Courgettesoep met venkel en verse kruiden – zucchini soup with fennel and loads of fresh herbs (GF-DF-SF-V)


Spannende tijden! 
Vandaag mijn boek verstuurd om te worden gedrukt. Binnenkort is het zover: het Boeddhamum Glutenvrije Kookboek.

Zeker 3 jaar werk, helaas (nog) geen uitgever gevonden die er brood in ziet. Dus dan maar zelf uitgegeven, wat helaas de prijs zeer heeft doen stijgen, maar niet  getreurd, er komt een downloadbare pdf voor een fijne prijs. Volgende week meer hierover.

Vandaag een soepje, van een iets te groot gegroeide courgette, waar moestuinierders vaker mee te maken hebben. Het is nu de tijd van oogsten en ik kan het bijna niet aangegeten krijgen: courgettes, snijbiet, haricots verts, venkel, bietjes, wortels, broccoli, sla, basilicum, peterselie en koriander.

Je hebt nodig:
1 (te) grote courgette van ± 1 kg, in flinke stukken
2 uien, fijngesnipperd
2 tenen knoflook, fijngehakt
10 steeltjes peterselie, fijngesneden
1 kleine venkelknol, grofgehakt
1 l groentebouillon
1-2 laurierbladeren
1 flinke hand basilicum
1 flinke hand peterselie
1 flinke hand koriander

Verwarm wat olijfolie in een soeppan en voeg de uien toe met wat zout. Laat de uien heel langzaam, ongeveer 30 minuten, karameliseren, terwijl je iedere 5 minuten even roert.

Ondertussen was en hak je de overige ingrediënten.

Voeg knoflook en gehakte peterselie toe en laat nog een paar minuten mee fruiten.
Voeg bouillon, laurierbladeren en de stukken venkel en courgette toe en breng aan de kook. Laat nog eens 30 minuten zachtjes sudderen met het deksel op de pan.

De laatste 5 minuten voeg je de verse kruiden toe.
Pureer met een staafmixer en voeg naar smaak peper en zout toe.

Serveer meteen of met wat verkruimelde feta met za´atar erop.

Today I sent my book for printing, so very soon it will be available on this blog: the Boeddhamum Glutenfree Cookbook.
For now it will only be on purchase in Dutch, but when there is enough interest I will make an English translation.

A lot of work, almost 3 years and unfortunately I did not find a publisher (yet). So it will be a self-publishing edition, but I will also make a pdf to download at a special price. Next week more.

Today I made this soup from a tiny bit overgrown zucchini, which I believe people with a vegetable garden will recognize. Everything is growing so fast and there is so much to harvest I can’t barely manage to eat it all: zucchini, chard, haricots verts, fennel, red beets, carrots, runner beans, broccoli, lettuce, basil, parsley and coriander.

You’ll need:
1 (too) big zucchini, about 1 kg, in big chunks
2 onions, finely diced
2 fat cloves of garlic, finely cut
10 stalks of parsley, finely chopped
1 small fennel bulb, roughly chopped
1 l vegetable stock
1-2 bay leafs
1 big handful of basil
1 big handful of parsley
1 big handful of coriander

In a big soup pot add some olive oil and fry the onions on a very low heat for about 30 minutes with a dash of salt. Slowly let it caramelize, stirring every 5 minutes.
In the meantime you can cut all the other items.

The last 5 minutes add chopped garlic and parsley stalks.
Then add stock, bay leafs, fennel and zucchini chunks. Bring to the boil and then let it simmer, with the lid on, for another 30 minutes. Add the chopped herbs the last 5 minutes.

Then puree with a stick blender and add salt and pepper to your own taste.

Serve as it is or maybe with some crumbled feta cheese and a sprinkle of        za´atar on top.

geroosterde spruitjes venkel salade - roasted Brussels sprouts and fennel salad (GF-DF-SF-V)


Al weer 5 jaar geleden plaatste ik dit recept van geroosterde spruitjes salade en nog steeds vind ik het een heerlijk gerecht voor de winter. Vol vitamine C van de spruitjes, de venkel en de sinaasappel. Heerlijk met dit koude weer. Ik combineer het wel met een verwarmende soep zoals deze.

Geroosterde spruitjes en venkel salade (2 pers)

300 g spruitjes, schoongemaakt en gehalveerd als ze groot zijn
1 knolvenkel, schoongemaakt en in halvemaan partjes
2 el goede olijfolie, peper en zout
1 grote navelsinaasappel
1 kleine rode ui
vinaigrette van sinaasappelsap, goede olijfolie, balsamico azijn, peper en zout
een handvol verse korianderblaadjes, grof gehakt

Verwarm de oven voor op 200 ˚C.

Blancheer de spruitjes en venkel 2 minuten in kokend water, giet af en laat uitlekken.
Meng de groentes op een bakplaat met de olijfolie, peper en zout en bak 20 minuten in de oven tot de spruitjes bruine randjes krijgen en gaar zijn. Schep af en toe door elkaar.

Snijd ondertussen de oranje en witte schil van de sinaasappel en vang het sap op voor de vinaigrette. Snijd de partjes er uit. Snijd de rode ui in dunne ringen. 
Als de groentes gaar zijn, laat ze even wat afkoelen en doe de groentes in een schaal. Meng dan samen met de sinaasappelpartjes en de ui.

Maak een vinaigrette en giet deze over de salade. Laat zeker een half uur op smaak komen en garneer dan met de koriander.



Already 5 years ago I wrote this great winter salad recipe packed with Vitamin C from the Brussels sprouts, the fennel and the oranges. I invite you to try it again :-) It has great flavor! I combine a cold salad always with a warming soup like this one.

Roasted Brussels sprouts with fennel salad (2 pers)

300g Brussels sprouts, cleaned and halved when big
1 fennel bulb, cleaned and sliced in half-moon parts
2 tbsp good olive oil, pepper and salt to season
1 big juicy orange
1 small red onion
vinaigrette of orange juice, good olive oil, balsamic vinegar, pepper and salt
a handful of coriander leaves, cut coarsely

Pre heat the oven on 200 ˚C.

Blanch the Brussels sprouts and fennel for 2 minutes in boiling water, then drain and dry.
On a baking tray mix Brussels sprouts and fennel slices with the olive oil and freshly ground pepper and salt. Bake in the middle of the oven for about 20 minutes till the edges of the sprouts are a bit browned and they are done. Mix a few times while baking.

Put them in a salad bowl. Cut off the orange and white peel of the orange and cut into nice parts. Use the juice for the vinaigrette. Slice the red onion very thin.
Assemble the salad and pour over the vinaigrette. Let it come together for at least half an hour. Garnish with the coriander.

Fennel carrot lentil soup with a touch of ginger and blood orange - venkel wortel linzensoep met een vleugje gember en bloedsinaasappel (GF-DF-SF-V)


A French inspired soup with a hint of ginger to give some inner heat and the juice of a blood orange for a delicate taste.

Yesterday I was walking in the sun, via the woods where spring is already starting bit by bit.





I walked to the seaside and had a great time, enjoying, breathing, making pictures with my Iphone and having lunch in a sand dune.





But today it’s freezing cold again, grey and rainy. And for me that means soup time.

You’ll need:

700g or 2 fennel bulbs
500g carrots
1 onion
1 clove of garlic
1 tbsp fresh ginger
1 l hot water or vegetable broth
1 blood orange
½ cup red lentils
Olive oil
Pepper and salt to taste

Begin by frying the onion softly in a big soup casserole in some good olive oil for about 10 minutes. Add a pinch of salt and stir once in a while.

Clean the vegetables and cut carrots and fennel in small cubes.
Chop the garlic clove fine and also finely cut the ginger in slices and then like the garlic: very, very fine.

First add carrot cubes and let them cook together with the onion for 5 more minutes. Then add fennel, garlic and ginger and stir in well. Fry for 5 more minutes.

Add hot stock or water and the well rinsed lentils and bring to the boil. Lid on, gas low. After 20 minutes, when the vegetables and lentils are tender, taste and add more salt if needed. 

Turn off the gas and add the blood orange juice. 
Blend the soup with a stick blender or otherwise.

Taste again and make adjustments if needed, i don't think so ;-)

I just grind some fresh black pepper on top after I put the soup in a bowl. Pure and delicious. Enjoy!




Voor deze pure en heerlijke soep heb je nodig:

700g of 2 venkelknollen
500g winterwortels
1 ui, fijngehakt
1 teen knoflook
1 eetlepel gehakte gember
1 l water
1 bloedsinaasappel
½ cup rode linzen
Olijfolie
Peper en zout naar smaak

Begin met het fruiten van de ui in wat goede olijfolie op een zacht vuur in een flinke soeppan, ongeveer 10 minuten. Voeg wat zout toe en roer af en toe.

Ondertussen ga je de groentes wassen en schoonmaken. Snijd dan de wortels en venkelknollen in blokjes.De knoflook en gember zeer fijn.

Voeg eerst de wortelblokjes toe en bak rustig 5 minuten samen met de ui.

Dan voeg je venkel, knoflook en gember toe. Roer goed door elkaar en laat nog 5 minuten zachtjes meebakken.

Schenk water of groentebouillon in de pan en voeg de goed
gewassen linzen toe. Breng aan de kook en laat, met een deksel op de pan, 20 minuten zachtjes koken tot groentes en linzen gaar zijn. Proef de soep en voeg naar smaak zout toe.

Gas uit en schenk het sap van de bloedsinaasappel erbij.
Mix de soep met een staafblender of ander apparaat. 
Proef nogmaals en voeg toe wat nodig is, waarschijnlijk niets ;-)

Schep in een kom en maal er wat verse zwarte peper op.


Geniet van een licht verwarmende en delicate smaak!

Roasted Brussels sprouts and fennel salad – geroosterde spruitjes venkel salade (GF-DF-SF-V)


I read a recipe from Yotam Ottolenghi in the Guardian where he made roasted Brussels sprouts and made a beautiful salad with pomelo and star anise. Lately I saw him in a program in Israel about food bringing together the Palestinian and Jewish population, it was fascinating, especially when I compare it to the news we get here, always showing opposing parties whereas the people want peace and do a lot in there own communities on a small scale.

I love it when food brings people together. Eating together, cooking together, it’s all about sharing and trying new things, new opportunities.

I myself am going to try some new flavors very soon and discover new areas, new people and dive into a different culture, which itself consists of multiple cultures and habits. Yes, in 2 weeks time I’ll be walking in Mumbai at this very moment. I look forward to it very much, I can hardly wait. Especially now, when since yesterday the winter fell into our country and it looks like it’s gonna stay for some time. Brrr.

Today will be my last post for some time, because I have a lot to do these last 10 days. In the middle of march I will be back and you will meet me again here.

For my last post I share this beautiful salad, with wintery flavors and a summer feeling, although a salad is not my favorite winter food, this is a great side dish. I ate it with grilled mackerel and baked potatoes. We loved it, I hope you do too!

vinaigrette of orange juice, good olive oil, balsamic vinegar, pepper and salt
a handful of coriander leaves, cut coarsely

Blanch the Brussels sprouts and fennel for 2 minutes in boiling water, then drain and dry.
On a baking tray mix Brussels sprouts and fennel slices with the olive oil and freshly ground pepper and salt. Bake in the middle of the oven for about 20 minutes till the edges of the sprouts look a bit brownish and they are done. Mix a few times when baking.

Laat even afkoelen en doe de groentes in een schaal. Snijd de oranje en witte schil van de sinaasappel en vang het sap op. Snijd de partjes er uit. Snijd de rode ui in dunne ringen en meng samen met de sinaasappelpartjes door de geroosterde groentes.
Maak een vinaigrette en giet deze over de salade. Laat zeker een half uur op smaak komen en garneer dan met de koriander.
