Pumpkin pickles – pompoenpickles (GF-DF-V)

Another pickle!
Pickling, I like the word; it reminds me of picking fruits from trees or plants, but also refers to the sensation when you put a piece of pickle in your mouth: salt, sweet, bitter, tangy. It is all about the Umphhfff!!

In South-India you always get a little bit of home-made pickle as a side dish, to stimulate digestion. They don’t bother to peel or slice their pickles neatly, no way, often you bite in half a lime or a piece of unidentifiable bark; it is always a surprise. Sometimes it’s so hot your eyes start to cry by only the faintest whiff of the smell and the other time you ask for more because of the accomplished taste, so good with the rice and veggies on your coconut leave plate.
Indian people are always very happy when you ask for pickles, a lot of visitors don’t like it, so when they don’t give it to you in the first place: ask for pickles! You make friends forever.

Everywhere you come, people have some ingredients drying outside in the sun, leaves, bark or peppers and limes, mixed with salt and spices. Next year I am going to learn to make some.

After making you curious about Indian pickling, I today give you a very Dutch pickle:
I adapted the recipe from Yvette van Bovens’ great book Home Made.

Pumpkin pickles (1 big pot)

150 ml white wine vinegar
250 ml water
2 tbsp cane sugar(you can leave it out)
6 cloves
1 piece of mace
1 cinnamon stick
6 cardamom pods, crushed
1-2 red chillies
400g pumpkin, peeled, sliced in strips or  cubes

Bring all ingredients, except the pumpkin, to the boil and let it softly simmer for 10 minutes.
Then add the pumpkin and cook together for another 8 minutes. They will stay crisp!
Sterilize a big glass pot and pour or scoop the pumpkin in with all the lovely juices. Screw the lid on and place it upside down to cool completely.
Keep in the fridge for at least 3 days, the flavours will develop in this time.

You can eat the pickles on a sandwich, in a salad, with some French cheese, with polenta etc.

After opening always use a clean fork to get them out and the pickles will be good for at least 2 weeks, when they last that long;-)

Pompoenpickles (1 grote pot)

150 ml witte wijnazijn
250 ml water
2 el rietsuiker (kan ook zonder)
6 kruidnagels
1 stukje foelie
1 kaneelstokje
1-2 rode pepers

acar ketimun - atjar ketimoen - cucumber pickle(GF-DF-V)

I am in an experimenting mood, in my mind that is;  although I cook every day, I am mainly thinking about, rethinking, rereading, planning, organizing, writing, rewriting my recipes. Putting things together in a blogpost is the last thing I think about.
It is not the time that is lacking, or the drive. It's the time of year, I am in winter modus, the time for evaluating: What is ok, what is not, what do I want to share and what not, what is healthy and why do i care, etc.
Maybe it's a case of writers'block, maybe it's just the springtime I am waiting for, the renewal of the senses, of nature awakening, of fresh smells and new greens, the sprouting of the young leaves the awakening of creativity again. Sigh! Maybe!

That's why I am putting a lot of things in pots, not only literally; like pickles or seeds to sprout, what happens inside? I am experimenting with a bread from My New Roots; I am making pickles to boost my digestion, I made a turmeric paste to make golden milk with home made almond milk, as well  to stimulate and ease my belly.

Last week I made this easy cucumber pickle, it's a classic from the Indonesian kitchen.

Atjar/acar ketimoen is cucumber pickle, easy to make, easy to keep and really refreshing and tinglingly acid when you eat it. As a side  with a rice dish, in a sushi roll or on a sandwich.

Atjar ketimoen

1 cucumber
2dl vinegar
pinch of salt
1 tsp gula djawa or palm sugar
3 cm piece of fresh ginger, finely cut
6 peppercorns
2 coves of garlic, fine

Wash and halve the cucumber lengthwise.
You can deseed the cucumber so you get this nice half moon shapes, but I don’t bother I like the seeds too. Cut the halves in small slices. Put them in a bowl and set aside.

Cook the vinegar with the rest of the ingredients for some minutes, than strain through a sieve and let it cool. Add to the cucumber and leave it in the fridge for at least an hour before serving. You can also put everything in a sterilized pot with lid. Keep in the fridge for at least 2 weeks!

Atjar ketimoen

1 komkommer
2 dl azijn
 1tl gula djawa of rietsuiker
3 cm stuk verse gember, fijngesneden
6 peperkorrels
2 knoflooktenen

Blijft zeker 2 weken goed!

Almond-parsley pesto – amandel-peterselie pesto (GF-DF-SF-V)

As promised:

This wintery pesto is a delicious alternative for the classis one with basil. I don’t bother to buy basil in winter, because it’s not as tasty as in the summer. It needs sun and warmth, like me!!

You can see those warehouse-grown basil plants in the supermarket, also organic, but it’s not the same at all, they are a little ill-looking and you cannot keep them, they shrink or rot when you touch them or even look at them and just smell them they don’t smell as good as in summer, a bit feeble a bit sick.

The best thing you can do is to make small batches of the real stuff in the summer and freeze them, so you can have this sunny, summer flavor in winter whenever you like.
Or, make this one, it’s great too!!

Almond-parsley pesto

1 clove of garlic, roughly chopped
1 small tsp coarse sea salt
2 tbsp whole almonds, lightly roasted in a pan
1 cup tightly packed, washed and cut parsley, roughly chopped
60 ml first pressing olive oil
freshly ground black pepper

You’ll need a mortar and pestle for this or a small food processor or stick blender will work too. I love working with my hands, that gives me the pleasure of really hand-making it. In a machine you can add everything, put it on for some seconds and you’re done, ok!
For the hand method you’ll need some muscle.

Grind/pound the garlic with the sea salt till it forms a paste. Add the lightly roasted whole almonds and pound and pound till a rough mixture forms. This is a good work-out, so change hands once in while!
Add the parley bit by bit while you keep on grinding, pounding, etc.
Add the olive oil too bit by bit, while you keep up the work-out.
When you are happy with the result, with a little bite fro the almonds, grind some black pepper above the bowl and taste. It must taste and smell divine!

Peterselie-amandel pesto

1 teen knoflook, grofgehakt
1 kleine tl grof zeezout
2 el hele amandelen, lichtgeroosterd in een koekenpan
1 flinke kop, 2  handenvol peterselie, grofgehakt
60 ml eerste persing olijfolie
versgemalen zwarte peper

Celeriac- winter purslane soup - knolselderij-winterpostelein soep (GF-SF-DF-V)

Soup, the best afternoon snack there is.
Healthy, hearty and heating in wintertime!

You know it, I make a lot of soup, almost every day; instead of tea and cookies I eat a bowl of soup, sometimes with a cracker, most of the times without, because it’s ok like that.

This is a quick one:

Celeriac-winter purslane soup ( 3pers)

500 g celeriac ( ½ of a big one), cleaned and in rough chunks
2 middle size potatoes, peeled and in 4 chunks
1 onion, chopped fine
1 cm slice of gingerroot, whole
1 bay leaf
750 ml water or vegetable stock
1 bunch of winter purslane, 2 big handfuls, washed
Olive oil
Pepper and salt

Put on the gas a big pan with water, for blanching the winter purslane.

In a soup pan heat some olive oil and bake the onion softly with a pinch of sea salt for 8 minutes.
Add the roughly chopped celeriac and potatoes, give it a stir and add gingerroot, bay leaf, pepper and salt and water or stock. Bring to the boil and let it cook about 20 minutes till the veggies are tender.

In the meanwhile you blanch the washed purslane in the other pan with boiling water for 2 minutes. Drain, rinse with some cold water and blend in a small kitchen blender or with a stick blender. Set aside.

When the veggies are done, fish out the bay leaf and ginger slice from the soup and use the stick blender to make a smooth soup, taste and add pepper and salt when necessary. Stir in the purslane and you’re done. Serve in a nice bowl and enjoy you’re quick afternoon break soup!

A scoop of parsley pesto is a great addition too, recipe follows!

Knolselder-winterposteleinsoep (3 pers)

1 ui, fijngehakt
1 cm schijfje gemberwortel
1 laurierblad
750 ml water of groentebouillon
2 flinke handen vol winterpostelein
Olijfolie

Sugar free oats and pecan cookies – suikervrije haver en pecan cookies (GF-SF-V)

These super crunchy thin cookies made of ground pecans and rolled oats are a remake of my sugar free oat cookies from last year.
I was craving a cookie, but wanted one without sugar and I remembered the smell of oats coming from the oven. There are always rolled oats in my cupboard and just recently I bought raw pecans on the market. I was thinking sweetness from the baked oats in combination with the crunch of the pecans, yes! Adding some raisins too, why not! Or dried apricots or dates or figs or cranberries, whatever you have or are in the mood for.

Super crunchy oats and pecan cookies (18 pcs)

135 g certified gluten-free rolled oats
100 g raw pecans
½ tsp tartaric acid baking powder
1 pinch of sea salt
4 tbsp raisins and currants (welded 1 hour in water or rum)
2 tbsp roasted sesame seeds
55 g melted butter or coconut oil
2-4 tbsp hot water

Pre heat the oven on 160 ˚C

Ground the oats  first, not too fine, then the pecans, they can stay a little crumbly.
Mix together with the baking powder and sea salt in a bowl.
Rinse and dry the soaked dry fruits (when you’re using big ones like dates, I suggest you chop them in small pieces) and add them to the bowl with the sesame seeds and mix again with your hand.
Add and mix in the melted butter or coconut oil and start kneading.
Add 1 tablespoon of hot water to make the dough come together (I used 2). Add more, 1 at a time, till you have a smooth dough.

Roll the dough out on a sheet of baking paper with a piece of cling film on the top, till 4-5 mm. You can cut out cookies with a cookie cutter or slice with a knife or pizza cutter in squares.

Lay the cookies carefully on a baking tray, covered with some baking paper, and bake them in the middle of the oven for about 25-30 minutes, till golden brown.
Enjoy the smell while bakingJ

Variations can simply be made by adding a little lemon- or orange zest, gingerroot, cinnamon or kardemom!

Supercrunchy haver-pecan cookies (18 stuks)

135 g  glutenvrije havervlokken (Provena)
100 g rauwe pecannoten
½ tl wijnsteenzuur bakpoeder
1 snufje zeezout
4 el rozijnen en krenten (1 uur geweld in water of rum)
2 el geroosterd sesamzaad
55 g gesmolten boter of kokosolie

Ginger-lemon tea - gember-citroen thee

The best remedie in winter: ginger-lemon tea!
Ginger is the root of the ginger plant (Zingiber officinale); it can be used fresh or dried or juiced.
In India it is used in many forms in the kitchen and in this very common drink with lemon and honey.

Ginger has many health benefits such as warming the entire system, calming the digestive system, helping ease menstrual cramps, calming the heart, helping your liver stay healthy,  helping relieve constipation, flatulence and belly cramps, it stimulates the appetite and agni (digestive fire), helps with soothing colds and coughing. You can make compresses or take a bath with ginger root to relieve sore and aching joints.

For me, making ginger-lemon tea, is the first thing I do, before my yoga practice, in the morning. It helps me to stay warm in these cold wintery days, it helps my digestive system relax a little bit, it reminds me of India…

Ginger-lemon tea

For 1 liter:
Bring 1 liter of water to the boil with slices of ginger root, about 5 cm. There is no need to peel the ginger root. Let it cook softly for 10 – 40 minutes with the lid on. The longer you cook it, the stronger the ginger taste! Take it from the heat, add some lemon juice and honey to your own taste and pour the ginger-lemon tea in a thermos flask and drink it during your day.

Ahhh, it is so good!

Gember-citroen thee
