Crunchy chocolade-haver-boekweitcookies – crunchy chocolate oat and buckwheat cookies (GF-DF-V)



Hallo allemaal,

Vorige week was ik in Gent, de dochter van mijn vriendin had er een expositie. In een oude wasserij, onverwarmd, nat en koud dus. Gelukkig had ik op internet gelezen dat Madam Bakster in de buurt zat en daar heb ik heerlijk kunnen opwarmen onder het genot van een mooi glas thee en een glutenvrije reep.
Helaas gebruikt Madam Bakster geen glutenvrije haver, anders zou er nog veel meer keus zijn uit de taartjes die zij daar vers bakt. Uit haar boek, alle recepten 100% plantaardig, bakte ik mijn versie, want ze gebruikt vaak ook speltmeel, van haar kruimelige chocolade-havercookies.



Je hebt nodig:
1 lijnzaad ei (maal 1 el lijnzaad fijn en voeg 3 el water toe, laat een paar minuten staan zodat een slijmerig papje ontstaat)
63 g havervlokken, gemalen tot meel
5 g wijnsteenzuurbakpoeder
35 g rietsuiker
1 snuf zout
75 g kokosolie (halfvast)
1 tl vanille-extract
1 tl kaneel
50 g walnoten, grofgehakt
50 g chocolade, grofgehakt
15 g havervlokken
evt. 1-3 el water, als het deeg te droog blijkt

hoe maak ik ze:
Maak het lijnzaad ei en zet opzij.
Verwarm de oven voor op 180°C.

Meng havermeel, boekweitmeelmix, bakpoeder, rietsuiker en zout. Voeg de halfvaste kokosolie toe en kneed met de hand of keukenmachine tot de kokosolie goed is vermengd en geen klontjes meer bevat.
Voeg dan het lijnzaad ei, kaneel en vanille extract toe en kneed verder. Voeg eventueel 1 tot 3 eetlepels water toe om het deeg wat smeuïger te maken. Dit is zwaar werk!

Voeg dan gehakte walnoten en chocolade toe met de 15 g havervlokken. Kneed tot een stevig geheel. Vorm hieruit 12 balletjes, maak ze plat en leg op een met bakpapier beklede bakplaat. 

Bak de cookies in het midden van de oven, ongeveer 15-20 minuten, tot de randjes en onderkant goudbruin worden.

Laat ze afkoelen op een bakrekje. Ze zijn echt zalig en ik hou van dat lichte kokosaccent door het gebruik van eerste persing kokosolie.



Last week I visited Gent, to help out the daughter of my friend who had an exhibition in an old, abandoned laundry factory, without any heating. Cold and wet it was. Fortunately I read on the internet that Madam Bakster (something like Baking Lady) had opened a coffee bar nearby so I could warm up with a very nice cup of tea and a gluten-free bar. It’s a pity that Madam Bakster does not use gluten-free oatmeal so I could not taste one of her other sweet treats. But I bought her book, the recipes are 100% plant-based, and I adapted one of the recipes into these very tasty, crunchy chocolate chip oatmeal cookies.

You need:
1 flax egg (grind 1 tbsp of flax seeds fine, mix with 3 tbsp water, set aside for some minutes till it forms a slimy paste)
¾ cup oat flakes ground into flour
1 tsp baking powder
2 heaped tbsp of cane sugar
1 pinch of salt
¾ cup coconut oil, softened
1 tsp vanilla extract
1 tsp cinnamon
½ cup chopped walnuts
⅓ cup chopped dark chocolate
¼ cup oat flakes
1-3 tbsp of water, when the dough turns out too dry


 How to:
First make the flax egg and set aside.
Pre-heat the oven on 375 °F/180°C.

Mix oat flour, buckwheat flour mix, baking powder, cane sugar and salt. Add the softened coconut oil and start kneading till the coconut oil is well incorporated without any lumps.
Add the flax egg, vanilla extract and cinnamon and knead, by hand or machine, into a sturdy dough. This is hard work! 
When the dough stays too dry add 1-3 tablespoon(s) of water to the mixture.
Then add chopped walnuts and chocolate and the oat flakes and combine everything.

Make 12 small balls and flatten them out into nice round cookies and put them on a baking tray with baking paper.
Bake in the middle of the oven for about 15-20 minutes till the edges and bottom are colouring golden brown.


Let them cool on a baking rack. They are really delicious and I love the hint of coconut from the first pressing coconut oil.

WINTERSMOOTHIE (GF-DF-SF-V)



Even een snel tussendoortje!
Dankzij de zachte, tot nu toe dan, winter hoef ik niet zo mijn best te doen om mijn spijsvertering gaande te houden. Ik eet vooral warme spijzen en dranken; dat scheelt een hoop verloren energie. Eigenlijk drink ik geen smoothies in de winter, ik eet liever een stuk fruit dat ik kauw en veel warme soepen en geroosterde groentes. Ik heb geen probleem om aan 200 gram groente per dag te komen; ik eet denk ik gemiddeld 400 gram per dag, misschien wel meer.

Van de overgebleven boerenkool en de rijpe peer maakte ik een heerlijke winter smoothie, met verwarmende gember en kaneel.

voor 1 persoon:

1 rijpe peer
1 kleine appel
1 mandarijn
boerenkool
water
1 schijfje gemberwortel
1 snuf kaneel

Schil de peer en de appel en snijd in stukken en doe ze in de blender.
Vul de blender verder met gewassen en fijngesneden boerenkool, het sap van de mandarijn, fijngesneden gember en een snuf kaneel. Pulse tot een grove brij en voeg dan zoveel water (ik gebruik lauwwarm water uit de ketel) toe om een mooie dikke smoothie te verkrijgen. Laat even op vol vermogen draaien. Klaar!



for a warming winter smoothie you'll need:

1 ripe pear
1 small apple
1 clementine
kale
water
1 thin slice of gingerroot
1 pinch of cinnamon

Peel and clean apple and pear and cut into pieces. Put in the blender.
fill the blender up with washed and finely chopped kale, the juice of the clementine, the finely chopped gingerroot and a pinch of cinnamon. Give it a few pulses till roughly blended. Then add water (I use luke warm water from the kettle) little by little till  you have the smoothie consistency you want. Let it blend on high speed for about 1 minute more: green and luscious. Done!

Glutenvrije kaneel-gember kerststol – gluten free almond-ginger Christmas stollen (GF-DF-V)


Op de valreep maakte ik deze heerlijke kerststol. Dus als je nog even tijd hebt, zeg een middagje, dan maak je gewoon nog even een kerststol voor jezelf of een coeliake geliefde of familielid. Het is een echt brood, met een echte korst, dus geen zacht brood, niet voor softies!


Je hebt nodig:
200g amandelspijs en voeg dan ½ theelepel kaneel door de gemalen amandelen

3g instant gist
5g suiker
120 ml handwarm water
Scheutje appelazijn
1 el olijfolie

½ tl zeezout
1 el gemalen lijnzaad
1 el psylliumzaad

En voor de vulling:
75g gemengde zuidvruchten; cranberries, krenten, rozijnen
50g gemengde noten, licht geroosterd en fijngehakt
25g gekonfijte gember, fijngehakt

1. maak eerst het amandelspijs en meng er ½ tl kaneel door. Ik heb deze keer geen ei toegevoegd, de amandelspijs is erg smeuïg van zichzelf.


2. dan maken we het deeg:
In een kommetje schenk je handwarm water op gist en suiker, roer even door en laat 10-15 minuten ontwikkelen. Het mengsel gaat schuimen.
Doe de boekweitmix in een kom en meng goed met zout, lijnzaad en psyllium.

3. Prepareer de vulling: rooster en hak de noten en doe ze met de zuidvruchten en gekonfijte gember in een kom, zet even apart.

4. Als het gistmengsel schuimt giet je er de olijfolie en de appelazijn bij en dan direct bij het meelmengsel. Roer goed door elkaar, het moet een vrij plakkerig deeg blijven, niet te droog dus!
Roer het vruchten-notenmengsel erdoor en dek af met wat huishoudfolie en laat minimaal een uur rusten/rijzen op een warme plek.


5. Vervolgens leg je het deeg op een vel bakpapier en druk met je handen tot een plak van ongeveer 23 x 18 cm, hoeft niet netjes een beetje rustiek is helemaal goed ;-) Verdeel het amandelspijs in een rolletje over de lengte van het deeg en vouw het deeg eroverheen. Druk licht aan met je vingers en leg het deeg met bakpapier op een bakblik. Laat zeker nog een uur rusten/rijzen bedekt met huishoudfolie op een warme plek.

6. Verwarm dan de oven voor op 180°C en bak de stol in het midden van de oven 35-40 minuten tot het goudbruin en gaar is.
Ik gebruik deze keer geen ei, dus blijft deze stol veganistisch.

This gluten free and vegan Christmas stollen is a real bread, with a good crust, not for softies!

You’ll need:

200g almond paste, store bought or make your own: I added ½ tsp cinnamon and left out the egg this time, since the paste was gooey enough!

3 g instant yeast
5g sugar
120 ml hand warm water
Dash of apple cider vinegar
1 tbsp olive oil

½ tsp sea salt
1 tbsp ground flax seed
1 tbsp psyllium husks

For the filling:
75g mixed dried fruits, like cranberries, sultanas, currants
50g mixed nuts, lightly toasted and chopped
25g candied ginger, chopped fine

1. first make the cinnamon almond paste and set aside.

2. make the yeast slurry by mixing the hand warm water with the yeast and sugar. Give it a stir and leave it on a warm spot to develop, 10-15 minutes. It will become foamy.

3. mix the flour mix with salt, flax and psyllium in a bowl. Set aside.

4. make the filling by toasting and chopping the nuts and mixing with the other ingredients.


5. when the yeast mix is ready, pour in a dash of apple cider vinegar and the olive oil and pour everything into the flour mixture. Stir till it forms a sticky dough. Add chopped nuts and fruit and fold them in. It must be sticky, so when the dough is too dry add some warm water!
Put a piece of cling film over the bowl and let the dough rest/rise on a warm spot for at least 1 hour.

6. put the dough on a piece of baking paper and flatten it out into a rectangle of 23 x 18 cm, not too neat ;-) a bit rustic is ok. Divide the almond paste in a roll lengthwise on the dough and fold over the dough. Press the sides lightly.
Put the bread with the paper on a baking tray, cover again with cling film and let it rest/rise for a second time on a warm spot for another hour.

7. pre heat the oven on 180°C and bake the stolen for 35-40 minutes in the middle of the oven till golden-brown. I did not use any egg wash on top to keep it vegan, you can if you want to get a glossy finish. Let it cool completely before cutting.

Gluten free Dutch apple pie – glutenvrije Hollandse appeltaart



Deze taart draag ik op aan Jeanine, met heel veel dank voor je enthousiaste lessen! I dedicate this pie to Jeanine! For that I write my blog in Dutch, the English recipe is on the bottom.


Goh, volgens mij heb ik, sinds er coeliakie bij mij is vastgesteld in 2007 alweer 7 jaar geleden, nog nooit een appeltaart gebakken. Vreemd eigenlijk, want hoe lekker is appeltaart. Vooral als je de taart bakt voor een vergadering, namelijk met mezelf!

Ik ben op energieweek geweest 2 weken geleden in Villamartin in Andalucië. Met een geweldige groep van 7 andere mooie vrouwen en TCM-therapeute Jeanine Hofs heb ik een week mezelf verdiept in de werkingen van energie, mijn energie, die van anderen, hoe mijn energie te vergroten, te beschermen, te gebruiken en niet zomaar voor lief te nemen. Voor meer informatie kijk op de site van Jeanine, het levende voorbeeld van hoe zo goed mogelijk voor jezelf te zorgen en in de praktijk toepassen van allerhande eeuwen oude technieken betreffende energie, waaruit we allen bestaan.

1 van haar technieken is dus de vergadering met jezelf. Wekelijks een bijeenkomst met jezelf om te kijken hoe het met je gaat op lichamelijk, spiritueel, werk, liefdes etc. niveau. Verzorgd met een pot thee en iets lekkers, zoals een stuk van deze heerlijke appeltaart:

Je hebt nodig:
100g bruine rijstmeel
60g boekweitmeel
60g amandelmeel
1 tl bakpoeder
50g rietsuiker
½ tl zeezout
Rasp van 1 biologische citroen
120 g koude boter
1 eidooier
1 el vanille extract
500g goudreinetten
4 el rietsuiker
1 el kaneel
100g rozijnen, geweld zo nodig

20cm springvorm, beboterd of bekleed met bakpapier

Eerst mengen we de eerste 7 ingredienten in een grote kom. Voeg de koude boter toe en snijd met 2 messen in piepkleine stukjes. Verkruimel en meng dan met je vingers tot een zanderig geheel. Voeg dan de eidooier en vanilleextract toe en kneed snel tot een samenhangend deeg.

Bekleed de springvorm met ¾ van het deeg met een rand van ongeveer 3 cm. Zet 1 uur in de koelkast, zo ook  het overgebleven stuk deeg.

Na 1 uur verwarm je de oven voor op 175°C.

Schil de appels en, afhankelijk van de grootte van de appel, snijd ze in 4-en of 8-en en in dunne schijfjes. Meng met kaneel, suiker en rozijnen en schep in de vorm. Van het overgebleven stukje deeg maak je reepjes als decoratie bovenop.

Bak de appeltaart ongeveer 50 minuten in het midden van de oven tot het deeg goudbruin is en de appels zachtgaar, maar nog heel. Kijk na 40 minuten of de bovenkant niet te hard gaat. Als dat het geval is leg je er los een vel aluminiumfolie op.

Laat de taart helemaal afkoelen voor je de springvorm losmaakt. Snijd de delicate en enigszins kruimelige taart voorzichtig en geniet van deze heerlijk glutenvrije appeltaart met je geliefden of met jezelf op de vergadering!



you'll need:

100g brown rice flour
60g buckwheat flour
60g almond flour
50g cane sugar
1 tsp tartaric acid baking powder
½ tsp sea salt
Zest of 1 organic lemon
120g cold butter
1 egg yolk
1 tbsp vanilla extract
500g pie apples like bramble
4 tbsp cane sugar
1 tbsp cinnamon
100g sultanas, soaked or not
20cm/8 inch springform cake tin, buttered or prepared with baking paper

First we mix the first 7 ingredients in a big bowl.
Add the cold butter and cut into very tiny pieces with 2 knives. Rub everything together with 1 hand into a sandy dough. Then add egg yolk and vanilla extract and knead quickly into a dough.

Press ¾ of the dough into the cake tin, on the bottom and about 3 cm up the sides. Let it rest into the fridge for 1 hour, with the remaining ¼ of the dough.

After 1 hour pre heat the oven on 175°C/ 350°F.

Peel the apples, cut them in quarts or eights, depending on the size of the apples and slice into 5mm parts. Mix with the cinnamon, sultanas and sugar and scoop into the prepared tin.

From the left-over dough you can make thin strips to decorate the top.

Bake in middle of the oven for about 50 minutes, till the dough is golden brown and the apples soft but not mushy. Check after 40 minutes if the top is not browning too quickly. If so put a piece of aluminium foil loosely on top.
Let it cool completely before removing the ring and cut the delicate and a bit crumbly tart with care. Enjoy this really Dutch treat!

Carrot oatmeal breakfast bowl (GF-SF-V-DF)



For me breakfast is really indispensable, I cannot get going without it, like yoga;-)
Especially in fall and winter I need warming grains to poke up the inner flame and nurture my intestines.
So this winter I made a recipe with oats and carrots, a great tasting morning meal which can also be a nice way to add some extra veggies to your diet or to that of a picky child!

Naturel rolled oats and oatmeal are a traditional breakfast cereal with great nutritional benefits. You can read more here.
Besides the health benefits oats are also very versatile: you can make porridge, bake cookies and bars, mix them into your veggie burgers, and much more. What do you do with your oats?



Carrot oatmeal breakfast bowl (1 person)

125 ml nut milk
50 g rolled oats
½ cup roughly grated carrot
1 tbsp sultanas
zest and juice of 1 mandarin or ½ orange
½ tsp cinnamon
¼ tsp ginger powder
pinch of nutmeg
1 – 2 tbsp chopped raw walnuts or almonds, maybe dry-roast them first for deeper flavour

Put the nut milk, I like to use coconut milk, in a pot and bring to a soft boil.

Stir in oats and grated carrot and reduce to a simmer.
Then add the sultanas, zest and juice and the spices. Stir everything well and let it simmer for about 8 minutes till everything is smooth and creamy and the carrots cooked. Stir occasionally and when it gets a little dry, add some water.

In the simmer time you can crack and chop your walnuts or almonds.

Serve in your favourite bowl, sprinkle with the nuts and maybe some extra coconut milk.
For me this breakfast is sweet enough, but you can always add a little maple syrup!

Banana bread with dates - Bananenbrood met dadels (GF)


This banana bread is so good; sometimes I am even tempted to buy extra bananas so they can turn brown before I could eat them all and I have to bake it again. It is an easy recipe, that I adapted from Allerhande, a cooking magazine from one of the biggest supermarkets here in Holland.

The fun thing from using less and less sugar is that you don’t need so much sweetness any more. The original recipe asks for 150 g sugar, I use only 50 g now; together with 3 bananas and 6 medjoul dates it’s sweet enough for me. I could do without the sugar, but my son is an addict so I leave some in for him. In this way he gets used to less sugar too. I hope, because outside my doorstep, at school, with his friends there is a lot of junk food coming in. And I hope that by cooking wholesome foods  at home and give him oatmeal for breakfast I give him the right example and together with all the junk he eats too, the balance will be a positive one?

As I am writing this post my oven is working hard, baking small flat breads to take with me to France tomorrow. Together with my dearest C. I am going to visit some friends in the Auvergne. They live rather remote so I have to take care of myself a bit, gluten-free food wise I mean. We’ll be travelling by train, such a good old-fashioned way to travel and a long time ago too, for me. Seeing a quick glance of Paris before we change trains to Clermond-Ferrand. And they say it’s gonna snow tomorrow!

I am really looking forward to it!

You can easily make it vegan by using coconut oil or olive oil instead of butter and replace the eggs for a soaked flax mixture.

Banana bread with dates

I use a glass Pyrex mold of 28 cm

3 tbsp sesame seeds
6 Medjoul dates
250 g GF flour, I use a mixture of buckwheat and rice
125 g butter, room temperature
50 g rapadura sugar
2 organic eggs
3 really ripe, brown bananas, mashed
1 tsp cinnamon
2 tsp tartaric acid baking powder


I put a piece of baking paper in the mold, to ease the outcome of the cake.

First roast the sesame seeds in a dry pan till golden brown, leave to cool.
Stone the dates and cut lengthwise into thin strips, dust with a little flour, so they won’t sink to the bottom of the cake.

Pre-heat the oven to 170 ˚C.

Beat the butter and sugar with a hand mixer till light and fluffy.
Add the eggs one at a time and beat them through.
With a spatula mix in dates, mashed banana, cinnamon, baking powder, sesame seeds and flour. Scoop into the Pyrex mold and bake the banana bread for about 1 hour and 10 minutes in the middle of the oven. Check with a bamboo skewer in the middle of the bread if it’s done. Then let it cool for 20 minutes in the mold before taking it out and let it cool completely on a rack. Enjoy!



Bananenbrood met dadels

Ik gebruik een Pyrex vorm van 28 cm.

3 el sesamzaad
6 Medjoul dadels
250 g GV meel, ik gebruik boekweit en rijst
125 g boter, op kamertemperatuur
50 g rapadura (oer) suiker
2 bio eieren
3 overrijpe bananen, geprakt
1 tl kaneel
2 tl wijnsteenzuur bakpoeder

Bekleed de vorm met bakpapier.

Rooster eerst het sesamzaad in een droge koekenpan tot ze goudbruin zijn, zet opzij.
Ontpit de dadels en snijd ze in de lengte in reepjes, bestrooi met wat meel zodat ze niet naar de bodem zakken tijdens het bakken.

Verwarm de oven voor op 170 ˚C.

Klop de boter en suiker met een handmixer tot een licht en luchtig mengsel.
Klop dan 1 voor 1 de eieren erdoor.
Spatel dan voorzichtig dadels, geprakte banaan, kaneel, bakpoeder, sesamzaad en meel erdoor. Schep in de vorm en bak het bananenbrood in ongeveer 1 uur en 10 minuten gaar en goudbruin. Steek een bamboeprikker in het midden om te controleren of het brood gaar is. Neem het brood uit de oven en laat eerst 20 minuten in de vorm afkoelen, voordat je het helemaal laat afkoelen op een rekje. Geniet!

Cinnamon flavored crunchy oats muesli – geroosterde haver muesli met kaneel (GF-DF-SF-V)

In the summer I eat a lot of muesli, but now with the days shortening and the temperature dropping to a degree that I already bought a new knitted hat and gloves, I long for warming dishes, no cold yoghurt with fruit and muesli for me.
Stewing apples and eating them with some of this lovely gluten-free cinnamon flavored muesli is a new favorite.
                        
The cinnamon adds a  wintery warming taste and is great for digestion which is very important for everyone but especially for people with celiac disease. My intestines are vulnerable and especially in this transition time to winter I have to take care a lot of my belly.
It’s the time of warming soups and drinks like herbal teas with some  fresh ginger added to it.


Cinnamon flavored crunchy oats muesli (big pot)

300g gluten free rolled oats
25 g puffed rice
60 g sunflower seeds
65 g hazelnuts, cut roughly
50g roughly slivered almonds
1 tbsp cinnamon
1 tbsp coconut oil
¼ tsp sea salt
80 ml honey
80 ml water
2 handful of raisins

Pre heat the oven on 150 ˚C.
Lay a piece of parchment paper on the baking tray.

In a large bowl mix the first 6 ingredients.
Melt the coconut oil with the honey, water and sea salt and pour it into the dry ingredients, stir everything well and put it on the baking tray. Spread it out evenly.

Bake the muesli 45 minutes in the oven and give it a stir every 15 minutes so it will bake evenly.

Let it cool completely, than add the raisins and store the muesli in a glass container. It will keep for months, when possible ;-)


Geroosterde havermuesli met kaneel (grote pot)

300 g glutenvrije haver
25 g gepofte rijst
60 g zonnebloempitten
65g hazelnoten, grof gehakt
50 g amandelschilfers, ik snijd met een scherp mes hele amandelen in de lengte in grove schilfers
1 volle el kaneel
1 el kokosolie
¼ tl zeezout
80 ml honing
80 ml water
2 handenvol rozijnen

Verwarm de oven voor op 150 ˚C.
Leg een vel bakpapier op een bakplaat.

Meng de eerste 6 ingrediënten in een grote kom.
Smelt de kokosolie en verwarm samen met water, honing, en zeezout en giet dan bij de droge ingrediënten. Roer alles goed door elkaar en stort op de bakplaat. Spreid het gelijkmatig uit.

Bak de muesli 45 minuten in de oven en roer iedere 15 minuten even door zodat het regelmatig gaart.

Laat volledig afkoelen en meng dan de rozijnen erdoor. Bewaar in een glazen pot. Het blijft dan maanden goed, als je dat haalt ;-)

Liquoro di alloro - Laurierlikeur – Bay leaf Liqueur (GF-DF)


My father pruned his laurel tree this weekend and after a lovely family meal I went home with a bag full of fresh, very nice scenting, bay leafs.
I use bay leafs in soups or as part of a bouquet garni and in the Indian kitchen. With all those smells in the house I suddenly remembered a recipe of liqueur from fresh bay leafs.
So at the moment I have a bowl filled with leaves infusing in gin and in about 2 weeks the recipe will be finished.
I am curious about the taste, I never had a bay leaf liqueur before, but what I read in French cooking books it’s a digestive, so to be taken after dinner, for better digestion.

The recipes I found are all slightly different, so I decided to try and find out.
The basics are all the same but the times of macerating and ripening vary.
We’ll see.

Bay leaf liqueur
(1 l)

½ l vodka or gin
30-40 fresh bay leafs
1 cinnamon stick
zest of an organic lemon

½ l water
350 g sugar

Put the first 4 ingredients in a clean glass jar, close the lid and leave it macerating for 2-4 weeks. The longer the more infusing, I guess. Shake once in a while.


After these weeks we start by making a sugar syrup.
Pour the sugar in the water and bring it to the boil, boil it softly for 5 minutes, keep on stirring till the sugar is completely dissolved. Let the syrup cool completely.

Remove the bay leafs from the pot and sieve the liquid through a coffee filter or a cheese cloth. Return to the pot and pour in the cooled sugar syrup. Give it a shake and let it rest for at least 1 week. Then pour the finished liqueur in a nice bottle and it’s ready to serve.
You can keep it for 2 years!

Laurierlikeur (1 L)

½ l wodka of jenever
30-40 verse laurierbladeren
1 kaneelstok
geraspte schil van 1 biologische citroen

½ l water
350 g suiker

Doe de eerste 4 ingrediënten in een weckpot of andere grote glazen pot, sluit af en laat 2-4 weken intrekken. Hoe langer, hoe sterker, denk ik.

Na deze weken maken we eerst de suikerstroop: giet de suiker bij het water in een pan en breng aan de kook. Kook 5 minuten zachtjes door terwijl je steeds roert. De suiker moet helemaal opgelost zijn. Laat de suikerstroop afkoelen.

Haal de laurierblaadjes uit de pot en zeef de inhoud door een koffiefilter of een stuk kaasdoek. Giet de inhoud terug in de pot en meng met de afgekoelde suikerstroop. Laat nog minimaal 1 week rusten voor je de likeur overgiet in een mooie fles of karaf.
De laurierlikeur is 2 jaar houdbaar!

crispy apple crumble - crispy appel crumble (GF)


A deliciously sweet autumn recipe, filled with great apples and topped with a crispy gluten free crumble. We really loved it!
Maybe because of the amount of sugar in it? Because, yes I decided to make a real treat, without too many restrictions. My son is always complaining that my baking products are nice, but. The but is about: not sweet enough. He gets used to it, that’s the good news, but once in a while I give him the "real" thing!

Crispy apple crumble (2-4 pers)

For the crumble:
125 g brown rice flour
35 g brown caster sugar
50 g unrefined cane sugar
tbsp tsp cinnamon or my spice mix
½ tsp sea salt
vanilla seeds (1/2 vanilla pod)
90 g cold butter

For the filling:
2 reinet apples (400g)
130 g frozen blueberries
2 tbsp cane sugar
1-2 tbsp almond slivers


Pre heat your oven on 180˚C.

Make the crumble first.
Put all the dry ingredients in a large bowl and mix well.
Then add the cold butter and slice it with 2 knifes in very small pieces. Wash your hands and quickly knead till you have a crumbly mixture. Set aside.

Peel the apples and cube them. Mix with the frozen blueberries and the cane sugar in an oven-proof dish. Top with the crumble and sprinkle with the almond slivers.
Bake for about 20-30 minutes till the crumble looks golden.
Let it cool slightly and serve as it is or with some sour cream!



Crispy appel crumble (2-4 pers)

Voor de crumble:
125 g bruine rijstmeel
35 g oersuiker
50 g rauwe rietsuiker
el tl kaneel of koekkruiden
½ tl zeezout
vanillezaad (1/2 stokje)
90 g koude boter

Voor de vulling:
2 goudrenetten
130 g bevroren blauwe bessen
2 el rietsuiker
1-2 el amandelschilfers

Verwarm de oven voor op 180˚C.

Maak eerst de crumble:
Doe alle droge ingrediënten in een kom en meng door elkaar.
Voeg de koude boter toe en snijd met 2 messen in minuscule stukjes. Was je handen en kneed met koele hand snel tot een grof kruimelig geheel. Zet even apart.

Schil dan de appel en snijd ze in blokjes. Mix ze met de blauwe bessen en de rietsuiker in een beboterde ovenschaal. Schep de crumble er bovenop en bestrooi met de amandelschilfers.
Bak de crumble in het midden van de oven 20-30 minuten tot ze goudbruin ziet en heerlijk ruikt. Laat het even wat afkoelen en serveer dan warm, zoals ze is of met wat room of zure room.

Buckwheat hazelnut muffins with apple and cinnamon – boekweit-hazelnoot muffins met kaneel en appel (GF)

I wrote about it before, but in this time of year I eat apples every day and there is always something new to talk about. We all know the saying An apple a day keeps the doctor away. And it's true. This is based on all kind of studies and old traditions. The Romans ate an apple at the end of the meal to help their digestion and acid-base balance.

An apple contains iron, phosphorus and apple malic acids. These last substances work very well on our digestive organs. For us celiacs a real treat!!
Teach your children to eat raw, whole (washed) organic apples with the core, the core contains the most phosphorus. (when they are not allergic, like mine)
Tea from fresh or dried apple peels is a very good evening tea, it calms the nerves and brings a healthy sleep.

The apple is traditionally a symbol of life force.
When you have planted a new apple tree and are going to pick the first apples, always come with a big basket and lay in their the small crop. The young tree will feel that it has to grow more apples next year ( thanks to Mellie Uyldert, our Dutch herbal wise woman).



My big favorites are Belles de Boskoop, a very rustic, apple, a bit tart and very fragrant, super to make apple pie, apple sauce and apple compote.
Did you know that a Reinette, which is the name we use for this apple, contains twice as much vitamin C than a Golden Delicious!
Every apple goes well with nuts, cinnamon, buckwheat, raisins and pumpkins too. All autumn flavors. I made these delicious muffins, so go and try them!

Buckwheat hazelnut muffins with apple and cinnamon (12 pcs)

125 g buckwheat flour
100 g roasted hazelnut flour*
50 g raw cane sugar
55 g raisins
1 tbsp cinnamon or gingerbread spices
½ tsp sea salt
2 tsp tartaric acid baking powder
3 tbsp butter
1 organic egg
250 ml ½ water- ½ yoghurt mixture
1 apple

* I roast whole hazelnuts in a heavy skillet for 5 minutes, let them cool completely and then grind them into a fine flour

Pre-heat the oven on 200 ˚C.
Fill 12 muffin holes with paper baskets and grease with some butter.
Melt the butter and set aside.

Put the first 7 (dry) ingredients into a big bowl and mix thoroughly.

In a small bowl mix water and yoghurt with a fork, add the egg and mix in too. Then add the slightly cooled butter and mix again.

Grate the peeled apple above the dry ingredients.
Pour in the wet mixture into the dry ingredients and mix quickly with the fork. It can stay a little lumpy, no problem.

Fill the muffin holes for ¾ and bake them in the middle of the hot oven for 25 to 30 minutes.
Let them cool or eat them while still a little warm. Deliciously autumn!


Boekweit-hazelnoot muffins met koekkruiden en appel (12 stuks)

125 g boekweitmeel
100 g geroosterde, gemalen hazelnoten
50 g suiker
½ tl zeezout
2 tl wijnsteenzuurbakpoeder
55 g rozijnen
1 el koekkruiden
3 el boter
1 biologisch ei
250 ml ½ water ½ yoghurt
1 appel

Verwarm de oven voor op 200 ˚C.
Vul 12 muffinvormpjes met een papieren vorm en vet deze licht in met boter
Smelt de boter en zet even apart.
Doe de eerste 7 (droge) ingrediënten in een ruime kom en meng ze goed.

Roer in een kleine kom het water, de yoghurt en het ei los met een vork. Voeg dan de al wat afgekoelde boter toe en meng nogmaals goed door elkaar.

Schil de appel en rasp deze grof boven de droge ingrediënten.

Giet de natte bij de droge ingrediënten en meng alles snel met de vork. Er kunnen wat klontjes in zitten, dit is niet erg.
Schep de muffinvormpjes voor ¾ vol met het beslag en bak de muffins 25-30 minuten in het midden van de hete oven. Laat even afkoelen en eet ze, nog lauw. Heerlijk herfstig!
