Crunchy chocolade-haver-boekweitcookies – crunchy chocolate oat and buckwheat cookies (GF-DF-V)



Hallo allemaal,

Vorige week was ik in Gent, de dochter van mijn vriendin had er een expositie. In een oude wasserij, onverwarmd, nat en koud dus. Gelukkig had ik op internet gelezen dat Madam Bakster in de buurt zat en daar heb ik heerlijk kunnen opwarmen onder het genot van een mooi glas thee en een glutenvrije reep.
Helaas gebruikt Madam Bakster geen glutenvrije haver, anders zou er nog veel meer keus zijn uit de taartjes die zij daar vers bakt. Uit haar boek, alle recepten 100% plantaardig, bakte ik mijn versie, want ze gebruikt vaak ook speltmeel, van haar kruimelige chocolade-havercookies.



Je hebt nodig:
1 lijnzaad ei (maal 1 el lijnzaad fijn en voeg 3 el water toe, laat een paar minuten staan zodat een slijmerig papje ontstaat)
63 g havervlokken, gemalen tot meel
5 g wijnsteenzuurbakpoeder
35 g rietsuiker
1 snuf zout
75 g kokosolie (halfvast)
1 tl vanille-extract
1 tl kaneel
50 g walnoten, grofgehakt
50 g chocolade, grofgehakt
15 g havervlokken
evt. 1-3 el water, als het deeg te droog blijkt

hoe maak ik ze:
Maak het lijnzaad ei en zet opzij.
Verwarm de oven voor op 180°C.

Meng havermeel, boekweitmeelmix, bakpoeder, rietsuiker en zout. Voeg de halfvaste kokosolie toe en kneed met de hand of keukenmachine tot de kokosolie goed is vermengd en geen klontjes meer bevat.
Voeg dan het lijnzaad ei, kaneel en vanille extract toe en kneed verder. Voeg eventueel 1 tot 3 eetlepels water toe om het deeg wat smeuïger te maken. Dit is zwaar werk!

Voeg dan gehakte walnoten en chocolade toe met de 15 g havervlokken. Kneed tot een stevig geheel. Vorm hieruit 12 balletjes, maak ze plat en leg op een met bakpapier beklede bakplaat. 

Bak de cookies in het midden van de oven, ongeveer 15-20 minuten, tot de randjes en onderkant goudbruin worden.

Laat ze afkoelen op een bakrekje. Ze zijn echt zalig en ik hou van dat lichte kokosaccent door het gebruik van eerste persing kokosolie.



Last week I visited Gent, to help out the daughter of my friend who had an exhibition in an old, abandoned laundry factory, without any heating. Cold and wet it was. Fortunately I read on the internet that Madam Bakster (something like Baking Lady) had opened a coffee bar nearby so I could warm up with a very nice cup of tea and a gluten-free bar. It’s a pity that Madam Bakster does not use gluten-free oatmeal so I could not taste one of her other sweet treats. But I bought her book, the recipes are 100% plant-based, and I adapted one of the recipes into these very tasty, crunchy chocolate chip oatmeal cookies.

You need:
1 flax egg (grind 1 tbsp of flax seeds fine, mix with 3 tbsp water, set aside for some minutes till it forms a slimy paste)
¾ cup oat flakes ground into flour
1 tsp baking powder
2 heaped tbsp of cane sugar
1 pinch of salt
¾ cup coconut oil, softened
1 tsp vanilla extract
1 tsp cinnamon
½ cup chopped walnuts
⅓ cup chopped dark chocolate
¼ cup oat flakes
1-3 tbsp of water, when the dough turns out too dry


 How to:
First make the flax egg and set aside.
Pre-heat the oven on 375 °F/180°C.

Mix oat flour, buckwheat flour mix, baking powder, cane sugar and salt. Add the softened coconut oil and start kneading till the coconut oil is well incorporated without any lumps.
Add the flax egg, vanilla extract and cinnamon and knead, by hand or machine, into a sturdy dough. This is hard work! 
When the dough stays too dry add 1-3 tablespoon(s) of water to the mixture.
Then add chopped walnuts and chocolate and the oat flakes and combine everything.

Make 12 small balls and flatten them out into nice round cookies and put them on a baking tray with baking paper.
Bake in the middle of the oven for about 15-20 minutes till the edges and bottom are colouring golden brown.


Let them cool on a baking rack. They are really delicious and I love the hint of coconut from the first pressing coconut oil.

witte bonen burgers met geroosterde rode paprikasaus - white bean burgers with a red bell pepper sauce (GF-SF)


Deze heerlijke burgers vergen wat voorbereiding dus misschien een fijn recept voor het weekend. Maak er dan meteen een feestje van en rooster zoete aardappelfrites in de oven.

Voor de burgers:
160 g gare witte bonen
100 g verse witte kaas, feta of halloumi is ook lekker, maar let op het zout!
1 uitje
1 teen knoflook
1 el gember
40 g wortel
1 el bleekselderij
1 el geroosterde rode paprika
55 g havervlokken, 2 x pulsen in keukenmachine
1 tl tamari
peper en zout
1 ei

Rooster eerst de rode paprika(zie saus).

Ondertussen prepareer je de rest:
Spoel de bonen af en laat ze uitlekken in een vergiet.
Snijd de kaas in piepkleine stukjes.
Snijd ui fijn en knoflook en gember zeer fijn.
Rasp de wortel en snijd de bleekselderij in kleine blokjes.
Pulseer de havervlokken 2 x tot een grof meel.
Snijd van de geroosterde paprika 1 el in kleine blokjes.



De burgers:
Fruit ui, knoflook en gember in wat olijfolie in een kleine koekenpan en laat zeker 10, liefst 20 minuten zachtjes karameliseren. Voeg halverwege wortel en bleekselderij toe.
Haal van het vuur en breng op smaak met tamari, peper en zout. Voeg de havervlokken en rode paprikablokjes toe en als het mengsel genoeg is afgekoeld de kaasblokjes en het ei. Meng en vorm met natte hand 4 burgers. Leg ze op een bord en laat minimaal 1 uur opstijven in de koelkast.


Ondertussen zijn je paprika’s geroosterd en afgekoeld. Maak de saus.
Je hebt nodig:
1-2 rode paprika
zout en peper
1 tl geroosterde komijnpoeder
2 lente-uitjes
1 teentje knoflook
1 el rode wijnazijn

Rooster eerst de rode paprika op een lage gaspit of in de oven of op de BBQ tot het vel zwartgeblakerd is. Draai steeds. Doe de paprika in een papieren of plastic zak en laat wat afkoelen. Pel het vel eraf en de steelaanzet, scheur open en verwijder zaadjes en zaadlijsten. Spoel niet af, daarmee verdwijnt de smaak ook.
Pureer de paprika met de rest van de ingrediënten en proef en voeg naar smaak nog wat toe.

Verhit wat olijfolie in een anti-aanbak koekenpan en bak de burgers 5 minuten per kant tot ze mooi goudbruin zijn.
Serveer op een glutenvrijbroodje met wat rucola en de prachtige rode paprikasaus.


For the burgers:
160 g cooked white beans
100 g fresh hard white cheese, feta or halloumi will be nice too, but watch the salt!
1 onion
1 clove of garlic
1 tbsp ginger root
40 g carrot
1 tbsp celery stalk
1 tbsp roasted red pepper
55 g pulsed oat flakes
1 tsp tamari
salt and pepper
1 egg

Start with roasting your red pepper(see below):

In the meantime prepare the rest of the ingredients:
Drain the beans. Cut the fresh cheese in tiny cubes. Chop onion fine and garlic and ginger very fine.
Grate the carrot and cut the celery in tiny cubes.
Pulse oat flakes 2 times in a food processor in a coarse flour.
Dice 1 tablespoon of the roasted bell pepper into small cubes.

Prepare the burgers:
Fry onion, garlic and ginger in a little olive oil for at least 10 minutes, on very low heat. 20 minutes is even better to bring out the flavours. Add carrot and celery halfway.
From the heat add tamari, pepper and salt to your taste. Then the oat flour and bell pepper cubes. When the mixture has cooled down, add cheese cubes and the egg. Mix well and form with wet hands 4 burgers. Put them on a plate and let them set in the fridge for at least 1 hour.

In the meantime your bell peppers are done  and you can make your sauce.

You need:
1-2 red bell peppers
salt and pepper
1 tsp toasted cumin powder
2 spring onions
1 clove of garlic
1 tbsp red wine vinegar

Roast the peppers on your lowest gasflame or in the oven or on the BBQ till the skin is blackened. Turn every time. Let it cool in a paper or plastic bag. Then peel off the charred skin, tear open and remove seeds and stalk. Do not wash, the smoky taste will disappear!

Put the pepper with the rest of the ingredients in a food processor and blend into a tasty sauce. Put aside.

Heat some olive oil in a frying pan and bake the burgers 5 minutes on each side till they are golden brown.

Serve on a gluten-free bun or with some rocket and the delicious vibrant red pepper sauce!

on-the-road ripe banana oats cookies – onderweg rijpe banaan haverkoekjes (GF-DF-SF-V)




Nog even een receptje voordat ik op vakantie ga:

Je hebt nodig:
3 overrijpe bananen, met bruine vlekjes!
½ cup/125ml notenpasta, welke je wilt
2 cups/500ml glutenvrije havervlokken
¼ cup/60ml kokosmeel
2 el versgemalen lijnzaad
1/2 tl grof zeezout
¼ cup/60ml rozijnen
¼ cup cocao nibs of gehakte noten
2 el olijfolie

Verwarm de oven voor op 175°C en leg een vel bakpapier op een bakplaat.

Prak de bananen tot ze heel vloeibaar zijn. Voeg dan de rest van de ingrediënten toe en meng tot een geheel. Vorm met je hand 10 koeken die je op de bakplaat een beetje plat drukt; ze lopen niet uit tijdens het bakken.

Bak ze in het midden van de oven tot de randjes lichtbruin worden, ongeveer 20-25 minuten.

Laat afkoelen en bewaar in een trommel of vries een gedeelte in. Ze zijn gemakkelijk voor een onderweg snack of snel klaar ontbijt!



You’ll need:
3 ripe bananas, with brown spots!
½ cup of any nut butter
2 cups gluten-free rolled oats
¼ cup coconut flour
2 tbsp freshly ground flax seed
1/2 tsp of course sea salt
¼ cup of raisins
¼ cup of cocao nibs or chopped nuts
2 tbsp olive oil

Preheat the oven on 350°F/175°C and put a sheet of baking paper on a baking tray.

With a fork, mash the bananas till very fluid.
Add all ingredients and mix till everything is incorpaorated. Form 10 cookies and press them a little flat on the baking tray, they won’t flatten out more while baking.

Bake them in the middle of the oven for about 20-25 minutes, till the sides turn golden. Let them cool and store them in a airtight container or freeze a part. They are an easy on-the-go snack or breakfast!

rabarber en havermout - rhubarb and oatmeal (GF)


Ook al ben ik niet zo’n rabarberfan, deze met sinaasappelsap gestoofde rabarber als ontbijt met warme havermout, eet ik met veel plezier!
Het lijkt alsof het sinaasappelsap het wrange van de rabarber enigszins neutraliseert, de textuur verandert een beetje.
Ik doe er ook een flinke scheut biologische room bij, wat ook helpt ;-)

Ook al is het een fraaie plant


Hoe maak je de rabarberstoof:
3 flinke stengels rabarber, gewassen en gehaard
3 el rietsuiker
1 grote sinaasappel, uitgeperst
1 kaneelstok
1 steranijs

Was, onthaar en snijd de rabarber in stukjes van 1 cm. Hiermee bedoel ik dat je de ruwe, stugge vezels eraf trekt. Dat gaat meestal vanzelf als je de rabarber in stukjes snijd.

Breng het sap met de suiker en de kruiden aan de kook en voeg de stukjes rabarber toe. Breng weer aan de kook en laat 5 tot 10 minuten zachtjes koken tot de rabarber uit elkaar valt. Laat afkoelen met alle kruiden erin, zodat de smaak zich verder ontwikkelt.

Kook havermout zoals je gewend, rooster of pel wat noten, schep havermout in een kom, de rabarber er op, een scheut room en bestrooi met nootjes. Eet-ze!




Rhubarb and oatmeal

Although I am not a great fan of rhubarb, this in orange juice stewed oatmeal is delicious. The juice somewhat neutralizes the astringent quality of the rhubarb. And I add some organic cream as well, what will help too :-)

For the rhubarb stew:
3 big stalks of rhubarb, washed and haired
3 tbsp cane sugar
1 big orange, juiced
1 cinnamon stick
1 star anise

Bring juice, sugar and spices to the boil and add the cleaned rhubarb cut in 1 cm slices. Stir well and let it simmer for 5-10 minutes, till the rhubarb is soft. Let it cool, with the spices in, so the flavour develops further.


Cook oatmeal as you are used to.
Toast or cut some nuts.

Take a bowl, scoop the oatmeal in, add rhubarb, nuts and cream. Enjoy!

glutenvrije pompoentaart – gluten free pumpkin pie (GF-DF-V-SF)


Deze pompoentaart maak ik al een jaar of wat en na veel geproef denk ik dat het recept nu helemaal goed is.

Neem de tijd om de taart te maken, dan heb je er nog meer plezier van. 

Ik maak eerst de pompoenpuree door een New England sugar pie pompoen te roosteren. Tijdens dit proces kun je vast de bodem maken. Of je roostert de pompoen een dag eerder, wel zo makkelijk.

In de bodem zit geen suiker, maar wil je dit wel voeg dan gerust 1 of 2 eetlepels rietsuiker toe.
Her recept is nu gezoet met ahornsiroop en is ook veganistisch door het gebruik van plantaardige melk en olie, zoals kokosmelk, amandelmelk, maar je kunt natuurlijk ook koe- of geitenmelk gebruiken en boter. Pas het recept aan zoals jou het beste uitkomt.


Je hebt nodig:
1 sugar pie pompoen

voor de bodem:
105 g hele amandelen
60 g glutenvrije havervlokken
60 g boekweitmeel
½ tl grof zout (geeft een zoute crunch!)
2 el gesmolten kokosolie of boter
2 el (plantaardige) melk
voor de vulling:
500 ml pompoenpuree
60 ml ahornsiroop
60 ml (plantaardige) melk
2 el gesmolten kokosolie of boter
½ tl agar-agar poeder
2 el maizena
1 volle tl speculaaskruiden
snufje zee zout
citroensap naar smaak
citroenrasp naar smaak

Maak eerst de pompoenpuree door een sugar pie pompoen door midden te snijden, te ontpitten en met de snijkant naar beneden op een bakplaat, ongeveer 30-40 minuten te bakken in een 200°C hete oven. Prik af en toe met een vork of voel met je hand of het vruchtvlees al gaar en zacht is.


Laat afkoelen, houdt 500 ml gare vruchtvlees apart en doe de rest in een af te sluiten bakje en bewaar in de koelkast. Je kunt bijvoorbeeld deze lekkere pompoenmuffins bakken!


Zet de oven op 180°C.

de bodem:
Ik bak deze taart in een rechthoekige Pyrex vorm van 20 x 16 cm waarin ik op de bodem een stukje bakpapier leg.
In een kleine keukenmachine pulseer je eerst de amandelen tot grove korrels, voeg dan de havervlokken toe en pulseer een aantal keren mee, dan het boekweitmeel, zout, olie en melk erbij en pulseer tot het samenkomt en lijkt op nat zand. Stort in de vorm en druk gelijkmatig aan. Zet opzij.


de vulling:
mix alle ingrediënten voor de vulling goed door elkaar, giet op de bodem en strijk uit met een spatel.

Bak de pompoentaart in het midden van de oven die op 180°C staat, 35-45 minuten, tot hij goudbruin is en redelijk stevig aanvoelt en wat scheurtjes vertoont. 


Laat helemaal afkoelen, hij stijft dan op, voor je hem in mooie blokjes snijdt.
Ik vind de taart de volgende dagen zelfs nog beter van smaak!
Geniet!


You’ll need:
1 sugar pie pumpkin

for the crust:
¾ cup whole almonds
2/3 cup gluten free rolled oats
1/3 cup buckwheat flour
½ tsp course sea salt (gives a nice crunch!)
2 tbsp melted coconut oil
2 tbsp milk, dairy-free or not
for the filling:
2 cups pumpkin puree
¼ cup maple syrup
¼ cup non-dairy milk
2 tbsp melted coconut oil or butter
½ tsp agar-agar powder
2 tbsp maizena
1 heaped tsp pumpkin pie spices
pinch of salt
sqeeze of lemon juice
zest of ½ lemon

First make the pumpkin puree by halving the sugar pie pumpkin, deseeding it and baking with the cut side down on the baking tray for about 30-40 minutes in a 200°C hot oven. Prick with a fork or touch with your hand regularly to see if it’s soft and done.


Let it cool, reserve 2 cups and store the rest in an airtight container in the fridge. Or bake these tasty pumpkin muffins!

the crust:
I bake the pie in a rectangular Pyrex form of 20 x 16 cm. On the bottom I put a piece of baking paper.

In a small food processor pulse the almonds till coarse, then add the gluten free rolled oats and pulse a couple of times, then add the rest of the ingredients: buckwheat flour, salt, coconut oil and milk till the dough comes together and looks like wet sand. Transfer the dough into the form and press evenly with your hands. Set aside.

the filling:
Mix all ingredients for the filling well, pour or scoop unto the crust and with a spatula make it even.
Bake in the 180°C hot oven in the middle for 35-45 minutes, till golden brown and rather firm to the touch. 


Let the pumkin pie cool completely, it will firm up while cooling, till you slice it into squares.
I think the taste improves after a day or two!

My daily bread – mijn dagelijks sneetje brood(GF-DF-SF-V)


I just realized I never wrote a post about my daily bread.
After making lots of gluten free, mainly flat breads and without yeast, I decided I don’t care a lot any more for bread and instead started eating oatmeal in the morning and making something warm, a soup, some left-over lentils, for lunch and cook again in the evening. Quite to my liking!

But last year I found this recipe for a bread. It’s called Life-changing loaf of bread and that’s it for me too since then.
I make it every week now or even twice a week, depending of the season and the things I have to do. It has great taste, it’s very easy to make, to keep, to take away, to make toast with, to freeze. And; more important even, this bread is super healthy, filled with, in my opinion, only good, wholesome, natural ingredients. And... people without celiac disease like it too!!
It made my tummy very happy, really!!

After years of let me say hard work in the morning, yes, my celiac disease made my intestines work very slowly and not fully functioning for a long time, eating this bread makes me go every morning, easy and smooth, effortless.


I now perfected it I think. The first time I made it, it fell apart completely. I am going to explain how it works for me now, but you can just follow Sarah´s recipe as well. All praise goes to her and just check out her website, she is so gifted, she is a big inspiration to me!


This is how I make it:

I use a glass Pyrex bread pan from 28 x 11 cm, but you can use a flexible, silicon one as Sarah does.

I place a 28 cm piece of baking paper along the long sides of the pan with the sides hanging over, so I can cover the bread dough when it’s in the mold.

In a big bowl mix the dry ingredients:

135g sunflower seeds or a combination of sunflower seeds and pumpkin seeds
90g of flax seeds, ground fine
65g of whole brown hazelnuts
145g gluten-free rolled oats
2 tbsp chia seeds or 2 tbsp sesame seeds(the chia adds more “glue” to the mixture, but at first I did without them, because they were not in my pantry, and the bread held very well too!!)
4 tbsp psyllium seed husks (they cannot be replaced, they hold the bread together!!
1  tsp sea salt

Then add the wet ingredients:

(The original recipe asks for maple syrup but I omit it; I don’t like any sweetness in my bread.)

3 tbsp extra virgin olive oil or melted coconut oil
350 ml warm water

Stir everything well. It becomes sticky and when you keep on stirring, the psyllium, chia and flax start to glue the dough together. Knead with your hand into the size of your mold and put it in. Press with your hand till the dough is evenly distributed. It will be 3-4 cm thick. Cover with the hanging over baking paper and set aside for at least 2 hours. I make mine in the evening and let it set overnight and bake the bread in the morning.

Pre heat the oven on 350°F or 175°C.

I take the bread out of the mold by holding the baking paper draped over the dough and place it directly on the middle rack into the oven. Bake the bread for 50-60 minutes, turn half way. The bread is ready when it sounds hollow when you tap it on the bottom.

Let it cool completely!! Slice with a very sharp bread/serrated knife. I hold the bread firmly when slicing, to prevent crumbling.

The bread is very good as it is, but toasting it makes it even better. I eat 2 slices every morning and it gives me energy till lunch!! The recipe makes about 14 slices.

You can freeze the bread as well, but beware of the slices sticking together, so freeze them flat or separate them with a piece of baking paper.


Ik maak het zo:

Bekleed een glazen Pyrex brood/cakevorm( 28 x 11 cm) met bakpapier alleen aan de lange kanten, zodat het overhangt. Of gebruik een flexibele, siliconen vorm zoals Sarah.

Meng in een beslagkom de droge ingrediënten:

135g zonnepitten of een combinatie van zonnepitten en pompoenpitten
90g gemalen lijnzaad
65g bruine hazelnoten
145g havervlokken
2 eetlepels chiazaad of sesamzaad als je geen chia in huis hebt (heb ik ook gedaan in het begin en het brood valt niet uit elkaar!)
4 el psyllium husks (de psyllium moet, anders geen goed brood!)
1 tl fijn zeezout

Meng goed door elkaar; ik doe er geen zoetmiddel in, niet nodig en niet lekker, het is brood!

Roer dan volgende natte ingrediënten toe:

3 el extra virgin olijfolie of  gesmolten kokosolie
En 350 ml warm water

Roer totdat het een samenhangend geheel wordt. Het psylliumzaad, lijnzaad en chiazaad zorgt voor binding van het mengsel. Kneed even door met de hand en vorm een langwerpige vorm die in de glazen of andere broodvorm past. Ik heb een glazen Pyrex vorm van 28 cm die ik bekleed met een stuk bakpapier over de lange kant. Druk het deeg aan in de vorm; het wordt ongeveer 3-4 cm hoog. Laat dan in ieder geval 2 uur opstijven of laat een nacht staan en bak het brood de volgende ochtend.

Verwarm de oven voor op 180 °C.

Haal het brood uit de vorm en plaats met bakpapier en al op het rooster in het midden van de oven, bak 25 minuten aan 1 kant, draai het brood voorzichtig om en bak nog eens 25-30 minuten aan de andere kant. Het brood is gaar als het een beetje hol klinkt als je er op klopt.
Helemaal laten afkoelen voordat je het snijdt met een scherp broodmes!!
Houd het brood goed vast waar je het snijdt, dan valt het niet uit elkaar.
Dit recept is voor ongeveer 14 sneetjes brood. Je kunt het zo eten, maar even geroosterd is het nog beter van smaak.

Je kunt de sneetjes ook invriezen, maar let op, ze plakken aan elkaar, dus plat, stuk voor stuk, of met een stukje bakpapier ertussen.

Carrot oatmeal breakfast bowl (GF-SF-V-DF)



For me breakfast is really indispensable, I cannot get going without it, like yoga;-)
Especially in fall and winter I need warming grains to poke up the inner flame and nurture my intestines.
So this winter I made a recipe with oats and carrots, a great tasting morning meal which can also be a nice way to add some extra veggies to your diet or to that of a picky child!

Naturel rolled oats and oatmeal are a traditional breakfast cereal with great nutritional benefits. You can read more here.
Besides the health benefits oats are also very versatile: you can make porridge, bake cookies and bars, mix them into your veggie burgers, and much more. What do you do with your oats?



Carrot oatmeal breakfast bowl (1 person)

125 ml nut milk
50 g rolled oats
½ cup roughly grated carrot
1 tbsp sultanas
zest and juice of 1 mandarin or ½ orange
½ tsp cinnamon
¼ tsp ginger powder
pinch of nutmeg
1 – 2 tbsp chopped raw walnuts or almonds, maybe dry-roast them first for deeper flavour

Put the nut milk, I like to use coconut milk, in a pot and bring to a soft boil.

Stir in oats and grated carrot and reduce to a simmer.
Then add the sultanas, zest and juice and the spices. Stir everything well and let it simmer for about 8 minutes till everything is smooth and creamy and the carrots cooked. Stir occasionally and when it gets a little dry, add some water.

In the simmer time you can crack and chop your walnuts or almonds.

Serve in your favourite bowl, sprinkle with the nuts and maybe some extra coconut milk.
For me this breakfast is sweet enough, but you can always add a little maple syrup!

My basic gluten-free cruesli – mijn basis glutenvrije cruesli (GF-DF-SF-V)

 
I like to share with you my basic gluten-free cruesli recipe.
I use this recipe for years now and the nice thing about it is, that it’s easy to make and easy to alter. You can add hazelnuts or walnuts instead of almonds, you can use buckwheat flakes or quinoa flakes and after baking it’s great to add some chocolate chips or dried blueberries or pieces of dried apricots or whatever dried fruit you have in your cupboard. Make it to you’re your own liking. Store it in an airtight glass container; it will keep for several months.

For a big jar you’ll need:

300g gluten free rolled oats (Provena)
20g gluten free rice puffs
75 g pumpkin and/or sunflower seeds
2 tbsp flax seeds
65 g roughly slivered almonds
1 tbsp butter, vegetable oil or coconut oil for vegans
¼ tsp sea salt
80 ml water
80 ml maple syrup or honey
1 tbsp vanilla extract

Pre heat the oven on 150 ˚C.
Put a piece of baking paper on the baking tray.

Mix the dry ingredients from oats till almonds in a big bowl.
In a small saucepan heat the wet ingredients from oil/butter till vanilla extract, stir till the sugar is dissolved. Pour into the dry ingredients and mix everything well.
Scoop onto the baking tray and spread well and put it in the middle of the oven.
Bake for 45 minutes and stir every 15 minutes so that  the granola bakes evenly.
Let it cool completely before storing into an airtight glass container.
Eat as you like, as a snack, as a topping, with fruits and yoghurt, for breakfast or pudding. 
 


Voor een grote glazen pot vol heb je het volgende nodig:

300g glutenvrije havervlokken
20g glutenvrije gepofte rijst
75 g pompoen- en/of zonnebloempitten
2 el lijnzaad
65 g grof gehakte amandelen
1 el boter, kokosolie of andere plantaardige olie
¼ tl zeezout
80 ml water
80 ml ahornsiroop of honing
1 el vanille extract

Verwarm de oven voor op 150 ˚C.
 Bekleed een bakplaat met een vel bakpapier.

Meng de droge ingrediënten van haver tot amandelen in een grote kom.
Verhit de natte ingrediënten van boter/olie tot vanille extract in een steelpan en roer tot de suiker is opgelost. Giet bij de droge ingrediënten en roer alles heel goed door.
Schep op de bakplaat en spreidt goed uit, schuif in het midden van de oven.
Bak de cruesli 45 minuten en schep iedere 15 minuten goed door, zodat de cruesli evenredig bakt. Laat helemaal afkoelen voordat je de cruesli overdoet in een luchtdichte glazen pot.
Eet zoals je wilt, een handje als snack, als topping op een toetje, bij de yoghurt, met fruit als ontbijt of lunch.
