wintersalade met kool, wortel, dadels en walnoten - wintersalad with cabbage, carrot, dates and walnuts (GF-SF)


Ik maakte net een heerlijke winterse salade van restjes witte en rode kool die nog in mijn koelkast lagen. De toevoeging van dadels, walnoten, verse kruiden en gember geven deze koolsla net dat extra beetje smaak en crunch, dat het me de moeite waard leek om hier met jullie te delen!

Wat:
1 winterwortel
1 stukje witte kool
1 stukje rode kool
1 rood uitje
handje verse kruiden als munt, peterselie en koriander
4 dadels
1 el geraspte verse gember
1 flinke schep yoghurt
1 flinke schep mayonaise
1 el rode wijnazijn
1 el olijfolie
peper en zout
1 handje walnoten, gedopt

Hoe: je snijdt en schaaft en voegt alle ingrediënten toe boven op elkaar. Dus maar 1 schaal nodig!

Dop de walnoten en toast ze in een droge koekenpan. Zet apart.
Pak een grote schaal en een fijne rasp of mandoline.

Rasp wortel en beide koolsoorten boven de schaal.
Was en snijd de kruiden fijn, snijd de rode ui in heel dunne ringen en voeg toe.
Haal de pit uit de dadels en snijd ze in de lengte in dunne reepjes. Voeg toe.
Rasp de gember er bovenop.
Hussel alles goed door elkaar.

Schep en giet dan yoghurt, mayonaise, olie en azijn er boven op, peper en zout en meng nogmaals alles goed door elkaar.
Bestrooi met de walnoten.
Eet smakelijk!


I just made this wintery salad of some pieces of left-over white and red cabbage lying in the back of my fridge.
The addition of fresh herbs, dates, walnuts and fresh ginger give this coleslaw the extra taste and crunch, so I thought it worth sharing here with you all!

What:
1 winter carrot
1 piece of white cabbage
1 piece of red cabbage
1 small red onion
4 dates
1 tbsp grated fresh ginger
1 big handful fresh herbs, like mint, parsley and/or coriander
1 big scoop of yoghurt
1 big scoop of mayonnaise
1 tbsp red wine vinegar
1 tbsp olive oil
pepper and salt
1 handful shelled walnuts

How:You just slice and add every ingredient on top of the other. So only 1 bowl required!

Shell the walnuts and toast them in a dry skillet. Set aside.
Take a big bowl and a grater and mandolin.

Start grating the carrots and very finely slice the 2 cabbages. You decide how much cabbage you use.
Wash and finely cut the fresh herbs fine and the onion in fine rings. Add to the bowl.
Take the pit out of the dates and lengthwise slice them into thin strips, add.
Grate some fresh ginger on top.
With your hands mix everything together.

Then scoop and drizzle yoghurt, mayo, vinegar and olive oil on top, season with pepper and salt and mix together with 2 big spoons.
Walnuts on top.

Gevulde savooiekoolrolletjes – Savoy cabbage rolls (GF-SF)


Na een fantastische uitstap naar het zomerse, uiteindelijk dan, de eerste weken waren fris tot koud in het noorden, India, is het altijd weer wennen aan de temperatuur, het eten, het ritme van alledag, zelfs de mensen hier.

  

Waar ik altijd enorm van geniet na een reis naar India is dat het hier zo ontzettend schoon en rustig is.



De steden zijn daar zó overvol en er is altijd herrie, van de vroege ochtend tot de late avond, dat het een verademing (ook dat letterlijk, de luchtkwaliteit is vaak zeer slecht)is om weer op een fijne, rustige plek te wonen, waar je niet weg hoeft, waar je niet op straat hoeft te leven


waar het leven zo ontzettend goed geregeld is, waar je je terug kunt trekken als het je uitkomt, waar je in een ongelooflijke luxe leeft met schoon drinkwater, medische voorzieningen en veilig voedsel.( Ik kwam helaas ziek terug met een darmparasiet, waar ik nu nog van aan het herstellen ben met antibiotica)


We hebben gereisd vanaf Delhi, via Benares naar Kolkata en vandaar helemaal naar het zuiden afgezakt langs de oostkust naar Andra Pradesh en Tamil Nadu.
India is een fascinerend land, met geweldig innemende mensen, zoveel contrasten; te veel om op te noemen. Wat impressies:





Thuisgekomen is het even omschakelen om van zomers eten weer terug te moeten naar winterse kost. Dat gaat vrij snel, want mijn lichaam moet verwarmd worden.

Ik maakte deze winterse koolrolletjes met quinoa, maar je kunt op vele manieren kunt vullen, zoals met rijst of gierst als basis. Heel handig om restjes groente te verwerken.

Je hebt nodig:
1 mooie verse savooiekool, 12 bladeren
¾ cup quinoa of bruine rijst
1 handvol amandelen, geroosterd en grofgehakt
1 ui, fijngehakt
1 teen knoflook, fijngehakt
1 (winter)wortel, in kleine blokjes
1 prei, in smalle ringetjes
verse peterselie
peper, zout, paprikapoeder, tijm
100 g zachte geitenkaas
1 blikje linzen, uitgelekt
tomatensaus van 1 blikje gepelde tomaten

Zet een grote pan met water op met wat zout en kook hierin de koolbladeren met 3-4 tegelijk 4 minuten. Spoel ze af met koud water en laat uitlekken.
Kook de quinoa zoals je gewend bent en zet opzij.

Rooster en hak de amandelen en daarna alle groentes.

Verhit wat olijfolie in een braadpan en fruit hierin ui en knoflook zachtjes, voeg dan prei en wortel en fruit totaal een minuut of 8. Breng op smaak met peper, zout, tijm en paprikapoeder. 
Van het vuur af roer geitenkaas, quinoa, amandelen, linzen en peterselie erdoor en meng goed.

Zet de oven aan op 175°C.

Op de bodem van een flinke ovenschaal schep je wat tomatensaus. Dan maak je de koolrolletjes door op je werkblad steeds 1 koolblad te nemen en een flinke schep vulling in het midden. Vouw de zijkanten naar binnen en rol het blad op. Leg naast elkaar op de saus. Tot alle bladeren gevuld zijn.
Schep de rest van de saus eroverheen en wat olijfolie. Bak de koolrolletjes in het midden van de oven ongeveer 30 minuten.

Eet smakelijk!



You’ll need:
1 big fresh Savoy cabbage, 12 leaves
¾ cup quinoa or brown rice
1 handful of almonds, roasted and chopped roughly
1 onion, finely chopped
1 clove of garlic, finely chopped
1 (winter) carrot, finely diced
1 leek, in small rings
fresh parsley, chopped
pepper, salt, paprika powder, thyme
100 g soft goat’s cheese
1 small can of lentils, drained
Tomato sauce from 1 can of peeled tomatoes

Put a big pan with water on the stove and bring to the boil. Boil the cabbage leaves with 3-4 together for 4 minutes. Rinse with cold water and put aside.
Cook the quinoa as you always do and set aside too.

Toast and chop the almonds.
Wash and chop all vegetables.

Heat some olive oil in a casserole and fry the onions and garlic softly, add leek and carrot cubes and fry together for about 8 minutes till softened. Season with salt, pepper, paprika and thyme. From the heat stir in quinoa, almonds, goat’s cheese, lentils and parsley. Mix well.

Pre heat the oven on 175°C.

On the bottom of a ovenproof dish scoop half of the tomato sauce.
Then we make the cabbage rolls by putting 1 cabbage leaf on your workbench and scoop a big ladle of the filling in the middle. Fold the sides over the filling and roll the leaf up and put in the baking dish. Make all 12 and divide the rest of the sauce on top of it with an extra sprinkle of olive oil. Bake in the middle of the oven for about 30 minutes.

Tourte de carottes en robe de chou – French carrot bake in cabbage leaves – wortelkoek met kool(GF-SF)




This wonderful dish which can be made of all kinds of garden vegetables and is based on a recipe from Brigitte Tilleray, a French cookbook writer who specializes in French regional family cooking.

It’s an earthy dish, great for this time of transition from summer to autumn. And it’s rich and comforting. I made this dish, amongst others, on my birthday some weeks ago. We had a great diner, outside on long tables, I loved it!

We started with a glass of bubbles for l’apéritif, some roasted nuts, a goat’s cheese spread and a very quick and easy to make vegan tapenade with these lovely crackers. Followed by  a soupe au pistou, the tourte and I made crunchy casse-dents with fennel seeds and coffee for desert.

All of the dishes could be made in advance, so I could spent all of my time with the guests instead of rushing in and out of the kitchen.

The tourte recipe is for 6 people, you’ll need a big oven dish, any left-over’s are great for lunch the next day! When you can, try to buy the best crème fraîche, preferably from Normandy.

Ingredients:
7-8 big leaves of cabbage
4 big carrots
1 medium celeriac or 3 small turnips
3 onions
1 fat clove of garlic
1 bunch of parsley
3 young leeks
100 g of organic butter
3 tbsp of olive oil
Salt and pepper
3 big eggs, whisked

For the sauce:
25 g of organic butter
250 ml crème fraîche
2 heaped tbsp of freshly chopped chives
Salt and pepper

Prep:
Wash the cabbage leaves carefully. Blanch them in a big casserole with boiling water for 3 minutes. Take them out and place them in a bowl of ice cold water. Drain and dry them.
Clean carrots and celeriac and grate them roughly.
Chop onions, garlic and leeks fine.
Melt 50 g of butter and 3 tablespoons of olive oil in a heavy casserole and sweat all the veggies slowly for about 15 minutes; stir once in a while. Add salt and pepper to your taste and let it cool down a bit.

In the meantime prepare your oven dish. Butter the dish well and drape with 6 of the cabbage leaves and let them overhang the sides. 1 leave is for the top.

Add the whisked eggs to the vegetable mix and stir well.
When you bake the dish right after preparing, this is the time to pre-heat the oven on 200°C.

Add the vegetable mass to the oven dish and fold in the cabbage leaves. Lay the last one on top. Put some knobs of butter on top and lay a piece of aluminium foil loosely on top. Or fold it tightly when baking the dish later in the day.

Pre-heat the oven before baking and bake the dish for about 20 minutes till a skewer pricked in the middle will come out clean. Put out the oven and make the sauce.

The sauce:
Melt the butter and crème fraîche on low heat and add chives, pepper and salt to your own taste.

Slice the tourte in 6 pieces and dress with a little sauce. Give the rest of the sauce apart.
Enjoy! It has quite some preparing, but it’s well worth it!


Ingrediënten:
7-8 grote koolbladeren
4 grote wortels
1 middel selderijknol of 3 meiraapjes
3 uien
1 flinke teen knoflook
1 bosje peterselie
3 jonge preien
100 g biologische boter
3 el olijfolie
Zout en peper
3 grote eieren, geklutst

Voor de saus:
25 g boter
250 ml crème fraîche
2 volle el gehakte bieslook
Zout en peper

Prep:
Was de koolbladeren voorzichtig en blancheer ze 3 minuten in een grote pan met kokend water. Schep ze eruit en laat snel afkoelen in een kom met ijskoud water. Laat uitlekken en droog ze. Zet apart.
Maak wortels en selderijknol schoon en rasp ze grof.
Snijd uien, knoflook en prei fijn.

Laat 50 g boter en olijfolie smelten in een zware braadpan en laat alle groentes hierin zachtjes 15 minuten “zweten” terwijl je af en toe roert. Voeg peper en zout naar smaak toe en laat even afkoelen.

Ondertussen beboter je de ovenschaal en bekleed de schaal met 6 koolbladeren en laat ze over de rand hangen.

Voeg de eieren toe aan het groentemengsel, roer goed door elkaar en stort de massa in de vorm. Vouw de bladeren naar binnen en leg het laatste blad erop.
Leg er nog wat klontjes boter op en leg er losjes een vel aluminiumfolie op als je de schaal nu in de oven stopt of pak het in als je de tourte later bakt.

Je bakt de tourte in een 200°C voorverwarmde oven, ongeveer 20 minuten, totdat een pen die je erin steekt er schoon uitkomt.
Zet dan de oven uit en maak de saus; deze is zo klaar!

De saus:
Smelt de boter en de crème fraîche op laag vuur en voeg bieslook en peper en zout naar smaak toe.

Snijd de tourte in 6 stukken en schep er wat saus overheen. Geef de rest van de saus er apart bij.

Ondanks de flinke voorbereiding, maak het gerecht, het is zó lekker!

ribolitta vegetariana (GF-DF-SF-V)


Ribolitta is originally an Italian dish, which comes from the cucina povera, the poor kitchen.
I love cooking from scratch and from my pantry, which is mostly filled with lots of good stuff I must say.
Ribolitta is something between a soup and a stew, thick, filled with beans and vegetables, and slowly cooked so all the flavors come to its right. In every household in Italy people make their own version, from what’s in the house or in the garden.
I made the ribolitta with white beans, but you could use borlotti or some other small bean.


Ribolitta (1 big casserole for about 4-6 people)

250 g dry white beans, soaked 1 night and cooked till soft (depending of the age of the beans this can take from 1 -3 hours, add salt and pepper when the beans are getting soft, not before!!); you can use a tin too
1 big carrot, small diced
3 sticks of celery, chopped fine
1 big onion, chopped small
2 big potatoes, peeled and in 1 cm chunks
8 big leaves of cavolo nero or Savoy cabbage (do not use the ribs!), wash and cut very fine, about 300 g
½ can of peeled tomatoes
water
salt and pepper
fresh thyme and rosemary
1 big bay leaf

If you cook your own pre-soaked beans, put them on the fire in a big pot with plenty of water and let them simmer till soft. As said, only put in some salt when the beans are softening, otherwise they will not get cooked at all and stay hard. In the beginning you have to skim the beans.

In a big soup casserole fry the carrot, celery and onion in some olive oil with some sea salt very softly for 15 minutes. Stir once in a while.
Add potato chunks, cavolo nero en some water, about halfway the veggies, bring to the boil, put a lid on and the gas low and let this mixture stew for 40 minutes.

I added an old dry crust of Parmesan at this stage, not for vegans;-) but so very yummie!

Then add tomatoes and the drained cooked beans (not the cooking water) together with the fresh herbs and enough water to cover the beans and vegetables. Cook for another 15 minutes. Taste and add pepper and salt to your liking. Maybe add some more water when the soup is too thick. Keep on tasting till you’re satisfied.
Serve at once, maybe sprinkle some fresh parsley on top.
The next day the ribolitta is even better!


Ribolitta (1 grote pan, voor 4-6 personen)

250 g droge witte bonen, 1 nacht geweekt en dan zacht gekookt (afhankelijk van de ouderdom van de bonen 1-3 uur; voeg als ze zacht worden pas wat zout en peper toe, niet eerder!!) je kan ook een pot gebruiken
1 winterwortel, in kleine blokjes
3 stengels bleekselder, fijngesneden
1 grote ui, fijngehakt
2 grote aardappels, geschild en in 1 cm grote stukjes
8 grote bladeren van cavolo nero of savooien kool, gebruik de nerven niet!, was en snijd zeer fijn, ongeveer 300 g
½ blik gepelde tomaten
water
zout en peper
verse tijm en rozemarijn
1 groot laurierblad

Als je voorgeweekte bonen gebruikt, zet je deze op met ruim vers water in een grote pan en breng aan de kook. Laat de bonen zacht koken en voeg pas zout toe als ze zacht worden. Vooral niet eerder doen, dan worden je bonen nooit gaar en blijven hard. In het begin moet je de bonen afschuimen.

Ondertussen verhit je wat olijfolie in een grote soeppan en fruit hierin zachtjes de wortel, bleekselderij en ui, 15 minuten, terwijl je af en toe roert. Voeg wat zeezout toe.
Voeg dan de aardappelblokjes en de cavolo nero toe, roer door en voeg tot halverwege de groentes water toe. Breng aan de kook, zet dan een deksel op de pan en het vuur heel laag en laat alles 40 minuten zachtjes koken.

In dit stadium voeg in een oude Parmezaankorst toe, zo heerlijk! Niet voor vegans;-)

Voeg dan tomaat en de afgegoten gare bonen toe samen met de verse kruiden en genoeg water om alles te bedekken. Kook weer zachtjes 15 minuten. Proef en voeg zout en peper naar smaak toe en nog meer water als je dat wilt. Blijf proeven tot de ribolitto helemaal naar je zin is.

Serveer dan lekker heet met misschien nog wat verse peterselie erop.
De volgende dag is de ribolitta zelfs nog lekkerder.
