Wortel hummus met ras el hanout - Carrot hummus with ras el hanout (GF-DF-SF-V)



Het einde van de winter is in aantocht ook al is het nog gemeen koud zo af en toe en komen we aan het einde van de winter wortelgroentes.
Ik maakte matzes uit mijn boek  en omdat ik geen teffmeel in huis had, gebruikte ik boekweitmeel en maakte ik er ook 4 met kikkererwtenmeel. Beide versies zeer geslaagd.

Erop een heerlijke geroosterde wortelhummus op smaak gebracht met ras-el-hanout, een zeer aromatisch Marokkaans kruidenmengsel dat je kant en klaar kunt kopen, maar ook zelf kunt maken. Deze versie is geïnspireerd door een recept uit Vegetarische Tajines & Couscous, van Ghillie Basan.

Recept Ras el hanout
1 tl zwarte peperkorrels
1 tl kruidnagels
1 tl venkelzaad
1 tl pimentbessen
2 tl kardemompeulen
1 gedroogde rode chilipeper of naar smaak chiliflakes
2 tl korianderzaad
2 tl gemberpoeder
2 tl kurkuma
1 tl foelie
2 kaneelstokjes
2 tl gedroogde munt
1 tl gedroogde lavendel
6 gedroogde geurige rozenknoppen

Een lange lijst ingrediënten, maar het is slechts een kwestie van roosteren, mengen en stampen of malen.

In een ijzeren koekenpan met dikke bodem rooster je de zwarte peperkorrels tot en met het korianderzaad, terwijl je af en toe de pan schudt. Als het mengsel gaat geuren is het klaar. Koel de specerijen af in de vijzel of kleine keukenmachine.
Vijzel of maal tot een grof geheel, voeg dan gemberpoeder tot en met de munt toe en ga nog even door met malen of vijzelen. Lavendel en rozenknoppen voeg je op het laatst toe en stamp deze ook nog even mee. Je blijft allerlei stukjes en kleuren zien; dat is de bedoeling!


En als je 1 of meer van de specerijen niet in huis hebt, geen probleem. Maak je eigen versie. Er wordt gezegd dat iedere Marokkaanse familie haar eigen versie heeft.

Voor de hummus heb je nodig:
500 g winterwortels
4 hele tenen knoflook, met vlies
1 blik kikkererwten (400g),uitgelekt
2-4 el tahin
2-4 el citroensap
2/4 el water
1-3 tl ras el hanout (naar smaak dus!)
Verse koriander
Peper en zout

Hoe ga je te werk:
Zet de oven aan op 200°C.

Was en/of schrap de wortels en snijd ze in 1 cm dikke plakken.
Meng met de hele knoflooktenen, peper en zout en 2 el olijfolie. Stort op een bakplaat en bak ongeveer 25 minuten in de hete oven tot ze gaar zijn. Laat afkoelen.

Haal de knoflook uit de vliezen.
Je kunt de hummus met de staafmixer maken of in een keukenmachine. Doe alle ingrediënten bij elkaar en mix tot een grof tot fijn geheel. Proef regelmatig, voeg toe wat je denkt dat nodig is. Begin dus met 2 el tahin, water en citroensap en 1 tl ras el hanout. Voeg steeds wat extra bij tot je je perfecte wortel hummus hebt. Peper en zout naar smaak. Zo ook de verse koriander.

Heerlijk op je favoriete brood of crackers of op de Paas matzes uit mijn boek.


The end of the winter comes slowly, but unmistakingly. It still can be very nippy. We also come towards the end of winter root vegetables. I already made some matzos for Easter weekend and because I did not have any teff in the house I made 2 versions: 1 with buckwheat flour and the other one with chickpea flour. Both delicious!

On top I made this wonderful carrot hummus spiced up with a homemade ras el hanout, a very aromatic Moroccon spice mix. You can buy it of course but as you know I love to make it myself and like in Moroccan households, you can experiment with what you have in the spice drawer and make your own version. This one is inspired by Vegetarian Tagines & Couscous, by Ghillie Basan.

Recipe for Ras el hanout:
1 tsp black pepper corns
1 tsp cloves
1 tsp fennel seeds
1 tsp allspice berries
2 tsp cardamom pods
1 dried chilli pepper or chilli flakes to taste
2 tsp coriander seeds
2 tsp ginger powder
2 tsp curcuma
1 tsp mace
2 cinnamon sticks
2 tsp dried mint
1 tsp dried lavender
6 dried rose buds


A long list of ingredients but very simple to assemble: just toast, mix and grind or pound. Experiment with the spices. When you don’t have 1 or more of the list, don’t freak out, it’s just another version. It is said that in Morocco every household make her own.
Toast peppercorns up to ginger powder in a dry iron frying pan with a thick base, shake once in a while till the spices start smelling. Remove from the heat and let them cool in a small spice grinder or stone mortar. Grind or pound roughly, then add ginger powder up to the lavender and rose buds. Grind some more. Add lavender and rose buds and give it a last pounding . You may see bits and pieces of colour; that’s good!


You´ll need for the carrot hummus:
500 g winter carrots
4 fat cloves of garlic whole(with the skins on)
1 tin chickpeas (400g), drained
2-4 tbsp tahini
2-4 tbsp lemon juice
2-4 tbsp water
1-3 tbsp of ras el hanout
Fresh coriander
Salt and pepper
How to:
Pre heat the oven on 450°F.

Clean the winter carrots and cut into 1 cm discs. Mix together with the garlic cloves, 2 tbsp of olive oil and season with salt and pepper. Bake for about 25 minutes in the hot oven, till done and a little browned.

Let it cool and then throw it all, garlic cloves removed from their skins(!), together in a big bowl and use a stick blender or into a blender or other kitchen machine and mix into your desired structure of hummus. I always start with 1 tbsp each of tahini, lemon juice and water and 1 tsp of ras el hanout. Taste and keep adding till you love the taste!! Pepper and salt to taste, sprinkle with coriander.

Delicious on your Easter matzos, bread or favourite crackers.

zomerkom met geroosterde wortels en wortel-gembersaus - summer bowl with roasted carrots and carrot-ginger sauce(GF-DF-SF-V)


Een recept met gekookte le Puy linzen.
Je kunt variëren met alle groentes die je lekker vindt en die nu in het seizoen zijn. Ik heb net de eerste wortels geoogst, dus die gaan er lekker in, in de saus en geroosterd.

Het recept is voor 2 personen.

Maak eerst de saus:
2 wortels, 150 g, in kleine blokjes
1 lente-uitje
2 el fijngehakte gember
2 el balsamico azijn
2 tl geroosterde sesamolie
2 tl glutenvrije tamari
1 tl ahornsiroop
1 el olijfolie
versgemalen peper

alles in de blender en pureer tot een egale saus.

Voor de rest van de ingrediënten van deze heerlijke zomerse kom heb je nodig:
2 koppen gekookte bruine basmatirijst
1 avocado, gehalveerd en in dunne plakjes
gestoomde broccoli
gekookte linzen (zie instructies vorige recept)
geroosterde wortels: 20 minuten op 180°C, in de lengte gehalveerd of in 4-en, afhankelijk van de dikte, met olijfolie besprenkeld en wat peper en zout.
2 el amandelschilfers

Componeer de kom en schep de saus erover heen. Een heerlijke lichte en gezonde maaltijd!


A summer recipe with LePuy lentils.
You can choose which vegetables you want in the bowl, according to the season or just what you love to eat. I harvested my first carrots so I use them raw in the sauce as well as roasted in the bowl. The recipe is for 2 persons.

First make the sauce:
2 carrots, finely diced
1 spring onion, chopped
2 tbsp finely chopped gingerroot
2 tbsp balsamic vinegar
2 tsp toasted sesame seed oil
2 tsp gluten free tamari
1 tsp maple syrup
1 tbsp olive oil
freshly ground black pepper

Put everything in a small food processor and blend into a delicious smooth sauce. Set aside.

The rest of the ingredients I used:
2 cups cooked brown basmati rice
1 avocado, peeled and thinly sliced
steamed broccoli
cooked Le Puy lentils (see last week for instructions)
roasted carrots, 20 minutes on 180°C, stripped lengthwise according to thickness, sprinkled with some olive oil and salt and pepper
2 tbsp sliced almonds


Compose your bowl and ladle the sauce over it. A light and tasty summer dish, enjoy!

Cannellini summer soup with chard – cannellini zomersoep met snijbiet (GF-DF-SF-V)



Gisteren maakte ik deze snelle soep van alle restjes in mijn koelkast. Ik plukte snijbiet en de eerste basilicum uit mijn tuin en maakte er een fijne pesto bij. Zojuist at ik de soep koud, zoals ik eens gegeten had in de Provence, heerlijk bij deze (eindelijk) tropische temperaturen!

Je hebt nodig:
1 ui, fijngehakt
4 worteltjes, in kleine blokjes
2 stengels bleekselderij, in kleine blokjes
wat fijngehakte peterselie steeltjes
4 stengels (regenboog)snijbiet, stengels in kleine blokjes, blad grof of fijn
1 blikje cannellini bonen, afgespoeld en uitgelekt
¾ -1 l groentebouillon
1 laurierblad met een kruidnagel erin gestoken
peper en eventueel zeezout

voor de pesto:
2 handenvol basilicumblaadjes
1 teen knoflook en wat zeezout
10 geroosterde amandelen
extra virgin olijfolie


Fruit de ui in een soeppan in wat olijfolie zachtjes aan en snijd en voeg de worteltjes toe en dan de bleekselderij, peterselie steeltjes en de gehakte snijbietstelen. Roer goed door elkaar en laat een minuut of 8-10 zachtjes fruiten.
Voeg dan de bouillon, de cannellini bonen en het laurierblad toe en breng aan de kook. Laat een minuut of 15 zachtjes sudderen. Voeg dan het fijngesneden snijbietblad toe, laat even slinken en de soep is klaar.

Serveer warm of koud met een flinke schep pesto.

De pesto is heel gemakkelijk: doe alle ingrediënten in een kleine keukenmachine en blend tot een mooie saus; voeg steeds een beetje olijfolie toe tot je de gewenste dikte hebt.



Yesterday I made a quick soup from the bits and pieces in my fridge. I picked chard and the first basil from my garden and made a nice pesto to go with it. Just now I ate the soup cold, like I did in the Provence some years ago. Gorgeous with this heat we are having at the moment (at last)!

You’ll need:
1 onion, finely chopped
4 carrots, finely diced
2 stalks of celery, finely diced
some parsley stalks, finely chopped
4 stalks of (rainbow) chard, stalks finely chopped, leaves, fine or a bit rough
1 can of cannellini beans, washed and drained
¾ - 1 l vegetable stock
1 bay leaf with 1 clove stuck through
some pepper and maybe some salt

For the pesto:
2 handfuls of basil leaves
1 clove of garlic and some sea salt
10 toasted almonds
extra virgin olive oil



Warm some olive oil in a soup pan and add the onion first; then cut the carrots and add, the celery, the finely chopped stalks of parsley and chard and stir well. Let it fry on low heat for 8-10 minutes.

Add vegetable stock, cannellini beans and the bay leaf and bring to the boil. Then let it simmer for 15 minutes on low heat. Add chopped chard leaves and let it wilt for several minutes. Your soup is ready!

Serve with a big scoop of the pesto and eat warm or cold. Both are delicious.


The pesto is very easy: just put everything in a small food processor and blend into a nice sauce. The olive oil bit by bit to create the right thickness for you.

Tourte de carottes en robe de chou – French carrot bake in cabbage leaves – wortelkoek met kool(GF-SF)




This wonderful dish which can be made of all kinds of garden vegetables and is based on a recipe from Brigitte Tilleray, a French cookbook writer who specializes in French regional family cooking.

It’s an earthy dish, great for this time of transition from summer to autumn. And it’s rich and comforting. I made this dish, amongst others, on my birthday some weeks ago. We had a great diner, outside on long tables, I loved it!

We started with a glass of bubbles for l’apéritif, some roasted nuts, a goat’s cheese spread and a very quick and easy to make vegan tapenade with these lovely crackers. Followed by  a soupe au pistou, the tourte and I made crunchy casse-dents with fennel seeds and coffee for desert.

All of the dishes could be made in advance, so I could spent all of my time with the guests instead of rushing in and out of the kitchen.

The tourte recipe is for 6 people, you’ll need a big oven dish, any left-over’s are great for lunch the next day! When you can, try to buy the best crème fraîche, preferably from Normandy.

Ingredients:
7-8 big leaves of cabbage
4 big carrots
1 medium celeriac or 3 small turnips
3 onions
1 fat clove of garlic
1 bunch of parsley
3 young leeks
100 g of organic butter
3 tbsp of olive oil
Salt and pepper
3 big eggs, whisked

For the sauce:
25 g of organic butter
250 ml crème fraîche
2 heaped tbsp of freshly chopped chives
Salt and pepper

Prep:
Wash the cabbage leaves carefully. Blanch them in a big casserole with boiling water for 3 minutes. Take them out and place them in a bowl of ice cold water. Drain and dry them.
Clean carrots and celeriac and grate them roughly.
Chop onions, garlic and leeks fine.
Melt 50 g of butter and 3 tablespoons of olive oil in a heavy casserole and sweat all the veggies slowly for about 15 minutes; stir once in a while. Add salt and pepper to your taste and let it cool down a bit.

In the meantime prepare your oven dish. Butter the dish well and drape with 6 of the cabbage leaves and let them overhang the sides. 1 leave is for the top.

Add the whisked eggs to the vegetable mix and stir well.
When you bake the dish right after preparing, this is the time to pre-heat the oven on 200°C.

Add the vegetable mass to the oven dish and fold in the cabbage leaves. Lay the last one on top. Put some knobs of butter on top and lay a piece of aluminium foil loosely on top. Or fold it tightly when baking the dish later in the day.

Pre-heat the oven before baking and bake the dish for about 20 minutes till a skewer pricked in the middle will come out clean. Put out the oven and make the sauce.

The sauce:
Melt the butter and crème fraîche on low heat and add chives, pepper and salt to your own taste.

Slice the tourte in 6 pieces and dress with a little sauce. Give the rest of the sauce apart.
Enjoy! It has quite some preparing, but it’s well worth it!


Ingrediënten:
7-8 grote koolbladeren
4 grote wortels
1 middel selderijknol of 3 meiraapjes
3 uien
1 flinke teen knoflook
1 bosje peterselie
3 jonge preien
100 g biologische boter
3 el olijfolie
Zout en peper
3 grote eieren, geklutst

Voor de saus:
25 g boter
250 ml crème fraîche
2 volle el gehakte bieslook
Zout en peper

Prep:
Was de koolbladeren voorzichtig en blancheer ze 3 minuten in een grote pan met kokend water. Schep ze eruit en laat snel afkoelen in een kom met ijskoud water. Laat uitlekken en droog ze. Zet apart.
Maak wortels en selderijknol schoon en rasp ze grof.
Snijd uien, knoflook en prei fijn.

Laat 50 g boter en olijfolie smelten in een zware braadpan en laat alle groentes hierin zachtjes 15 minuten “zweten” terwijl je af en toe roert. Voeg peper en zout naar smaak toe en laat even afkoelen.

Ondertussen beboter je de ovenschaal en bekleed de schaal met 6 koolbladeren en laat ze over de rand hangen.

Voeg de eieren toe aan het groentemengsel, roer goed door elkaar en stort de massa in de vorm. Vouw de bladeren naar binnen en leg het laatste blad erop.
Leg er nog wat klontjes boter op en leg er losjes een vel aluminiumfolie op als je de schaal nu in de oven stopt of pak het in als je de tourte later bakt.

Je bakt de tourte in een 200°C voorverwarmde oven, ongeveer 20 minuten, totdat een pen die je erin steekt er schoon uitkomt.
Zet dan de oven uit en maak de saus; deze is zo klaar!

De saus:
Smelt de boter en de crème fraîche op laag vuur en voeg bieslook en peper en zout naar smaak toe.

Snijd de tourte in 6 stukken en schep er wat saus overheen. Geef de rest van de saus er apart bij.

Ondanks de flinke voorbereiding, maak het gerecht, het is zó lekker!
