Courgettesoep met venkel en verse kruiden – zucchini soup with fennel and loads of fresh herbs (GF-DF-SF-V)


Spannende tijden! 
Vandaag mijn boek verstuurd om te worden gedrukt. Binnenkort is het zover: het Boeddhamum Glutenvrije Kookboek.

Zeker 3 jaar werk, helaas (nog) geen uitgever gevonden die er brood in ziet. Dus dan maar zelf uitgegeven, wat helaas de prijs zeer heeft doen stijgen, maar niet  getreurd, er komt een downloadbare pdf voor een fijne prijs. Volgende week meer hierover.

Vandaag een soepje, van een iets te groot gegroeide courgette, waar moestuinierders vaker mee te maken hebben. Het is nu de tijd van oogsten en ik kan het bijna niet aangegeten krijgen: courgettes, snijbiet, haricots verts, venkel, bietjes, wortels, broccoli, sla, basilicum, peterselie en koriander.

Je hebt nodig:
1 (te) grote courgette van ± 1 kg, in flinke stukken
2 uien, fijngesnipperd
2 tenen knoflook, fijngehakt
10 steeltjes peterselie, fijngesneden
1 kleine venkelknol, grofgehakt
1 l groentebouillon
1-2 laurierbladeren
1 flinke hand basilicum
1 flinke hand peterselie
1 flinke hand koriander

Verwarm wat olijfolie in een soeppan en voeg de uien toe met wat zout. Laat de uien heel langzaam, ongeveer 30 minuten, karameliseren, terwijl je iedere 5 minuten even roert.

Ondertussen was en hak je de overige ingrediënten.

Voeg knoflook en gehakte peterselie toe en laat nog een paar minuten mee fruiten.
Voeg bouillon, laurierbladeren en de stukken venkel en courgette toe en breng aan de kook. Laat nog eens 30 minuten zachtjes sudderen met het deksel op de pan.

De laatste 5 minuten voeg je de verse kruiden toe.
Pureer met een staafmixer en voeg naar smaak peper en zout toe.

Serveer meteen of met wat verkruimelde feta met za´atar erop.

For now it will only be on purchase in Dutch, but when there is enough interest I will make an English translation.

A lot of work, almost 3 years and unfortunately I did not find a publisher (yet). So it will be a self-publishing edition, but I will also make a pdf to download at a special price. Next week more.

Today I made this soup from a tiny bit overgrown zucchini, which I believe people with a vegetable garden will recognize. Everything is growing so fast and there is so much to harvest I can’t barely manage to eat it all: zucchini, chard, haricots verts, fennel, red beets, carrots, runner beans, broccoli, lettuce, basil, parsley and coriander.

You’ll need:
1 (too) big zucchini, about 1 kg, in big chunks
2 onions, finely diced
2 fat cloves of garlic, finely cut
10 stalks of parsley, finely chopped
1 small fennel bulb, roughly chopped
1 l vegetable stock
1-2 bay leafs
1 big handful of basil
1 big handful of parsley
1 big handful of coriander

In a big soup pot add some olive oil and fry the onions on a very low heat for about 30 minutes with a dash of salt. Slowly let it caramelize, stirring every 5 minutes.
In the meantime you can cut all the other items.

The last 5 minutes add chopped garlic and parsley stalks.
Then add stock, bay leafs, fennel and zucchini chunks. Bring to the boil and then let it simmer, with the lid on, for another 30 minutes. Add the chopped herbs the last 5 minutes.

Then puree with a stick blender and add salt and pepper to your own taste.

Serve as it is or maybe with some crumbled feta cheese and a sprinkle of        za´atar on top.

Besan ka cheela or Indian coriander socca – koriander cheela (GF-SF-DF-V)




I just realized that I never posted this lovely flatbread that I eat regularly. It ‘s a kind of socca, made with gluten free chickpea flour or besan, but then Indian style ;-)

You can eat them as they are, or instead of rice with a flavoursome curry or some pickle or chutney.





It’s a really easy to prepare pancake/flat bread with a wonderful taste and texture; you can add spices or vegetables to your own taste, for example add some garlic, ginger or turmeric.

Your children will love them too, so put them in their lunch-box, instead of a sandwich!


For 4 cheela you’ll need:
175 g of besan or chickpea flour
1 tbsp cumin seeds
½ tbsp coriander seeds
1 full tsp of black pepper corns
pinch of salt
250 ml water
1 red onion, finely chopped
1 handful of fresh coriander leaves, chopped fine
1 green chilly (optional, finely chopped

First toast the spices in a heavy frying pan till they smell well. Let them cool a bit before grinding them roughly.

Put chickpea flour, salt and the roasted spices into a bowl and mix well. Add water little by little and stir into a soft batter. Chop onion and coriander and stir into the batter.

Heat a little oil into a (non-stick) frying pan and add ¼ of the cheela batter into the pan. Bake on medium heat till the top is dry and the edges are golden brown. Turn and bake the other side. Repeat with the rest of the batter.

They are lovely and crunchy straight out of the pan, so maybe make a double batch!?




Voor 4 cheela heb je nodig:
175 g kikkererwtenmeel
1 el komijnzaad
½ el korianderzaad
1 flinke tl zwarte peperkorrels
Snufje zout
250 ml water
1 rode ui, fijngesnipperd
Handvol verse korianderblaadjes, gehakt
1 groene peper (optioneel), fijngehakt

Eerst rooster je de kruiden in een zware koekenpan tot ze heerlijk geuren. Laat even afkoelen voordat je ze grof maalt.

In een kom meng je het kikkererwtenmeel met het zout en de geroosterde kruiden. Voeg beetje bij beetje water toe en roer tot een glad beslag. Hak ui en koriander en roer door het beslag.

Verwarm een grote koekenpan (met antiaanbaklaag) en voeg wat olie toe. Giet ¼ van het beslag in de pan en bak op middelhoog vuur tot de bovenkant droog is en de randen goudbruin. Keer voorzichtig om en bak de andere kant. Bak zo alle cheela.


Warm uit de pan zijn ze heerlijk en knapperig, dus maak gerust een dubbele portie!

Roasted cauliflower salad with millet and spring flowers dressed in a simple salsa verde (GF-DF-SF-V)


As promised here is the I-love-millet-salad I showed yesterday.

Now I have a small plot in the community garden in my neighbourhood, I can pick edible flowers every day. Pick them and eat them or just look at them and enjoy the multitude of colours and forms. Johan, the gardener, knows everything about flora: plants, flowers and vegetables. He is such a dear man, always interested, always helpful, always cheerful. Must be the green job he does for over 25 years ;-)

He loves the garden and his veggies, but he doesn’t like cooking at all, can you imagine? When he gave me some chard-babies he told me he never ate them himself. So I promised him to cook them for him once they are ready. I like to give something back to him.

Ok. Before we go into the kitchen I want to share with you this site. Check it out. I met Renate this weekend on the Zaaimarkt (Sow and Grow market) in Rotterdam, where she sold her hand-made gluten free Goodies with a sharp twist. They were so good, incredible!!



The millet salad recipe:

WE’ll need:

1 cauliflower, rinsed and in small florets
Some good olive oil
Salt and pepper

Pre-heat the oven on 200 °C and prepare a baking tray with a sheet of baking paper.
Mix the ingredients and bake in the oven till golden brown and almost tender, about 20-30 minutes.

In the meantime prepare the millet:
Cook ½ cup of rinsed millet in 1 cup of water with a pinch of salt, softly with the lid on till all water is evaporated. This will take 10-12 minutes. Take of the heat and let it rest with the lid on; this will help the millet steam a little further. Make the millet loose with a fork.
Set aside.

Make the salsa verde:
I had a big bunch of freshly picked cilantro and half the amount of flat parsley; cut it roughly and put it in a small processor. Add a small clove of garlic, cut roughly too, some salt and freshly ground pepper, the juice of half a lemon and about the same amount of good olive oil. Blend this into a smooth or a bit chunky sauce. Taste and add seasoning to your liking. Set aside.

Composing the salad:

In a big salad bowl mix together the millet and cauliflower and mix in salsa verde, as much as you like, from 2 to 6 tablespoons. Carefully add and mix in edible flowers and petals. I used borage flowers, tiny thyme flowers, calendula petals and the lila flower petals of chives. I added some toasted chopped walnuts too, for a bit of crunch.


This salad is very versatile, you could add some olives, spring onions, roasted bell peppers, you name it, check your fridge! Enjoy!


Geroosterde bloemkool salade met gierst en lentebloemen met een simpele salsa verde

Dit recept is simpel te maken, maar bestaat uit 3 verschillende onderdelen. We beginnen met het roosteren van de bloemkool:

Verwarm de oven voor op 200°C en leg een stuk bakpapier op een bakplaat.
Was en verdeel de bloemkool in kleine roosjes en besprenkel met wat olijfolie en peper en zout.
Bak in de oven tot bijna gaar en mooi goudbruin, dit duurt ongeveer 20-30 minuten.

Ondertussen koken we de gierst. 
1/2 cup gierst wassen en met 1 cup water opzetten en met een deksel erop zachtjes gaar koken. Ongeveer 10-12 minuten. Zet het vuur uit en laat gewoon staan, de gierst stoomt nog een beetje door. Voor het gebruik met een vork losroeren.

Voor de salsa verde heb ik een flinke bos koriander geplukt en de helft van deze hoeveelheid peterselie. Was beide blaadjes en stengels, snijd grof en stop ze in een kleine foodprocessor. Voeg een klein teentje, grofgehakte knoflook toe, wat zout en versgemalen peper, het sap van een halve citroen en dezelfde hoeveelheid goede olijfolie. Maal tot een enigszins grove maar mooie saus.

De salade samenstellen:

Meng gierst en bloemkool in een grote kom en voeg 2 tot 6 eetlepels salsa verde toe, zoveel als je lekker vindt.
voeg dan eetbare bloemen en bloemblaadjes toe, ik gebruikte komkommerkruidbloempjes, thijmbloemetjes, blaadjes van bieslookbloem en goudsbloem. Schep voorzichtig door elkaar.
Ook mengde ik nog wat geroosterde en gehakte walnoot door de salade.

Maar je kunt van alles toevoegen aan deze salade: olijven, lente ui en geroosterde paprika's, wat je nog in je koeling hebt!!

Almost green gazpacho – bijna groene gazpacho (GF-SF)





In the line of easy, fast, green and versatile recipes I made this beautiful gazpacho this weekend.
The sun was out for a change, and on my tiny balcony on the south side the wind had no influence so I came to the idea of a cold soup.

With all there was in my fridge and the herbs and very ripe avocado that I was forgotten, I made this  gazpacho or cold soup or maybe you could call it even a veggie smoothie. Anyway you name it, it’s delicious, lusciously smooth because of the almonds  and all the raw goodness of all these veggies and herbs! it's easy to make vegan, just leave out the yoghurt!

It’s a long list of ingredients, but all you have to do is wash the veggies and chop them roughly and throw them in a blender. Add anything you like more or less to your own tastes. This soup is all about tasting. You don’t have a green bell pepper, just use a red or yellow one, like I did. You don’t have a cucumber, maybe you have a zucchini. The same with the herbs, use what you have, sniff and taste and make your own heavenly blend.

Depending on the thickness, the amounts of liquids, this recipe makes about 1 liter of soup.

Almost green gazpacho

1 big celery stick
½ cucumber
2 handfuls of turnip tops (you could use spinach )
1 red bell pepper
1 avocado (or when not in the house just leave it out)
2 spring onions
1 clove of garlic
1 big handful of basil
1 big handful of parsley
1 big handful of coriander/cilantro
A few leaves of mint
75 g almond meal or ground whole brown almonds
2 tbsp fragrant vinegar like dandelion or cider
60 ml good olive oil
125 ml of full fat organic yoghurt (vegans can leave it out)
250 ml or a little more cold water
1 tsp sea salt
Ground pepper
Lemon juice to your taste

Clean and chop the veggies and fresh herbs roughly.
Add everything to a powerful blender and blend into a smooth soup.
Taste and add seasoning to your liking.
Eat it directly or cool the soup for several hours in the fridge.

Bijna groene gazpacho

1 flinke bleekselderijstengel
½ komkommer
2 handenvol raapstelen (of jonge spinazie)
1 rode paprika (of groen of geel)
1 avocado (als je die hebt, anders niet)
2 lente uitjes
1 teen knoflook
1 grote handvol basilicum
1 grote handvol peterselie
1 grote handvol koriander
Paar blaadjes munt
75 g amandelmeel, of  gemalen niet-geblancheerde amandelen
2 el geurige azijn, zoals paardenbloem of cider
60 ml lekkere olijfolie
125 ml volle biologische yoghurt (of laat weg als je vegan bent)
250 ml of iets meer water
1 tl zout
Gemalen zwarte peper
Citroensap naar smaak

Maak de groentes schoon en hak ze grof, zo ook de kruiden.
Doe alles in een grote blender en mix tot een mooie romige soep.
Proef en voeg naar smaak toe wat de soep nog nodig heeft.
Eet direct of laat een aantal uren in de koelkast koelen.
