Spaanse preitaart met rijst en romescosaus – Spanish leek bake with rice and romesco sauce- torta de puerros con arroz y salsa de romesco(GF-SF)


Een verwarmend lentegerecht, dat is wat ik nodig heb, niks geen salades, smoothies of yoghurt met fruit, maar soep met veel gember erin, hartige stoofgerechten met bonen en linzen, het lijkt wel weer herfst.

Nou ja, ook dit weer waait wel weer over en gelukkig gaat de natuur gewoon haar gang: langzaam krijgen alle bomen en struiken hun eigen groene blaadjes, wat een verschillende kleuren groen zijn er nu te bekijken!
In mijn moestuin komen heel voorzichtig wat groene blaadjes op, van de rucola en de tere, een Turkse tuinkers.

Groen is de kleur van de lente, vandaag een groen gerecht, simpel en lekker.

Je hebt nodig:
3 el olijfolie
500 g prei
1 stengel bleekselderij
1 grote ui
1 blaadje laurier
paar takjes tijm
1 dl witte wijn
3 biologische eieren
3 dl melk, room of een plantaardige variant
50 g kaas
200g gekookte bruine rijst

Snijd de prei in ringen en was goed. Snijd ui en bleekselderij fijn.
Verwarm in een braadpan de olijfolie en bak ui, prei en bleekselderij met het laurierblad en de tijm ongeveer 8 minuten op lage temperatuur. Blus af met de witte wijn en laat, met deksel op de pan, nog een minuut of 8 zachtjes sudderen. Laat afkoelen.

Verwarm de oven voor op 180°C en vet een ovenschaal in met wat olijfolie.

Klop de eieren los en meng met de melk/room en de kaas, breng op smaak met wat zout en peper.

Als het preimengsel is afgekoeld meng je eieren en rijst er door en schep alles in de ovenschaal. Bak de torta in het midden van de oven, 30–35 minuten tot goudbruin en het stevig aanvoelt als je erop drukt met je vingers.

Afhankelijk van je ovenschaal kun je proberen de taart te storten. Ik heb het risico niet genomen.

Wel maakte ik er nog een  glutenvrije romescosaus erbij:


1 rode paprika
15 hele amandelen
6 hazelnoten
1 kleine teen knoflook
1 gepelde tomaat, uit blik
1 el sherry azijn
2-3 el olijfolie
1 mespunt Pimentón, gerookt paprikapoeder
peper en zout
handje fijngehakte peterselie

Blaker een rode paprika op de gasvlam of BBQ en laat hem afkoelen in een papieren zak voordat je de schil eraf wrijft en de pitjes verwijdert. Toast de amandelen en de hele hazelnoten. Laat even afkoelen.
Ik maak de romesco in een gladde Spaanse vijzel, maar je kunt natuurlijk ook alle ingrediënten in een keukenmachine tot een mooie gladde saus draaien.
Proef en breng eventueel op smaak.



You’ll need:
3 tbsp olive oil
500 g leeks
1 stalk of celery
1 big onion
1 bay leaf
A few thyme sprigs
1 dl white wine
3 organic eggs
3 dl milk, cream or a vegan variation
50 g cheese
200 g cooked brown rice

Chop and wash the leeks thoroughly, chop onion and celery fine.

In a heavy casserole heat the olive oil and softly fry onion, leeks and celery with the bay leaf and thyme for 8 minutes, while stirring occasionally. Season with some salt and pepper and deglaze with the white wine, put the lid on, heat low and let it simmer for another 8 minutes. Then let it cool a bit.

Pre heat the oven on 180°C and oil and ovenproof dish.

Mix eggs with the milk/cream and the cheese, season with a little salt and pepper.
When the leeks are cooled down enough, stir in the egg mixture and the rice. Bake the torta in the middle of the oven for 30-35 minutes, till golden brown or when you press with your fingertips it should feel quite firm.

Depending on the oven dish you used you can turn the torta on a plate. I didn’t take the risk. What I did do is make an easy glutenfree romesco sauce to go with it:


1 red bell pepper
15 whole almonds
6 hazelnuts
1 small clove of garlic
1 peeled tomato, from a tin
1 tbsp sherry vinegar
2-3 tbsp olive oil
pepper and salt
1 pinch of Pimentón, smoked paprika powder
1 handful of fresh parsley, chopped

Char the bell pepper on a gas flame or the BBQ and let it cool in a paper bag. then remove the skin and seeds. Toast the almonds and hazelnuts in a dry pan, let them cool.

I make my romesco in a smooth Spanish mortar and pestle but you can easily throw everything in a food processor and make a smooth sauce. Taste and adjust to your own taste.

Salade met geroosterde peer, hazelnoot en feta - Salad with roasted pears, hazelnuts and feta (GF-SF)



Ik was even naar Noord-Spanje waar de lente al wat eerder begonnen en de temperatuur gelukkig ook al hoger was. 
Te midden van de uitlopende notenbomen, de bloeiende peren- en appelbomen en de volop geurende wilde tijm genoot ik van de eerste nachtegalen, de teruggekeerde bijeneters en andere vrolijke fluiters, maar vooral van de onmetelijke stilte en mijn lieve vrienden daar.




Thuisgekomen lagen er nog wat peren op de fruitschaal en met de versgeplukte wilde tijm maakte ik deze lekkere salade: zoet, zout, knapperig en fris en nog snel klaar ook.

Je hebt nodig per persoon:
1 peer per persoon
1 flinke handvol gemengde sla
1-2 el hazelnoten
30 g feta

Honing mosterd tijm dressing:
3 el extra vergine olijfolie
2 el lekkere azijn, zoals paardebloem
1 volle tl Dyon mosterd
1 volle tl honing
verse tijm blaadjes
versgemalen peper
zeezout

Doe alle ingrediënten in een leeg jam potje en schud, met het deksel erop, tot een mooie homogene dressing, zet apart.


Toast de hazelnoten in een droge pan en zet opzij. Hak ze grof als ze afgekoeld zijn.
Was en droog de sla.
Was de peer. Snijd aan beide zijden een dun plakje af, die gebruik je niet. Snijd de peer dan in 4 dikke plakken en vet ze licht in met wat olijfolie.
Verhit een grillpan en bak de plakken peer een paar minuten aan beide kanten tot ze een mooi bruin streeppatroon vertonen.

Verdeel sla over een flink bord, verdeel de warme plakken peer, gehakte hazelnoten en verkruimel de feta over de sla en besprenkel met wat dressing. Serveer meteen!




You’ll need per person:
1 pear
1 big handful of lettuce leaves
1-2 tbsp hazelnuts
30 g feta

Honey mustard thyme dressing:
3 tbsp extra virgin olive oil
2 tbsp nice vinegar, like dandelion
1 tsp Dyon mustard
1 tsp honey
fresh thyme leaves
freshly ground pepper
sea salt

Put all ingredients in an empty jam pot and, with the lid on, shake till it is emulsified, set apart.

Toast the hazelnuts in a dry pan and set aside till cooled. Then chop roughly.
Wash and dry the lettuce.
Wash the pear(s) and cut from both sides a thin slice, which we do not use.
Cut the pear in 4 big slices and thinly grease with olive oil. Heat a grilling pan and bake the slices for some minutes each side till you see a dark grilling pattern.


Divide the lettuce on a big plate, then the slices of warm pear, the toasted hazelnuts and crumble some feta over the plate. Add dressing to your taste, serve at once!

Glutenvrije kaneel-gember kerststol – gluten free almond-ginger Christmas stollen (GF-DF-V)


Op de valreep maakte ik deze heerlijke kerststol. Dus als je nog even tijd hebt, zeg een middagje, dan maak je gewoon nog even een kerststol voor jezelf of een coeliake geliefde of familielid. Het is een echt brood, met een echte korst, dus geen zacht brood, niet voor softies!


Je hebt nodig:
200g amandelspijs en voeg dan ½ theelepel kaneel door de gemalen amandelen

3g instant gist
5g suiker
120 ml handwarm water
Scheutje appelazijn
1 el olijfolie

½ tl zeezout
1 el gemalen lijnzaad
1 el psylliumzaad

En voor de vulling:
75g gemengde zuidvruchten; cranberries, krenten, rozijnen
50g gemengde noten, licht geroosterd en fijngehakt
25g gekonfijte gember, fijngehakt

1. maak eerst het amandelspijs en meng er ½ tl kaneel door. Ik heb deze keer geen ei toegevoegd, de amandelspijs is erg smeuïg van zichzelf.


2. dan maken we het deeg:
In een kommetje schenk je handwarm water op gist en suiker, roer even door en laat 10-15 minuten ontwikkelen. Het mengsel gaat schuimen.
Doe de boekweitmix in een kom en meng goed met zout, lijnzaad en psyllium.

3. Prepareer de vulling: rooster en hak de noten en doe ze met de zuidvruchten en gekonfijte gember in een kom, zet even apart.

4. Als het gistmengsel schuimt giet je er de olijfolie en de appelazijn bij en dan direct bij het meelmengsel. Roer goed door elkaar, het moet een vrij plakkerig deeg blijven, niet te droog dus!
Roer het vruchten-notenmengsel erdoor en dek af met wat huishoudfolie en laat minimaal een uur rusten/rijzen op een warme plek.


5. Vervolgens leg je het deeg op een vel bakpapier en druk met je handen tot een plak van ongeveer 23 x 18 cm, hoeft niet netjes een beetje rustiek is helemaal goed ;-) Verdeel het amandelspijs in een rolletje over de lengte van het deeg en vouw het deeg eroverheen. Druk licht aan met je vingers en leg het deeg met bakpapier op een bakblik. Laat zeker nog een uur rusten/rijzen bedekt met huishoudfolie op een warme plek.

6. Verwarm dan de oven voor op 180°C en bak de stol in het midden van de oven 35-40 minuten tot het goudbruin en gaar is.
Ik gebruik deze keer geen ei, dus blijft deze stol veganistisch.

This gluten free and vegan Christmas stollen is a real bread, with a good crust, not for softies!

You’ll need:

200g almond paste, store bought or make your own: I added ½ tsp cinnamon and left out the egg this time, since the paste was gooey enough!

3 g instant yeast
5g sugar
120 ml hand warm water
Dash of apple cider vinegar
1 tbsp olive oil

½ tsp sea salt
1 tbsp ground flax seed
1 tbsp psyllium husks

For the filling:
75g mixed dried fruits, like cranberries, sultanas, currants
50g mixed nuts, lightly toasted and chopped
25g candied ginger, chopped fine

1. first make the cinnamon almond paste and set aside.

2. make the yeast slurry by mixing the hand warm water with the yeast and sugar. Give it a stir and leave it on a warm spot to develop, 10-15 minutes. It will become foamy.

3. mix the flour mix with salt, flax and psyllium in a bowl. Set aside.

4. make the filling by toasting and chopping the nuts and mixing with the other ingredients.


5. when the yeast mix is ready, pour in a dash of apple cider vinegar and the olive oil and pour everything into the flour mixture. Stir till it forms a sticky dough. Add chopped nuts and fruit and fold them in. It must be sticky, so when the dough is too dry add some warm water!
Put a piece of cling film over the bowl and let the dough rest/rise on a warm spot for at least 1 hour.

6. put the dough on a piece of baking paper and flatten it out into a rectangle of 23 x 18 cm, not too neat ;-) a bit rustic is ok. Divide the almond paste in a roll lengthwise on the dough and fold over the dough. Press the sides lightly.
Put the bread with the paper on a baking tray, cover again with cling film and let it rest/rise for a second time on a warm spot for another hour.

7. pre heat the oven on 180°C and bake the stolen for 35-40 minutes in the middle of the oven till golden-brown. I did not use any egg wash on top to keep it vegan, you can if you want to get a glossy finish. Let it cool completely before cutting.

My daily bread – mijn dagelijks sneetje brood(GF-DF-SF-V)


I just realized I never wrote a post about my daily bread.
After making lots of gluten free, mainly flat breads and without yeast, I decided I don’t care a lot any more for bread and instead started eating oatmeal in the morning and making something warm, a soup, some left-over lentils, for lunch and cook again in the evening. Quite to my liking!

But last year I found this recipe for a bread. It’s called Life-changing loaf of bread and that’s it for me too since then.
I make it every week now or even twice a week, depending of the season and the things I have to do. It has great taste, it’s very easy to make, to keep, to take away, to make toast with, to freeze. And; more important even, this bread is super healthy, filled with, in my opinion, only good, wholesome, natural ingredients. And... people without celiac disease like it too!!
It made my tummy very happy, really!!

After years of let me say hard work in the morning, yes, my celiac disease made my intestines work very slowly and not fully functioning for a long time, eating this bread makes me go every morning, easy and smooth, effortless.


I now perfected it I think. The first time I made it, it fell apart completely. I am going to explain how it works for me now, but you can just follow Sarah´s recipe as well. All praise goes to her and just check out her website, she is so gifted, she is a big inspiration to me!


This is how I make it:

I use a glass Pyrex bread pan from 28 x 11 cm, but you can use a flexible, silicon one as Sarah does.

I place a 28 cm piece of baking paper along the long sides of the pan with the sides hanging over, so I can cover the bread dough when it’s in the mold.

In a big bowl mix the dry ingredients:

135g sunflower seeds or a combination of sunflower seeds and pumpkin seeds
90g of flax seeds, ground fine
65g of whole brown hazelnuts
145g gluten-free rolled oats
2 tbsp chia seeds or 2 tbsp sesame seeds(the chia adds more “glue” to the mixture, but at first I did without them, because they were not in my pantry, and the bread held very well too!!)
4 tbsp psyllium seed husks (they cannot be replaced, they hold the bread together!!
1  tsp sea salt

Then add the wet ingredients:

(The original recipe asks for maple syrup but I omit it; I don’t like any sweetness in my bread.)

3 tbsp extra virgin olive oil or melted coconut oil
350 ml warm water

Stir everything well. It becomes sticky and when you keep on stirring, the psyllium, chia and flax start to glue the dough together. Knead with your hand into the size of your mold and put it in. Press with your hand till the dough is evenly distributed. It will be 3-4 cm thick. Cover with the hanging over baking paper and set aside for at least 2 hours. I make mine in the evening and let it set overnight and bake the bread in the morning.

Pre heat the oven on 350°F or 175°C.

I take the bread out of the mold by holding the baking paper draped over the dough and place it directly on the middle rack into the oven. Bake the bread for 50-60 minutes, turn half way. The bread is ready when it sounds hollow when you tap it on the bottom.

Let it cool completely!! Slice with a very sharp bread/serrated knife. I hold the bread firmly when slicing, to prevent crumbling.

The bread is very good as it is, but toasting it makes it even better. I eat 2 slices every morning and it gives me energy till lunch!! The recipe makes about 14 slices.

You can freeze the bread as well, but beware of the slices sticking together, so freeze them flat or separate them with a piece of baking paper.


Ik maak het zo:

Bekleed een glazen Pyrex brood/cakevorm( 28 x 11 cm) met bakpapier alleen aan de lange kanten, zodat het overhangt. Of gebruik een flexibele, siliconen vorm zoals Sarah.

Meng in een beslagkom de droge ingrediënten:

135g zonnepitten of een combinatie van zonnepitten en pompoenpitten
90g gemalen lijnzaad
65g bruine hazelnoten
145g havervlokken
2 eetlepels chiazaad of sesamzaad als je geen chia in huis hebt (heb ik ook gedaan in het begin en het brood valt niet uit elkaar!)
4 el psyllium husks (de psyllium moet, anders geen goed brood!)
1 tl fijn zeezout

Meng goed door elkaar; ik doe er geen zoetmiddel in, niet nodig en niet lekker, het is brood!

Roer dan volgende natte ingrediënten toe:

3 el extra virgin olijfolie of  gesmolten kokosolie
En 350 ml warm water

Roer totdat het een samenhangend geheel wordt. Het psylliumzaad, lijnzaad en chiazaad zorgt voor binding van het mengsel. Kneed even door met de hand en vorm een langwerpige vorm die in de glazen of andere broodvorm past. Ik heb een glazen Pyrex vorm van 28 cm die ik bekleed met een stuk bakpapier over de lange kant. Druk het deeg aan in de vorm; het wordt ongeveer 3-4 cm hoog. Laat dan in ieder geval 2 uur opstijven of laat een nacht staan en bak het brood de volgende ochtend.

Verwarm de oven voor op 180 °C.

Haal het brood uit de vorm en plaats met bakpapier en al op het rooster in het midden van de oven, bak 25 minuten aan 1 kant, draai het brood voorzichtig om en bak nog eens 25-30 minuten aan de andere kant. Het brood is gaar als het een beetje hol klinkt als je er op klopt.
Helemaal laten afkoelen voordat je het snijdt met een scherp broodmes!!
Houd het brood goed vast waar je het snijdt, dan valt het niet uit elkaar.
Dit recept is voor ongeveer 14 sneetjes brood. Je kunt het zo eten, maar even geroosterd is het nog beter van smaak.

Je kunt de sneetjes ook invriezen, maar let op, ze plakken aan elkaar, dus plat, stuk voor stuk, of met een stukje bakpapier ertussen.

Hazelnut polenta with roasted pumpkin- hazelnoot polenta met geroosterde pompoen(GF-V-SF)


Yesterday I made this polenta dish which is so great with the use of hazelnut meal. I came upon the recipe in a Dutch magazine about organic food: Smaakmakend.
The hazelnut meal gives the polenta a nuttiness and a bite which goes very well with the roasted pumpkin, the white beans and  the goat’s cheese.

Comfort food as it should be, soft, cheesy and hearty. My son even loved it, although he is not a big polenta eater. We liked it so much that I almost forgot to take a picture; with a little left-over I could manage these ones ;-)


Hazelnut polenta with roasted pumpkin (2 pers)

70 g polenta
70 g hazelnut meal
500 ml water
1 tbsp Herbes de Provence
50 g Parmesan
400 g pumpkin, cleaned and in cubes
2 cloves of garlic, in thin slices
1 onion, chopped in half moons
10 black olives, de-pitted and chopped roughly
1 tbsp fresh rosemary, cut fine
2 tbsp olive oil
1 can of big white beans, drained
100-150 g soft goat’s cheese
fresh parsley

Pre-heat the oven on 200 °C. Prepare a baking tray with a piece of baking paper.

Put a big pan on the fire with 500 ml of water and bring to the boil. Mix polenta and hazelnut meal well. When the water is boiling pour in the mixed polenta/hazelnut while you keep on stirring! So no lumps will form. keep on stirring and let the polenta cook conform the description on the package. This can range from 5 -30 minutes, so have a good look what type of polenta you’re using.

In the meantime prepare the vegetables and mix pumpkin, onion, garlic, olives and rosemary with the olive oil, salt and pepper and put in the pre-heated oven and bake for 30 minutes, stir half way, till golden brown and cooked. Set aside for a minute till the polenta is baking.

When your polenta is done cooking, mix in grated Parmesan and  pour on a flat oven-proof plate or casserole and, after removing the baking tray with pumpkin, adjust the oven to grilling  and grill the polenta for 3-5 minutes.
Mix pumpkin with the white beans  and gently scoop on top of the polenta and sprinkle goats’ cheese on top and put under the grill for another 5 minutes.


You’re done. Sprinkle some parsley on top and serve with a simple green salad and enjoy this tasty comfort dish.

Cinnamon flavored crunchy oats muesli – geroosterde haver muesli met kaneel (GF-DF-SF-V)

In the summer I eat a lot of muesli, but now with the days shortening and the temperature dropping to a degree that I already bought a new knitted hat and gloves, I long for warming dishes, no cold yoghurt with fruit and muesli for me.
Stewing apples and eating them with some of this lovely gluten-free cinnamon flavored muesli is a new favorite.
                        
The cinnamon adds a  wintery warming taste and is great for digestion which is very important for everyone but especially for people with celiac disease. My intestines are vulnerable and especially in this transition time to winter I have to take care a lot of my belly.
It’s the time of warming soups and drinks like herbal teas with some  fresh ginger added to it.


Cinnamon flavored crunchy oats muesli (big pot)

300g gluten free rolled oats
25 g puffed rice
60 g sunflower seeds
65 g hazelnuts, cut roughly
50g roughly slivered almonds
1 tbsp cinnamon
1 tbsp coconut oil
¼ tsp sea salt
80 ml honey
80 ml water
2 handful of raisins

Pre heat the oven on 150 ˚C.
Lay a piece of parchment paper on the baking tray.

In a large bowl mix the first 6 ingredients.
Melt the coconut oil with the honey, water and sea salt and pour it into the dry ingredients, stir everything well and put it on the baking tray. Spread it out evenly.

Bake the muesli 45 minutes in the oven and give it a stir every 15 minutes so it will bake evenly.

Let it cool completely, than add the raisins and store the muesli in a glass container. It will keep for months, when possible ;-)


Geroosterde havermuesli met kaneel (grote pot)

300 g glutenvrije haver
25 g gepofte rijst
60 g zonnebloempitten
65g hazelnoten, grof gehakt
50 g amandelschilfers, ik snijd met een scherp mes hele amandelen in de lengte in grove schilfers
1 volle el kaneel
1 el kokosolie
¼ tl zeezout
80 ml honing
80 ml water
2 handenvol rozijnen

Verwarm de oven voor op 150 ˚C.
Leg een vel bakpapier op een bakplaat.

Meng de eerste 6 ingrediënten in een grote kom.
Smelt de kokosolie en verwarm samen met water, honing, en zeezout en giet dan bij de droge ingrediënten. Roer alles goed door elkaar en stort op de bakplaat. Spreid het gelijkmatig uit.

Bak de muesli 45 minuten in de oven en roer iedere 15 minuten even door zodat het regelmatig gaart.

Laat volledig afkoelen en meng dan de rozijnen erdoor. Bewaar in een glazen pot. Het blijft dan maanden goed, als je dat haalt ;-)

Sugar free baked banana oatmeal - suikervrij oven havermout met banaan(GF-SF)


After 2 weeks of summer it’s really cold again. I’m wearing sweaters and warm socks. Time again for some warming breakfast!
This is a sugar free variation on my baked oatmeal recipe.
The addition of a ripe banana gives the oatmeal a real soft substance and sweet taste, you don’t need any sugar at all.

Sugar-free baked banana oatmeal (2 pcs)

1 cup gluten free rolled oats (Provena is the one I use, the only gluten free one in Holland)
1 cup of water or ¾ cup water and ¼ cup buttermilk
½ tsp cinnamon
1 tbsp freshly ground flax seeds
¼ cup roughly chopped nuts, like almonds and hazelnuts
1 ripe banana
1 tbsp melted coconut oil or butter
¼ tsp tartaric acid baking powder
¼ tsp sea salt

Soak the oats in a Pyrex or other ovenproof dish of 14 x 14cm in water or water-buttermilk mixture.
 In the time of warming the oven you can chop, ground and bring everything together. The oats will have enough time to soak. When you prefer you can soak the oats the night before, but it is not necessary.

Pre heat the oven on 180 ˚C.

In the oats mixture stir in the cinnamon, ground flax seeds and chopped nuts.
Melt the coconut oil and stir it in.
Mash half of the banana and stir it in too. Slice the other half of the banana.
Stir in baking powder and sea salt and lay the banana slices on top.
Bake in the pre heated oven for 30 minutes. It will be slightly risen and pretty firm.
Enjoy this healthy and really tasty breakfast!


Suikervrij gebakken banana havermout (2 pers)

1cup glutenvrije havervlokken (Provena)
1 cup water of ¾ cup water en ¼ cup karnemelk
½ tl kaneel
1 el versgemalen lijnzaad
¼ cup grofgehakte noten zoals amandelen en hazelnoten
1 rijpe banaan
1 el gesmolten kokosolie of boter
¼ tl wijnsteenzuur bakpoeder
¼ tl zeezout

In een 14 x 14 cm Pyrex schaaltje week je de havervlokken in het water of de water-karnemelk mix.
In de tijd dat de oven opwarmt kun je alles hakken, malen en toevoegen. De havervlokken krijgen dan genoeg tijd om voor te weken. Je kunt ook de nacht van tevoren de havervlokken in de week zetten, het is niet echt nodig.

Verwarm de oven voor op 180 ˚C.
Roer het kaneel, het gemalen lijnzaad en de gehakte noten in de havermix.
Smelt de kokosolie en roer erdoor.
Prak de helft van de banaan en roer erdoor. Snijd de andere helft in plakjes.
Roer bakpoeder en zout in de havermix en leg de plakjes banaan er bovenop.
Bak het gerecht 30 minuten in de voorverwarmde oven. Het zal enigszins gerezen zijn en stevig aanvoelen.

celeriac soup with a hazelnut picada - knolselderijsoep met een hazelnoot picada (GF-DF-SF-V)

Last week I made this soup for some friends and we all loved it!
It’s a heart warming soup for a cold day, the hazelnut picada gives it a nice crunch and tangy bite.
The word picada is not precise, the Catalan picada is a similar mixture, made in a mortar, but added to a dish at the end of the cooking time as a binder and some sort of secret touch. But I like the name and the word just popped up in my mind when I was thinking about it and eventually made it. What’s in a name, anyway!
Just make it and see what happens when you take this first bite!

Celeriac soup (4 pers)

1 celeriac, medium, peeled and in 2 cm chunks
1 onion, chopped
1 clove of garlic, chopped
12 stalks of parsley, chopped finely
1 big leek, in small rings
4 medium potatoes, peeled and in 2 cm chunks
1 l vegetable stock or boiling water

In a soup pan pour some olive oil and sweat the onion, garlic and parsley stalks with a pinch of salt for 5 minutes.
Add the leeks, stir them in and bake for another 3 minutes.
Add potatoes and celeriac, stir them in too for another 5 minutes with the lid on.
Then add water or stock and bring to the boil. Simmer till the veggies are cooked.
Add some more salt and pepper to your taste, blend the soup and serve with this great picada.


Hazelnut picada

60 g brown hazelnuts
zest and juice of an organic lemon
olive oil
pepper and salt
1 big tbsp fresh mint, chopped

Roast the hazelnuts in a dry, heavy frying pan. Let them cool.
Crush the hazelnuts roughly  in the mortar, add lemon zest, freshly ground pepper, salt, 1-2 tablespoons of lemon juice and 1-2 tablespoons of olive oil. Grind together, but not too fine, the hazelnut chunks must stay big enough for a good crunch. Stir in the mint, don’t crush it, it will become bitter!
Put a big spoonful on top of your celeriac soup.

Knolselderijsoep (4 pers)

1 knolselderij, medium, geschild en in blokjes van 2 cm
1ui, fijngehakt
1 knoflookteen, fijngehakt
12 steeltjes peterselie, fijngehakt
1 grote prei, in ringen
4 middelgrote aardappelen, geschild en in blokjes van 2 cm
1 l groentebouillon of kokend water

Verwarm wat olijfolie in een grote soeppan en zweet daarin de ui, knoflook en peterseliesteeltjes ongeveer 5 minuten.
Voeg de preiringetjes toe en bak deze 3 minuten zachtjes mee.
Voeg dan aardappel en knolselderij toe en bak nog eens 5 minuten mee met een deksel op de pan.
Voeg dan water of bouillon toe en breng de soep aan de kook. Laat zachtjes de groentes gaar worden.
Voeg wat zout en peper naar smaak toe, blender de soep en serveer met deze heerlijke hazelnoot picada.


Hazelnoot picada

60 g bruine hazelnoten
rasp en sap van 1 bio citroen
olijfolie
peper en zout
1 volle el verse munt

Rooster de hazelnoten in een droge koekpan met dikke bodem. Laat afkoelen.
Plet de hazelnoten in een stenen vijzel, niet te fijn, ze moeten een bite blijven houden.
Voeg citroenrasp, peper en zout, 1-2 el citroensap en 1-2 el olijfolie toe en meng ze in de vijzel.
Roer als laatste de fijngesneden munt erdoor, niet kneuzen, dan wordt het bitter!
Schep een grote eetlepel op de knolselderijsoep en geniet!
