Gevulde savooiekoolrolletjes – Savoy cabbage rolls (GF-SF)


Na een fantastische uitstap naar het zomerse, uiteindelijk dan, de eerste weken waren fris tot koud in het noorden, India, is het altijd weer wennen aan de temperatuur, het eten, het ritme van alledag, zelfs de mensen hier.

  

Waar ik altijd enorm van geniet na een reis naar India is dat het hier zo ontzettend schoon en rustig is.



De steden zijn daar zó overvol en er is altijd herrie, van de vroege ochtend tot de late avond, dat het een verademing (ook dat letterlijk, de luchtkwaliteit is vaak zeer slecht)is om weer op een fijne, rustige plek te wonen, waar je niet weg hoeft, waar je niet op straat hoeft te leven


waar het leven zo ontzettend goed geregeld is, waar je je terug kunt trekken als het je uitkomt, waar je in een ongelooflijke luxe leeft met schoon drinkwater, medische voorzieningen en veilig voedsel.( Ik kwam helaas ziek terug met een darmparasiet, waar ik nu nog van aan het herstellen ben met antibiotica)


We hebben gereisd vanaf Delhi, via Benares naar Kolkata en vandaar helemaal naar het zuiden afgezakt langs de oostkust naar Andra Pradesh en Tamil Nadu.
India is een fascinerend land, met geweldig innemende mensen, zoveel contrasten; te veel om op te noemen. Wat impressies:





Thuisgekomen is het even omschakelen om van zomers eten weer terug te moeten naar winterse kost. Dat gaat vrij snel, want mijn lichaam moet verwarmd worden.

Ik maakte deze winterse koolrolletjes met quinoa, maar je kunt op vele manieren kunt vullen, zoals met rijst of gierst als basis. Heel handig om restjes groente te verwerken.

Je hebt nodig:
1 mooie verse savooiekool, 12 bladeren
¾ cup quinoa of bruine rijst
1 handvol amandelen, geroosterd en grofgehakt
1 ui, fijngehakt
1 teen knoflook, fijngehakt
1 (winter)wortel, in kleine blokjes
1 prei, in smalle ringetjes
verse peterselie
peper, zout, paprikapoeder, tijm
100 g zachte geitenkaas
1 blikje linzen, uitgelekt
tomatensaus van 1 blikje gepelde tomaten

Zet een grote pan met water op met wat zout en kook hierin de koolbladeren met 3-4 tegelijk 4 minuten. Spoel ze af met koud water en laat uitlekken.
Kook de quinoa zoals je gewend bent en zet opzij.

Rooster en hak de amandelen en daarna alle groentes.

Verhit wat olijfolie in een braadpan en fruit hierin ui en knoflook zachtjes, voeg dan prei en wortel en fruit totaal een minuut of 8. Breng op smaak met peper, zout, tijm en paprikapoeder. 
Van het vuur af roer geitenkaas, quinoa, amandelen, linzen en peterselie erdoor en meng goed.

Zet de oven aan op 175°C.

Op de bodem van een flinke ovenschaal schep je wat tomatensaus. Dan maak je de koolrolletjes door op je werkblad steeds 1 koolblad te nemen en een flinke schep vulling in het midden. Vouw de zijkanten naar binnen en rol het blad op. Leg naast elkaar op de saus. Tot alle bladeren gevuld zijn.
Schep de rest van de saus eroverheen en wat olijfolie. Bak de koolrolletjes in het midden van de oven ongeveer 30 minuten.

Eet smakelijk!



You’ll need:
1 big fresh Savoy cabbage, 12 leaves
¾ cup quinoa or brown rice
1 handful of almonds, roasted and chopped roughly
1 onion, finely chopped
1 clove of garlic, finely chopped
1 (winter) carrot, finely diced
1 leek, in small rings
fresh parsley, chopped
pepper, salt, paprika powder, thyme
100 g soft goat’s cheese
1 small can of lentils, drained
Tomato sauce from 1 can of peeled tomatoes

Put a big pan with water on the stove and bring to the boil. Boil the cabbage leaves with 3-4 together for 4 minutes. Rinse with cold water and put aside.
Cook the quinoa as you always do and set aside too.

Toast and chop the almonds.
Wash and chop all vegetables.

Heat some olive oil in a casserole and fry the onions and garlic softly, add leek and carrot cubes and fry together for about 8 minutes till softened. Season with salt, pepper, paprika and thyme. From the heat stir in quinoa, almonds, goat’s cheese, lentils and parsley. Mix well.

Pre heat the oven on 175°C.

On the bottom of a ovenproof dish scoop half of the tomato sauce.
Then we make the cabbage rolls by putting 1 cabbage leaf on your workbench and scoop a big ladle of the filling in the middle. Fold the sides over the filling and roll the leaf up and put in the baking dish. Make all 12 and divide the rest of the sauce on top of it with an extra sprinkle of olive oil. Bake in the middle of the oven for about 30 minutes.

Hazelnut polenta with roasted pumpkin- hazelnoot polenta met geroosterde pompoen(GF-V-SF)


Yesterday I made this polenta dish which is so great with the use of hazelnut meal. I came upon the recipe in a Dutch magazine about organic food: Smaakmakend.
The hazelnut meal gives the polenta a nuttiness and a bite which goes very well with the roasted pumpkin, the white beans and  the goat’s cheese.

Comfort food as it should be, soft, cheesy and hearty. My son even loved it, although he is not a big polenta eater. We liked it so much that I almost forgot to take a picture; with a little left-over I could manage these ones ;-)


Hazelnut polenta with roasted pumpkin (2 pers)

70 g polenta
70 g hazelnut meal
500 ml water
1 tbsp Herbes de Provence
50 g Parmesan
400 g pumpkin, cleaned and in cubes
2 cloves of garlic, in thin slices
1 onion, chopped in half moons
10 black olives, de-pitted and chopped roughly
1 tbsp fresh rosemary, cut fine
2 tbsp olive oil
1 can of big white beans, drained
100-150 g soft goat’s cheese
fresh parsley

Pre-heat the oven on 200 °C. Prepare a baking tray with a piece of baking paper.

Put a big pan on the fire with 500 ml of water and bring to the boil. Mix polenta and hazelnut meal well. When the water is boiling pour in the mixed polenta/hazelnut while you keep on stirring! So no lumps will form. keep on stirring and let the polenta cook conform the description on the package. This can range from 5 -30 minutes, so have a good look what type of polenta you’re using.

In the meantime prepare the vegetables and mix pumpkin, onion, garlic, olives and rosemary with the olive oil, salt and pepper and put in the pre-heated oven and bake for 30 minutes, stir half way, till golden brown and cooked. Set aside for a minute till the polenta is baking.

When your polenta is done cooking, mix in grated Parmesan and  pour on a flat oven-proof plate or casserole and, after removing the baking tray with pumpkin, adjust the oven to grilling  and grill the polenta for 3-5 minutes.
Mix pumpkin with the white beans  and gently scoop on top of the polenta and sprinkle goats’ cheese on top and put under the grill for another 5 minutes.


You’re done. Sprinkle some parsley on top and serve with a simple green salad and enjoy this tasty comfort dish.

Carrot-zucchini tart – wortel-courgette taart (GF-SF)


Some recipes simmer in my head for quit a long time, they have to ripen, to form, from idea to substance. I love savory tarts, make them not too often, but always think about making a good crust, not to floury, or too fat or too sweet, etc.

Some months ago I bought a rectangular baking mold to make savory tarts with green asparagus or strips of colored veggies, but it landed in the cupboard, waiting for the right time.

Yesterday was the right time. After reading loads of information about gluten-free and other crusts, measures, temperatures, to pre or not pre-bake I decided to stop this non-doing but make up my mind and bake the damn thing.

So here it comes, my super yummy savory tart filled with carrots and zucchini, a soft touch of fresh and dried coriander, mixed with eggs and cheese to make an almost classic French quiche. I hope you like it, as we did.


Carrot-zucchini tart (3-6 pers)

rectangular mold 12x36cm

for the crust:
180 g blanched almond flour
2 g sea salt
4 g tartaric acid baking powder
60 ml olive oil
1 tbsp water
1tbsp blue poppy seeds

for the filling:
3 organic eggs
2 tbsp fresh cilantro, chopped
5 tbsp crème fraîche
Salt and pepper

1 small onion, chopped fine
1 clove of garlic, chopped fine
1 tbsp fresh thyme leaves
1 tsp ground coriander
200g grated carrots
200g grated zucchini
Pepper and salt

70 g hard goat’s cheese, grated
30 g grated Parmesan

Take the time to make this recipe; you can make the crust in advance.

Pre heat the oven on 180 ˚C.
Start making the crust by mixing all ingredients in a bowl and knead quickly by hand.
Fill the mold with the dough and push it out evenly with your hand and fingers. Bake 12 minutes in the oven till lightly golden. Set aside.

In the meantime you prepare the filling.

Prepare the egg filling by whisking the eggs, cilantro, crème fraîche with salt and pepper. Set aside too.

In a casserole heat some olive oil and softly bake the onion with the garlic for 3 minutes.
Stir in the coriander powder and thyme leaves and bake together for another minute.
Add grated carrots and stir and bake for 5 minutes. Add zucchini and bake together for 3 more minutes. Season with pepper and salt.
Let it cool slightly.

Put the oven on 200 ˚C.

When the vegetable mixture has cooled for about 10 minutes you add the egg mixture and then the cheeses, stir well.
Scoop the filling on top of the pre-baked crust and bake the tart in the middle of the hot oven for 25-30 minutes, till the smell are delicious and the top is golden brown.

Serve on top of a simple green salad with a nice dressing. A little acid accompanies well with the soft and smooth taste of the tart.


Wortel-courgette taart (3-6 pers)

Rechthoekige vorm 12-36cm

Voor de bodem:
180 g amandelmeel
2 g zeezout
4 g wijnsteenzuur bakpoeder
60 ml olijfolie
1 el water
1 el blauw maanzaad

Voor de vulling:
3 biologische eieren
2 el gehakte verse koriander
5 el crème fraîche
Zout en peper

1 kleine ui, fijngehakt
1 teentje knoflook, fijngehakt
1tl koriander poeder
1 el verse tijmblaadjes
200 g geraspte wortel
200g geraspte courgette
Zout en peper

70 g harde geitenkaas, geraspt
30 g fijngeraspte Parmezaan

Neem de tijd om deze heerlijke taart te maken. De bodem kun je al van tevoren maken.

Verwarm de oven voor op 180 ˚C.

Begin met het maken van de bodem door alle ingrediënten in en kom te mengen en snel tot een samenhangend deeg te kneden. Vul de vorm met het deeg en druk het met je hand en vingers gelijkmatig uit. Bak de bodem 12 minuten tot licht bruin. Zet apart.

Ondertussen maak je de vulling.

Te beginnen met het eimengsel. Kluts de eieren samen met de crème fraîche, koriander en wat zout en peper. Zet ook apart.

Verwarm dan wat olijfolie in een braadpan en bak hierin zacht de ui en knoflook ongeveer 3 minuten. Roer het korianderpoeder en de tijmblaadjes erdoor en bak 1 minuut mee. Voeg geraspte wortels toe en bak, al roerende, 5 minuten mee, voeg dan de courgette toe en bak deze nog 3 minuten mee. Breng op smaak met zout en peper. Zet apart en laat een minuut of 10 afkoelen.

Zet de oven op 200 ˚C en rasp de kazen.

Als het groentemengsel lauw is roer je het eimengsel erdoor en daarna de kazen.
Schep de vulling op de voorgebakken bodem, strijk uit en bak de taart 25-30 minuten in de hete oven tot hij gaar is, heel lekker ruikt en goudbruin ziet.

Serveer op wat simpele groene sla met een lekkere dressing. Het zuur van de dressing is erg lekker bij het zacht-zoete van de taart.

Oeufs en cocotte – eitjes in een pannetje (GF-SF)




First of all I want to thank Roeb for my lovely new banner, I love how he has the patience to transform one of my India pictures into this new feature, I don't ;-)
(By the way, Roeb is my creative soulmate!!)

Oeufs en cocotte, it sounds pretty and quite fancy!
Literally it means eggs in a dish or eitjes in een pannetje, not half as nice as en cocotte, it sounds a bit frivolous, like a summer dress in a breeze.
Although it’s somewhat grey today we already had some really nice spring days, on which it was possible to wear skirts and heels, for a few hours, but ok!




I love springtime, everything is growing so fast, you almost can see the leaves unwrapping. It’s a time of all our senses, it smells good, the birds are starting to whistle already in the early daylight, the new nettles are very, very prickly (ow!) , all these shades of baby green are a joy for the eye and the taste of all these new leafy greens is so strong and poignant and what feels better than the first rays of sunlight on your wintery skin!
It’s the time of rejuvenation, of leaving behind old skin, and starting afresh, a new life, a new beginning, light!


This dish perfectly fits in the idea of a light and healthy starter.
Eggs are full of protein, vitamins A, B11, B12, E and D and contain phosphorus, iron and selenium.
Although they contain cholesterol, there is now a lot of evidence that it’s not the cholesterol in eggs that increases your cholesterol, but it’s the intake of saturated fats and trans-fats from all kinds of junk food and processed foods.

I am not going to make propaganda for eating more eggs but I do want to insist on using Organic Eggs. In short: they taste better because the chickens get better food and have a much better life; did you ever see a battery cage?  


O.k.  let’s go on to the recipe:

Oeufs en cocotte (4 pers)

4 organic eggs
4 tbsp crème fraîche
4 tbsp grated goat’s cheese
4 tbsp white wine (optional)
2 gluten free crackers or slices of bread, crumbled
Butter
2 tbsp of freshly chopped herbs, like cress, chives, chervil, parsley etc.
4 ramekins

Pre-heat the oven on 180 ˚C.
Put on the kettle for boiling water.

Butter the ramekins very well.
Break an egg in every one.
In a bowl mix the crème fraîche, cheese and white wine with some salt and pepper and divide it over the eggs.
Divide the cracker- or breadcrumbs over the four eggs and some small knobs of butter.

Put the ramekins in an oven tray and pour in the boiling water gently till halfway of the ramekins.
Put the oven tray carefully in the middle of the oven and bake the eggs about 20 minutes, till they feel firm on the touch.
Sprinkle the herbs on top and serve!
Happy eggs!


Oeufs en cocotte (4 pers)

4 biologische eitjes
4 el crème fraîche
4 el geraspte pittige geitenkaas
4 el witte wijn (kan je weglaten)
2 glutenvrije crackers of sneetjes brood, verkruimeld
Boter
2 el versgehakte kruiden als bieslook, tuinkers, kervel, peterselie, etc
4 ramequins

Verwarm de oven voor op 180 ˚C.
Zet een ketel water op.

Beboter de ramequins goed en breek in ieder een eitje.
Meng in een kom de crème fraîche, kaas en witte wijn met wat peper en zout en verdeel over de eieren.
Verdeel ook de cracker- of broodkruimels over de 4 schaaltjes en wat botervlokjes.
Zet ze in een ovenschaal en vul deze tot halverwege de ramequins met kokend water.
Zet de schaal voorzichtig in de oven en bak de oeufs 20 minuten tot ze gaar aanvoelen.
Bestrooi met de verse kruiden en serveer deze heerlijke eitjes!

aubergineroll-ups - aubergine rolletjes (Gf-SF)

This tapa or mezze or antipasto is great for a springparty or just as an in-betweenie, a healthy vegetable snack, or as a starter of a nice meal for let’s say: today!

My son loves it and so do I.
In my weekly organic vegetable box from my farmer in Strijen there was an aubergine/eggplant, small, but so fresh! I had a sweet potato in the cupboard and some basil. In my mind a taste began to form and I created this lovely dish.

aubergine/eggplant roll-ups
1 aubergine/eggplant
1 sweet potato
Some hard goat’s cheese, as many slices as you cut the aubergine
Fresh basil leaves
Semi-dried tomatoes, from a pot
Some cherry tomatoes, optional
Olive oil
Freshly grounded black pepper

Pour a little olive oil in your hands and rub it in the sweet potato skin, prick some holes in the skin with a fork.
Stick the sweet potato in a 200˚C pre-heated oven and bake until done. That will take about 1 hour. Turn the potato 2-3 times.
Slice the aubergine in small lengthwise slices, about 0,5 cm, brush with a little olive oil and grill them on a griddle pan. Keep apart.
When the sweet potato is done, you check it with a fork, let them cool a little and then peel off the skin and puree with a fork. leave the oven on but set to 150˚C..
You need as many slices of cheese, basil leaves and semi-dried tomatoes as you have aubergine slices. The cherry tomatoes are optional, a half one is enough for 1 slice. It’s nice to taste the different textures.

Compose the dish:

On every aubergine slice you smear a tablespoon of puree, then a slice of cheese, 1 semi-dries tomato and half a cherry tomato. On top of that a basil leave, or more, and some freshly grounded black pepper. Roll up and stick a pin in it and into the oven for about 5-8 minutes, just to let the cheese melt a little.
Ready to enjoy!!



Aubergine rolletjes
1 kleine aubergine
1 zoete aardappel
Plakjes harde geitenkaas, evenveel als plakjes aubergine
Verse basilicum blaadjes
Semi-dried tomatoes, uit een potje
Een paar cherry tomaatjes, als je hebt, hoeft niet
Olijfolie
Versgemalen zwarte peper

Giet een beetje olijfolie in je handen en wrijf dit in de zoete aardappelschil. Prik gaatjes met een vork rondom en leg hem in een voorverwarmde oven van 200˚C. Het duurt zeker een uur voordat hij gaar is. Draai de aardappel 2-3 keer om en prik om te kijken of-ie gaar is.
Ondertussen snijd je de aubergine in 0,5 cm dunne plakjes in de lengterichting, bestrijk heel licht met olijfolie en bak ze aan beide kanten op de grillpan tot ze mooi bruin en gaar zijn.
Zet even apart.
Als de zoete aardappel gaar is, laat je hem even afkoelen. Dan pel je de schil eraf en prak je hem. Laat de oven aan, zet op 150˚C.
Je hebt zoveel plakjes kaas, basilicumblaadjes en gedroogde tomaatjes nodig als plakjes aubergine. Een halve cherry tomaat per plak is voldoende. De verschillende texturen en zoet-zuur-zout verhouding maken dit gerechtje.

Samenstellen:
Je smeert op ieder aubergine plakje een eetlepel zoete aardappel puree, een plakje geitenkaas, een gedroogde tomaat en een halve cherry tomaat, 1 blaadje basilicum (mag ook meer) en ruim gemalen zwarte peper. Rol op en zet vast met een prikker. zet nog 5-8 minuutjes in de warme oven, om de kaas net te laten smelten. Klaar om op te eten!!
