broccoli-tomaat pasta - broccoli-tomato pasta (GF SF)

Ik ga niets zeggen over het weer, maar over de kleur van het leven, de grijsheid van het bestaan in januari.
Er is zo weinig kleur als ik naar buiten kijk, zelfs het weinige groen is grijs, over alles hangt een sluier van grijs.

Ik probeer zelf er alles aan te doen om me niet grijs te voelen.
• Ik doe veel licht aan in huis
• Ik brand kaarsen
• Ik ga iedere dag een rondje wandelen buiten
• Ik breng kleur in mijn kleding
• Ik kook lekkere en kleurige gerechten


Dit is een makkelijk en heerlijk zacht pastagerecht.
Super als je moe bent en niet zo in de stemming voor ingewikkelde kookkunsten.
Je zult zien, als het op je bord ligt, dat de kleuren je blij maken en de smaak troostend zal zijn, echt comfortfood.

Broccoli-tomaatpasta (3pers)

4 tomaten, in 4-in oven bakken met peper, zout, knoflook, ui en olijfolie
1 stronk broccoli, roosjes stomen
250 g glutenvrije pasta
100 g mozzarella
150 g geraspte kaas
evt. verse basilicum, grof gescheurd
peper en zout, naar smaak

Verwarm de oven voor op 220˚ C.

Snijd de tomaten in kwarten, leg ze op een bakplaat en bestrooi met peper, zout, 1 teen knoflook in plakjes, 1 ui in halvemaantjes en wat olijfolie. Bak de tomaten ongeveer 20 minuten en zet ze apart.
Zet de oventemperatuur op 180˚ C.

Ondertussen stoom je de broccoliroosjes tot ze net gaar zijn en snijd je de bol mozzarella in grove stukken.

Kook de pasta gaar in zeer ruim kokend water met wat zout. Dit is erg belangrijk voor glutenvrije pasta, want er komt veel zetmeel vrij, waardoor de pasta plakkerig wordt als je te weinig water gebruik.

Neem een ovenschaal en giet wat olijfolie op de bodem.
Giet de pasta af en doe de pasta in de schaal, meng met het tomatenmengsel, de broccoli en de kazen en evt. de verse basilicum. Proef en bestrooi met peper en zout naar smaak.

Zet de schaal in de oven en bak nog eens 20 minuten in de oven

There is such a lack of colour, when I look outside, even the small bits of green are grey, there is a grey veil over everything.

I try hard not to feel grey myself.
• I turn on a lot of lights in my house
• I burn candles
• Everyday I go for a walk in the park
• I bring colour to my clothes
• I cook nice and colourful dishes

This is a very easy and soothing pasta.
Great when your tired and not in the mood for great cooking operations and when you have it on your plate, the colours will make you happy and the tastes will comfort you, you’ll see.

Broccoli-tomato pasta (3 pers)

4 tomatoes, in quarters, mixed with pepper, salt, garlic, onion and olive oil
1 stalk of broccoli, in rosettes
250 g gluten free pasta
100 g mozzarella
150 g grated cheese
fresh basil, roughly torn
pepper and salt, to your taste

Preheat the oven on 220˚ C.

slice the tomatoes in quarters, lay them on a baking tray and sprinkle with pepper, salt, 1 clove of garlic in thin slices, 1 onion in half moons and some olive oil. Bake them about 20 minutes in the hot oven and take them out.
Lower the oven temperature to 180˚ C.

In the meantime you steam the broccoli rosettes till they are just cooked. Cut the mozzarella in rough pieces.

Cook the pasta in a large pan with boiling water. It’s important with gluten free pasta to use a big amount of water, because otherwise the starch will turn the pasta very sticky!
Take an oven dish and pour some olive oil on the bottom.
Drain the pasta and cast it in the dish. Mix it with the tomatoes, the broccoli, the cheeses and the basil. Taste and add pepper or salt to your taste.

linzenburgers - lentilburgers (GF gluten-free)

Ik heb een nieuw kookboek aan mezelf kado gedaan: Food for friends.
Het is een vegetarisch kookboek geschreven door de enthousiaste eigenaars en kok van het Food for Friends restaurant in Brighton. Wat zo prettig aan het boek is is dat het rekening houdt met allerlei allergieën en voedselintoleranties, veel recepten zijn glutenvrij en/of zuivelvrij. Het is een lekker boek, kortom!

Uit het boek heb ik de al genoemde en in mijn huis reeds zeer geliefde linzenburgers gemaakt, wel wat aangepast, want dat kan ik toch niet laten! Ze zijn knapperig aan de buitenkant en heerlijk zacht en sappig aan de binnenkant.

Linzenburgers (6 stuks)

150 g rode linzen
1 ui, fijngehakt
1 lenteuitje, fijngehakt
1 teen knoflook, fijngehakt
½ rode paprika, in mini blokjes
100 g mozzarella, in kleine blokjes gesneden
25 g geraspte parmezaan
1 flinke handvol platte peterselie, fijngehakt
zeezout en peper
2-3 el kikkererwtenmeel of ander glutenvrij meel
amandelmeel om ze doorheen te rollen

Doe de gewassen linzen in een pan en bedek ze met ruim koud water. Breng aan de kook en laat ze zachtjes garen met een deksel op de pan – ongeveer 15 minuten. Als de linzen zacht zijn, giet ze af en laat ze in de vergiet afkoelen.

Bak ondertussen de ui, knoflook en paprika in wat olijfolie tot ze zacht zijn, ongeveer 8 minuten.
Doe de linzen in een ruime kom en voeg het uienmengsel toe, samen met de kazen en de peterselie. Mix alles goed door elkaar en voeg zeezout en peper naar smaak toe, proef goed!

Voeg dan het meel toe en roer goed door, het moet een stevig geheel worden waar je burgers van kunt vormen. Als je denkt dat het nog te slap is voeg dan, per lepel!! wat meel toe.

Strooi op een groot bord amandelmeel.
Vorm met de hand 6 ballen van het mengsel en maak er platte burgers van, die je door het amandelmeel rolt zodat je een korstje krijgt. Leg de burgers op een schoon bord, dek af met huishoudfolie en zet ze minimaal 30 minuten in de koelkast. Dan worden ze nog steviger.

Verwarm de oven voor op 200˚C.

Bak de burgers in wat olijfolie in de koekenpan aan elke kant ongeveer 3 minuten voor.
Leg ze dan op een bakblik en bak ze af in de oven, ongeveer 6 minuten.


I gave myself a new cookbook: Food for Friends.

In short it’s a tasty book!

From the book I made the already announced and in my house already beloved lentilburgers; I changed them a bit, because I can’t help myself. They are crispy on the outside and mmmoist and tasty inside.

Lentilburgers (6 pcs)

150 g red lentils
1 onion, chopped
1 spring onion, finely chopped
1 clove of garlic, finely chopped
½ red pepper, finely chopped
olive oil
100 g mozzarella, in small pieces or grated
25 g parmesan, grated
1 big handful of flat-leaved parsley, finely chopped
sea salt and pepper
2-3 tbsp of chickpea flour or an other gluten-free flour
almond flour for coating

Put the washed lentils in a pan and cover them with cold water. Bring to the boil, reduce the heat and simmer until they are cooked – about 15 minutes. When the lentils are soft, drain them well and let them cool.

Meanwhile sauté the onions, garlic and pepper in some olive oil till they are soft – about 8 minutes.
Put the lentils in a large bowl, add the onion mix, and then the cheeses and parsley.
Mix well and season with sea salt and pepper, taste good!
Then add the flour and stir it in well, check the consistency. It must be thick enough to hold together and allow you to make patties; if not, add a little more flour, one spoonful at a time.

Sprinkle almond flour on a big plate.
Make 6 balls of the mixture and gently form patties from them. Coat them with almond flour and put them on a clean plate. Wrap with clingfilm and put them in the fridge for at least 30 minutes, they will set some more.

Preheat the oven to 200˚C/gas mark 6.
When you are ready to cook, pan-fry the burgers in a little olive oil for 3 minutes on either side and then put them on a baking tray. Finish them off in the oven for 6 minutes.
