wintersalade met kool, wortel, dadels en walnoten - wintersalad with cabbage, carrot, dates and walnuts (GF-SF)


Ik maakte net een heerlijke winterse salade van restjes witte en rode kool die nog in mijn koelkast lagen. De toevoeging van dadels, walnoten, verse kruiden en gember geven deze koolsla net dat extra beetje smaak en crunch, dat het me de moeite waard leek om hier met jullie te delen!

Wat:
1 winterwortel
1 stukje witte kool
1 stukje rode kool
1 rood uitje
handje verse kruiden als munt, peterselie en koriander
4 dadels
1 el geraspte verse gember
1 flinke schep yoghurt
1 flinke schep mayonaise
1 el rode wijnazijn
1 el olijfolie
peper en zout
1 handje walnoten, gedopt

Hoe: je snijdt en schaaft en voegt alle ingrediënten toe boven op elkaar. Dus maar 1 schaal nodig!

Dop de walnoten en toast ze in een droge koekenpan. Zet apart.
Pak een grote schaal en een fijne rasp of mandoline.

Rasp wortel en beide koolsoorten boven de schaal.
Was en snijd de kruiden fijn, snijd de rode ui in heel dunne ringen en voeg toe.
Haal de pit uit de dadels en snijd ze in de lengte in dunne reepjes. Voeg toe.
Rasp de gember er bovenop.
Hussel alles goed door elkaar.

Schep en giet dan yoghurt, mayonaise, olie en azijn er boven op, peper en zout en meng nogmaals alles goed door elkaar.
Bestrooi met de walnoten.
Eet smakelijk!


I just made this wintery salad of some pieces of left-over white and red cabbage lying in the back of my fridge.
The addition of fresh herbs, dates, walnuts and fresh ginger give this coleslaw the extra taste and crunch, so I thought it worth sharing here with you all!

What:
1 winter carrot
1 piece of white cabbage
1 piece of red cabbage
1 small red onion
4 dates
1 tbsp grated fresh ginger
1 big handful fresh herbs, like mint, parsley and/or coriander
1 big scoop of yoghurt
1 big scoop of mayonnaise
1 tbsp red wine vinegar
1 tbsp olive oil
pepper and salt
1 handful shelled walnuts

How:You just slice and add every ingredient on top of the other. So only 1 bowl required!

Shell the walnuts and toast them in a dry skillet. Set aside.
Take a big bowl and a grater and mandolin.

Start grating the carrots and very finely slice the 2 cabbages. You decide how much cabbage you use.
Wash and finely cut the fresh herbs fine and the onion in fine rings. Add to the bowl.
Take the pit out of the dates and lengthwise slice them into thin strips, add.
Grate some fresh ginger on top.
With your hands mix everything together.

Then scoop and drizzle yoghurt, mayo, vinegar and olive oil on top, season with pepper and salt and mix together with 2 big spoons.
Walnuts on top.

Lentesoep met brandnetel, daslook en zoete aardappel – Spring soup with nettles, wild garlic and sweet potato (GF-DF-SF-V)



Gister plukte ik wat handenvol brandnetels en daslook op mijn tuin; het is lente, maar ondanks de zon is het nog verdomde koud zo met de wind uit het noorden en noord-westen.
Dat betekent voor mij dat ik mezelf goed warm houd om niet verkouden te worden, zoveel mogelijk probeer buiten te zijn en weer in beweging probeer te komen na de lange winter. Ik loop met vele lagen kleding aan, zodat ik kan uit- of aantrekken naar gelang de temperatuur, heb een muts op en een sjaal om, die alleen af gaan als ik uit de wind op een zonnig plekje ben en mijn handschoenen zitten nog standaard in mijn jaszakken, voor op de fiets.

Goed voor mezelf zorgen is het credo in deze overgangstijd van winter naar lente.

Vandaar weer een fijn soepje met jong, springlevend lentegroen en verwarmende gemberwortel en zoete aardappel om bij de aarde te blijven.

Als je niet aan daslook (allium ursinum) kunt komen, brandnetels staan echt overal, vervang dan met heel jonge prei of lente ui en eventueel wat extra knoflook.

Nog 1 ding: als je daslook plukt, zorg dan dat je voorzichtig wat mooie jonge blaadjes plukt en het bolletje heel in de grond laat. Zo zorg je ervoor dat je er volgend jaar weer van kunt genieten :-)


De soep:
1 ui, fijngehakt
2 dikke knoflooktenen, fijngesneden
1 flinke duim gember, geschild en fijngesneden
10 steeltjes peterselie, gewassen en fijngesneden
2 el witte basmati rijst
1 scheut witte wijn(optioneel)
1 ¼ l groentebouillon (blokje of vers)
2 kleine zoete aardappels, geschild en in grote brokken
4 grote handen vol brandneteltopjes
25 blaadjes daslook
peterselieblaadjes
peper en zout

Verwarm 4 el olijfolie in een pan met dikke bodem en fruit/zweet hierin heel zacht, ze mogen niet bruinen, ui, knoflook, gember en peterseliesteeltjes. Ongeveer 12 minuten, roer af en toe.

De laatste 5 minuten voeg je de rijst toe en laat zacht meebakken. Blus af met wat witte wijn of water, voeg de bouillon toe en breng aan de kook met de stukken zoete aardappel. Zodra de soep kookt, deksel erop en laat op zacht vuur 10 minuten koken, totdat de zoete aardappel gaar is.

Ondertussen heb je de brandnetels heel goed gewassen en alle harde deeltjes verwijderd, de daslook grofgehakt en de peterselie fijn.


Voeg alle groen toe aan de soep en laat nog 5 minuten mee verwarmen.
Proef en breng op smaak met lekker veel zwarte peper en misschien nog wat zout.

Serveer warm en als je het lekker vind een flinke kneep citroensap!



The soup:
1 onion, chopped fine
2 big cloves of garlic, chopped fine
1 thumb of fresh ginger, peeled and chopped fine
10 stalks of parsley, finely chopped
2 tbsp white basmati rice
1 gush of white wine (optional)
1 ¼ l/5 cups vegetable stock
2 small sweet potatoes, peeled and in rough chunks
4 cups of freshly picked nettle tops
25 freshly picked wild garlic leaves or ramps
parsley leaves
pepper and salt

Heat 4 tablespoons of olive oil in a casserole with a heavy bottom and sweat onion, garlic, ginger and parsley stalks very very soflty, Do Not Brown, for 12 minutes, stir occasionally.

The last 5 minutes you add the basmati rice and stir and let it fry together. Deglaze with the white wine or some water, add stock and sweet potato chunks and bring to the boil. When boiling, put the lid on and gas low and let it cook softly for 10 minutes  until the sweet potato is done.


In the meantime wash your nettles thoroughly and remove any hard bits, wash and chop the wild garlic roughly too and the parsley fine.

Add all greens and let it simmer for another 5 minutes.
Taste and add lots of black pepper and maybe some salt.


Serve warm and when you like it, with a squeeze of lemon juice!

WINTERSMOOTHIE (GF-DF-SF-V)



Even een snel tussendoortje!
Dankzij de zachte, tot nu toe dan, winter hoef ik niet zo mijn best te doen om mijn spijsvertering gaande te houden. Ik eet vooral warme spijzen en dranken; dat scheelt een hoop verloren energie. Eigenlijk drink ik geen smoothies in de winter, ik eet liever een stuk fruit dat ik kauw en veel warme soepen en geroosterde groentes. Ik heb geen probleem om aan 200 gram groente per dag te komen; ik eet denk ik gemiddeld 400 gram per dag, misschien wel meer.

Van de overgebleven boerenkool en de rijpe peer maakte ik een heerlijke winter smoothie, met verwarmende gember en kaneel.

voor 1 persoon:

1 rijpe peer
1 kleine appel
1 mandarijn
boerenkool
water
1 schijfje gemberwortel
1 snuf kaneel

Schil de peer en de appel en snijd in stukken en doe ze in de blender.
Vul de blender verder met gewassen en fijngesneden boerenkool, het sap van de mandarijn, fijngesneden gember en een snuf kaneel. Pulse tot een grove brij en voeg dan zoveel water (ik gebruik lauwwarm water uit de ketel) toe om een mooie dikke smoothie te verkrijgen. Laat even op vol vermogen draaien. Klaar!



for a warming winter smoothie you'll need:

1 ripe pear
1 small apple
1 clementine
kale
water
1 thin slice of gingerroot
1 pinch of cinnamon

Peel and clean apple and pear and cut into pieces. Put in the blender.
fill the blender up with washed and finely chopped kale, the juice of the clementine, the finely chopped gingerroot and a pinch of cinnamon. Give it a few pulses till roughly blended. Then add water (I use luke warm water from the kettle) little by little till  you have the smoothie consistency you want. Let it blend on high speed for about 1 minute more: green and luscious. Done!

Aubergine lentil coconut soup – aubergine linzen kokosmelk soup (GF-SF-DF-V)





After a fabulous after-summer with temperatures up to 24 degrees Celsius this weekend, we now storm into the autumn. What a great event. Although I am not the biggest fan of cold weather, I love this sweeping branches and dancing leaves and the sounds of thunder and rattling rain.

Indeed, sitting inside, with a big bowl of soothing soup, like the one I made with the very last aubergines I brought with me from Spain.


I visited my friends in Catalonia and helped them with the grape-picking, harvesting walnuts, mushrooms, almonds, making goat’s cheese and walking with the goat’s too!



I had such a great time and I really am grateful to have been part of their lives for 8 days, they are such a lovely, warm and caring family! They work so hard every day! I miss them already.
We ate so well too. Everything right from the vegetable garden which was still full of tomatoes, peppers, aubergines, herbs, cabbage, cauliflower, spinach, chard, cress, rucola, etc. Like this picker’s lunch:


So this soup is for you guys!

To make this lovely rich soup you’ll need:
4 tbsp olive oil
1 onion, chopped
2 ½ cm fresh ginger or 1 tsp ginger powder, peeled and finely chopped
1 nora (dried Spanish pepper, sweet), deseeded
1 full tbsp curry powder
1 stalk lemongrass, a bit smashed, releasing its aroma
900 g aubergine, in big chunks
2 big tomatoes, in big chunks
2 tsp honey or other sweetener to make it vegan
1 tbsp tamari
1 cup red lentils
1 cup coconut milk
5 cups vegetable broth
Salt/pepper
Lime juice
Fresh coriander

Heat the olive oil in a big pan and add onion, ginger and nora, fry for 5 minutes. Add currypowder and lemongrass, bake together for 1 minute. Then add tomatoes and fry till they turn mushy.
Then add aubergines, lentils, honey, tamari, coconut milk and broth and bring to the boil. When it cooks, slow down the gas and let it simmer for 25 minutes till the aubergines are soft. 

Roughly blend the soup and bring to taste with a generous amount of lime juice, pepper and salt if needed and sprinkle with fresh coriander.

Enjoy!


Voor deze rijke soep heb je nodig:

4 el olijfolie
1 ui, fijngehakt
2 ½ cm verse gemberwortel, geschild en fijngesneden
1 nora, (gedroogde Spaanse peper, zoet)van zaad ontdaan
1 volle el currypoeder
1 stengel lemongrass, gekneusd, zodat het aroma vrijkomt
900 g aubergine, in grote brokken
2 tomaten, grofgehakt
2 tl honing of rijststroop voor de vegans
1 el tamari
250ml/ 1 cup rode linzen
250ml/ 1 cup kokosmelk
1250ml/ 5 cups groentebouillon
Zout/peper, naar smaak
Limoensap, naar smaak
Verse koriander

Verwarm de olijfolie in een grote pan en voeg ui, gember en nora toe, fruit 5 minuten. Voeg dan currypoeder en lemongrass toe en laat 1 minuut meebakken. Voeg dan tomaat toe en bak mee tot ze zacht zijn.
Dan is het tijd voor de aubergines, linzen, honing, tamari, kokosmelk en bouillon, voeg alles toe en breng aan de kook. Als het kookt, zet het gas laag en laat zachtjes 25 minuten  koken tot de aubergines zacht zijn. Pureer de soep grof en breng op smaak met ruim limoensap, peper en zout zo nodig en bestrooi met verse koriander.

Fennel carrot lentil soup with a touch of ginger and blood orange - venkel wortel linzensoep met een vleugje gember en bloedsinaasappel (GF-DF-SF-V)


A French inspired soup with a hint of ginger to give some inner heat and the juice of a blood orange for a delicate taste.

Yesterday I was walking in the sun, via the woods where spring is already starting bit by bit.





I walked to the seaside and had a great time, enjoying, breathing, making pictures with my Iphone and having lunch in a sand dune.





But today it’s freezing cold again, grey and rainy. And for me that means soup time.

You’ll need:

700g or 2 fennel bulbs
500g carrots
1 onion
1 clove of garlic
1 tbsp fresh ginger
1 l hot water or vegetable broth
1 blood orange
½ cup red lentils
Olive oil
Pepper and salt to taste

Begin by frying the onion softly in a big soup casserole in some good olive oil for about 10 minutes. Add a pinch of salt and stir once in a while.

Clean the vegetables and cut carrots and fennel in small cubes.
Chop the garlic clove fine and also finely cut the ginger in slices and then like the garlic: very, very fine.

First add carrot cubes and let them cook together with the onion for 5 more minutes. Then add fennel, garlic and ginger and stir in well. Fry for 5 more minutes.

Add hot stock or water and the well rinsed lentils and bring to the boil. Lid on, gas low. After 20 minutes, when the vegetables and lentils are tender, taste and add more salt if needed. 

Turn off the gas and add the blood orange juice. 
Blend the soup with a stick blender or otherwise.

Taste again and make adjustments if needed, i don't think so ;-)

I just grind some fresh black pepper on top after I put the soup in a bowl. Pure and delicious. Enjoy!




Voor deze pure en heerlijke soep heb je nodig:

700g of 2 venkelknollen
500g winterwortels
1 ui, fijngehakt
1 teen knoflook
1 eetlepel gehakte gember
1 l water
1 bloedsinaasappel
½ cup rode linzen
Olijfolie
Peper en zout naar smaak

Begin met het fruiten van de ui in wat goede olijfolie op een zacht vuur in een flinke soeppan, ongeveer 10 minuten. Voeg wat zout toe en roer af en toe.

Ondertussen ga je de groentes wassen en schoonmaken. Snijd dan de wortels en venkelknollen in blokjes.De knoflook en gember zeer fijn.

Voeg eerst de wortelblokjes toe en bak rustig 5 minuten samen met de ui.

Dan voeg je venkel, knoflook en gember toe. Roer goed door elkaar en laat nog 5 minuten zachtjes meebakken.

Schenk water of groentebouillon in de pan en voeg de goed
gewassen linzen toe. Breng aan de kook en laat, met een deksel op de pan, 20 minuten zachtjes koken tot groentes en linzen gaar zijn. Proef de soep en voeg naar smaak zout toe.

Gas uit en schenk het sap van de bloedsinaasappel erbij.
Mix de soep met een staafblender of ander apparaat. 
Proef nogmaals en voeg toe wat nodig is, waarschijnlijk niets ;-)

Schep in een kom en maal er wat verse zwarte peper op.


Geniet van een licht verwarmende en delicate smaak!

Carrot oatmeal breakfast bowl (GF-SF-V-DF)



For me breakfast is really indispensable, I cannot get going without it, like yoga;-)
Especially in fall and winter I need warming grains to poke up the inner flame and nurture my intestines.
So this winter I made a recipe with oats and carrots, a great tasting morning meal which can also be a nice way to add some extra veggies to your diet or to that of a picky child!

Naturel rolled oats and oatmeal are a traditional breakfast cereal with great nutritional benefits. You can read more here.
Besides the health benefits oats are also very versatile: you can make porridge, bake cookies and bars, mix them into your veggie burgers, and much more. What do you do with your oats?



Carrot oatmeal breakfast bowl (1 person)

125 ml nut milk
50 g rolled oats
½ cup roughly grated carrot
1 tbsp sultanas
zest and juice of 1 mandarin or ½ orange
½ tsp cinnamon
¼ tsp ginger powder
pinch of nutmeg
1 – 2 tbsp chopped raw walnuts or almonds, maybe dry-roast them first for deeper flavour

Put the nut milk, I like to use coconut milk, in a pot and bring to a soft boil.

Stir in oats and grated carrot and reduce to a simmer.
Then add the sultanas, zest and juice and the spices. Stir everything well and let it simmer for about 8 minutes till everything is smooth and creamy and the carrots cooked. Stir occasionally and when it gets a little dry, add some water.

In the simmer time you can crack and chop your walnuts or almonds.

Serve in your favourite bowl, sprinkle with the nuts and maybe some extra coconut milk.
For me this breakfast is sweet enough, but you can always add a little maple syrup!

Adzuki bean chili with basmati rice (GF-SF-DF-V)


I have been rather busy this week by developing and writing recipes for my yoga community at Melissawest.com
We’ll have a Mindful Parenting Retreat next weekend, filled with yoga, meditation, reflection and a lot of other fun stuff to do with your kids, like crafting, massaging and journaling.

And of course food! So I rewrote some recipes from my blog and wrote some new ones too, like bite sized chocolate brownies as a request from Trinity, Melissa’s daughter. I will place the recipe on my blog after the retreat, since it is a surprise till then;-)

For today’s post I have this rather yummie adzuki bean chili for you. A warming winter dish, filled with veggies, herbs and spices. I hope you like it!


Adzuki bean chili with basmati rice (2-3 pers)
1 onion, chopped
2 cloves of garlic, in thin slices
2 carrots, chopped in small cubes
2 celery sticks, in same small cubes
1 tbsp fresh ginger, finely chopped
1 15-ounce can of adzuki beans or ½ cup of dried beans soaked overnight and cooked, making 1 ½ cups after cooking
1 15-ounce can of peeled tomatoes
½ -1 can of water
sea salt
1 tbsp cacao powder
1 splash of red wine (optional)

Spicy herb mixture:
1 tsp coriander seeds
1 tsp cumin seeds
¼ -1 tsp of chilli powder or 1 dried chilli
2 tsp mixed green herbs (thyme, oregano, rosemary)
Grind these herbs and mix them with:
½ tsp smoked paprika
½ tsp sweet paprika
½ tsp piment(Dutch name) or allspice

Make the spicy herb mixture first and set aside.

In a big Dutch oven or heavy bottomed stewing pan heat some olive oil and fry onions slowly about 10 minutes, stir once or twice.

Add garlic slices and fry together 3 more minutes.

Add carrot and celery cubes and fry for 10 more minutes.

Stir in fresh ginger, then the herb mix for 1 more minute.

Then add adzuki beans, peeled tomatoes and water (use the tomato can for extra flavour!) salt, cacao powder and the red wine. Bring to a soft simmer and, with the lid on, simmer for about 30 minutes more.

In the meantime cook your basmati rice and maybe make some guacamole. The 3 go very well together! Also a scoop of yoghurt or creme fraiche for the non-vegans is so good.
Serve hot and enjoy!!

Roasted sunchokes and celeriac soup with kale and ginger - Geroosterde aardpeer-selderijknol soep met boerenkool en gember (GF-SF-V-DF)


A really grounding and warming winter vegetable soup!

Winter is finally coming our way, which I regret deeply, but what can you do?
 The farmers need a good frost to loosen the soil, which now is very wet; nature is already awakening slowly, birds start singing their mating songs, underground bulbs our sprouting.  
It’s not easy to hibernate when it’s not a real winter, so, o.k. let’s say  1 week, I can handle that, but then I want sunshine too;-)

To prevent a cold make soup and eat it whenever you feel cold;  instead of a glass of juice eat this juicy warm smooth(ie) soup!!


Roasted sunchokes and celeriac soup with kale and ginger (6 bowls)

400g peeled and cubed celeriac
300 g peeled and cubed sunchokes/ Jerusalem artichokes
1 onion, chopped roughly
3 cloves of garlic, whole
Pepper and salt
2 tbsp olive oil
1 tbsp dried thyme leaves
2 l vegetable stock
300g washed and cleaned kale (rip off the hard middle rib)
1 tbsp cumin seed
Juice of ½ lime
1 tbsp freshly fine cut/grated ginger

Pre heat the oven on 200 °C.
Put a piece of baking paper on a baking tray.

1. Prepare your veggies and put the cubes (2cm) of the sun chokes and celeriac on the baking tray. Add onion, garlic, thyme, pepper and salt  and the olive oil. Mix with your hands and put the tray in the oven for about 30 minutes till the veggies are tender. Halfway, stir the vegetables.

2. Heat the vegetable stock in a big soup pot and keep it warm till the vegetables are done.

3. Wash and clean the kale and put in a colander.

4. Roast the cumin seeds in a heavy bottom frying pan and grind them after cooling down.

5. Add the roasted veggies to the stock together with the kale and bring to the boil, let it simmer, with the lid on for 15 minutes more.

6. Grate or cut the ginger very fine.

7. Add ginger, cumin and lime juice to the soup and blend the soup to a smooth consistency. Mine has still a little bite from the kale. Taste and add lime to your taste, maybe a little pepper.

8. You’re done, enjoy this lovely grounding soup in this chilly time!!

Another green recipe! Cucumber and celery relish – komkommer- en groenselderij relish (GF-DF-SF-V)


So funny, this month I am only sharing green recipes, must be something in the air ;-)

This recipe came with my organic vegetable box from the Landzicht farm. It’s an easy and quick made relish, simple ingredients with maximum taste. I eat the relish on a sandwich, together with some fatty fish like mackerel or on anything which needs a tangy zing!

I keep my blog posts short, because I cannot work for more than 20 minutes at my laptop now, my aching bones won’t allow it yet. So I take good care of myself and listen to my body.

Cucumber  and celery relish (1 big pot)

1 cucumber, washed and cut in brunoise
6 stalks of celery, washed, cleaned and cut in brunoise
2 tsp sea salt
½ cup white wine vinegar or rice vinegar
4 tbsp honey or agave syrup
1 tbsp fresh ginger, cut very fine
1 tbsp black mustard seed
1 tsp black peppercorns, crushed roughly

Bring vinegar, honey or agave, ginger and mustardseed to the boil. Immediately add cucumber, celery, salt and crushed peppercorns and stir together very well. Let it cook slowly for 5 minutes, than turn of the gas. Fill your (well cleaned) pot(s) with the mixture, close with a lid and let them cool upside down.
Store in the fridge, it will hold for at least 2 weeks for sure!


Komkommer-groenselderij relish (1 grote pot)

1 komkommer, in fijne brunoise
6 stengels groenselderij of bleekselder
2 tl zeezout
125ml witte wijnazijn of rijstazijn
4 el honing of agave siroop
1 el verse gember, zeer fijngesneden
1 el zwart mosterdzaad
1 tl zwarte peperkorrels, geplet

Breng azijn, honing, gember of agave en mosterdzaad aan de kook. Voeg meteen de fijngesneden komkommer en selder toe, het zout en de geplette peperkorrels. Roer goed door elkaar en laat 5 minuutjes zachtjes koken. Haal van het vuur en vul een of meerdere (goed schoongemaakte) potten met het mengsel. Zet op zijn kop en laat afkoelen. Bewaar in de koelkast, blijft zeker 2 weken goed!!

Healing carrot soup – helende wortelsoep (GF-DF-SF-V)


I just made this healing carrot soup for my sick son. After 2 days of not eating, because of vomiting and nausea, he is a bit better today and starts to eat again. Bit by bit, a cracker, some yoghurt with mashed banana, and of course soup.

Soup made with the best healing ingredient: Love.

Yesterday I bought these lovely looking and smelling carrots in 4 different colors. They look amazing, but they taste amazing too and made this beautiful, healing soup with just a few ingredients. I put in some fresh gingerroot to warm the belly and eases digestion.


His belly agreed totally after eating a whole bowl!

It’s a bit tricky to start eating again, the stomach is always protesting a little. For that reason I eat white basmati rice tonight to ease the irritation, with a little of the mildly spiced tomato dal from Lakshmi. She has such a beautiful blog, so be sure to have a look!

Healing carrot soup

500g carrots, cleaned and chopped in slices
1 medium onion, chopped
1 tbsp finely chopped, peeled fresh ginger
1 handful coriander stalks, chopped finely
1 l hot vegetable broth
1 bay leaf
1 tbsp orange juice

Heat some oil in a soup pan and softly bake the onion and ginger for 5 minutes. Stir from time to time.
Add coriander and carrots, stir well and bake together for another 2 minutes, than add the vegetable broth and bay leaf and bring to the boil. Let the carrots boil till they are tender.
Remove the bay leaf and make a smooth soup with a stick blender.
Before serving I squeezed in some orange juice, to give the soup a little lift.
Taste and add pepper and salt, if needed. You can garnish the soup with some coriander leaves. Enjoy!


Helende wortelsoep

500g wortels, schoongemaakt en in plakjes
1 middel ui, fijngehakt
1 el verse gember, geschild en fijngesneden
1 handvol koriandersteeltjes, fijngehakt
1 l hete groentebouillon
1 laurierblad
1 el sinaasappelsap

Verwarm wat olie in een soeppan en bak hierin de ui en gember, zachtjes, ongeveer 5 minuten. Roer af en toe.
Voeg koriander en wortelplakjes toe, roer goed door en bak nog enkele minuten zachtjes mee.
Voeg dan bouillon en laurierblad toe en breng het geheel aan de kook. Laat zo lang koken tot de wortels zacht zijn. Haal het laurierblad eruit en pureer de soep met een staafmixer.
Voor het serveren heb ik nog wat sinaasappelsap boven de soep uitgeknepen om een kleine extra smaaklift te geven aan de soep. Proef en breng eventueel op smaak met peper en zout.
Serveer de soep meteen en je kunt er nog wat korianderblaadjes over strooien.
 Geniet van deze eerlijke soep!
