika
pinch of cayenne
salt/pepper
1 pinch of saffron
2 dl water

In a stoneware tajine or a heavy casserole heat  3-4 tbsp of olive oil and add the cumin seeds, stir and bake for 1 minute, till you smell the lovely odor. Add the onion and bake for about 5 minutes till they start coloring.
Add the peppers and the green herbs, stir everything well and let it bake till the peppers brown a little and soften. This will take about 10 minutes. Stir once in a while.
Then add the tomatoes, saffron, paprika, cayenne and season with salt and pepper. Add 1 dl water. Bring to the boil, place the tajine lid on and let it simmer on a low heat for about 15-20 minutes. Add water when needed.

In the meantime you make the meat balls.

For the meatballs I was inspired by this recipe on Marocmama.
Mine just looked a little different, wetter too and so I added some more almonds:

½ cup of almond flour
½ cup of rolled oats (certified glutenfree!)
½ cup black olives (without the pits)
¼ -½ cup grated parmesan
1 big clove of garlic
1 organic egg
1 spring onion, chopped roughly
Pepper and salt
1 tbsp olive oil
1-3 tbsp raw almonds pulsed roughly (when needed)

In a food processor blend almond flour, oats and olives. Then add parmesan and chopped garlic. It must come together as a sticky mix. Put it in a bowl, scrape the sides with a spatula and add the egg, spring onion, pepper and a little salt (the olives and parmesan are salty already!) and the olive oil. Knead everything well and form small balls from the mixture. It is a sticky work, that’s why I added some more almonds. Bake the balls in a non-stick baking pan in some olive oil. They will brown perfectly and stay whole!! Hey will be great as an appetizer too! Turn regularly. When they are done you can add them to the tajine and carefully mix everything together. I
When you want, you can break 2 eggs in the dish and let them cook in the dish till the egg whites are solid to make  this vegetarian version of Maroccan Kefta Mkaouara.

Sprinkle some hands of fresh coriander on top before serving this dish with some flat bread or rice and a salad.

Tajine met olijf-amandel balletjes (3 pers)

Voor de tajine:

1 tl komijnzaad
1 grote ui, gehalveerd en in ringen
1 rode paprika, schoon en in 1 cm lange repen
1 gele paprika, schoon en in 1 cm lange repen
1 laurierblad

½ cup amandelmeel
½ cup havervlokken (gecertificeerde glutenvrije!)
½ cup ontpitte zwarte olijven
¼ - ½ cup geraspte Parmezaan
1 grote teen knoflook
1 biologisch ei
1 lente uitje, grof gehakt
peper/zout
