dal met rijst - dal and rice (GF-SF-DF-V)



Vanavond at ik dal met rijst en ovengeroosterde pompoen.
Een eenvoudige,voedzame maaltijd, die vele Indiërs dagelijks eten, goedkoop en gezond.

je hebt nodig:

250 g gespleten mungbonen of als je rode linzen in huis hebt
600 ml water
1 laurierblad
1 el kokosolie, ghee of andere plantaardige olie
1 tl komijnzaad
1 tl zwarte mosterdzaad
1 tl kurkumapoeder of versgeraspt
1 uitje, fijngesneden
1 teentje knoflook, heel fijngesneden
2 cm verse gemberwortel, heel fijngesneden
zeezout
citroensap
verse koriander

Was eerst de linzen zet even opzij.
In een zware casserole verwarm je de olie en bak hierin het komijnzaad en de mosterdzaadjes tot deze gaan springen. Voeg dan  het ui-knoflookmengsel toe en fruit even mee met de kurkuma.
Voeg dan linzen en water toe en breng samen met het laurierblad aan de kook. Laat ongeveer 20 minuten zachtjes koken tot de linzen gaar zijn en uit elkaar vallen, breng op smaak met wat zout, citroensap en zwarte peper.
Het mengsel is een dikke soep, voeg eventueel meer water toe.

Eet met gekookte bruine basmatirijst voor een eenvoudige maaltijd. Ik at het gerecht met geroosterde pompoenstukjes, maar gestoomde broccoli of een andere groente kan ook. Een schepje pickle of chutney en een gebakken papadam maken het helemaal af, maar je kunt het ook simpel houden.


For dinner I suggest this very easy to make, humble and healthy dish which millions of Hindus eat every day.

You’ll need:
250 g split mung beans or masoor dal/ red lentils
600 ml water
1 bay leaf
1 tbsp ghee, coconut oil or other vegetable oil
1 tsp cumin seeds
1 tsp brown mustard seeds
1 tsp curcuma
1 small onion, finely cut
1 clove of garlic, very finely cut
2 cm fresh ginger, very finely cut
sea salt
lemon juice
coriander leaves (garnish)

How to make the dal:
1. wash the lentils and look for any stones, remove them.
Set aside.
2. In a heavy bottom casserole heat the oil and bake the cumin and mustard seeds till they begin to pop. Then add onion, garlic, ginger and curcuma and stir in till the fragrances come out. This goes very quickly!
3. Add lentils and stir well, add water, bay leaf and some salt and bring to the boil.
Lid on, flame low, let it cook for 15-20 minutes till lentils fall apart and the dal has a thick soupy consistency. Maybe add some more water when it is too dry. Stir everything through, taste and add lemon juice to your taste, maybe some more salt, some black pepper.
4. Scoop rice into a beautiful bowl and ladle dal over it. 
5. I eat the dal with roasted pumpkin cubes, but steamed vegetables like broccoli are very nice too.
Garnish with some fresh coriander leaves. 
Tip: great with a pappadum and some chutney or pickle on the side, or just eat it plain and simple, hot and tasty!

winter groene soep - winter green soup (GF-SF-DF-V)



Dit recept is helemaal geïnspireerd door deze van Wheatfree-Meatfree. Het is mijn soepje als ik andijvie in mijn groentepakket krijg. Ik hou namelijk niet van andijvie. Maar goed, weggooien is ook zo wat. Doe ik liever niet. 

 Vroeger hadden we een cavia die dol was op andijvie, maar ondertussen heeft Bruintje dit leven verlaten en zijn er, in huis, geen nieuwe dieren bijgekomen. Wel heb ik een paar honderd wormen geadopteerd, in de moestuin wel te verstaan, in de wormenbak. En ik moet zeggen, ook deze diertjes zijn dol op andijvie ;-) Dus na het maken van deze, niet om aan te zien, doch zeer smakelijke, soep, krijgen de wormen de restjes. 

 Je hebt nodig voor 6 flinke koppen: 
1 ui, fijngesneden 
2 grote tenen knoflook, fijngesneden 
3 cm gember, fijngesneden 
1 kleine gele of groene paprika, in kleine blokjes 
½ knolselderij, in kleine blokjes 
1 el gemalen sumac (bij Turkse winkels te koop of maak een mix van citroenrasp en –sap met wat gemalen zwarte peper) 
1 volle tl gemalen komijn 
1 volle tl gemalen koriander 
½ tl oregano 
½ tl tijm 
150 g groene mungbonen 
1 ½ l groentebouillon 
1 kropje andijvie, alleen de lichte blaadjes, heel fijngesneden, gewassen, ongeveer 250 gram 
3 el witte basmati rijst 

 Fruit de ui, knoflook, gember, paprika- en knolselderijblokjes zachtjes ongeveer 8 minuten in wat olijfolie. Voeg dan de specerijen toe en bak ze 1 minuut mee. voeg dan de mungbonen en de groentebouillontoe, breng aan de kook en laat ongeveer 1 uur zachtjes koken met het deksel op de pan tot de mungbonen gaar zijn. Proef na 45 minuten even om te kijken of het al zo ver is. 

 Voeg dan rijst en andijvie toe en laat nog 10 minuutjes pruttelen. Bewaar wat andijvie voor het serveren, of wie weet heb je wat verse kruiden in keuken of tuin, dat frist het geheel wat op, anders is het een vrij groenbruinig soepje.

 Maar laat je niet afleiden door de kleur, de smaak is fantastisch. De sumac geeft de soep iets fruitig-zurigs en de specerijen een exotische toets. Echt heel lekker en perfect voor koude en grijze dagen! 


 For 6 you’ll need:
1 onion, finely cut
2 fat cloves of garlic, finely cut
3 cm/1 inch of ginger, finely cut
1 small green or yellow bell pepper, in small cubes
½ celeriac, in small cubes
1 tbsp sumac (Turkisch or Iranaian stores or when you cannot obtain it mix some lemon zest and juice with some ground black pepper)
1 heaped tsp ground cumin
1 heaped tsp ground coriander
½ tsp oregano
½ tsp thyme
¾ cup/ 150 g green mung beans
6 cups/ 1 ½ l vegetable stock
2-3 cups finely cut curly endive
3 tbsp white basmati rice

In a big soup casserole heat some olive oil and on low heat fry onion, garlic, ginger, bell pepper and celeriac cubes for 8 minutes. Add spices and fry another minute.

Then add mung beans and stock and bring to the boil and, with the lid on, let it simmer slowly for 1 hour till the mung beans are done. You can try after 45 minutes if they are done yet. If so add rice and curly endive and let it cook some for 10-15 minutes.

Serve with some extra curly endive or some green herbs to brighten up the color.

Ok, this soup doesn’t look too sexy maybe, but the taste is incredible! The sumac gives it a fruity tanginess and the spices an exotic touch, just amazing! Perfect for cold, grey days. Enjoy!

Helende kichadi - healing kichadi (GF-DF-SF-V)



Beste lezers,

Ik heb een mededeling voor jullie: ik ga er een tijdje tussenuit.

Afgelopen januari heb ik in India een hardnekkige en tot nu toe niet uit te roeien dunne darmparasiet opgelopen, die ervoor heeft gezorgd dat mijn gezondheid langzaam maar zeker is verslechterd tot een niveau dat ik het echt rustiger aan moet gaan doen. 
Met de overgebleven 48 kg is mijn lichaam totaal uitgeput.
Na verschillende antibiotica- en anti-parasitaire kuren heb ik besloten mijn heil te gaan zoeken in de ayurveda. Mijn huisarts heeft geen ideeën meer, behalve meer medicijnen of een verwijzing naar een internist of MDL-arts, die waarschijnlijk ook alleen medicatie te bieden heeft.

Ayurveda is een holistische wetenschap, die de mens als geheel beschouwt.

Ik heb een ayurvedische arts in Den Haag gevonden die me gaat begeleiden op het pad naar heling en in balans brengen van mijn uitgeputte lichaam.
Dit gaat tijd kosten, misschien wel 4-6 maanden.
 Na een eerste consult is nu van belang dat mijn energie zich kan herstellen, uitrusten is de prioriteit.

Naar aanleiding van mijn bezoek aan deze arts heb ik een lijst gemaakt van mijn dagelijkse bezigheden en mijn to-do-lists. De simpele conclusie die ik hieruit heb getrokken: TEVEEL!

Ik moet dus drastisch schrappen en mijn leven herbezien en rigoureus simpeler maken. Ik heb ruimte en tijd nodig om me te richten op 1 ding en dat is nu: mijn lichaam helen.

Dit betekent dat recepten ontwikkelen, uitproberen, schrijven, fotograferen en op mijn blog zetten er voorlopig niet inzit.

Als laatste, voorlopige recept deel ik dit verrukkelijke recept wat de komende tijd mijn dagelijkse lunch zal zijn: kichadi, een ayurvedisch helend gerecht.

Ik zal af en toe, meer af dan toe, iets op mijn blog zetten, een foto, gedachte, een oud recept en misschien een update over mijn gezondheid. Even zien hoe het gaat.

Recept voor helende kichadi(4 porties):
½ cup witte basmati rijst
¼ cup quinoa
½ cup gespleten (gele) mung beans
1 ui, fijngehakt
2 kruidnagels
2 kardemom peulen, lichtgekneusd
1 stuk kaneel
1 laurierblad
1 tl kurkuma
1 teen knoflook, fijngehakt en tot puree geplet
2 cm verse gember fijngesneden en tot puree geplet
2-3 cups verse fijngesneden groentes naar keuze: ik gebruikte doperwten, wortel en zoete aardappel
4-6 cups water
zout en peper

hoe te maken:
Was eerst de rijst, quinoa en mung bonen en week minimaal 1 uur in voldoende water.

Verwarm wat ghee of olijfolie en bak hierin zacht de gesnipperde ui met de kruidnagels, kardemom, laurierblad en kaneel ongeveer 5 minuten.

Giet granen en bonen af en spoel ze goed. Voeg ze toe aan het ui mengsel samen met de kurkuma en de knoflook-gember puree. Roer goed door en bak 1 minuut samen. Voeg dan 4 cups/ 1 liter water toe met de in stukjes gesneden groenten, breng op smaak met zout en zwarte peper. Breng aan de kook en laat zeker 20 minuten zachtjes koken tot alles goed gaar is. Roer af en toe en voeg meer water toe als het te droog wordt of omdat je, net als ik, van een soepachtige kichadi houd :-)

Eet deze helende kichadi puur zoals-ie is of serveer met een papadam, wat chutney, een scheut volle yoghurt en wat verse koriander of peterselie.

Ga rustig zitten en geniet!

I have an anouncement to make: for the time being I’ll be off-blog.

In January of this year I picked up a nasty and, till now, untreatable small intestine parasite on my trip to India. Since then my health deteriorated slowly but steadily. Now, with only 48 kg left, I am exhausted, both mentally and physically.

After several antibiotic and anti parasitical treatments, I decided to choose for an ayurvedic approach.
My GP does not have any more ideas, except for more medication or sending me to a specialist who will probably prescribe more of what I don’t want.

I found an ayurvedic doctor in The Hague who is going to support me in balancing my doshas and my gut and coaching me in the healing process. Most important at this moment is resting and restoring my energy.

As a result of the first visit I made a list of my daily activities and my mostly undoable to-do-lists and came to the very simple conclusion: TOO MUCH!

So I decided to drastically clear my daily tasks  and simplify my life: I need the space and time to focus on my health, healing my body.

That’s why developing and trying out recipes, describing them, making photos and posting on my blog is not on top of my list now.

As a, for now, last recipe I like to share with you this delicious healing ayurvedic kichadi, which will be my lunch for the coming months.

I hope to post from time to time, irregular, a photo, a quote, or highlighting an old recipe or un update on my health.

Healing kichadi:
½ cup white basmati rice
¼ cup quinoa
½ cup split mung beans
1 onion, cut fine
2 cloves, 2 cardamom pods, crushed
1 bay leaf
1 piece of cinnamon
1 tsp curcuma
1 clove of garlic, finely cut and mashed
2 cm fresh ginger, shredded and mashed
2-3 cups of diced vegetables to your choice, I used peas, carrot and sweet potato
4-6 cups of water
salt and pepper

How to make it:
Wash rice, quinoa and mung beans and soak for at least 1 hour in plenty of water.

Warm some ghee or olive oil and fry softly for 5 minutes the chopped onion with the cloves, cardamom pods, bay leaf and cinnamon.

Drain and rinse grains and beans and add to the onion mixture together with the curcuma and ginger-garlic mash. Stir well and let it fry together for 1 more minute.
Then add 4 cups of water with the cut vegetables and bring to a soft simmer. Season with salt and black pepper. Let it cook for about 20 minutes till everything is well done. Stir occasionally and add more water when needed and to your liking; I like my kichadi real soupy:-)

Eat plain as it is or with a papadum, some chutney, a scoop of full fat yoghurt and some fresh parsley or coriander.


Sit down and enjoy quietly!

mung bean dosa - pessarattu (GF-DF-SF-V)



Making a dosa is not as easy as making a pancake.

A dosa needs soaking, needs fermenting, needs time. I love to eat a perfect dosa when I’m in India, it is so good, it never bores, also after 3 or 4 weeks I can eat a dosa every day.

Making a dosa in Holland in the winter is really a challenge, I am not going to bother you with it, but instead give you this perfect site and a recipe for an easier dosa, made from soaked mung beans, you know these beautiful green beans?


When you sprout them, they become taugé or sprouted soy beans they are called. They are very nutritious and in India they are eaten whole or husked in dals or sweet in deserts. Cellophane noodles are also made of green gram or mung beans.

In this recipe you soak them for a night, so before you go to sleep put some under the water and make your dosa first thing in the morning.


Mung bean dosa – Pessarattu (8 pcs)

1 ½ cup mung beans

½ cup fine rice flour

1-4 green chilies

½ inch fresh ginger root

pinch of salt



Soak the mung beans overnight in plenty of water.

Next morning drain and rinse the mung beans and grind with the the chilies and ginger to a coarse paste. Add salt and rice flour and as much water till you have a smooth but thick batter.

Heat a tava or a non-stick crepe pan and oil it very lightly.

With a ladle scoop the batter on the pan and from the middle stir the batter quickly around. See the above link about the perfect dosa.

They taste great as they are, but are really delicious with coconut chutney or tomato chutney.

You can keep the batter for some days in the fridge or bake and freeze these green babies!
