Noten-zaden pompoenbrood met cranberries - Nuts and seeds pumpkin bread with cranberries (GF-DF-SF-V)


Net terug van 2 weken vriendenbezoek in Noord-Spanje en meteen in de gure, natte herfst van Nederland. Dat is even wennen, maar de kachel gaat hier wat makkelijker aan dan de oude houtkachel daar, gelukkig!
Terug thuis is het altijd weer meteen brood bakken. Dat is het eerste wat ik doe. En vandaag dacht ik meteen aan herfstige smaken en besloot mijn dagelijkse brood om te toveren in een herfstbrood met walnoten, pompoen, cranberries en kaneel. 
Dit zou zomaar een favoriet brood voor de herfst en winter kunnen worden!


Droog:
75 g gehakte walnoot
75 g zonnebloempitten
70 g pompoenpitten
145 g havervlokken
2 el gemalen lijnzaad
2 el chiazaad
4 el psylliumvezels
80 g gedroogde cranberry’s
1 tl zout
1 tl kaneel
¼ tl nootmuskaat
Nat:
260 g geroosterde pompoenpuree (zie link)
185 ml water
2 el ahornsiroop
2 el olijfolie

Rooster de noten en zaden in een droge koekenpan.
Meng alle droge ingrediënten met elkaar in een flinke kom.

Meng de natte ingrediënten goed door elkaar en giet ze in de kom met de droge ingrediënten. Roer 2 minuten goed door, totdat het geheel een stevig deeg wordt.

Bekleed een Pyrex vorm van 28X11cm met bakpapier en schep de deegbal in de vorm. Druk aan met je handen en laat minimaal 2 uur opstijven. 


Haal dan uit de vorm en bak het brood op de bakplaat met papier en al op 180°C, 2 x 35 minuten, draai 1 x om.

Laat volledig afkoelen voordat je het brood snijdt met een scherp gekarteld mes. Vries per plakje in wat je niet meteen opeet.

Even in een droge pan toasten maakt het brood nog beter!


Nuts and seeds pumpkin bread with cranberries

Dry:
75 g chopped walnuts
½ cup/75 g sunflower seeds
½ cup/70 g pumpkin seeds
145 g rolled oats
2 tbsp ground flax seeds
2 tbsp chia seeds
4 tbsp psyllium husks
1/ cup/80 g dried cranberries
1 tsp salt
1 tsp cinnamon
¼ tsp nutmeg
Wet:
260 g roasted pumpkin puree ( see:link)
185 ml water
2 tbsp maple syrup
2 tbsp olive oil

Toast the walnuts and the seeds in a dry pan.
Mix all dry ingredients in a big bowl.

Mix all wet ingredients in a smaller bowl and stir into the dry ingredients. Stir for 2 minutes until a dough comes together.

Lay a piece of baking paper in a glass Pyrex mold of 28X11cm and scoop the dough in. Flatten it out and even with your hands and let it rest for at least 2 hours.

Remove with the paper from the mold and bake in a 350°F/180°C oven in the middle for 2 x 35 minutes, turn halfway.



Let the bread cool completely before slicing it with a serrated bread knife. Freeze per slice what you don’t eat today. They are even better when toasted!

Buckwheat knäckebrot with carrot chutney (GF-SF-V-DF)


Making bread, glutenfree bread that is, is always a challenge.
This winter I have a plan to start a sourdough experiment and try creating a tasty sourdough bread, gluten free. It’s in my mind.

That is how it works, it all starts in my mind. An idea has to ripen there first before I start experimenting. 
So for the time being I stick to my every day, delicious bread, which is a version of this great bread.
But today I was craving something different, something crunchy to go with the carrot chutney I made yesterday.

And so I made this knäckebrot or cracker or crispy flat bread, whatever name you want to give it. It’s tasty, easy, quick to make and above all: naturally glutenfree and consisting only of seeds!

What you’ll  need for 1 baking tray or about 12 pieces:

110 g pumpkin and sunflower seeds
35 g flax seeds, roughly ground
90 g sesame seeds
130 g buckwheat grouts, ground into flour
2 tbsp olive oil
200cl boiling water
½ tsp sea salt

First pre-heat the oven on 160°C. Place a sheet of baking paper on a baking tray and set aside.

Stir everything well in a big bowl, first the dry ingredients, then olive oil, then boiling water.
Place on the baking tray, lined with a sheet of baking paper, and press out with your hands till almost covering the tray. The dough will be about ½ cm thick.
Bake in the middle of the oven for 55 min, till golden brown and crisp.
Let it cool and break or cut into desired shape.

Eat for example with some jam in the morning or with some of this full-coloured and spiced carrot chutney.


Carrot chutney 

1 tbsp coconut oil
1 tsp cumin seeds
1 onion, chopped fine
1 clove of garlic, chopped fine
1 tbsp freshly cut ginger
½  tsp curcuma
1 dry red chilly
1 tomato, chopped fine
1 ½ cups carrots, small cubes
½ tsp sea salt
Squeeze of lemon juice

Heat the coconut oil in a saucepan and add the cumin seeds.
When they start to splutter, add onion and fry them very softly for about 8 minutes till translucent. Then add ginger, garlic and curcuma and stir a few times.
Add red chilli , stir and add the tomatoes, fry them till they are soft.
Then it’s time for the carrots, salt and a few tablespoons of water.

Stir everything well and put a lid on top. Let it cook for 15 minutes, while stirring every 5. When they are cooked, turn of the gas, let it cool a bit, add some lemon juice to your taste and puree the chutney. Let it cool completely and enjoy!

My basic gluten-free cruesli – mijn basis glutenvrije cruesli (GF-DF-SF-V)

 
I like to share with you my basic gluten-free cruesli recipe.
I use this recipe for years now and the nice thing about it is, that it’s easy to make and easy to alter. You can add hazelnuts or walnuts instead of almonds, you can use buckwheat flakes or quinoa flakes and after baking it’s great to add some chocolate chips or dried blueberries or pieces of dried apricots or whatever dried fruit you have in your cupboard. Make it to you’re your own liking. Store it in an airtight glass container; it will keep for several months.

For a big jar you’ll need:

300g gluten free rolled oats (Provena)
20g gluten free rice puffs
75 g pumpkin and/or sunflower seeds
2 tbsp flax seeds
65 g roughly slivered almonds
1 tbsp butter, vegetable oil or coconut oil for vegans
¼ tsp sea salt
80 ml water
80 ml maple syrup or honey
1 tbsp vanilla extract

Pre heat the oven on 150 ˚C.
Put a piece of baking paper on the baking tray.

Mix the dry ingredients from oats till almonds in a big bowl.
In a small saucepan heat the wet ingredients from oil/butter till vanilla extract, stir till the sugar is dissolved. Pour into the dry ingredients and mix everything well.
Scoop onto the baking tray and spread well and put it in the middle of the oven.
Bake for 45 minutes and stir every 15 minutes so that  the granola bakes evenly.
Let it cool completely before storing into an airtight glass container.
Eat as you like, as a snack, as a topping, with fruits and yoghurt, for breakfast or pudding. 
 


Voor een grote glazen pot vol heb je het volgende nodig:

300g glutenvrije havervlokken
20g glutenvrije gepofte rijst
75 g pompoen- en/of zonnebloempitten
2 el lijnzaad
65 g grof gehakte amandelen
1 el boter, kokosolie of andere plantaardige olie
¼ tl zeezout
80 ml water
80 ml ahornsiroop of honing
1 el vanille extract

Verwarm de oven voor op 150 ˚C.
 Bekleed een bakplaat met een vel bakpapier.

Meng de droge ingrediënten van haver tot amandelen in een grote kom.
Verhit de natte ingrediënten van boter/olie tot vanille extract in een steelpan en roer tot de suiker is opgelost. Giet bij de droge ingrediënten en roer alles heel goed door.
Schep op de bakplaat en spreidt goed uit, schuif in het midden van de oven.
Bak de cruesli 45 minuten en schep iedere 15 minuten goed door, zodat de cruesli evenredig bakt. Laat helemaal afkoelen voordat je de cruesli overdoet in een luchtdichte glazen pot.
Eet zoals je wilt, een handje als snack, als topping op een toetje, bij de yoghurt, met fruit als ontbijt of lunch.

Green rice – groene rijst ( GF- SF)


At last the rain has come and the temperature is rising slowly!
Immediately nature is reacting: a week ago the common coots were almost nowhere nesting, but since yesterday it’s busy building nests in the water; there are three big woodpeckers chasing each other in the tops of the trees and at last the grass is starting to grow, my baby rabbits can start growing now. And the color of spring green is at last appearing, bit by bit.

To stay in this green theme I made a lovely bowl of green fake risotto, the recipe I once came up upon on the internet once but could not find again, so I made this interpretation.

Green rice/ fake risotto (2 pers)

1 big handful of rocket
3 tbsp salted butter, room temperature
1 spring onion
black pepper
a little lemon juice

2 cups of cooked brown basmati rice
1 tbsp of olive oil
1 onion, chopped
1-2 garlic cloves, chopped
small head broccoli, chopped and steamed
1 cup of frozen peas, cooked separately
10 cherry tomatoes, halved

Topping:
1 tbsp roasted pistachios
1 tbsp roasted pumpkin seeds or pine nuts
garden cress
smoked paprika powder


First make a nice smooth butter by blitzing rocket, butter, spring onion, pepper and lemon juice together in a small kitchen blender. Set aside.

Cook and steam the peas and broccoli, set aside.
Roast the nuts slowly for about 7 minutes in a dry pan, than set aside.

Heat the olive oil in a casserole and fry onion and garlic slowly with a pinch of salt. When they turn golden add the halved cherry tomatoes and bake together for some minutes. Than stir in broccoli and peas and heat together. Stir in the rice and begin adding the herbed butter, stir well and taste and add enough butter to your taste. When your satisfied with the taste, serve in a nice bowl and sprinkle with the nuts, seeds cress and smoked paprika.

Maybe serve together with a stuffed pepper.

groene rijst/nep risotto (2 pers)

1 grote handvol rucola
3 el gezouten roomboter, op kamertemperatuur
1 lente uitje
Zwarte peper
Citroensap

2 koppen gekookte bruine basmatirijst
1 el olijfolie
1 uitje, gehakt
1-2 tenen knoflook, gehakt
kleine stronk broccoli, gehakt en gestoomd
1 kop diepvrieserwtjes, gekookt
10 cherry tomaatjes, gehalveerd

Topping:
1 el geroosterde pistachenoten
1 el geroosterde pompoenpitten of pijnboompitten
tuinkers
gerookte paprikapoeder


Maak eerst een smeuïge kruidenboter door boter, rucola, peper en wat citroensap in een keukenmachine te mengen. Zet apart.

Rooster dan de noten en pitten zachtjes in een droge koekenpan, ongeveer 7 minuten.

Kook en stoom de erwtjes en broccoli.

Verwarm de olijfolie in een diepe pan en bak daarin zacht ui en knoflook met een snufje zout  tot ze goudbruin zijn. Voeg de tomaatjes toe en bak even mee. Voeg dan de erwtjes en broccoli toe, roer goed door elkaar. Voeg dan de rijst toe en dan lepel voor lepel de kruidenboter, laat goed warm worden, proef steeds of er nog wat bijmoet.
Als je tevreden bent met de smaak serveer de rijst dan in een mooie kom en bestrooi met de noten, zaden, tuinkers en gerookte paprikapoeder.

Chocolate granola (GF-DF) en Jazar bil na’na (GF-DF-SF)
















Ik heb het ontzettend druk gehad afgelopen tijd zoals je gemerkt heb. Op het blog gebeurde, helaas, niet veel. En deze post is ook meteen de laatste voorlopig, want ik ben een dikke maand weg.
Komende vrijdag vieren mijn ouders hun 50-jarige huwelijk en daarna vertrek ik naar India. Warmte, rust en vakantie!
Het eten in India is voor een coeliaak meestal geen probleem, dus neem ik alleen een zakje van deze overheerlijke, gezonde granola mee, maar dan zonder de chocola, want, sorry, het is daar 30 graden!!
Het recept komt van La Tartine Gourmande, een prachtige site over lekker eten, vaak glutenvrij en met schitterende foto’s, heel inspirerend, ga echt kijken!

Als ik terugkom is het lente! En een nieuw seizoen om naar uit te kijken.

Chocolate granola
300 g glutenvrije havermout (Provena)
20 g glutenvrije rice crispies
75 g pompoenzaad en/of zonnepitten
65 g gehakte amandelen
1 el boter of kokosolie
¼ tl zeezout
2 el bruine suiker
80 ml honing
80 ml water
¼ tl vanillezaad

80 g chocolate chips, glutenvrij of pure chocolade grofgehakt
2-4 el gedroogde cranberries

Bekleed een bakplaat met een vel bakpapier en verwarm de oven voor op 150˚C.

Verwarm in een steelpan water, honing, bruine suiker,zeezout, boter en vanillezaad tot de suiker is opgelost. Zet het vuur uit.

In een grote kom meng je de droge ingrediënten behalve de chocola en de cranberries.

Dan giet je de natte bij de droge ingrediënten en roer alles goed door elkaar.
Stort de massa op de bakplaat en bak 45 minuten in de oven, terwijl je regelmatig roert.
Laat helemaal afkoelen en voeg dan pas de chocola en cranberries toe. Bewaar in een luchtdichte pot of blik en geniet ervan in je yoghurt of zomaar een handje als gezonde snack!


Ik kan het toch niet laten nu ik bezig ben.
Dit heerlijke wortelgerechtje komt uit Marokko en is weer eens wat anders als bijgerecht, kleur op tafel en dan die naam:

Jazar bil na’na (2 pers. bijgerecht)

250 g winterwortel, geschild en in plakjes van ½ cm
2 el extra vergine olijfolie
zeezout
water
1 el verse munt, fijngehakt
1 teen knoflook, fijngehakt

Verhit de olie zacht in een steelpan en doe de wortelplakjes erbij. Roer alles 1 minuut goed door elkaar. Voeg dan wat zeezout toe en 1 cm water, breng het aan de kook, doe een deksel op de pan en zet het gas laag. Laat 10 minuutjes stoven, haal het deksel van de pan, laat nog 10 minuutjes sudderen en voeg dan de knoflook en munt toe. Laat alles nog 1-2 minuten stoven, proef en voeg evt. nog wat zout toe en peper. Klaar!
Zowel koud als warm, zeer mmmm.



I was very busy lately as you might have concluded. There was not much action, unfortunately, on the blog.
And this post will be the last for a while, because I’ll be off for a month.
Upcoming friday my parents are celebrating their 50th wedding anniversary and after that I’m leaving for India. Warmth, rest and holidays!
The food in India is most of the times not a problem for a person with celiac disease, so the only thing I’m taking with me is this really tasty and healthy granola, without the chocolate, it’s 30 degrees there, sorry!
The recipe comes from La Tartine Gourmande, a beautiful site about good food, often gluten free and illustrated with gorgeous pictures, very inspiring, check it out!

When I come back, it will be spring!! And a new season to look forward to.

Chocolate granola
300 g glutenfree rolled oats
20 g rice puffs
75 g pumpkin seeds and/or sunflower seeds
65 g slivered almonds
1 tbs butter or coconut oil
¼ tsp sea salt
2 tbs brown sugar
⅓ cup-80 ml honing
⅓ cup-80 ml water
¼ tsp vanilla seed

80 g dark chocolate chips, gluten free, or dark chocolate roughly chopped
2-4 tbs dried cranberries

Cover a baking tray with baking paper.
Pre-heat the oven on 150˚C.

In a pan you heat slowly the water, honey, brown sugar, butter, salt and vanilla seeds till the sugar is dissolved. Put aside for a moment.

In a large bowl you mix all the dry ingredients except the chocolate and cranberries, mix it well. Stir in the wet ingredients and mix. Transfer the mixture on the baking tray and put it in the oven for 45 minutes. Stir occasionally. Let it cool completely before you put in the chocolate chips and dried cranberries.
Keep it in a dry pot or container and enjoy it anytime you like with yoghurt or just a handful as a healthy snack!



I cannot help myself now I’m busy writing.
This lovely Moroccan carrot side dish is quick and easy and something else, it brings colour on your table and than this name:

Jazar bil na’na( 2 pers. side dish)

250 g winter carrots, peeled and cut in ½ cm slices
2 tbs extra virgin olive oil
sea salt
water
1 tbs fresh mint, chopped finely
1 clove garlic, chopped finely

Heat the olive oil on a low flame and stir fry the carrot slices for 1 minute. Then add some sea salt and 1 cm of water and bring it to the boil. Put a lid on the pan on low heat. Let it simmer for 10 minutes and then remove the lid and let it simmer for 10 minutes more. Add the garlic and mint and taste. Season with pepper and maybe some salt, wait 1-2 minutes: ready!
Cold or hot, both very yummie.

Seadies (GF- DF- SF - V)















Wat is het internet toch geweldig.
Ik vond weer 2 nieuwe sites over koken en gezond eten, niet per se gluten vrij, maar zeer inspirerend: http://glutendairyfree.co.uk/en http://www.anjasfood4thought.com/

Van Anja’s site maakte ik een bewerking van haar seaweed sesame squares.
Mijn zoon is allergisch voor zonnebloempitten, dus heb ik deze vervangen door pompoenpitten, rijk aan ijzer, magnesium en eiwit en nog lekker ook!
Ik heb ook wat zeezout toegevoegd, om een tegenhanger te bieden voor het zoete van de agavesiroop en de nori te accentueren.

Het is een snel klaar recept, wel een beetje knoeien, maar het resultaat is een gezond knapperig, mits koel en droog bewaard, goed houdbaar en verslavend lekkere glutenvrije snack!!
Maken dus en meenemen in een trommeltje voor een gezond tussendoortje!

Seadies (9 stuks)

30 g zwart sesamzaad
30 g wit sesamzaad
30 g pompoenpitten
30 g amandelen
1 ½ vel nori
60 ml agavesiroop
¼ tl zeezout

Verwarm de oven voor op 160˚C.

Rooster de zaden een voor een in een droge koekenpan met een dikke bodem, ongeveer 5 minuten. Schud af en toe.
Snijd de amandelen met een scherp mes in de lengte in schilfers.
Doe alle zaden en noten in een kom en voeg het zout toe en knip de nori erboven met een schaar in kleine stukjes.
Meng alles goed en voeg dan de agavesiroop toe. Meng nogmaals goed.

Leg het “deeg” op een bakplaat die je hebt bedekt met een stuk bakpapier en gebruik een siliconen spatel om het mengsel uit te spreiden in een vierkant van 0,8 – 1cm dik. Als het te plakkerig is, maak dan je spatel af en toe nat.
Bak de Seadies 15-20 minuten in het midden van de oven. Laat wat afkoelen op de bakplaat en snijd in 9 stukken als het baksel nog warm is. Gebruik een superscherp mes of een pizzasnijder.
Laat helemaal afkoelen en bewaar in een luchtdicht blik.

My son has an allergy for sunflower seeds so I replaced them for pumpkin seeds, rich in iron, magnesium and protein and very tasty too!
I added some sea salt to create a counterpart for the sweetness of the agave syrup and to accentuate the nori.

It’s a quick recipe, a bit messy, but the result is a healthy and crunchy, provided that you store them cool and airtight, and addictively good gluten free snack!!
Go to the kitchen and make them!
Take them with you in a small container to work, gym or park for a healthy bite!

Seadies ( 9 pcs)

30 g black sesame seeds
30 g white sesame seeds
30 g pumpkin seeds
30 g almonds
1 ½ sheet of nori
60 ml agave syrup
¼ tsp sea salt

Preheat the oven on 160˚C.
Roast the seeds one at a time for about 5 minutes in a dry frying pan with a heavy base. Stir occasionally.
Slice the almonds lengthwise after roasting.
Put all the seeds and nuts in a big bowl and mix with the sea salt. Cut the nori sheets in small pieces, I use a pair of scissors and mix with the rest. Then add the agave syrup and mix well.

Transfer the mixture to a baking tray which is covered with parchment paper and spread it evenly with a silicon spatula. When it is too sticky, wet the spatula from time to time.
Spread it into a square with a thickness of 0,8 – 1 cm and transfer to the oven. Bake the Seadies 15-20 minutes. Let them cool down on the baking tray and cut them into squares when they are still warm. Use a very sharp knife or a pizza cutter.
Store them when they are competely cool in a dry food container
