gepofte amarant-noten reep - nut amaranth chocolate bars (GF-DF-SF-V)

Ik maakte deze makkelijke en heerlijke gepofte amarant-noten reep al een tijdje geleden en was ze even vergeten te plaatsen. Na een paar versies vind ik deze op dit moment de beste. Door de pindakaas te vervangen voor een andere notenpasta en met de ingrediënten te variëren, kun je steeds een andere smaak creëren.  Het poffen van de amarant is superleuk om met je kids te doen; kijk dit fimpje even voordat je begint!

Ik gebruik een Pyrex rechthoekige schaal van 20x16cm, die ik bekleed met ruim huishoudfolie, zodat je genoeg hebt om eroverheen te vouwen tijdens het stevig worden en je de “koek” er makkelijk uit kunt halen voordat je gaat snijden.


Je hebt nodig:
7 dikke dadels, geprakt met een vork
2 el gesmolten kokosolie
1 kop/250 ml pindakaas of andere notenpasta
1 volle tl kaneel
handje amandelen, grof gehakt
1 cup/250 ml gepofte amarant
¼ cup/60 ml goji bessen
¼ cup gepeld hennep zaad

100 g pure chocolade, gesmolten au-bain-marie
zoutvlokken (Maldon)

Prepareer eerst de vorm met huishoudfolie.
Pof de amarant.

Prak de dadels en meng goed met de andere ingrediënten in een kom. Schep in de glazen vorm en druk aan met een lepel of je hand.
Smelt de chocolade en giet over de massa, gebruik een spatel om gelijkmatig te verdelen. Besprenkel met wat zoutvlokken.
Laat een paar uur in de koelkast opstijven. Haal eruit en snijd in gewenste stukken.

Ze blijven lang goed, zover dat mogelijk is!

I use a Pyrex rectangle dish of 20x16cm covered with enough cling film in order to wrap over when setting and to get it out easily after setting.

 You’ll need:

7 big juicy dates, mashed with a fork
2 tbsp coconut oil, melted
1 cup peanut butter or nut butter of your choice
1 full tsp of cinnamon
small handful of almonds, cut roughly
1 cup popped amaranth
¼ cup goji berries or other dried berries
¼ cup hemp seeds (optional)

100 g pure chocolate, melted slowly au-bain-marie, to pour over the top
salt flakes

Prepare your dish first.
Pop your amaranth.

Mash the dates and mix with all the all the other ingredients in a bowl.
Scoop into the prepared dish and press evenly with a spoon or hand.
Melt the chocolate and pour over the mixture and spread out with a spatula. Sprinkle some salt flakes over it and let it set for a couple of hours in the fridge. Take it out and cut into squares.

They keep very well in a glass dish in the fridge, for weeks, when possible ;-)

Lemon date energy bonbons (GF-DF-V-SF)


Always in search of an easy-to-make and easy-to-take snack, I created these yummy lemon date energy bonbons. Packed with dates and almonds for nutrition, flavor and natural sweetness, these bonbons stay good for weeks. Wrap them in a piece of baking paper or in a small bento box  and you have a healthy energizer with you at all times. A good start of the New Year, dear readers!! Wishing Love, Peace and Health!!

Even after 6 years on a gluten-free diet, I come into circumstances that I forget to take with me something to eat and, especially in colder times like right now, I cannot fill my empty stomach with some cold salad or an apple, as this is the only thing I can eat in Holland when I am on the road. I do need energy from time to time!
So take your food processor and pulse these babies in a few minutes:



1 cup pitted dates
1 cup raw almonds
½ cup raw cashew nuts
5 unsulphured apricots
Zest of 1 organic lemon
1-3 tbsp of lemon juice

Pulse everthing together till it forms into a ball. Add lemon juice to your own taste, start with 1 tablespoon and add more if you like it.
Take the ball out of the bowl and roll into truffle size ball or form into a rectangle log or press into a glass Pyrex mould.
Anyway, let the mixture in the fridge to rest for at least 1 hour and then cut into bars or squares or whatever form you prefer.
Also very good with a cup of tea.

And……you can add any other nut or seed or dried fruit. Be creative!!
