Gluten-free pumpkin spice muffins – glutenvrij pompoenmuffins (GF-DF)


Baking warm bread, muffins, speculaas. It's the time of year and how good is it with a warm oven in the kitchen and lovely smells pouring out of it every day. The only problem is that I cannot eat all of it, so I have to restrict myself a bit. 

I bought myself a slow-cooker and am experimenting with it too now. almost every day. I must say that I like the way things cook so far. I made a pumpkin butter from Tasty Yummies, really delightful! I made a creamy brown basmati breakfast porridge, which I will  share shortly and I even baked a gluten-free buckwheat bread in it! 

Making a good and tasty, crusty gluten-free bread is one of my goals this winter. I bought this book and I am really inspired by it. But as you know I cannot follow a recipe to the dot, so I am struggling to make my own variations and I will keep you informed!


Instead of the all-time favourite banana bread I like to bake in autumn, I made these warm flavoured pumpkin spice muffins. They are lightly sweet and rich from the spices and pumpkin puree.


You’ll need:
dry ingredients:
1 cup GF flour mix (next post more about it)
¼ cup almond flour
1 tsp baking powder
¼ tsp sea salt
1 heaped tsp pumpkin spices
1/3 cup of unrefined cane sugar

wet ingredients:
½ cup pumpkin puree
1 organic egg
¼ cup olive oil
1 tbsp vanilla extract
lemon zest
¼ cup + 2 tbsp rice milk or nut milk

Pre heat the oven on 350 °F or 175°C.

Mix the dry ingredients in a big bowl.
Mix the wet ingredients in a small bowl.
Pour wet into dry and mix quickly and well.
Divide over 6 mini loaf pans, or 10 paper muffin liners and bake in the middle of the oven for 40-45 minutes till done. Prick a bamboo skewer inside and when it comes out clean, they are done.
Let them cool a little if you can resist the smell!


Je hebt nodig:
droge ingrediënten:
145 g glutenvrije meelmix (meer hierover in de volgende post)
30 g amandelmeel
1 tl bakpoeder
¼ tl zeezout
1 volle tl speculaaskruiden
50 g ongeraffineerde rietsuiker

natte ingrediënten:
½ cup/125 ml pompoenpuree
1 biologisch ei
¼ cup/60 ml olijfolie
1 el vanille extract
citroenrasp
¼ cup/60 ml + 2 el rijstmelk of notenmelk

Verwarm de oven voor op 175°C.

Meng de droge ingrediënten in een grote kom.
Meng de natte ingrediënten in een kleine kom.
Giet nat in droog en roer snel en goed door elkaar.

Verdeel over 6 mini broodvormpjes of 10 muffin vormpjes en bak in het midden van de oven 40-45 minuten, totdat ze gaar zijn. Prik met een bamboeprikker in het midden en als deze er schoon uitkomt is je pompoen muffin klaar. Laat even afkoelen als je het kunt laten!

Gluten free Dutch apple pie – glutenvrije Hollandse appeltaart



Deze taart draag ik op aan Jeanine, met heel veel dank voor je enthousiaste lessen! I dedicate this pie to Jeanine! For that I write my blog in Dutch, the English recipe is on the bottom.


Goh, volgens mij heb ik, sinds er coeliakie bij mij is vastgesteld in 2007 alweer 7 jaar geleden, nog nooit een appeltaart gebakken. Vreemd eigenlijk, want hoe lekker is appeltaart. Vooral als je de taart bakt voor een vergadering, namelijk met mezelf!

Ik ben op energieweek geweest 2 weken geleden in Villamartin in Andalucië. Met een geweldige groep van 7 andere mooie vrouwen en TCM-therapeute Jeanine Hofs heb ik een week mezelf verdiept in de werkingen van energie, mijn energie, die van anderen, hoe mijn energie te vergroten, te beschermen, te gebruiken en niet zomaar voor lief te nemen. Voor meer informatie kijk op de site van Jeanine, het levende voorbeeld van hoe zo goed mogelijk voor jezelf te zorgen en in de praktijk toepassen van allerhande eeuwen oude technieken betreffende energie, waaruit we allen bestaan.

1 van haar technieken is dus de vergadering met jezelf. Wekelijks een bijeenkomst met jezelf om te kijken hoe het met je gaat op lichamelijk, spiritueel, werk, liefdes etc. niveau. Verzorgd met een pot thee en iets lekkers, zoals een stuk van deze heerlijke appeltaart:

Je hebt nodig:
100g bruine rijstmeel
60g boekweitmeel
60g amandelmeel
1 tl bakpoeder
50g rietsuiker
½ tl zeezout
Rasp van 1 biologische citroen
120 g koude boter
1 eidooier
1 el vanille extract
500g goudreinetten
4 el rietsuiker
1 el kaneel
100g rozijnen, geweld zo nodig

20cm springvorm, beboterd of bekleed met bakpapier

Eerst mengen we de eerste 7 ingredienten in een grote kom. Voeg de koude boter toe en snijd met 2 messen in piepkleine stukjes. Verkruimel en meng dan met je vingers tot een zanderig geheel. Voeg dan de eidooier en vanilleextract toe en kneed snel tot een samenhangend deeg.

Bekleed de springvorm met ¾ van het deeg met een rand van ongeveer 3 cm. Zet 1 uur in de koelkast, zo ook  het overgebleven stuk deeg.

Na 1 uur verwarm je de oven voor op 175°C.

Schil de appels en, afhankelijk van de grootte van de appel, snijd ze in 4-en of 8-en en in dunne schijfjes. Meng met kaneel, suiker en rozijnen en schep in de vorm. Van het overgebleven stukje deeg maak je reepjes als decoratie bovenop.

Bak de appeltaart ongeveer 50 minuten in het midden van de oven tot het deeg goudbruin is en de appels zachtgaar, maar nog heel. Kijk na 40 minuten of de bovenkant niet te hard gaat. Als dat het geval is leg je er los een vel aluminiumfolie op.

Laat de taart helemaal afkoelen voor je de springvorm losmaakt. Snijd de delicate en enigszins kruimelige taart voorzichtig en geniet van deze heerlijk glutenvrije appeltaart met je geliefden of met jezelf op de vergadering!



you'll need:

100g brown rice flour
60g buckwheat flour
60g almond flour
50g cane sugar
1 tsp tartaric acid baking powder
½ tsp sea salt
Zest of 1 organic lemon
120g cold butter
1 egg yolk
1 tbsp vanilla extract
500g pie apples like bramble
4 tbsp cane sugar
1 tbsp cinnamon
100g sultanas, soaked or not
20cm/8 inch springform cake tin, buttered or prepared with baking paper

First we mix the first 7 ingredients in a big bowl.
Add the cold butter and cut into very tiny pieces with 2 knives. Rub everything together with 1 hand into a sandy dough. Then add egg yolk and vanilla extract and knead quickly into a dough.

Press ¾ of the dough into the cake tin, on the bottom and about 3 cm up the sides. Let it rest into the fridge for 1 hour, with the remaining ¼ of the dough.

After 1 hour pre heat the oven on 175°C/ 350°F.

Peel the apples, cut them in quarts or eights, depending on the size of the apples and slice into 5mm parts. Mix with the cinnamon, sultanas and sugar and scoop into the prepared tin.

From the left-over dough you can make thin strips to decorate the top.

Bake in middle of the oven for about 50 minutes, till the dough is golden brown and the apples soft but not mushy. Check after 40 minutes if the top is not browning too quickly. If so put a piece of aluminium foil loosely on top.
Let it cool completely before removing the ring and cut the delicate and a bit crumbly tart with care. Enjoy this really Dutch treat!

Glutenfree buckwheat sablés with strawberries and mascarpone-yoghurt cream – glutenvrije boekweit zandkoekjes met aardbeien en mascarpone en yoghurt room






Another great seasonal product now is the  strawberry
Here in Holland we call them Sweet Little Summer Kings.


 Although you can buy strawberries all year round nowadays, the best strawberry is the one who has been given the time and warmth to ripen outside. So from the end of may till about august is the best time to enjoy them and so we do!!

There is only 1 but and that is that there are only 2 or 3 types you can buy commercially and that’s a pity because there are thousands of varieties worldwide.

I love to eat them as they are, or an a piece of my daily bread, but to make a small treat is something I do when I am in the mood for it, like these small beauties.



For the sables( 15 pcs):
150g buckwheat flour
100g brown rice flour
1 tsp tartaric acid baking powder
½ tsp salt
100g soft butter
1 egg
50 g cane sugar

Mix the flours and baking powder with the salt.
Mix in the egg and with your fingers form into crumbles.
Add the soft butter and sugar and again with your fingers quickly mix and knead everything together into a short pastry dough. Let it rest for 1 hour in the fridge.

After an hour (or more) pre heat the oven on 180°C and prepare a baking tray with a sheet of baking paper.

Roll out the dough till 3-4 mm and cut out rounds, with a cookie cutter or a glass. Put them carefully on the baking tray and bake them in the middle of the oven till lightly golden, about 12-15 minutes. Let them cool completely.

When the sablés are in the oven you can make your mascarpone yoghurt cream:

Mix together 125 g of mascarpone and the same amount of full fat organic yoghurt with a big tablespoon of honey or other liquid sweetener and ½ tsp of vanilla seeds. I used a hand mixer for a very fluffy and silky texture.

Assemble the tartlets:

When the sables are cooled completely, you scoop a big ladle of the cream on top of the sables and arrange as much strawberry slices on top as fit.
Disclaimer: they are highly addictive!!



Voor deze zalige zandtaart tarteletjes van boekweit ( 15 stuks) heb je nodig:

150g boekweitmeel
100g bruine rijstmeel
1 tl wijnsteenzuur bakpoeder
½ tl zeezout
100g zachte boter
1 ei
50g rietsuiker

Meng de 2 meelsoorten samen met het zout en de bakpoeder in een kom. Voeg het ei toe en met je vingers wrijf het ei in het mengsel tot er kruimels ontstaan.
Voeg dan boter en suiker toe en wrijf en kneed snel alles door elkaar tot een “kort” deeg. Laat minimaal 1 uur rusten in de koelkast.

Verwarm dan eerst de oven voor op 180 °C en leg een vel bakpapier op je bakplaat.

Rol het deeg uit tot 3-4 mm en steek er rondjes uit met een glas of een steker. Leg de deegrondjes voorzichtig op de bakplaat.
Bak de sablés in het midden van de oven tot ze lichtbruin zijn, ongeveer 12-15 minuten. Haal ze uit de oven en laat ze helemaal afkoelen.














Ondertussen maak je de mascarpone yoghurt room:

Meng 125 g mascarpone en 125 g volle biologische yoghurt met een flinke eetlepel honing of andere vloeibare zoetmaker en ½ theelepel vanillezaad. Ik gebruikte een handmixer voor een zijdezacht resultaat.

Samenstellen van de taartjes:

Schep op ieder zandkoekje een flinke eetlepel mascarpone-yoghurt room en leg er net zoveel aardbeiplakjes op als er passen.


Pas op: ze zijn verslavend lekker!

Butternut squash soup with apples served with cheesy leek and polenta madeleines – flespompoensoep met appels geserveerd met polenta madeleines met kaas en prei(GF-SF)


I am very happy my sage and thyme plants survived  the long and rather cold winter so I can use them in this great soup.

I started sowing only 2 weeks ago, some peas, flowers straight outside, but most of it inside in small paperwrap seed pots: the seedlings of the tomatoes, black and blue radishes, grey melons, beets are growing well. The rocket and basil start slowly to show their tops. My friend Aurélie  gave me loads of seeds from her potager in the Allier where we visited last march. She is a big fan of swapping seeds and spreading and cultivating old species before they get lost. In her neighborhood she found Kokopelli, an association for the liberation of seeds and the protection of planetary biodiversity. Have a look here.


Although I only have a small balcony, I need to grow some herbs and vegetables every year. It is always such a great feeling to pick something from my own “garden”. Like in this lovely rich soup a few leaves of sage and some thyme make the difference.
I found the recipe in French women don’t get fat cookbook or Waarom franse vrouwen niet dik worden, Het kookboek. Van Mireille Guiliano. A really nice French cookbook, about good, simple food and eating with moderation and attention.

For the butternut squash soup with apples (4-6 portions) you’ll need:

1 medium butternut squash, about 1 kg
2 tbsp good olive oil
2 tbsp butter (optional)
1 big onion, chopped roughly
2 cloves of garlic, chopped finely
¼ tsp nutmeg, grated
3 sprigs of thyme
3 fresh sage leaves
3 carrots, about 300 grams
2 small apples ( I had 2 old wrinkled ones) or 1 granny smith (recipe)
4-5 cups of warm vegetable stock
Black pepper


Clean the pumpkin, halve, peel and deseed and in cubes of 3 cm.
Peel the carrots and chop in big chunks.
Chop onion and garlic.

Heat the olive oil and butter in a big casserole on medium heat.
Fry onion and garlic for 5 minutes till they soften. Stir in nutmeg, thyme and sage and bake together for another minute.
Add pumpkin and carrots and give it a stir.
Peel the apples and take out the core and add to the casserole together with the vegetable stock. Bring to the boil and let it simmer for 20 minutes with the lid on, till the vegetables are soft.

Take out the thyme leaves and puree the soup with a stick blender.
Taste and add some freshly ground black pepper.
It’s a rich and naturally sweet soup, enjoy!


I made some cheesy leek and polenta madeleines to go with the soup.

For 14 madeleines:

20g butter
1 leek, washed and small cut
80 ml buttermilk
55 g polenta
2 tbsp brown rice flour
¼ tsp baking powder
40 g grated cheese
¼ cup chives
Salt and pepper
20g butter, melted
1 organic egg

Pre heat the oven on 180 ˚C.
Prepare/oil the madeleine tin or muffin tin.

Fry the leeks in the butter slowly till they soften. Let it cool a bit and transfer to a food processor and blend together with the buttermilk into a smooth substance. Set aside.

In a big bowl mix together polenta, rice flour, baking powder, cheese, chives.
Add melted butter, egg and the leek mixture and stir everything well. Taste and add pepper and salt to your own flavour.
Scoop the batter into the prepared tin and bake the madeleines in the middle of the oven for 10-12 minutes till they are golden brown. Warm as good as cold!


Flespompoensoep (4-6 pers)

1 flespompoen van 1 kg
2 el goede olijfolie
2 el boter
1 grote ui, grof gehakt
2 tenen knoflook, fijngehakt
¼ tl versgeraspte nootmuskaat
3 takjes tijm
3 verse salieblaadjes
3 wortels, ongeveer 300 g
2 kleine appels of 1 Granny Smith (volgens recept)
4-5 koppen (1l -1,25l) warme groentebouillon

Halveer en schil de pompoen en verwijder zaad en draad.
Maak de wortels schoon en snijd beide groentes in stukken van 3-4 cm.
Hak ui en knoflook.

Verhit olijfolie en boter in een zware soeppan op middelhoog vuur en fruit hierin ui en knoflook ongeveer 5 minuten tot ze glazig zijn.
Roer dan nootmuskaat, tijm en salie erdoor en bak nog 1 minuut mee.
Voeg dan pompoen- en wortelstukken toe en maak de appel schoon, schil eraf en klokhuis eruit, voeg toe met de warme bouillon. Breng aan de kook en kook zacht, met het deksel erop, 20 minuten tot de groentes zacht zijn.

Verwijder de tijm en pureer de soep met een staafmixer. Proef en voeg peper en eventueel zout naar smaak toe.
Het is een rijke en van nature zoete soep, geniet ervan!

Ik at er deze heerlijke polenta madeleines met prei en kaas bij:
(bewerking recept van Donna Hay)
 

Voor 14 madeleines:

20 g boter
1 prei, gewassen en fijngesneden
80 ml karnemelk
55 g polenta
2 el bruine rijstmeel
¼ tl bakpoeder
40 g geraspte kaas
wat bieslook, fijngesneden
zout en peper
20 g gesmolten boter
1 biologisch ei

Verwarm de oven voor op 180 ˚C.
Beboter de madeleine vorm of muffinvorm.

Fruit de prei in de boter tot ze zacht en lichtgekleurd is, ongeveer 5 minuten.
Laat even afkoelen en maal samen met de karnemelk in een blender tot een zachte puree. Zet apart.

Meng in een ruime kom polenta, rijstmeel, bakpoeder, kaas en bieslook. Voeg dan gesmolten boter, het ei en het preimengsel toe en roer goed door elkaar. Proef en voeg naar smaak peper en zout toe.

Schep het beslag in de vorm en bak de madeleines 10-12 minuten in het midden van de oven tot ze goudbruin zijn. Warm en koud erg lekker!

Sablés Bretons – Bretonse zandkoekjes (GF)


A classic sand cookie, in Bretagne made with salted butter and in my version sprinkled with a rough sea salt which lifts the sweet taste of butter and sugar to an almost seaside experience. Just close your eyes, listen to the roaring autumn winds outside and imagine yourself sitting in the sun on a wind-shield terrace viewing The Atlantic Ocean.
With a hot pot of tea, of course.

Sablés Bretons (18 pcs)

100 g cane sugar
125 g soft butter, on room temperature
1 egg, losgeklopt met een vork
250 g Werz flour or brown rice flour, sifted
1 pinch of salt
1 tbsp vanilla extract
1 tbsp Maldon salt or sel de Guérande

Pre heat the oven on 190 ˚C
Prepare a baking tray with a sheet of baking paper

Mix sugar and butter with a spoon thoroughly.
Add ¾ of the egg with the salt and vanilla extract and mix through.
Then add flour and with cold hands knead it through quickly, don’t overdo it.

Roll the dough out between two sheets of cling film, about 5 mm thickness.
Cut out cookies and lay them on a baking tray. With a fork press a pattern and coat with some  of the remaining egg. Sprinkle with a little Maldon salt and bake the sablés in the oven for 20-25 minutes till golden.

Let them cool completely and store in an air tight container.


Sablés Bretons (18 stuks)

100 g rietsuiker
125 g zachte boter, op kamertemperatuur
1 ei, losgeklopt
250 g Werz meel, gezeefd
1 snufje zout
1 el vanille-extract
1 el Maldon zout of sel de Guérande

Verwarm de oven voor op 190 ˚C
Prepareer een bakplaat met een vel bakpapier

Mix de boter en de suiker met een pollepel goed door elkaar.
Voeg ¾ van het ei toe samen met een snufje zout en het vanille-extract en roer dit er goed doorheen.
Voeg tenslotte het gezeefde meel toe en kneed snel met koele handen het deeg tot een samenhangend geheel.

Rol het deeg uit tussen 2 lagen huishoudfolie tot 5 mm dikte.
Snijd hier koekjes uit en leg deze op de bakplaat. Druk met een vork patronen in het koekje en bestrijk met het overgebleven ei. Bestrooi met wat Maldon zout en bak de sablés in de oven tot ze goudbruin zijn, ongeveer 20-25 minuten.

Laat ze volledig afkoelen.

Sablés fourrés – gevulde zandkoekjes (GF)



I am back where I started baking gluten free 5 years ago. In the sense that I am using this flour again: Werz mehl. After falling ill from gluten cross contamination the moment I came home, by using a non-certified gluten free gram flour, I decided to only use certified gluten-free flours or almond flour in the future. To stay healthy, because the impact of the gluten is too much for my system. It was years ago for this to happen again, but I was stunned and shocked. I had to stay in bed for 2 days, with flu-type symptoms as a light fever, headaches, loss of appetite, severe digestive problems and very aching joints. Still 1 ½ week later my intestines are sore and vulnerable and my joints still ache.

Every morning I now make 2 easy-peasy flatbreads from this great organic 4-grain mixture, which I will show you very soon. This morning I dreamt of cookies; I just needed a little sweetness in my day.
Staying in the French spirit I made these lovely sablés or sand cookies. The left-over egg yolks  from the apricot tart you can use in this recipe.

Chantal made me 2 pots of apricot confiture, made of these heavenly sweet and juicy apricots from Sahune, I had to use it for these cookies. Make your own jam or marmalade and fill the sablés with the one of your choice. Or use a tasty organic sugarless fruit spread instead to cut down the sugar.



Sables fourrés (7-9 pieces, depending of your cookie cutter)

150 g Werz flour or brown rice flour
75 g cold organic butter
40 g caster sugar
2 egg yolks
Pinch of sea salt

Mix the flour with the sugar and a pinch of salt.
Throw in the butter and slice it with 2 knifes as small as you can, a crumbly mix will form.
Wash your hands with cold water, add the egg yolks and knead the dough quickly till it comes together. Not longer than necessary. Flatten it out a bit in a rectangle, wrap it in cling film and let it rest in the fridge for at least 1 hour.

Pre-heat the oven on 190 ˚C.
Prepare the baking tray with baking paper.

Roll out the dough between 2 sheets of cling film till about 3 mm and cut out cookies. Put them on the baking tray. Roll out the left-over pieces of dough and repeat till all of your dough is used. With an apple corer I cut out the inner circle of half of the cookies.

Bake the cookies 10-12 minutes till golden brown.
Let them cool completely, because they are crumbly, like a good sand cookie should be ;-)

A coffee spoon with confiture in the middle and push the cored cookie softly on top.
Maybe sprinkle with a little icing sugar.
Enjoy!!


Gevulde zandkoekjes (7-10 afhankelijk van de grootte van je uitsteekvorm)

150 g Werzmeel of bruine rijstmeel
75 g koude bio boter
40 g basterd suiker
Snuf zout
2 eidooiers

Meng het meel met basterdsuiker en zout met de hand.
Voeg de koude boter toe en snijd met 2 messen in mini stukjes, zo klein als mogelijk tot zich een kruimelig deeg vormt. Was je handen met koud water, voeg de eidooiers toe en kneed het deeg snel tot het samen komt. Dus niet langer als nodig is. Vorm een platte rechthoek en pak deze in huishoudfolie en koel het deeg minstens 1 uur in de koelkast.

Verwarm dan de oven voor op 190 ˚C en bekleed een bakplaat met bakpapier.

Rol het deeg uit tot ongeveer 3 mm dikte en steek hieruit koekjes, die je op de bakplaat legt. Van de afvalstukjes maak je opnieuw een bal die je weer uitrolt, tot al het deeg is gebruikt.
Steek met een appelboor van de helft van de koekjes een rondje uit het midden.

Bak de sablés 10-12 minuten tot ze goudbruin zijn. Laat ze helemaal afkoelen, want zoals een echt zandkoekje betaamt zijn ze kruimelig, en schep dan een koffielepel van je favoriete confituur op de koekjes. Beleg met het open koekje. En misschien wat poedersuiker;-)

Oeufs en cocotte – eitjes in een pannetje (GF-SF)

Oeufs en cocotte, it sounds pretty and quite fancy!
Literally it means eggs in a dish or eitjes in een pannetje, not half as nice as en cocotte, it sounds a bit frivolous, like a summer dress in a breeze.
Although it’s somewhat grey today we already had some really nice spring days, on which it was possible to wear skirts and heels, for a few hours, but ok!




I love springtime, everything is growing so fast, you almost can see the leaves unwrapping. It’s a time of all our senses, it smells good, the birds are starting to whistle already in the early daylight, the new nettles are very, very prickly (ow!) , all these shades of baby green are a joy for the eye and the taste of all these new leafy greens is so strong and poignant and what feels better than the first rays of sunlight on your wintery skin!
It’s the time of rejuvenation, of leaving behind old skin, and starting afresh, a new life, a new beginning, light!


This dish perfectly fits in the idea of a light and healthy starter.
Eggs are full of protein, vitamins A, B11, B12, E and D and contain phosphorus, iron and selenium.
Although they contain cholesterol, there is now a lot of evidence that it’s not the cholesterol in eggs that increases your cholesterol, but it’s the intake of saturated fats and trans-fats from all kinds of junk food and processed foods.

I am not going to make propaganda for eating more eggs but I do want to insist on using Organic Eggs. In short: they taste better because the chickens get better food and have a much better life; did you ever see a battery cage?

4 tbsp crème fraîche
4 tbsp grated goat’s cheese
4 tbsp white wine (optional)
2 gluten free crackers or slices of bread, crumbled
Butter
2 tbsp of freshly chopped herbs, like cress, chives, chervil, parsley etc.
4 ramekins

Pre-heat the oven on 180 ˚C.
Put on the kettle for boiling water.

Butter the ramekins very well.
Break an egg in every one.
In a bowl mix the crème fraîche, cheese and white wine with some salt and pepper and divide it over the eggs.
Divide the cracker- or breadcrumbs over the four eggs and some small knobs of butter.

Put the ramekins in an oven tray and pour in the boiling water gently till halfway of the ramekins.
Put the oven tray carefully in the middle of the oven and bake the eggs about 20 minutes, till they feel firm on the touch.
Sprinkle the herbs on top and serve!

Oeufs en cocotte (4 pers)

4 biologische eitjes
4 el crème fraîche
4 el geraspte pittige geitenkaas
4 el witte wijn (kan je weglaten)
2 glutenvrije crackers of sneetjes brood, verkruimeld
Boter
2 el versgehakte kruiden als bieslook, tuinkers, kervel, peterselie, etc
4 ramequins

Verwarm de oven voor op 180 ˚C.
Zet een ketel water op.

Beboter de ramequins goed en breek in ieder een eitje.
Meng in een kom de crème fraîche, kaas en witte wijn met wat peper en zout en verdeel over de eieren.
Verdeel ook de cracker- of broodkruimels over de 4 schaaltjes en wat botervlokjes.
Zet ze in een ovenschaal en vul deze tot halverwege de ramequins met kokend water.
Zet de schaal voorzichtig in de oven en bak de oeufs 20 minuten tot ze gaar aanvoelen.
Bestrooi met de verse kruiden en serveer deze heerlijke eitjes!
