Gluten free pissaladière (GF-DF-V)




I have this really yummy vegetarian Provencal cookbook by Virginie Besançon for years already and cooking or even reading from the book can bring me back to the Provence for a while.


I love the smells of the Provence, the herbs, the rocks, the trees, the buzz of the cicades when you’re having a siesta in the hot afternoon after a pleasant, vibrantly coloured, fresh vegetable salad for lunch with your loved one. Maybe served with a piece of this freshly baked pissaladière.

A pissaladière is a flat bread with a base of olive oil dough and a layer of soft, almost pureed onion confit. Originally the bread is topped with “pissalat” too, literally peis salat or salted fish, an anchovies based condiment.

This is a recipe for a quiet day, it takes some time to let the bread rise for an hour at least and the onion confit will take about the same time. The bread is at its best freshly from the oven, but you can eat it the next day too, if you have left any piece. This recipe makes 8 pieces of bread, so it's good for 4.


First we prepare the dough; we’ll need:

110 g buckwheat flour
100 g brown rice flour
75 g almond flour
60 g tapioca starch
½ tsp sea salt
1 pinch of nutmeg
1 sachet of organic dry yeast, 9 grams
250 ml warm water
2 tbsp of extra virgin olive oil
1 tsp apple cider vinegar

Mix the flours, the sea salt and the pinch of nutmeg together and stir in the sachet of yeast. Make a mixture of warm water, olive oil and vinegar and pour it into the flour mix. Stir vigorously with a spoon till the dough comes together.

Prepare a baking tray with a piece of baking paper and sprinkle a little olive oil on it, spread with your hand or a brush. Scoop the dough in the middle and with wet (!) hands flatten the dough in a rectangular form, about 1 cm thick.
Cover with some oiled cling film, so the dough won’t stick and with a clean towel on top let the dough rest and rise for at least 1 hour on a warm spot till it has risen well.

In the meantime we are going to prepare the onion confit:

500-600 g onions
2 tbsp of olive oil
1 heaped tsp of honey or other liquid sweetener
1 heaped tsp of cane sugar
Salt and pepper
1 pinch of saffron threads

Soak the saffron threads in 100ml of boiling water, set aside.
Peel and slice the onions in rings.

Heat the olive oil in a heavy bottom frying pan and add the onions. Fry on medium  to low heat slowly for about 10 minutes while you stir frequently.
Then add honey, sugar, salt and pepper and bake on low heat for another 30 minutes, till they are very soft and lightly golden. Add the saffron with the soaking water after 20 minutes and let the liquid evaporate slowly. The onions must stay moist, so if necessary add a little water.

Taste and add salt and pepper when needed. Put out the gas and set aside.

When your dough and onions are ready pre heat the oven on 225°C. Prick with a fork a lot of holes in the dough and divide the onion mixture on top. Garnish the dough with some juicy black olives and bake the bread in the middle of the oven for about 20 minutes till the dough is done and the onions are golden brown. Enjoy a taste of the Mediterranean!


Franse pissaladière of geconfijte uien plat brood

Maak eerst het deeg; je hebt nodig:

110 g boekweitmeel
100 g bruine rijstmeel
75 g amandelmeel
60 g tapioca meel
½ tl zeezout
Snufje nootmuskaat
1 zakje biologische droge gist, 9 gram
250 ml warm water
2 el extra virgin olijfolie
1 tl appelazijn

Meng de meelsoorten, zeezout, snufje nootmuskaat met het zakje gist goed door elkaar. Meng in een kommetje warm water met olijfolie en azijn en giet bij het meelmengsel. Roer meteen alles stevig door elkaar met een pollepel tot het deeg samenkomt.
Leg een stuk bakpapier op een bakplaat en giet een eetlepel olijfolie op het bakpapier die je met je hand uitwrijft. Schep het deeg in het midden en met natgemaakte hand druk je het deeg in een rechthoek van ongeveer 1 cm dikte; dat is bij mij bijna de hele bakplaat.
Bestrijk een stuk huishoudfolie ook met wat olie en leg op het deeg, dit ter voorkoming dat het gerezen deeg aan het folie plakt. Leg een schone theedoek over het deeg en laat het op een warme plek, misschien in de zon, minstens 1 uur rijzen.

Ondertussen maken we de uienconfit, je hebt nodig:

500-600 g uien
2 el olijfolie
1 flinke tl honing of een andere vloeibare zoetmaker
1 flinke tl rietsuiker
Zout en peper
1 plukje saffraandraadjes

Week de saffraandraadjes in 100 ml kokend water en zet opzij.
Pel en snijd de uien in ringen.

Verwarm 2 eetlepels olijfolie en fruit de ui ringen op halfhoog vuur een minuut of 10 terwijl je steeds roert.
Voeg dan honing en suiker toe en breng op smaak met zout en peper. Bak de uien op laag vuur nog 30 minuten terwijl je af en toe roert. Voeg na 20 minuten de saffraan met het weekwater toe en kook het mengsel in. Haal de uien van het vuur als ze mooi lichtbruin zijn, heel zacht en nog vochtig. Voeg als het te hard gaat steeds een scheutje water toe. Proef en voeg naar smaak eventueel nog wat zout en peper toe.


Als je deeg gerezen is en de uien van het vuur af, verwarm je de oven voor op 225°C. Prik met een vork gaatjes in het deeg en verdeel het uienmengsel erover. Garneer met zwarte olijven en bak de pissaladière in het midden van de hete oven, ongeveer 20 minuten, tot het deeg gaar is en de uien mooi goudbruin. Geniet van een vleugje Mediterranee.

Focaccia with black olives, rosemary and garlic – Focaccia met zwarte olijven, rozemarijn en knoflook (GF-SF-V-DF)





Just as I decide I don’t need any other bread recipe, I am in the mood for some nice Italian flat bread, because I want to sweep up the nice juices from a aubergine and bell pepper casserole. I am in love of Mediterranean cuisine!
It’s because we have these super warm summery days this may. Walking barefoot in the kitchen, doors open to the terrace, all my neighbours heating up their BBQ’s, my plants growing, the strawberries getting sweeter and sweeter. What a great time, late spring!


This focaccia is a no-knead bread, best eaten the same day, but the next day eaten was not bad at all, for a gluten free bread. I ate it with one of my best friends, no celiac herself and she loved it!!

Ok then, let’s cook.

Ingredients: 

110 g buckwheat flour
100 g brown rice flour
75 g almond flour
60 g tapioca starch
½ tsp sea salt
1 sachet of organic dry yeast, 9 grams
250 ml warm water
2 tbsp good olive oil
1 tsp apple vinegar
20 black olives, in small bits
2 tbsp fresh rosemary, cut fine
1-2 cloves of garlic, in thin slices
1 tsp Maldon or other salt flakes


Mix the flours and the sea salt with the sachet of dry yeast. Stir in the warm water, olive oil and apple vinegar. Stir vigorously with a spoon. Add pieces of olives and the rosemary and stir them in too. The dough is ready.

On a baking tray, put a piece of baking paper and scoop the dough in the middle.
Wet your hands and flatten the dough into the desired form, about 1cm thick. Slice the garlic. Divide  the slices over the top of the bread.
Cover with cling film and let it rise on a warm spot, about 1 hour or longer till it has risen well. You’ll see!


Pre heat the oven on 200 °C.

Remove the cling film.  Sprinkle with some salt flakes and a good drizzle of olive oil.

Bake the focaccia in the middle of the hot oven till golden brown, about 25-30 minutes. Let it cool and enjoy with some juicy veggie dish.

I also made a very nice variation with black olives, dried oregano and sundried tomatoes, also very yummy.

Ingrediënten:

110 g boekweitmeel
100 g bruine rijstmeel
75 g amandelmeel
60 g tapioca meel
½ tl zeezout
1 zakje droge gist, 9 gram
250 ml warm water
2 el goede olijfolie
1 tl appelazijn
20 zwarte olijven, in stukjes
2 el gehakte rozemarijn
2 knoflooktenen, in dunne schijfjes
1 tl Maldon of andere zoutflakes

Meng de eerste 6 ingrediënten in een kom en voeg water, olijfolie en azijn toe. Roer goed door elkaar met een lepel. Voeg dan olijfstukjes en rozemarijn toe en roer nogmaals goed door elkaar.

Bekleed een bakplaat met een vel bakpapier en stort het deeg hierop in het midden. Maak je handen nat en druk de focaccia in de gewenste vorm, ongeveer 1 cm dik. Snijd de teentjes knoflook. Leg ze op het brood.
Pak de bakplaat in met huishoudfolie en laat het brood minimaal 1 uur op een warme plek rijzen. Je ziet het vanzelf!

Verwarm dan de oven voor op 200°C.

Verwijder de folie en bestrooi met zoutflakes en besprenkel met flink wat lekkere olijfolie.
Bak de focaccia in het midden van de hete oven tot goudbruin, ongeveer 25-30 minuten. Laat afkoelen en eet met een sappig groentegerecht.


Een andere variatie die ik maakte was met olijven, gedroogde oregano en stukjes zongedroogde tomaat op olie. Ook erg lekker!

Gluten-free spicy fruit breads for the holiday season – glutenvrije kersttimpen (GF – DF option)


Before taking a blogging break I give you this recipe for lovely small breads, full of dried fruits and warming spices. They are a typical Dutch luxury bread, mostly eaten in the Christmas season, called timpen or grofjes. To make them even more Xmassy I put in a small roll of cinnamon spiced almond meal. Yummie!
Because of the gluten free flour these are not fluffy white rolls, soft and chewy, but a little tough and crumbly, but the taste is great, and that’s what it is all about in cooking. I think.

I will spent my winter time hibernating, writing  and planning new recipes, cooking warming family dishes and rest and read and rest and read some more, and do my yoga every day, to stay healthy, happy and high-spirited.

Gluten-free spicy fruit breads (9 pcs)

Take the time to prepare these, they have to rise twice!

375 g Werz flour
1 ½ tsp dried yeast
4 tsp cane sugar
¾ tsp sea salt
¾ tsp cardamom powder
½ tsp ground ginger
¼ tsp ground nutmeg
circa 160 ml milk or almond milk
50 g butter or coconut oil
1 egg or 1 tbsp ground flaxseeds in 2 tbsp water; leave for 10 minutes and stir = flax egg
100 g sultanas
75 g currants
25 g candied lemon or orange peel

Mix the flour, yeast, sugar, salt and spices in a big bowl.
Warm the milk and let the butter or coconut oil melt in it. Let it cool slightly before pouring it in the flour mixture. Stir with 1 hand and then add the egg. Stir everything well and than knead the dough till it comes together. Oil the bowl and make a ball of the dough, put it in, cover with cling film and let it rise for at least 1 hour on a warm spot.

In the meantime rinse the currants and sultanas with warm water. Dry with some kitchen paper and put them aside together with the pieces of peel.

In de tussentijd spoel je de krenten en rozijnen af met warm water en droog ze met keukenpapier.

When the dough has about doubled its size, place it on your workbench, knead it through and fold in the dried fruits. It is quite sticky! Do not add more flour, the bread will turn too dry. Wet your hand(s) and enjoy the stickiness. Divide the dough in 9 portions and roll them out without pressure, soft and easy, till an elliptic shape has formed. With a sharp knife or a pair of scissors cut in top and bottom, see picture, so you get this typical form.
When you want, as I did, make 9 rolls of almond meal or marzipan, about 200grams, and put them in the middle. Close well before baking!


Put the fruit breads on a with baking paper lined baking tray, some distance from another, for the second rise. Cover again with cling film and let them gently rise till they doubled up, about another hour.

Pre-heat the oven on 200 ˚C and bake the breads about 12-15 minutes, till golden-brown.
You can egg-wash them for a shiny finish.
Let them cool on a rack.
You can freeze them and warm them before eating!! Enjoy!


Glutenvrije kersttimpen (9 stuks)

Neem de tijd om deze broodjes te maken; ze moeten 2 keer een uur rijzen!

375 g Werz meel
1 ½ tl instant gist
4 tl rietsuiker
¾ tl zeezout
¾ tl kardemom poeder
½ tl gemberpoeder
¼ tl gemalen nootmuskaat
circa 160 ml melk of amandelmelk
50 g boter of kokosolie
1 ei of 1 lijnzaadei = 1 el gemalen lijnzaad in 2 el water 10 minuten weken en dan roeren
100 g sultanas
75 g krenten
25 g sinaas- of citroensnippers

Meng meel, gist, suiker, zout en de kruiden in een ruime kom.
Verwarm de melk en laat de boter of kokosolie hierin smelten. Laat even afkoelen voordat je het toevoegt aan het meelmengsel. Roer met je hand en voeg dan ook het ei toe. Roer en kneed dan goed door tot een samenhangende bal. Olie de kom, leg de bal deeg erin, bedek met huishoudfolie en laat minimaal 1 uur rijzen op een warme plek.

Als het deeg zich bijna heeft verdubbeld, leg je het op je werkbank en kneed nog eens door. Bedek met het gedroogde fruit en vouw dit in het deeg. Het is vrij kleverig! Voeg niet nog meer meel toe, dan worden de broodjes erg droog. Maak je handen nat en accepteer en geniet van dat kleffe gedoe.


Verdeel het deeg in 9 stukken en rol ze uit, zonder druk, heel losjes tot langwerpige vormen. Knip de boven- en onderkant in met een schaar, zie foto, om de typische vorm te krijgen.
Als je wilt kun je de timpen nog vullen met amandelspijs of marsepein. Je hebt ongeveer 200 gram nodig, snijd het midden in met een mes, vul met amandelspijs en vouw ze weer  goed dicht. Leg de timpen op een met bakpapier bekleedde bakplaat, bedek met huishoudfolie en laat nogmaals 1 uur op een warme plek rijzen, tot de broodjes dubbel zo groot zijn geworden.

Verwarm de oven voor op 200 ˚C en bak de broodjes 12-15 minuten in het midden van de hete oven tot ze goudbruin zijn. Met een losgeklopt ei kun je de broodjes van tevoren bestrijken voor een glanzend effect.
Laat ze afkoelen op een rek.
Je kunt ze invriezen, verwarm ze dan voordat je ze eet! Geniet!
