Vanilla almond cupcakes – vanille amandel cupcakes (GF- SF)


Just before I fly to Rome, that is tomorrow!!, I’ll give you this so good recipe from Elana Amsterdam’s The Gluten-Free Almond Flour Cookbook.
It is just right, the only things I changed was the amount of agave nectar: I halved it and that was really enough for me and I use butter instead of grapeseed oil.

I am going to Rome with my son, as a present for his passed exams, so tomorrow this same time I will be enjoying an aperitivo on a small piazza in Trastevere. I have some packing to do, and some cooking of course, but then I am ready to go. For a celiac it is said not to be bad, I will find out and let you now when I am back. I found some addresses on this site. My hotel provides me a with a gluten-free breakfast and very near to my hotel there are 2 gluten-free restaurants and even a bakery!!

Ok, to the recipe now, I’ll take some for breakfast tomorrow cause we fly at 07:00 a.m.!

Vanilla almond cupcakes (9 pcs)

2 large organic eggs, separated in 2 bowls
60 ml melted butter
60 ml agave nectar
1 tbsp vanilla extract
1 tbsp freshly squeezed lime/lemon juice
275 g blanched almond flour, fine
¼ tsp sea salt
½ tsp tartaric acid baking powder

Pre heat the oven on 175 ˚C.
Line 9 muffin cups with paper liners.

Mix in a bowl the almond flour, sea salt and baking powder an d set aside.

With a hand mixer whisk the egg yolks till pale yellow, then add butter, agave nectar, vanilla extract and lemon juice and whisk for a further 2-3 minutes.

Clean your mixing gear and dry well before you whisk the egg whites to stiff peaks with a pinch of salt. Gently fold the egg whites into the yolk mixture with a spatula.

Then add the dry ingredients and fold them in gently. The purpose of folding is to keep the mixture airy. Scoop the batter into the prepared muffin cups.

Bake the cupcakes for 20-25 minutes till the tops are golden brown and an in the middle inserted toothpick comes out clean.
Let the cupcakes cool for about 20 minutes in the mold before getting them out.
They are great!


Vanille amandel cupcakes (9 stuks)

2 grote biologische eieren, gesplitst in 2 kommen
60 ml gesmolten boter
60 ml agave nectar
1 el vanilla extract
1 el versgeperst limoen/citroensap
275 g amandelmeel, fijn
¼ tl zeezout
½ tl wijnsteenzuur bakpoeder

Verwarm de oven voor op 175 ˚C.
Doe 9 papieren vormpjes in een muffin vorm.

Meng in een kom het amandelmeel, zout en bakpoeder en zet apart.

Met een handmixer mix je de eidooiers tot ze lichtgeel zijn en dan mix je er de boter, agave nectar, vanille extract en limoen/citroensap door, ongeveer 2-3 minuten.

Was de mixhaken goed en droog ze en mix dan de eiwitten met een mespuntje zout tot stijve pieken. Vouw het eiwit met een spatel in het eidooiermengsel.
Voeg dan het meelmengsel toe en schep er voorzichtig door. De bedoeling is dat het mengsel luchtig blijft. Verdeel het beslag over de muffin cups.

Bak in het midden van de oven 20-25 minuten, tot de bovenkant goudbruin ziet en een saté prikker die je in het midden steekt er schoon uitkomt.
Laat de cupcakes 20 minuten afkoelen in de vorm en haal ze er dan pas uit.

Coconut macaroons with a chocolate drizzle – kokosmakronen met een chocolade drizzle (GF-DF-SF)


I was craving for a cookie and wanted to make those so good-looking French macarons, but reading on the internet I came across the “old-fashioned” coconut macaroons, which I used to make at home with my mum.


So easy to make, so flavorsome, naturally gluten-free and ready in a sec!

When they were in the oven I made a lovely chocolate glaze, also without adding sugar, I give them 3 MMM!


Coconut macaroons (8 pcs)

75 g shredded coconut
60 ml agave syrup
1 tsp vanilla extract
1 organic egg white
1 pinch of salt



Pre heat your oven on 180˚C and prepare a baking tray with a sheet of baking paper.

Beat the egg white with the salt till it forms soft peaks.
Fold in the coconut, agave syrup and vanilla extract carefully.

With your hands form 8 small balls which you flatten softly into 8 flat cookies.
Bake your macaroons lightly golden in the middle of the oven, not too brown, the agave will turn bitter then.
Let them cool completely and drizzle with the chocolate glaze.


With the left-over egg yolk you can make this great aioli or you can freeze it to use later.


Chocolate glaze (GF-SF)

35 g chocolate chips or chopped bitter chocolate
1 tsp coconut oil
1 tsp butter
1 tsp brown rice syrup
¼ tsp vanilla extract

Melt everything except the vanilla extract au bain-marie and mix till it forms a beautiful shiny glaze. Take from the heat and stir in vanilla extract. That’s it, easy and delicious.



Kokosmakronen ( 8 stuks)

75g geraspte kokos
60 ml agavesiroop
1 tl vanille extract
1 biologisch eiwit
snufje zout


Verwarm de oven voor op 180 ˚C en bekleed een bakblik met bakpapier.

Met een handmixer mix je het eiwit met het zout tot ze zachte pieken vormt.
Voeg kokos, vanille en agavesiroop toe en spatel alles voorzichtig door elkaar.

Vorm 8 balletjes met je handen en leg ze op de bakplaat, terwijl je ze zachtjes platdrukt.
Bak je makronen in het midden van de oven tot ze licht goudbruin zijn, bak ze niet te bruin, dan kan de agave bitter gaan smaken.

Laat ze afkoelen en drizzle(?) de chocolade glazuur erover heen.

Met de overgebleven eidooier kin je deze heerlijke aioli maken of vries hem in voor later gebruik.



Chocolade glazuur (GF-SF)

35 g chocolate chips of gehakte bittere chocolade
1 tl kokosolie
1 tl boter
1 tl bruine rijststroop
¼ tl vanille extract

Smelt alles, behalve de vanille extract, in een pan au bain-marie. Roer tot een glanzende saus ontstaat. Haal van het vuur en roer de vanille extract erdoor.
Zo simpel!

Jam cookies - jam koekjes (GF-DF-SF-V)


I made jam cookies before, they were based on butter cookies from Normandy. Today I wanted a healthy cookie, no sugar, no butter, only good ingredients. To be honest, they are great, I love them, they are so good, we ate them all, luckily I made only 10 pieces.

Jam cookies (10 pcs)

125 g blanched almond flour
20 g coconut flour
¼ tsp sea salt
2 tbsp agave syrup
½ tsp vanilla extract
60 ml coconut oil, melted
sugar free jam of your choice

Preheat the oven on 180 ˚C.

In a bowl mix almond flour, coconut flour and salt.
In a small bowl whisk together coconut oil, agave syrup and vanilla extract.
Stir the wet ingredients into the dry and spoon through thoroughly. The dough will come together.
Make 10 small balls and form with your hand and thumb a cookie with a small well in the middle. Put them on a with baking paper lined baking tray and scoop a small teaspoon of your favorite jam in the middle. Bake them for 10-12 minutes till the edges turn golden. Let the cookies cool for at least an hour before serving. They are too good to keep!


Jam koekjes (10 stuks)

125 g amandelmeel
20 g kokosmeel
¼ tl zeezout
2 el agave siroop
½ tl vanille extract
60 ml kokosolie, gesmolten
suikervrije jam naar keuze

Verwarm de oven voor op 180 ˚C.

Meng in een kom de amandelmeel, kokosmeel en het zeezout door elkaar.
Mix in een kleine kom de kokosolie, agave siroop en vanille extract met een garde goed door elkaar en giet bij het amandelmeel mengsel. Roer met een pollepel tot het deeg zich vormt.
Maak 10 balletjes ter grootte van een pingpongbal en vorm met je hand en duim koekjes met een kuiltje in het midden. Leg ze op een met bakpapier bekleedde bakplaat en schep een klein lepeltje van je favoriete jam in het kuiltje. Bak de jam koekjes 10-12 minuten tot de randjes goudbruin kleuren. Laat ze zeker 1 uur afkoelen voor je ze serveert. Ze zijn echt tè lekker om te bewaren!

Seadies (GF- DF- SF - V)















Wat is het internet toch geweldig.
Ik vond weer 2 nieuwe sites over koken en gezond eten, niet per se gluten vrij, maar zeer inspirerend: http://glutendairyfree.co.uk/en http://www.anjasfood4thought.com/

Van Anja’s site maakte ik een bewerking van haar seaweed sesame squares.
Mijn zoon is allergisch voor zonnebloempitten, dus heb ik deze vervangen door pompoenpitten, rijk aan ijzer, magnesium en eiwit en nog lekker ook!
Ik heb ook wat zeezout toegevoegd, om een tegenhanger te bieden voor het zoete van de agavesiroop en de nori te accentueren.

Het is een snel klaar recept, wel een beetje knoeien, maar het resultaat is een gezond knapperig, mits koel en droog bewaard, goed houdbaar en verslavend lekkere glutenvrije snack!!
Maken dus en meenemen in een trommeltje voor een gezond tussendoortje!

Seadies (9 stuks)

30 g zwart sesamzaad
30 g wit sesamzaad
30 g pompoenpitten
30 g amandelen
1 ½ vel nori
60 ml agavesiroop
¼ tl zeezout

Verwarm de oven voor op 160˚C.

Rooster de zaden een voor een in een droge koekenpan met een dikke bodem, ongeveer 5 minuten. Schud af en toe.
Snijd de amandelen met een scherp mes in de lengte in schilfers.
Doe alle zaden en noten in een kom en voeg het zout toe en knip de nori erboven met een schaar in kleine stukjes.
Meng alles goed en voeg dan de agavesiroop toe. Meng nogmaals goed.

Leg het “deeg” op een bakplaat die je hebt bedekt met een stuk bakpapier en gebruik een siliconen spatel om het mengsel uit te spreiden in een vierkant van 0,8 – 1cm dik. Als het te plakkerig is, maak dan je spatel af en toe nat.
Bak de Seadies 15-20 minuten in het midden van de oven. Laat wat afkoelen op de bakplaat en snijd in 9 stukken als het baksel nog warm is. Gebruik een superscherp mes of een pizzasnijder.
Laat helemaal afkoelen en bewaar in een luchtdicht blik.

My son has an allergy for sunflower seeds so I replaced them for pumpkin seeds, rich in iron, magnesium and protein and very tasty too!
I added some sea salt to create a counterpart for the sweetness of the agave syrup and to accentuate the nori.

It’s a quick recipe, a bit messy, but the result is a healthy and crunchy, provided that you store them cool and airtight, and addictively good gluten free snack!!
Go to the kitchen and make them!
Take them with you in a small container to work, gym or park for a healthy bite!

Seadies ( 9 pcs)

30 g black sesame seeds
30 g white sesame seeds
30 g pumpkin seeds
30 g almonds
1 ½ sheet of nori
60 ml agave syrup
¼ tsp sea salt

Preheat the oven on 160˚C.
Roast the seeds one at a time for about 5 minutes in a dry frying pan with a heavy base. Stir occasionally.
Slice the almonds lengthwise after roasting.
Put all the seeds and nuts in a big bowl and mix with the sea salt. Cut the nori sheets in small pieces, I use a pair of scissors and mix with the rest. Then add the agave syrup and mix well.

Transfer the mixture to a baking tray which is covered with parchment paper and spread it evenly with a silicon spatula. When it is too sticky, wet the spatula from time to time.
Spread it into a square with a thickness of 0,8 – 1 cm and transfer to the oven. Bake the Seadies 15-20 minutes. Let them cool down on the baking tray and cut them into squares when they are still warm. Use a very sharp knife or a pizza cutter.
Store them when they are competely cool in a dry food container

The ultimate cookie (for now!) GF-DF-SF

Als ik geen koekjes meer heb dan word ik onrustig.
Ik wil per se een koekje bij de thee. Maar vandaag was mijn amandelmeel op en ook mijn kokosolie, dus eerst naar de stad voor een rondje fietsshoppen, gelukkig schijnt de zon en voelt het fris en gezond.

Al heel lang heb ik mijn puber beloofd om koekjes te ontwikkelen die je kunt uitsteken met een cookiecutter. Hij had deze namelijk voor me meegenomen uit New York, afgelopen herfst. Jee, zo lang geleden al weer!

Glutenvrije koekjes hebben toch echt de neiging om uit elkaar te vallen, dus bleef het bij beloven en nadenken. Vorige week heb ik de stap genomen, o.k., nu ga ik ze maken! We hebben ze meteen opgegeten, dus vandaag opnieuw aan de slag.

Deze koekjes zijn echt zó simpel, maar zó lekker!
Ik heb ze gedoopt in chocolade, maar ook zonder zijn ze “gewoon” lekker.
Knapperig en zeer smaakvol.

The ultimate cookie (1 bakplaat en nog wat)

150 g amandelmeel (zeer fijn gemalen)
100 g kokosmeel
½ tl zeezout
⅛ tl vanillezaad
¼ cup agavesiroop
¼ cup + 2 el gesmolten kokosolie

Verwarm de oven voor op 180˚C.

Meng in een kom de 2 meelsoorten goed door elkaar met het zeezout en het vanillezaad.
Maak een kuiltje in het midden en voeg de agavesiroop en de kokosolie toe, roer eerst en kneed dan tot een samenhangend deeg. Het is een klein beetje korrelig, dat geeft niet. Druk aan tot een deegbal en laat het 30 minuten rusten.

Rol het deeg uit op een vel bakpapier. Leg op het deeg een vel huishoudfolie.
Maak de deegplak zo dun mogelijk en steek met een cookiecutter koekjes uit of snijd rechthoekjes met een pizzasnijder.

Leg de cookies op een bakplaat die je bedekt met bakpapier en bak ze in het midden van de oven 5-7 minuten tot de randjes gaan bruinen. Blijf erbij want ze verbranden snel!!




When I don’t have any cookies left I become restless.
I really need a cookie with my tea.
But today I was out of almond meal and coconut oil, so I first had to go on my bike in town to fetch everything. Luckily the sun was shining and it was feeling fresh and healthy outside.

For a long time I promised my adolescent son to develop cookies which you can cut out with a cookie cutter. He brought me these ones from New York last fall. Wow, how time flies!

Gluten free cookies have the tendency to fall apart easily, so for a long time I kept on promising and thinking about it. Last week I took the step and I made these wonderful cookies. We ate them all, so today I made another batch.

These cookies are dead simple to make and gorgeous!
I dipped some of them in melted chocolate, but “plain” they are “plainly” good.
Crunchy and very tasteful.

The ultimate cookie ( 1 baking tray and some more)

150 g almond flour (finely grounded)
100 g coconut flour
½ tsp sea salt
⅛ tsp vanilla pod seeds
¼ cup agave syrup
¼ cup + 2 tbsp coconut oil Preheat the oven on 180˚C.

Mix the 2 flours in a bowl together with the sea salt and the vanilla seeds.
Make a hole in the middle and pour in the agave syrup and coconut oil, stir in first and then knead it by hand till the dough comes together. It will stay a bit crumbly, no problem, just press it into a ball of dough and let it rest for 30 minutes.

Roll out the dough on a sheet of baking paper. Put a sheet of cling foil on top of the dough.
Make the dough as thin as you can, ¼ to ⅛ inch, and cut the cookies with a cookie cutter or just cut rectangles with a pizza cutter!

Put the cookies on a baking tray covered with baking paper and bake them in the middle of the oven about 5-7 minutes until the edges begin to brown. Stay with them, because they burn easily!
