Crunchy chocolade-haver-boekweitcookies – crunchy chocolate oat and buckwheat cookies (GF-DF-V)



Hallo allemaal,

Vorige week was ik in Gent, de dochter van mijn vriendin had er een expositie. In een oude wasserij, onverwarmd, nat en koud dus. Gelukkig had ik op internet gelezen dat Madam Bakster in de buurt zat en daar heb ik heerlijk kunnen opwarmen onder het genot van een mooi glas thee en een glutenvrije reep.
Helaas gebruikt Madam Bakster geen glutenvrije haver, anders zou er nog veel meer keus zijn uit de taartjes die zij daar vers bakt. Uit haar boek, alle recepten 100% plantaardig, bakte ik mijn versie, want ze gebruikt vaak ook speltmeel, van haar kruimelige chocolade-havercookies.



Je hebt nodig:
1 lijnzaad ei (maal 1 el lijnzaad fijn en voeg 3 el water toe, laat een paar minuten staan zodat een slijmerig papje ontstaat)
63 g havervlokken, gemalen tot meel
5 g wijnsteenzuurbakpoeder
35 g rietsuiker
1 snuf zout
75 g kokosolie (halfvast)
1 tl vanille-extract
1 tl kaneel
50 g walnoten, grofgehakt
50 g chocolade, grofgehakt
15 g havervlokken
evt. 1-3 el water, als het deeg te droog blijkt

hoe maak ik ze:
Maak het lijnzaad ei en zet opzij.
Verwarm de oven voor op 180°C.

Meng havermeel, boekweitmeelmix, bakpoeder, rietsuiker en zout. Voeg de halfvaste kokosolie toe en kneed met de hand of keukenmachine tot de kokosolie goed is vermengd en geen klontjes meer bevat.
Voeg dan het lijnzaad ei, kaneel en vanille extract toe en kneed verder. Voeg eventueel 1 tot 3 eetlepels water toe om het deeg wat smeuïger te maken. Dit is zwaar werk!

Voeg dan gehakte walnoten en chocolade toe met de 15 g havervlokken. Kneed tot een stevig geheel. Vorm hieruit 12 balletjes, maak ze plat en leg op een met bakpapier beklede bakplaat. 

Bak de cookies in het midden van de oven, ongeveer 15-20 minuten, tot de randjes en onderkant goudbruin worden.

Laat ze afkoelen op een bakrekje. Ze zijn echt zalig en ik hou van dat lichte kokosaccent door het gebruik van eerste persing kokosolie.



Last week I visited Gent, to help out the daughter of my friend who had an exhibition in an old, abandoned laundry factory, without any heating. Cold and wet it was. Fortunately I read on the internet that Madam Bakster (something like Baking Lady) had opened a coffee bar nearby so I could warm up with a very nice cup of tea and a gluten-free bar. It’s a pity that Madam Bakster does not use gluten-free oatmeal so I could not taste one of her other sweet treats. But I bought her book, the recipes are 100% plant-based, and I adapted one of the recipes into these very tasty, crunchy chocolate chip oatmeal cookies.

You need:
1 flax egg (grind 1 tbsp of flax seeds fine, mix with 3 tbsp water, set aside for some minutes till it forms a slimy paste)
¾ cup oat flakes ground into flour
1 tsp baking powder
2 heaped tbsp of cane sugar
1 pinch of salt
¾ cup coconut oil, softened
1 tsp vanilla extract
1 tsp cinnamon
½ cup chopped walnuts
⅓ cup chopped dark chocolate
¼ cup oat flakes
1-3 tbsp of water, when the dough turns out too dry


 How to:
First make the flax egg and set aside.
Pre-heat the oven on 375 °F/180°C.

Mix oat flour, buckwheat flour mix, baking powder, cane sugar and salt. Add the softened coconut oil and start kneading till the coconut oil is well incorporated without any lumps.
Add the flax egg, vanilla extract and cinnamon and knead, by hand or machine, into a sturdy dough. This is hard work! 
When the dough stays too dry add 1-3 tablespoon(s) of water to the mixture.
Then add chopped walnuts and chocolate and the oat flakes and combine everything.

Make 12 small balls and flatten them out into nice round cookies and put them on a baking tray with baking paper.
Bake in the middle of the oven for about 15-20 minutes till the edges and bottom are colouring golden brown.


Let them cool on a baking rack. They are really delicious and I love the hint of coconut from the first pressing coconut oil.

Noten-zaden pompoenbrood met cranberries - Nuts and seeds pumpkin bread with cranberries (GF-DF-SF-V)


Net terug van 2 weken vriendenbezoek in Noord-Spanje en meteen in de gure, natte herfst van Nederland. Dat is even wennen, maar de kachel gaat hier wat makkelijker aan dan de oude houtkachel daar, gelukkig!
Terug thuis is het altijd weer meteen brood bakken. Dat is het eerste wat ik doe. En vandaag dacht ik meteen aan herfstige smaken en besloot mijn dagelijkse brood om te toveren in een herfstbrood met walnoten, pompoen, cranberries en kaneel. 
Dit zou zomaar een favoriet brood voor de herfst en winter kunnen worden!


Droog:
75 g gehakte walnoot
75 g zonnebloempitten
70 g pompoenpitten
145 g havervlokken
2 el gemalen lijnzaad
2 el chiazaad
4 el psylliumvezels
80 g gedroogde cranberry’s
1 tl zout
1 tl kaneel
¼ tl nootmuskaat
Nat:
260 g geroosterde pompoenpuree (zie link)
185 ml water
2 el ahornsiroop
2 el olijfolie

Rooster de noten en zaden in een droge koekenpan.
Meng alle droge ingrediënten met elkaar in een flinke kom.

Meng de natte ingrediënten goed door elkaar en giet ze in de kom met de droge ingrediënten. Roer 2 minuten goed door, totdat het geheel een stevig deeg wordt.

Bekleed een Pyrex vorm van 28X11cm met bakpapier en schep de deegbal in de vorm. Druk aan met je handen en laat minimaal 2 uur opstijven. 


Haal dan uit de vorm en bak het brood op de bakplaat met papier en al op 180°C, 2 x 35 minuten, draai 1 x om.

Laat volledig afkoelen voordat je het brood snijdt met een scherp gekarteld mes. Vries per plakje in wat je niet meteen opeet.

Even in een droge pan toasten maakt het brood nog beter!


Nuts and seeds pumpkin bread with cranberries

Dry:
75 g chopped walnuts
½ cup/75 g sunflower seeds
½ cup/70 g pumpkin seeds
145 g rolled oats
2 tbsp ground flax seeds
2 tbsp chia seeds
4 tbsp psyllium husks
1/ cup/80 g dried cranberries
1 tsp salt
1 tsp cinnamon
¼ tsp nutmeg
Wet:
260 g roasted pumpkin puree ( see:link)
185 ml water
2 tbsp maple syrup
2 tbsp olive oil

Toast the walnuts and the seeds in a dry pan.
Mix all dry ingredients in a big bowl.

Mix all wet ingredients in a smaller bowl and stir into the dry ingredients. Stir for 2 minutes until a dough comes together.

Lay a piece of baking paper in a glass Pyrex mold of 28X11cm and scoop the dough in. Flatten it out and even with your hands and let it rest for at least 2 hours.

Remove with the paper from the mold and bake in a 350°F/180°C oven in the middle for 2 x 35 minutes, turn halfway.



Let the bread cool completely before slicing it with a serrated bread knife. Freeze per slice what you don’t eat today. They are even better when toasted!

on-the-road ripe banana oats cookies – onderweg rijpe banaan haverkoekjes (GF-DF-SF-V)




Nog even een receptje voordat ik op vakantie ga:

Je hebt nodig:
3 overrijpe bananen, met bruine vlekjes!
½ cup/125ml notenpasta, welke je wilt
2 cups/500ml glutenvrije havervlokken
¼ cup/60ml kokosmeel
2 el versgemalen lijnzaad
1/2 tl grof zeezout
¼ cup/60ml rozijnen
¼ cup cocao nibs of gehakte noten
2 el olijfolie

Verwarm de oven voor op 175°C en leg een vel bakpapier op een bakplaat.

Prak de bananen tot ze heel vloeibaar zijn. Voeg dan de rest van de ingrediënten toe en meng tot een geheel. Vorm met je hand 10 koeken die je op de bakplaat een beetje plat drukt; ze lopen niet uit tijdens het bakken.

Bak ze in het midden van de oven tot de randjes lichtbruin worden, ongeveer 20-25 minuten.

Laat afkoelen en bewaar in een trommel of vries een gedeelte in. Ze zijn gemakkelijk voor een onderweg snack of snel klaar ontbijt!



You’ll need:
3 ripe bananas, with brown spots!
½ cup of any nut butter
2 cups gluten-free rolled oats
¼ cup coconut flour
2 tbsp freshly ground flax seed
1/2 tsp of course sea salt
¼ cup of raisins
¼ cup of cocao nibs or chopped nuts
2 tbsp olive oil

Preheat the oven on 350°F/175°C and put a sheet of baking paper on a baking tray.

With a fork, mash the bananas till very fluid.
Add all ingredients and mix till everything is incorpaorated. Form 10 cookies and press them a little flat on the baking tray, they won’t flatten out more while baking.

Bake them in the middle of the oven for about 20-25 minutes, till the sides turn golden. Let them cool and store them in a airtight container or freeze a part. They are an easy on-the-go snack or breakfast!

glutenvrije matzes - gluten free matzos (GF-SF-DF-V)



Ik las vorige week op de blog van de Glutenvrije Man een recept van glutenvrije matzes. 
Nu vier ik geen Pasen, want wat is dat nou helemaal verworden tot het zoveelste vreetfestijn met bergen chocolade, versgeslachte jonge geitjes en lammetjes en lunches en brunches, alsof het maar altijd gezellig moet zijn en niet op kan.

Ook heb ik niet zoveel op met de eeuwenoude wonderbaarlijke verhalen die de ronde doen over de figuur Jezus en zijn discipelen.

Een nieuwe lente, een fris begin, nieuwe creativiteit, wat in de winter heeft liggen sluimeren, dat vind ik wel iets om te vieren en ja, waarom niet met vrienden en familie met lekkere zelfgemaakte hapjes. Niks op tegen. Maar dat kan eigenlijk altijd of het liefst op zo’n eerste warme lentedag.


Deze matzes zijn ontstaan omdat ik niet alle ingrediënten die Gerry gebruikte, in huis had. Dus dank je wel Gerry voor de inspiratie!

Ze zijn gewoon super lekker, knapperig en met wat boter en jam erg lekker bij het ontbijt en als tussendoortje. Ook nog eens snel klaar en makkelijk te maken.



Je hebt nodig voor 4 matzes:
25 g amandelmeel
50 g teffmeel
40 g tapiocameel
1 el gemalen lijnzaad
2 g zeezout
62 ml handwarm water
1 el olijfolie

Verwarm de oven voor op 250°C met de bakplaat erin. Ja, heel heet!

Meng eerst de droge ingrediënten goed door elkaar, voeg water en olijfolie toe en roer door elkaar. Kneed dan snel tot het deeg vorm houdt.
Verdeel het deeg in 4 en rol per stuk uit.
Ik leg een stuk deeg op een vel bakpapier en hierop een vel huishoudfolie. Dan rol ik het zo dun mogelijk uit. Draai het deeg om, hand op huishoudfolie en pel het bakpapier eraf. Leg het deeg op een nieuw stuk bakpapier en maak zo 4 matzes. Ze passen er precies op. Prik dan met een vork zoveel mogelijk gaatjes in het deeg.
Leg het bakpapier op de hete bakplaat en bak de matzes 6-8 minuten tot de randjes lichtbruin kleuren. Haal ze eruit en leg voorzichtig op een rooster om af te koelen.
Klaar!

Vrolijke Lente ;-)




You’ll need for 4 matzos:
25 g almond flour
50 g teff flour
40 g tapioca flour
1 tbsp flax seeds, roughly pulsed
2 g sea salt
¼ cup or 62 ml hand warm water
1 tbsp olive oil

Pre heat the oven on 250°C or 482 °F with the baking tray inside!

Mix the dry ingredients well, then add water and oil. Mix with a spoon and then knead by hand quickly till the dough comes together.
Divide in 4.
Put 1 piece of dough on a sheet of baking paper and roll out with a piece of cling film on top. Very thinly, then transfer to a clean piece of baking paper, by putting your hand on the dough and cling film and turning it upside down. Peel off the baking paper. Repeat with the other 3 pieces of dough. Prick the matzes evenly with a fork and transfer to the baking tray in the hot oven.

Bake for 6-8 minutes till the edges brown slightly.
Let them cool on a rack; till they are crisp and delicious.

Gluten-free buckwheat boule – glutenvrije boekweitbol (GF-DF-V)


As promised I share with you my newly developed buckwheat boule.
It’s kind of funny that I started creating bread again. For many years I just gave up on bread baking and eating it as well. Buying gluten-free bread I gave up really quickly, because it’s inedible, I think. Most of it then. It’s expensive, tastes like cardboard and after a day you can throw it away; filled with starches and gums and other ingredients that has nothing to do with bread.

I did make flat breads a lot, quick and easy, as well as the seed bread that I ate for almost a year now. But suddenly I was craving for a real slice of bread and started my survey.

Bread is flour, water, salt and a rising agent. But, gluten-free bread baking is more than that, the rising is a problem, so can be the taste. There is only 1 advantage when baking gluten-free bread and that is that it doesn’t need any kneading! Just stir everything vigorously and you’re done!

I am going to give you my first new bread recipe of a very good tasting buckwheat boule with a crunchy crust. 
Be aware though that every type of flour, oven, surrounding temperature has influence on your bread, so maybe the first time you bake this bread it’s not perfect yet or it looks different then mine.
Just keep on going and let me know of the results or question me if there are any problems!

You’ll need:
2 cups or 290g of buckwheat flour mix
5g quick yeast
4g of sea salt
5g of cane sugar
2 tbsp of ground flax seeds
2 tbsp of psyllium husks
1 ¼ cup of hand-warm water
2 tbsp of olive oil


Mix the dry ingredients in a big bowl.
Mix water and olive oil in a small bowl and pour straight into the dry ingredients. Mix with a sturdy spoon into a batter-like-dough. It will be a little wet, that’s ok.

I leave the bread overnight with a humid cloth on top on room temperature and bake the bread first thing in the morning.

Pre-heat your oven on 200°C together with the baking tray and a small bowl of water. (to create a slightly moist atmosphere)

Take out the dough carefully and put it on your work bench which is sprinkled with a little flour on a piece of baking paper. Form the dough, do not handle too much!! into a nice boule shape and score the dough with a sharp knife. This is important because the rising of the bread in the hot oven will otherwise crack the bread’s crust.

Put the bread in the oven and after closing the door, immediately put the temperature on 180°C and bake the bread for 1 hour on this temperature. Then after 1 hour lower the temperature to 150°C and bake for another hour. Check the bread with a thermometer. The inside must be between 95° and 100°C. The crust is really crunchy!

Let it cool completely before cutting a slice!

The bread stays well for about 3 days, which I think is very important, so you don’t have to freeze it. It’s a dense bread, not light and fluffy, a real bread so to speak! And gluten-free!

I had some of my friends, wheatbread eaters, have a taste and they were all pleasantly surprised by the taste and structure.

Je hebt nodig:
5 g instant gist
4 g zeezout
5 g rietsuiker
2 el versgemalen lijnzaad
2 el psyllium husks
310 ml handwarm water
2 el olijfolie

Meng alle droge ingrediënten in een ruime kom.
Meng water en olijfolie en giet in 1 keer bij de droge ingrediënten en roer met een stevige pollepel alles zeer goed door elkaar. Je ziet het mengsel samenkomen tot een op-beslag-lijkend-deeg. Dus wel wat nat, maar net een deeg.

Laat het brood in de kom met een vochtige doek erover een nacht rusten op kamertemperatuur en bak het brood zodra je wakker wordt.

Verwarm de oven voor op 200°C samen met het bakblik en een kommetje water onder in de oven.

Strooi wat meel op een stuk bakpapier en met bebloemde handen neem je voorzichtig het deeg uit de kom en leg het op je werkblad. Vorm in een mooie boule vorm, maar behandel het deeg als een baby, niet knijpen en kneden! 
Kerf het brood in met een scherp mes, zodat het brood niet op onverwachte plek gaat scheuren tijdens het bakken.
Leg het brood in de voorverwarmde oven en sluit de deur. Zet de temperatuur meteen op 180°C en bak 1 uur op deze temperatuur. Zet dan de temperatuur op 150°C en bak nog 1 uur.

De binnentemperatuur van het brood moet nu tussen 95° en 100°C zijn en de korst heel knapperig. Je kunt ook op de bodem kloppen, dit moet hol klinken. Laat het brood helemaal afkoelen voordat je het aansnijdt!


Het brood blijft zeker 3 dagen goed en eetbaar, zodat je het niet hoeft in te vriezen; ik bewaar het in een afgesloten schaal. Het is een stevig, compact brood met een heel goede smaak, niet luchtig maar smeerbaar, makkelijk mee te nemen, heel lekker om even te toasten voor je het eet.

Echt brood en toch glutenvrij!!

Ik heb het brood laten proeven door mensen die gluten eten en zij vonden het allemaal erg lekker en ik hoop jij ook!

My daily bread – mijn dagelijks sneetje brood(GF-DF-SF-V)


I just realized I never wrote a post about my daily bread.
After making lots of gluten free, mainly flat breads and without yeast, I decided I don’t care a lot any more for bread and instead started eating oatmeal in the morning and making something warm, a soup, some left-over lentils, for lunch and cook again in the evening. Quite to my liking!

But last year I found this recipe for a bread. It’s called Life-changing loaf of bread and that’s it for me too since then.
I make it every week now or even twice a week, depending of the season and the things I have to do. It has great taste, it’s very easy to make, to keep, to take away, to make toast with, to freeze. And; more important even, this bread is super healthy, filled with, in my opinion, only good, wholesome, natural ingredients. And... people without celiac disease like it too!!
It made my tummy very happy, really!!

After years of let me say hard work in the morning, yes, my celiac disease made my intestines work very slowly and not fully functioning for a long time, eating this bread makes me go every morning, easy and smooth, effortless.


I now perfected it I think. The first time I made it, it fell apart completely. I am going to explain how it works for me now, but you can just follow Sarah´s recipe as well. All praise goes to her and just check out her website, she is so gifted, she is a big inspiration to me!


This is how I make it:

I use a glass Pyrex bread pan from 28 x 11 cm, but you can use a flexible, silicon one as Sarah does.

I place a 28 cm piece of baking paper along the long sides of the pan with the sides hanging over, so I can cover the bread dough when it’s in the mold.

In a big bowl mix the dry ingredients:

135g sunflower seeds or a combination of sunflower seeds and pumpkin seeds
90g of flax seeds, ground fine
65g of whole brown hazelnuts
145g gluten-free rolled oats
2 tbsp chia seeds or 2 tbsp sesame seeds(the chia adds more “glue” to the mixture, but at first I did without them, because they were not in my pantry, and the bread held very well too!!)
4 tbsp psyllium seed husks (they cannot be replaced, they hold the bread together!!
1  tsp sea salt

Then add the wet ingredients:

(The original recipe asks for maple syrup but I omit it; I don’t like any sweetness in my bread.)

3 tbsp extra virgin olive oil or melted coconut oil
350 ml warm water

Stir everything well. It becomes sticky and when you keep on stirring, the psyllium, chia and flax start to glue the dough together. Knead with your hand into the size of your mold and put it in. Press with your hand till the dough is evenly distributed. It will be 3-4 cm thick. Cover with the hanging over baking paper and set aside for at least 2 hours. I make mine in the evening and let it set overnight and bake the bread in the morning.

Pre heat the oven on 350°F or 175°C.

I take the bread out of the mold by holding the baking paper draped over the dough and place it directly on the middle rack into the oven. Bake the bread for 50-60 minutes, turn half way. The bread is ready when it sounds hollow when you tap it on the bottom.

Let it cool completely!! Slice with a very sharp bread/serrated knife. I hold the bread firmly when slicing, to prevent crumbling.

The bread is very good as it is, but toasting it makes it even better. I eat 2 slices every morning and it gives me energy till lunch!! The recipe makes about 14 slices.

You can freeze the bread as well, but beware of the slices sticking together, so freeze them flat or separate them with a piece of baking paper.


Ik maak het zo:

Bekleed een glazen Pyrex brood/cakevorm( 28 x 11 cm) met bakpapier alleen aan de lange kanten, zodat het overhangt. Of gebruik een flexibele, siliconen vorm zoals Sarah.

Meng in een beslagkom de droge ingrediënten:

135g zonnepitten of een combinatie van zonnepitten en pompoenpitten
90g gemalen lijnzaad
65g bruine hazelnoten
145g havervlokken
2 eetlepels chiazaad of sesamzaad als je geen chia in huis hebt (heb ik ook gedaan in het begin en het brood valt niet uit elkaar!)
4 el psyllium husks (de psyllium moet, anders geen goed brood!)
1 tl fijn zeezout

Meng goed door elkaar; ik doe er geen zoetmiddel in, niet nodig en niet lekker, het is brood!

Roer dan volgende natte ingrediënten toe:

3 el extra virgin olijfolie of  gesmolten kokosolie
En 350 ml warm water

Roer totdat het een samenhangend geheel wordt. Het psylliumzaad, lijnzaad en chiazaad zorgt voor binding van het mengsel. Kneed even door met de hand en vorm een langwerpige vorm die in de glazen of andere broodvorm past. Ik heb een glazen Pyrex vorm van 28 cm die ik bekleed met een stuk bakpapier over de lange kant. Druk het deeg aan in de vorm; het wordt ongeveer 3-4 cm hoog. Laat dan in ieder geval 2 uur opstijven of laat een nacht staan en bak het brood de volgende ochtend.

Verwarm de oven voor op 180 °C.

Haal het brood uit de vorm en plaats met bakpapier en al op het rooster in het midden van de oven, bak 25 minuten aan 1 kant, draai het brood voorzichtig om en bak nog eens 25-30 minuten aan de andere kant. Het brood is gaar als het een beetje hol klinkt als je er op klopt.
Helemaal laten afkoelen voordat je het snijdt met een scherp broodmes!!
Houd het brood goed vast waar je het snijdt, dan valt het niet uit elkaar.
Dit recept is voor ongeveer 14 sneetjes brood. Je kunt het zo eten, maar even geroosterd is het nog beter van smaak.

Je kunt de sneetjes ook invriezen, maar let op, ze plakken aan elkaar, dus plat, stuk voor stuk, of met een stukje bakpapier ertussen.

Buckwheat knäckebrot with carrot chutney (GF-SF-V-DF)


Making bread, glutenfree bread that is, is always a challenge.
This winter I have a plan to start a sourdough experiment and try creating a tasty sourdough bread, gluten free. It’s in my mind.

That is how it works, it all starts in my mind. An idea has to ripen there first before I start experimenting. 
So for the time being I stick to my every day, delicious bread, which is a version of this great bread.
But today I was craving something different, something crunchy to go with the carrot chutney I made yesterday.

And so I made this knäckebrot or cracker or crispy flat bread, whatever name you want to give it. It’s tasty, easy, quick to make and above all: naturally glutenfree and consisting only of seeds!

What you’ll  need for 1 baking tray or about 12 pieces:

110 g pumpkin and sunflower seeds
35 g flax seeds, roughly ground
90 g sesame seeds
130 g buckwheat grouts, ground into flour
2 tbsp olive oil
200cl boiling water
½ tsp sea salt

First pre-heat the oven on 160°C. Place a sheet of baking paper on a baking tray and set aside.

Stir everything well in a big bowl, first the dry ingredients, then olive oil, then boiling water.
Place on the baking tray, lined with a sheet of baking paper, and press out with your hands till almost covering the tray. The dough will be about ½ cm thick.
Bake in the middle of the oven for 55 min, till golden brown and crisp.
Let it cool and break or cut into desired shape.

Eat for example with some jam in the morning or with some of this full-coloured and spiced carrot chutney.


Carrot chutney 

1 tbsp coconut oil
1 tsp cumin seeds
1 onion, chopped fine
1 clove of garlic, chopped fine
1 tbsp freshly cut ginger
½  tsp curcuma
1 dry red chilly
1 tomato, chopped fine
1 ½ cups carrots, small cubes
½ tsp sea salt
Squeeze of lemon juice

Heat the coconut oil in a saucepan and add the cumin seeds.
When they start to splutter, add onion and fry them very softly for about 8 minutes till translucent. Then add ginger, garlic and curcuma and stir a few times.
Add red chilli , stir and add the tomatoes, fry them till they are soft.
Then it’s time for the carrots, salt and a few tablespoons of water.

Stir everything well and put a lid on top. Let it cook for 15 minutes, while stirring every 5. When they are cooked, turn of the gas, let it cool a bit, add some lemon juice to your taste and puree the chutney. Let it cool completely and enjoy!

My basic gluten-free cruesli – mijn basis glutenvrije cruesli (GF-DF-SF-V)

 
I like to share with you my basic gluten-free cruesli recipe.
I use this recipe for years now and the nice thing about it is, that it’s easy to make and easy to alter. You can add hazelnuts or walnuts instead of almonds, you can use buckwheat flakes or quinoa flakes and after baking it’s great to add some chocolate chips or dried blueberries or pieces of dried apricots or whatever dried fruit you have in your cupboard. Make it to you’re your own liking. Store it in an airtight glass container; it will keep for several months.

For a big jar you’ll need:

300g gluten free rolled oats (Provena)
20g gluten free rice puffs
75 g pumpkin and/or sunflower seeds
2 tbsp flax seeds
65 g roughly slivered almonds
1 tbsp butter, vegetable oil or coconut oil for vegans
¼ tsp sea salt
80 ml water
80 ml maple syrup or honey
1 tbsp vanilla extract

Pre heat the oven on 150 ˚C.
Put a piece of baking paper on the baking tray.

Mix the dry ingredients from oats till almonds in a big bowl.
In a small saucepan heat the wet ingredients from oil/butter till vanilla extract, stir till the sugar is dissolved. Pour into the dry ingredients and mix everything well.
Scoop onto the baking tray and spread well and put it in the middle of the oven.
Bake for 45 minutes and stir every 15 minutes so that  the granola bakes evenly.
Let it cool completely before storing into an airtight glass container.
Eat as you like, as a snack, as a topping, with fruits and yoghurt, for breakfast or pudding. 
 


Voor een grote glazen pot vol heb je het volgende nodig:

300g glutenvrije havervlokken
20g glutenvrije gepofte rijst
75 g pompoen- en/of zonnebloempitten
2 el lijnzaad
65 g grof gehakte amandelen
1 el boter, kokosolie of andere plantaardige olie
¼ tl zeezout
80 ml water
80 ml ahornsiroop of honing
1 el vanille extract

Verwarm de oven voor op 150 ˚C.
 Bekleed een bakplaat met een vel bakpapier.

Meng de droge ingrediënten van haver tot amandelen in een grote kom.
Verhit de natte ingrediënten van boter/olie tot vanille extract in een steelpan en roer tot de suiker is opgelost. Giet bij de droge ingrediënten en roer alles heel goed door.
Schep op de bakplaat en spreidt goed uit, schuif in het midden van de oven.
Bak de cruesli 45 minuten en schep iedere 15 minuten goed door, zodat de cruesli evenredig bakt. Laat helemaal afkoelen voordat je de cruesli overdoet in een luchtdichte glazen pot.
Eet zoals je wilt, een handje als snack, als topping op een toetje, bij de yoghurt, met fruit als ontbijt of lunch.
