Gevulde courgettebloemen uit de oven - oven-baked stuffed zucchini flowers (GF-SF)



Het is weer courgettetijd op de tuin!  

Heerlijk! Er is al zoveel te maken met een courgette, maar ook de mannelijke bloemen zijn zeer smakelijk. Je kunt ze vullen, je kunt ze in stukjes snijden door de pasta of meebakken in een frittata. Op mijn moestuincomplex staan verschillende soorten courgettes, waaronder de speciale zucchino da fiore, een soort die vooral bloemen produceert.

Maar je kunt ook van andere courgettes de mannelijke bloem afsnijden. Doe dit bij voorkeur in de vroege ochtend als ze net opengaan; ’s middags verwelken de bloemen. Snijd de meeldraden voorzichtig uit het midden van de bloem.
Ik heb een vulling gemaakt met snijbiet, ui, knoflook, rozijnen,gehakte amandelen en ricotta. Dat is zo’n goede combi!


Nodig:
Courgettebloemen, ontdaan van meeldraden
Ovenschaal
Voor de vulling:
5 grote snijbietbladeren met steel
1 ui, fijngehakt
1 dikke teen knoflook, fijngesneden
Handje rozijnen
Handje amandelen, grofgehakt
4-6 el ricotta
Peper en zout

We beginnen met de vulling. Was de bladeren van de snijbiet en haal de stengel los. Hak deze in kleine blokjes en de bladeren grof. Zet deze apart.
Hak de ui en de knoflook en fruit deze samen met de snijbietsteel blokjes in een grote koekenpan in olijfolie goudbruin. Voeg het grofgesneden blad toe en roer tot alles goed gemengd is. Breng op smaak met peper en zout en voeg de rozijnen toe. Roer goed door elkaar en laat op een zacht vuurtje zachtjes stoven tot alles goed gaar is. Laat uitlekken en afkoelen in een vergiet.

Verwarm de oven voor op 200°C.

Doe de groentemix in een kom en meng de ricotta en de gehakte amandelen erdoor. Proef en breng op smaak als dat nodig is.


Schep dan voorzichtig een flinke theelepel in de courgettebloem en draai de bloem weer dicht. Leg zo 1 voor 1 de gevulde bloemen in een ovenschaal. Besprenkel met lekkere olijfolie en bak 15–20 minuten in de hete oven tot ze goudbruin zijn.


Zowel warm als koud te eten, als voorafje of antipasto, of bij de borrel! Ik eet ze de hele dag als tussendoortje :-)
Met deze hoeveelheid vulling kun je er wel 30-35 vullen. Ik pluk er iedere dag wat en vul en bak ze. 



It’s zucchini time in the garden!

I love it! You can make such a variety of dishes with this humble vegetable. I thought it would be nice to give you a recipe with stuffed zucchini flowers today. At my allotment we grow a variety of different zucchini and this year the special zucchini da fiore.

Use the male flower (without the fruit) and cut them in the early morning, because in the afternoon the flowers will wither. Cut out the stamens inside the flowers carefully.

I made a stuffing of chard, onion, garlic, raisins, almonds and ricotta; such a great combo!

You need:
Zucchini flowers, stamens removed
Oven dish
Stuffing:
5 big chard leaves and stems
1 onion, chopped
1 big clove of garlic, cut fine
1 handful of raisins
1 handful of roughly cut raw almonds
4-6 tbsp ricotta
Pepper and salt

We start with the stuffing.
Wash the chard leaves and tear out the stem. Cut the stem in small cubes, set apart and roughly chop the leaves.
Cut onion and garlic and fry them in some olive oil in a big frying pan with the cubed chard till golden. Add the roughly cut leaves with the raisins, season with salt and pepper and stir well. On a lower heat let it simmer till all is very tender. Let it cool and drain in a colander.


Pre-heat the oven on 200°C.

In a bowl mix the chard mixture with the ricotta and the chopped almonds, taste and add some more seasoning when necessary.

Fill every flower with a teaspoon of filling, carefully and fold/twist the tips of the flowers and put in the oven dish. Repeat with all the flowers you have, drizzle with some tasty olive oil and bake in the hot oven for 15-20 minutes till golden brown.

You can eat them cold or warm, as an antipasto or as a snack, part of your dinner or whatever you want. They are just delicious.


With this amount of stuffing you can fill a lot of flowers, 30-35. I pick some every morning and bake them later in the day.

Tuinmelde omelet op Catalaanse wijze – Catalan style omelette of orache and raisins (GF-DF-SF)



Deze week zat er een grote zak lichtgroene tuinmelde in mijn biologische groentepakket.
Ik begrijp dat er verschillende kleuren bestaan; op mijn moestuin groeit spontaan rode tuinmelde, prachtig om te zien.

Je kunt de blaadjes als ze nog jong zijn in een salade eten en als ze wat groter zijn stoven als spinazie. De smaak is zacht en niet zo uitgesproken. Vandaag maakte ik een omelet met gestoofde tuinmelde op Catalaanse wijze.
Als je geen tuinmelde hebt kun je ook spinazie of snijbiet gebruiken.

Nodig:
450 g tuinmelde
2 dikke tenen knoflook
Peper en zout
Handje rozijnen
Handje pijnboompitten of gehakte pecannoten (mijn zoon reageert allergisch op pijnboompitten, helaas)
3 eieren
20 cm Ø koekenpan

Hoe:
Ris de blaadjes van de stelen en was de melde goed. Laat een beetje uitdruppen. Hak de knoflooktenen grof.

Giet een scheut olijfolie in de koekenpan en laat heet worden; bak de knoflooktenen snel en voeg de melde met aanhangend water toe. Roer op hoog vuur tot de blaadjes beginnen te slinken. Zet het vuur lager en breng op smaak met peper en zout en voeg de rozijnen toe. Laat nog een paar minuten stoven tot alle blaadjes zacht zijn. Laat 15 minuten afkoelen in een kom. Was de koekenpan met heet water.

Voeg de eieren en de noten toe aan de melde-rozijnen mix en roer goed door elkaar. Zout en peper naar smaak.

Giet royaal olijfolie in de koekenpan en laat weer heet worden. Voeg in 1 keer de meldemix toe en druk plat met een spatel. Zet het vuur laag en laat zachtjes goudbruin bakken, de onderkant dus. Zet dan een passend deksel of bord op de koekenpan en keer in 1 keer de pan met deksel/bord om. Gebruik eventueel een ovenhandschoen zodat je je niet verbrand! Laat de omelet terugglijden in de pan en bak de andere kant nog 2-3 minuten.

Eet warm of koud, allebei lekker. Ook op brood!

Ik eet er vanavond een kom wortel-linzensoep bij en zelfgemaakte guacamole met tortillachips. Ik hoop dat je geïnspireerd bent.


This week there was a big bag of light green orache in my organic vegetable box. I understand that there are different colours of orache, all edible; in my vegetable garden there grows a deep red orache spontaneously.
You can eat the young leaves in a salad and when they grow bigger stew them just like spinach. The taste is soft and not very distinct. Today I made this omelette the Catalan way, with garlic and raisins. When you don't have orache you can use spinach or Swiss chard instead.



You need:
450 g of orache
2 fat cloves of garlic
Pepper and salt
1 handful of raisins
1 handful of pine nuts or chopped pecan nuts (my son is allergic to pine nuts lately unfortunately)
3 eggs
20 cm Ø frying pan

How to:
Tore the leaves from the stems and wash them; drain a bit.
Chop the garlic cloves roughly.

Heat a tablespoon of olive oil in a ( non-stick) frying pan and fry the garlic on high heat for 1 minute. Add the slightly wet orache leaves and stir well till the leaves start to wilt. Season with salt and pepper, add the raisins and slowly bake till all the leaves are wilted, stir on. Scoop into a bowl and let the mixture cool for 15 minutes. Add the eggs and the nuts. Stir everything well.

In the meantime clean the frying pan with hot water, put on the fire again with a generous amount of olive oil till pretty hot and add the orache-egg mixture. With a spatula press the mixture down, lower the gas and let it cook till the bottom is golden brown. Turn the omelette by putting a fitting plate or lid on top and turn the pan upside down. Maybe use oven mittens in order to not burn yourself!Let the omelette glide back in the pan and bake the other side for 2-3 minutes more.

Eat hot or cold. Both are delicious.


We have a very hot day here so I eat the omelette with a green salad, some guacamole with tortilla chips and a bowl of carrot-lentil soup. I hope you like it.

Abrikoos-tomaat chutney – apricot-tomato chutney (GF-DF-V)


Er zijn nog steeds abrikozen op de markt te koop; de laatste dit jaar uit het warme zuiden van Frankrijk.
Op de valreep, ik vertrek dinsdag naar Catalunya, dit gemakkelijke recept: zoete, licht pittige chutney; heerlijk op een boterham met kaas of avocado of naast een kom spicy curry.

Nodig:
6 rijpe abrikozen, ± 250 g
2 rijpe tomaten, ± 250 g
1 el olijfolie
1 grote teen knoflook, heel fijngehakt
1 sjalot, fijngehakt
1 groene peper, in fijne ringetjes, met of zonder zaadlijst
60 ml rijstazijn
1 el verse rozemarijn, heel fijngehakt
60 ml rozijnen
4 el oersuiker
½ tl zeezout

Was de abrikozen en tomaten en snijd ze in 8 stukjes.
Snijd knoflook, sjalot, peper en rozemarijn fijn.
Verwarm de olijfolie in een pan en fruit zachtjes de sjalot, knoflook en groene peper, ongeveer 2 minuten.
Voeg de rest van de ingrediënten toe, roer door elkaar en breng aan de kook. Zet het vuur zacht en laat in ongeveer 1 uur zachtjes inkoken tot een zeer zachte saus. Roer af en toe en als het gaat aanbakken voeg je een scheutje water toe. 
Proef en voeg naar smaak nog zwarte peper toe en eventueel nog wat zout of zoet.

Bewaar in een pot in de koelkast. Blijft zeker 2 weken goed.


Since there still are those rose-cheeked apricots I made a sweet and spicy chutney, just before I leave for Catalunya on Tuesday.
Quick, easy and delicious with a piece of old cheese, on the side with some fiery curry dish or on a sandwich with avocado. Whatever you eat it with, may be just with a spoon from the jar, it’s good!


You’ll need:
6 ripe apricots, ± 250 g
2 ripe tomatoes, ± 250 g
1 tbsp olive oil
1 big clove of garlic, minced
1 shallot, finely chopped
1 green pepper, sliced with or without the seeds
¼ cup rice vinegar
1 tbsp fresh rosemary, cut very fine
¼ cup raisins
4 tbsp raw sugar
½ tsp sea salt

Wash apricots and tomatoes and dice in 8 pieces.
Cut shallot, garlic, green pepper and rosemary fine.
Warm the olive oil in a pot and, on low heat, fry shallot, garlic and green pepper for 2 minutes. Add all other ingredients, give it a good stir and bring to the boil. Put the heat low and let the mass slowly reduce in about 1 hour, without a lid. Stir occasionally and when it starts to burn, add a little water.


Taste and add some freshly ground pepper and maybe some more salt or sweetness. Scoop into a glass pot and store in the fridge.

 It will keep for at least 2 weeks.

Roasted cauliflower salad with warm lentils and harissa dressing(GF-DF-SF-V)


Roasting vegetables gives such a unique taste. 
For everyone who doesn’t like the smell of cauliflower, and I know a lot of you do, try roasting this versatile flower! 
It brings out a very different taste and texture, I love it.
Just roasting it with a little good olive oil, some freshly ground pepper and a little salt is enough.

For this recipe I cleaned out my fridge, last week I bought so much bell peppers and aubergines on the market, that the leftovers were a little shrunken, but good enough for roasting.
The recipe is a variation of a recipe I read once on Healthful Pursuit.

You’ll need:

Roasted veggies:
1 medium head of cauliflower, cleaned and in small florets,
1 onion 
1 red bell pepper, in big chunks 
1 big eggplant or 2 small ones, in big chunks
1 red bell pepper, 
pepper, salt, olive oil

Cooked lentils:
½ cup of beluga lentils
1 glass of red wine
1 small onion, 1 clove pricked into the onion
1 bay leaf
Water, salt

Dressing:
3 tbsp of raisins
1 tbsp harissa
1 tbsp lemon juice
2 tbsp of water
Fresh cilantro

Preheat the oven on 200 °C.

Wash and cut all the vegetables and put them on a baking tray, sprinkle with some good olive oil, ground the pepper on top, add a little salt and toss everything together with your hands. Spread out and put in the middle of the oven and bake for 30 minutes. Stir halfway.



In the meantime cook ½ cup beluga lentils, washed, with a small onion , a clove stuck in it, a good glass of red wine and a bay leaf, for about 20 minutes. Water level about 2 cm above the lentils. Add a little salt when the lentils are almost done, not before!
When cooked, drain when necessary, remove the onion and clove and bay leaf. Set aside.

Make the dressing by mixing the raisins, a scoop (to your own taste) of harissa, 1 tbsp of lemon juice and 2 tbsp of hot water. Set aside and let marinate. 


Assemble the dish:
When the vegetables are tender and a little charred, remove from the oven and into a large bowl. Add lentils and harissa dressing and add a royal handful of fresh coriander/cilantro. Mix well but gently.

Maybe eat with a nice piece of glutenfree bread or just as it is, it is very tasty!


Geroosterde bloemkoolsalade met warme linzen en harissa dressing

Voor de geroosterde groenten heb je nodig:
1 bloemkool, medium, in roosjes
1 ui, in halve maantjes
1 rode paprika, in grote stukken
1-2 aubergines, in grove stukken
Peper, zout
Olijfolie

Voor de linzen:
½ kop (125ml) beluga linzen
1 glas rode wijn
1 kleine ui + 1 kruidnagel
Water

Voor de dressing:
3 el rozijnen
1 el harissa
1 el citroensap
3  el water

verse koriander

Verwarm de oven voor op 200°C.

Was en snijd alle groentes in grove stukken en leg ze op de bakplaat. Giet er 3-4 eetlepels olijfolie overheen en bestrooi met peper en zout. Meng alles goed door elkaar met je handen en bak de groentes in het midden van de oven ongeveer 30 minuten tot ze gaar en enigszins bruin zijn. Schep halverwege om.


Ondertussen kook je de linzen en maak je de dressing.

Was de linzen en doe ze in een pan, voeg de rode wijn toe, de ui met daarin gestoken kruidnagel en het laurierblad. Voeg zoveel water toe zodat er 2 cm boven de linzen staat. Breng aan de kook en laat zachtjes ongeveer 20 minuten koken, tot de linzen gaar zijn. Voeg pas wat zout toe in de laatste 5 minuten, als de linzen bijna gaar zijn.
Giet het eventueel overgebleven water af, verwijder laurier en ui en zet de linzen even opzij.

Voor de dressing meng je 3 eetlepels rozijnen met een flinke eetlepel harissa (naar smaak!!), 1 eetlepel citroensap en 2 eetlepels water. Zet ook opzij.



Het gerecht samenstellen:


Doe de groentes, als ze gaar en goudbruin zijn, in een grote schaal en voeg warme linzen, dressing en een flinke handvol versgehakte koriander toe. Meng alles goed door elkaar en je lauwwarme bloemkoolsalade is klaar. 
Eet zo of met een stuk lekker glutenvrij brood!

Sugar free oats and pecan cookies – suikervrije haver en pecan cookies (GF-SF-V)


These super crunchy thin cookies made of ground pecans and rolled oats are a remake of my sugar free oat cookies from last year.
I was craving a cookie, but wanted one without sugar and I remembered the smell of oats coming from the oven. There are always rolled oats in my cupboard and just recently I bought raw pecans on the market. I was thinking sweetness from the baked oats in combination with the crunch of the pecans, yes! Adding some raisins too, why not! Or dried apricots or dates or figs or cranberries, whatever you have or are in the mood for.

Super crunchy oats and pecan cookies (18 pcs)

135 g certified gluten-free rolled oats
100 g raw pecans
½ tsp tartaric acid baking powder
1 pinch of sea salt
4 tbsp raisins and currants (welded 1 hour in water or rum)
2 tbsp roasted sesame seeds
55 g melted butter or coconut oil
2-4 tbsp hot water

Pre heat the oven on 160 ˚C

Ground the oats  first, not too fine, then the pecans, they can stay a little crumbly.
Mix together with the baking powder and sea salt in a bowl.
Rinse and dry the soaked dry fruits (when you’re using big ones like dates, I suggest you chop them in small pieces) and add them to the bowl with the sesame seeds and mix again with your hand.
Add and mix in the melted butter or coconut oil and start kneading.
Add 1 tablespoon of hot water to make the dough come together (I used 2). Add more, 1 at a time, till you have a smooth dough.

Roll the dough out on a sheet of baking paper with a piece of cling film on the top, till 4-5 mm. You can cut out cookies with a cookie cutter or slice with a knife or pizza cutter in squares.

Lay the cookies carefully on a baking tray, covered with some baking paper, and bake them in the middle of the oven for about 25-30 minutes, till golden brown.
Enjoy the smell while bakingJ

Variations can simply be made by adding a little lemon- or orange zest, gingerroot, cinnamon or kardemom!















Supercrunchy haver-pecan cookies (18 stuks)

135 g  glutenvrije havervlokken (Provena)
100 g rauwe pecannoten
½ tl wijnsteenzuur bakpoeder
1 snufje zeezout
4 el rozijnen en krenten (1 uur geweld in water of rum)
2 el geroosterd sesamzaad
55 g gesmolten boter of kokosolie
2-4 el heet water
Verwarm de oven voor op 160 ˚C.

Maal de havervlokken eerst, niet helemaal tot meel, mag een beetje grof blijven, dan de pecannoten, laat deze ook nog wat kruimelig.
Meng samen met het bakpoeder en het zout in een ruime kom.
Giet de rozijnen af en droog even op wat keukenpapier (en als je dadels of abrikozen gebruikt, snijd ze dan in kleine stukjes!) Voeg ze samen met het sesamzaad toe aan de kom en giet de boter of kokosolie erbij. Begin te kneden.
Voeg steeds 1 eetlepel heet water toe tot het deeg samenkomt (ik had er 2 nodig) en een mooi samenhangend deeg vormt.

Leg het deeg op een stuk bakpapier en, met een flink stuk huishoudfolie erop, rol het deeg uit tot een dunne plak van ongeveer 4 mm dikte. Snijd cookies uit met een cookie cutter of met een mes of pizzasnijder tot rechthoeken.

Leg de cookies voorzichtig op een met bakpapier bekleedde bakplaat en bak de cookies in het midden van de oven ongeveer 25-30 minuten tot ze goudbruin zijn.
Geniet van de geur terwijl ze bakken J

Variaties zijn simpel te maken door wat geraspte citroen- of sinaasappelschil, gemberwortel, een schepje kaneelpoeder of kardemom toe te voegen of een andere noot!

Golden baked reinettes- goudgebakken reinetten (GF)


I love baking apples in the winter; it’s such a comforting taste, warm, slightly sweet, creamy and soft. I eat them in the morning sliced and baked or stewed with my cooked oatmeal or on a pancake with some maple syrup.
This dish is ideal for en easy supper. Just make a hearty soup, filled with vegetables from the season with some lentils and rice and flavored with strong herbs as nutmeg or mace to give it an earthy touch. While enjoying your bowl of soup, put some filled apples in the oven and eat them hot.

Golden baked reinettes (3 pers)

3 reinettes
6 walnuts, peeled and chopped roughly
3 tbsp raisins
3 tsp sucanat or
1 tbsp butter
1 tsp cinnamon

Pre-heat the oven on 180 ˚C.
Wash and core the reinettes. Put back the last centimeter of the core in the apple, so it is closed off.
Mix of the rest of the ingredients and fill the apples with this yummy mixture.
With a sharp knife incise a circle in the apple, just through the peel, otherwise the apples will burst while baking.
Place the apples in a baking tray and pour in 1 cm of boiling water.
Bake the apples in the warm oven for about 40-50 minutes depending on the size of the apples.
Eat them hot with whipped cream, or make a crème anglaise.

Since a while I use sucanat, an abbreviation of sucre de canne naturelle, un unrefined sugar made from organic sugar cane juice. I like this article about the subject, but remember: sugar is sugar. Sucanat is maybe a little less unhealthy (but very expensive), so handle with care and enjoy your food, also less healthy;-)


Goudgebakken reinetten (3 pers)

3 goudreinetten
6 walnoten, gepeld en grofgehakt
3 el rozijnen
3 tl sucanat of oersuiker
1 el boter
1 tl kaneel

Verwarm de oven voor op 180 ˚C.
Was en boor het klokhuis uit de appel. Snijd het laatste stukje klokhuis af en stop terug in de appel zodat deze weer afgesloten is.
Meng de rest van de ingrediënten door elkaar en vul hiermee de appels.
Snijd met een scherp mes een cirkel in de appel, net door de schil, zodat hij niet barst tijdens het bakken.
Plaats de appels in een ovenschaal en schenk 1 cm kokend water in de schaal.
Bak de appels in de warme oven, 40-50 minuten, afhankelijk van de grootte van de appels.
Eet ze warm uit de oven met versgeslagen room of maak een vanillesaus of crème anglaise.

Ik gebruik sinds kort sucanat, wat een afkorting is van sucre de canne naturelle; het is een rauwe, onbewerkte suiker gemaakt van rietsuikersap. Ik verwijs naar dit artikel; dus lees het maar eens rustig zelf.
Belangrijk blijft: suiker is suiker; deze is misschien ietsje minder ongezond (wel veel duurder), dus gebruik met mate en geniet vooral van je voedsel, ook als het wat minder gezond is;-)

Cinnamon flavored crunchy oats muesli – geroosterde haver muesli met kaneel (GF-DF-SF-V)

In the summer I eat a lot of muesli, but now with the days shortening and the temperature dropping to a degree that I already bought a new knitted hat and gloves, I long for warming dishes, no cold yoghurt with fruit and muesli for me.
Stewing apples and eating them with some of this lovely gluten-free cinnamon flavored muesli is a new favorite.
                        
The cinnamon adds a  wintery warming taste and is great for digestion which is very important for everyone but especially for people with celiac disease. My intestines are vulnerable and especially in this transition time to winter I have to take care a lot of my belly.
It’s the time of warming soups and drinks like herbal teas with some  fresh ginger added to it.


Cinnamon flavored crunchy oats muesli (big pot)

300g gluten free rolled oats
25 g puffed rice
60 g sunflower seeds
65 g hazelnuts, cut roughly
50g roughly slivered almonds
1 tbsp cinnamon
1 tbsp coconut oil
¼ tsp sea salt
80 ml honey
80 ml water
2 handful of raisins

Pre heat the oven on 150 ˚C.
Lay a piece of parchment paper on the baking tray.

In a large bowl mix the first 6 ingredients.
Melt the coconut oil with the honey, water and sea salt and pour it into the dry ingredients, stir everything well and put it on the baking tray. Spread it out evenly.

Bake the muesli 45 minutes in the oven and give it a stir every 15 minutes so it will bake evenly.

Let it cool completely, than add the raisins and store the muesli in a glass container. It will keep for months, when possible ;-)


Geroosterde havermuesli met kaneel (grote pot)

300 g glutenvrije haver
25 g gepofte rijst
60 g zonnebloempitten
65g hazelnoten, grof gehakt
50 g amandelschilfers, ik snijd met een scherp mes hele amandelen in de lengte in grove schilfers
1 volle el kaneel
1 el kokosolie
¼ tl zeezout
80 ml honing
80 ml water
2 handenvol rozijnen

Verwarm de oven voor op 150 ˚C.
Leg een vel bakpapier op een bakplaat.

Meng de eerste 6 ingrediënten in een grote kom.
Smelt de kokosolie en verwarm samen met water, honing, en zeezout en giet dan bij de droge ingrediënten. Roer alles goed door elkaar en stort op de bakplaat. Spreid het gelijkmatig uit.

Bak de muesli 45 minuten in de oven en roer iedere 15 minuten even door zodat het regelmatig gaart.

Laat volledig afkoelen en meng dan de rozijnen erdoor. Bewaar in een glazen pot. Het blijft dan maanden goed, als je dat haalt ;-)

Almond cinnamon buns – amandel-kaneelbroodjes (GF-DF-SF)


This is such a weird spring, I still have the feeling that it’s January or February.
My taste buds were already in the mood for strawberries, fresh green spring leaves, asparagus, new potatoes and young herbs from the garden. But for me it’s too cold now, too dark and my energy level goes down again, as if my body is preparing for another winter period. I want cinnamon, apple, sauerkraut, pumpkin, hearty soups and stews. I want hot tea and flaming wood fires.
But no, it’s the month of May, the trees are blooming, everywhere green leaves are appearing, there are ducklings in the canal in front of my house and the young rabbits are chasing each other in the bushes of the dike alongside.

I decided to make something according to my autumnal taste: cinnamon buns.


I already have made several recipes, also on this blog, but after trying and studying on the internet I created this really lovely, no sugar added, soft and appealing cinnamon buns.
Even the 16 year old likes it, and that means something!


Almond cinnamon buns (10 pcs)

Dough:
350 g almond flour, super fine ground
2-4 tbsp coconut flour
½ tsp sea salt
½ tsp tartaric acid baking powder
60 ml coconut oil, melted
2 tbsp honey
2 organic eggs
1 tbsp ground flax seeds in 2 tbsp water

Filling:
2-4 tbsp honey
75g chopped walnuts
75g chopped raisins
2 tbsp ground cinnamon

Pre heat the oven on 180 ˚C.
Put ready 2 sheets of 30x40cm cling film
Prepare a baking tray with baking paper.

In a big bowl mix the almond flour well with salt and baking powder.

The coconut flour I only use in the end, depending on the wetness of the dough. I get my eggs from a local producer and they are always different in size.

In a smaller bowl you mix the coconut oil with  honey, flax seed mixture and the 2 eggs till it’s a homogenous mix. This you stir into the dry ingredients and mix everything well with a spoon.

As I said, at this time you decide if you add some coconut flour, 1 tablespoon at a time. The dough will stay sticky, but not too. So no more than 4 tablespoons are needed, otherwise the cinnamon buns will turn out dry. I mix it in by hand, then I can feel the mixture changing.

Put 1 sheet of cling film on your workbench and put the dough on top of it. Press it down a little by hand. Then put the other sheet on top of it and roll the dough out in a rectangle of 25x35cm. Remove the top sheet of cling film and drizzle the honey on the dough. Then sprinkle the nuts, raisins and cinnamon on the dough. With the first layer of cling film you can roll up the dough in a nice sausage shape. Cut with a sharp knife into 10 disks and put them, with some space between them, on the baking tray and bake the almond cinnamon buns 15-20 minutes in the oven till they are golden brown. Check from time to time that the buns are not getting too dark.
Let them cool for at least 10 minutes on the tray before transferring them to a wire rack.


Amandel-kaneelbroodjes (10 stuks)

Deeg:
350 g fijngemalen amandelmeel
2-4 el kokosmeel
½ tl zeezout
½ tl wijnsteenzuurbakpoeder
60 ml kokosolie, gesmolten
2 el honing
2 biologische eieren
1 el gemalen lijnzaad in 2 el water

Vulling:
2-4 el honing
75g gehakte walnoten
75 g gehakte rozijnen
2 el kaneel


Verwarm de oven voor op 180 ˚C.
Leg 2 stukken huishoudfolie van 30x40cm klaar voor gebruik.
Leg een stuk bakpapier op een bakplaat.

In een grote kom roer je het amandelmeel samen met zout en bakpoeder goed door elkaar.

Het kokosmeel gebruik ik alleen als het deeg te vochtig blijft. Dit is afhankelijk van de grootte van je eieren. Ik krijg ze van een lokale bio eierboer en zijn eieren zijn altijd verschillend van grootte.

In een kleinere kom mix je de kokosolie met de honing, lijnzaadmengsel en de eieren tot een homogeen mengsel. Giet dit bij de droge ingrediënten en meng alles met een lepel.

Op dit moment beslis je of er kokosmeel nodig is. Het blijft een plakkerig deeg, dus gebruik niet meer dan 4 eetlepels, anders worden de kaneelbroodjes hard en droog. Dus meng met de hand lepel voor lepel en voel wat er gebeurt.

Leg 1 stuk huishoudfolie op je werkbank en leg hierop je deeg. Druk een beetje plat met de hand en leg dan het andere stuk huishoudfolie erop. Rol uit tot een plak van 25x35 cm. Verwijder de bovenste laag folie.
Lepel de honing eroverheen en besprenkel dan met de noten, rozijnen en kaneel.
Gebruik het onderste stuk folie om je deeg voorzichtig op te rollen in een lange worstvorm.
Snijd deze in 10 stukken met een scherp mes en leg ze op een met bakpapier bekleedde bakplaat met 2 cm ruimte ertussen.
Bak de amandel-kaneelbroodjes in 15-20 minuten goudbruin. Let op dat ze niet te bruin worden.
Laat ze minstens 10 minuten afkoelen voor je ze overbrengt op een koelrekje.
