winter groene soep - winter green soup (GF-SF-DF-V)



Dit recept is helemaal geïnspireerd door deze van Wheatfree-Meatfree. Het is mijn soepje als ik andijvie in mijn groentepakket krijg. Ik hou namelijk niet van andijvie. Maar goed, weggooien is ook zo wat. Doe ik liever niet. 

 Vroeger hadden we een cavia die dol was op andijvie, maar ondertussen heeft Bruintje dit leven verlaten en zijn er, in huis, geen nieuwe dieren bijgekomen. Wel heb ik een paar honderd wormen geadopteerd, in de moestuin wel te verstaan, in de wormenbak. En ik moet zeggen, ook deze diertjes zijn dol op andijvie ;-) Dus na het maken van deze, niet om aan te zien, doch zeer smakelijke, soep, krijgen de wormen de restjes. 

 Je hebt nodig voor 6 flinke koppen: 
1 ui, fijngesneden 
2 grote tenen knoflook, fijngesneden 
3 cm gember, fijngesneden 
1 kleine gele of groene paprika, in kleine blokjes 
½ knolselderij, in kleine blokjes 
1 el gemalen sumac (bij Turkse winkels te koop of maak een mix van citroenrasp en –sap met wat gemalen zwarte peper) 
1 volle tl gemalen komijn 
1 volle tl gemalen koriander 
½ tl oregano 
½ tl tijm 
150 g groene mungbonen 
1 ½ l groentebouillon 
1 kropje andijvie, alleen de lichte blaadjes, heel fijngesneden, gewassen, ongeveer 250 gram 
3 el witte basmati rijst 

 Fruit de ui, knoflook, gember, paprika- en knolselderijblokjes zachtjes ongeveer 8 minuten in wat olijfolie. Voeg dan de specerijen toe en bak ze 1 minuut mee. voeg dan de mungbonen en de groentebouillontoe, breng aan de kook en laat ongeveer 1 uur zachtjes koken met het deksel op de pan tot de mungbonen gaar zijn. Proef na 45 minuten even om te kijken of het al zo ver is. 

 Voeg dan rijst en andijvie toe en laat nog 10 minuutjes pruttelen. Bewaar wat andijvie voor het serveren, of wie weet heb je wat verse kruiden in keuken of tuin, dat frist het geheel wat op, anders is het een vrij groenbruinig soepje.

 Maar laat je niet afleiden door de kleur, de smaak is fantastisch. De sumac geeft de soep iets fruitig-zurigs en de specerijen een exotische toets. Echt heel lekker en perfect voor koude en grijze dagen! 


 For 6 you’ll need:
1 onion, finely cut
2 fat cloves of garlic, finely cut
3 cm/1 inch of ginger, finely cut
1 small green or yellow bell pepper, in small cubes
½ celeriac, in small cubes
1 tbsp sumac (Turkisch or Iranaian stores or when you cannot obtain it mix some lemon zest and juice with some ground black pepper)
1 heaped tsp ground cumin
1 heaped tsp ground coriander
½ tsp oregano
½ tsp thyme
¾ cup/ 150 g green mung beans
6 cups/ 1 ½ l vegetable stock
2-3 cups finely cut curly endive
3 tbsp white basmati rice

In a big soup casserole heat some olive oil and on low heat fry onion, garlic, ginger, bell pepper and celeriac cubes for 8 minutes. Add spices and fry another minute.

Then add mung beans and stock and bring to the boil and, with the lid on, let it simmer slowly for 1 hour till the mung beans are done. You can try after 45 minutes if they are done yet. If so add rice and curly endive and let it cook some for 10-15 minutes.

Serve with some extra curly endive or some green herbs to brighten up the color.

Ok, this soup doesn’t look too sexy maybe, but the taste is incredible! The sumac gives it a fruity tanginess and the spices an exotic touch, just amazing! Perfect for cold, grey days. Enjoy!

wortelgroentepuree met LePuy linzen - root vegetables puree with LePuy lentils (GF-DF-SF-V)


Dit heerlijke simpele en lichte gerecht eet ik graag in deze overgangsperiode van winter naar lente, waar het, zoals nu, nog flink fris kan zijn. Er groeit nog niet veel op de velden, wel al in de verwarmde kas, maar gelukkig zijn er nog voldoende wortelgewassen te koop.

We gaan eerst de linzen koken op de manier zoals in het traditioneel streng katholieke Le Puy, waar op vrijdag geen vlees wordt gegeten, maar deze linzen met witte saus en gekookte eieren. 

nodig voor de wortelgroentepuree:
2 winterwortels, geschrapt en in stukjes
½ selderijknol, dik geschild en in blokjes
½ pompoen, geschild en in flinke brokken
1 el olijfolie
zout en peper
1 flinke tl geroosterde komijnzaadjes, evt. poeder
1 el ahornsiroop

nodig voor de linzen:
1 kop/ 250 ml Le Puy linzen 
2 koppen water
1 glas rode wijn
1 uitje met daarin een kruidnagel gestoken
enkele takjes tijm
zout

Eerst zetten we de gewassen linzen op met de rest van de ingrediënten behalve het zout en koken ze op een rustig vuur gaar. Dit duurt, afhankelijk van de kwaliteit van de linzen, 20-30 minuten. Voeg wat zout toe als ze bijna gaar zijn, dus de laatste 5 minuten. Laat ze in het vocht staan tot gebruik.

de groentepuree (2 pers.):
Kook eerst 5 minuten de wortel, dan de knolselderij en dan weer na 5 minuten de pompoenstukken. Na 20 minuten is alles gaar. Giet af en pureer met een stamper, zodat er een grove puree ontstaat. Breng op smaak met olijfolie, peper en zout, de geroosterde komijnzaadjes en een eetlepel ahornsiroop. Schep dan zoveel linzen uit de pan als je lekker vindt en laat even uitlekken voordat je ze door de puree roert.

Eet zoals het is of met wat raapsteeltjes met een simpele vinaigrette en een gekookt ei.


The easiest light dinner I know, especially in this transformational time from winter to spring. There is not much growing in this time of year, etc. but still there is an abundance of root vegetables.

First we cook the lentils like the French do in Le Puy; the rather strict catholic population don't eat meat, but traditionally they prefer eating lentils with white sauce and boiled eggs for their friday lunch.

for the lentils you need:
1 cup LePuy lentils
2 cups of water
1 glass of red wine
1 onion with a clove pricked in
some thyme sprigs
salt

Wash the lentils and put them on the stove with the rest of the ingredients except for the salt and boil them softly till done. Depending on the quality of your lentils this will take 20-30 minutes, maybe more. When they are almost done, add some salt, in the last 5 minutes, then take from the heat and set aside in the juice.

for the puree you need (for 2 pers.):
2 winter carrots, scraped and in small cubes
1/2 celeriac, peeled and in small cubes
1/2 pumpkin, peeled, deseeded and in cubes
1 tbsp olive oil
salt and pepper
1 tsp of toasted cumin seeds, or cumin powder
1 tbsp maple syrup

Cook in a big pot enough water for all the vegetables and start to cook the carrots for 5 minutes, then add the celeriac cubes and cook another 5 minutes, then add the pumpkin for another 10 minutes. Toatal cooking time will be 20 minutes.Then drain the water and puree roughly. Add olive oil, pepper, salt, toasted cumin seeds and maple syrup. 
Then drain as much lentils as you want and add to the puree, mix gently.

Eat as it is or with some leafy green salad and a simple vinaigrette and a boiled egg or with some avocado.

Tourte de carottes en robe de chou – French carrot bake in cabbage leaves – wortelkoek met kool(GF-SF)




This wonderful dish which can be made of all kinds of garden vegetables and is based on a recipe from Brigitte Tilleray, a French cookbook writer who specializes in French regional family cooking.

It’s an earthy dish, great for this time of transition from summer to autumn. And it’s rich and comforting. I made this dish, amongst others, on my birthday some weeks ago. We had a great diner, outside on long tables, I loved it!

We started with a glass of bubbles for l’apéritif, some roasted nuts, a goat’s cheese spread and a very quick and easy to make vegan tapenade with these lovely crackers. Followed by  a soupe au pistou, the tourte and I made crunchy casse-dents with fennel seeds and coffee for desert.

All of the dishes could be made in advance, so I could spent all of my time with the guests instead of rushing in and out of the kitchen.

The tourte recipe is for 6 people, you’ll need a big oven dish, any left-over’s are great for lunch the next day! When you can, try to buy the best crème fraîche, preferably from Normandy.

Ingredients:
7-8 big leaves of cabbage
4 big carrots
1 medium celeriac or 3 small turnips
3 onions
1 fat clove of garlic
1 bunch of parsley
3 young leeks
100 g of organic butter
3 tbsp of olive oil
Salt and pepper
3 big eggs, whisked

For the sauce:
25 g of organic butter
250 ml crème fraîche
2 heaped tbsp of freshly chopped chives
Salt and pepper

Prep:
Wash the cabbage leaves carefully. Blanch them in a big casserole with boiling water for 3 minutes. Take them out and place them in a bowl of ice cold water. Drain and dry them.
Clean carrots and celeriac and grate them roughly.
Chop onions, garlic and leeks fine.
Melt 50 g of butter and 3 tablespoons of olive oil in a heavy casserole and sweat all the veggies slowly for about 15 minutes; stir once in a while. Add salt and pepper to your taste and let it cool down a bit.

In the meantime prepare your oven dish. Butter the dish well and drape with 6 of the cabbage leaves and let them overhang the sides. 1 leave is for the top.

Add the whisked eggs to the vegetable mix and stir well.
When you bake the dish right after preparing, this is the time to pre-heat the oven on 200°C.

Add the vegetable mass to the oven dish and fold in the cabbage leaves. Lay the last one on top. Put some knobs of butter on top and lay a piece of aluminium foil loosely on top. Or fold it tightly when baking the dish later in the day.

Pre-heat the oven before baking and bake the dish for about 20 minutes till a skewer pricked in the middle will come out clean. Put out the oven and make the sauce.

The sauce:
Melt the butter and crème fraîche on low heat and add chives, pepper and salt to your own taste.

Slice the tourte in 6 pieces and dress with a little sauce. Give the rest of the sauce apart.
Enjoy! It has quite some preparing, but it’s well worth it!


Ingrediënten:
7-8 grote koolbladeren
4 grote wortels
1 middel selderijknol of 3 meiraapjes
3 uien
1 flinke teen knoflook
1 bosje peterselie
3 jonge preien
100 g biologische boter
3 el olijfolie
Zout en peper
3 grote eieren, geklutst

Voor de saus:
25 g boter
250 ml crème fraîche
2 volle el gehakte bieslook
Zout en peper

Prep:
Was de koolbladeren voorzichtig en blancheer ze 3 minuten in een grote pan met kokend water. Schep ze eruit en laat snel afkoelen in een kom met ijskoud water. Laat uitlekken en droog ze. Zet apart.
Maak wortels en selderijknol schoon en rasp ze grof.
Snijd uien, knoflook en prei fijn.

Laat 50 g boter en olijfolie smelten in een zware braadpan en laat alle groentes hierin zachtjes 15 minuten “zweten” terwijl je af en toe roert. Voeg peper en zout naar smaak toe en laat even afkoelen.

Ondertussen beboter je de ovenschaal en bekleed de schaal met 6 koolbladeren en laat ze over de rand hangen.

Voeg de eieren toe aan het groentemengsel, roer goed door elkaar en stort de massa in de vorm. Vouw de bladeren naar binnen en leg het laatste blad erop.
Leg er nog wat klontjes boter op en leg er losjes een vel aluminiumfolie op als je de schaal nu in de oven stopt of pak het in als je de tourte later bakt.

Je bakt de tourte in een 200°C voorverwarmde oven, ongeveer 20 minuten, totdat een pen die je erin steekt er schoon uitkomt.
Zet dan de oven uit en maak de saus; deze is zo klaar!

De saus:
Smelt de boter en de crème fraîche op laag vuur en voeg bieslook en peper en zout naar smaak toe.

Snijd de tourte in 6 stukken en schep er wat saus overheen. Geef de rest van de saus er apart bij.

Ondanks de flinke voorbereiding, maak het gerecht, het is zó lekker!

Roasted sunchokes and celeriac soup with kale and ginger - Geroosterde aardpeer-selderijknol soep met boerenkool en gember (GF-SF-V-DF)


A really grounding and warming winter vegetable soup!

Winter is finally coming our way, which I regret deeply, but what can you do?
 The farmers need a good frost to loosen the soil, which now is very wet; nature is already awakening slowly, birds start singing their mating songs, underground bulbs our sprouting.  
It’s not easy to hibernate when it’s not a real winter, so, o.k. let’s say  1 week, I can handle that, but then I want sunshine too;-)

To prevent a cold make soup and eat it whenever you feel cold;  instead of a glass of juice eat this juicy warm smooth(ie) soup!!


Roasted sunchokes and celeriac soup with kale and ginger (6 bowls)

400g peeled and cubed celeriac
300 g peeled and cubed sunchokes/ Jerusalem artichokes
1 onion, chopped roughly
3 cloves of garlic, whole
Pepper and salt
2 tbsp olive oil
1 tbsp dried thyme leaves
2 l vegetable stock
300g washed and cleaned kale (rip off the hard middle rib)
1 tbsp cumin seed
Juice of ½ lime
1 tbsp freshly fine cut/grated ginger

Pre heat the oven on 200 °C.
Put a piece of baking paper on a baking tray.

1. Prepare your veggies and put the cubes (2cm) of the sun chokes and celeriac on the baking tray. Add onion, garlic, thyme, pepper and salt  and the olive oil. Mix with your hands and put the tray in the oven for about 30 minutes till the veggies are tender. Halfway, stir the vegetables.

2. Heat the vegetable stock in a big soup pot and keep it warm till the vegetables are done.

3. Wash and clean the kale and put in a colander.

4. Roast the cumin seeds in a heavy bottom frying pan and grind them after cooling down.

5. Add the roasted veggies to the stock together with the kale and bring to the boil, let it simmer, with the lid on for 15 minutes more.

6. Grate or cut the ginger very fine.

7. Add ginger, cumin and lime juice to the soup and blend the soup to a smooth consistency. Mine has still a little bite from the kale. Taste and add lime to your taste, maybe a little pepper.

8. You’re done, enjoy this lovely grounding soup in this chilly time!!

Celeriac- winter purslane soup - knolselderij-winterpostelein soep (GF-SF-DF-V)



Soup, the best afternoon snack there is.
Healthy, hearty and heating in wintertime!

You know it, I make a lot of soup, almost every day; instead of tea and cookies I eat a bowl of soup, sometimes with a cracker, most of the times without, because it’s ok like that.

This is a quick one:

Celeriac-winter purslane soup ( 3pers)

500 g celeriac ( ½ of a big one), cleaned and in rough chunks
2 middle size potatoes, peeled and in 4 chunks
1 onion, chopped fine
1 cm slice of gingerroot, whole
1 bay leaf
750 ml water or vegetable stock
1 bunch of winter purslane, 2 big handfuls, washed
Olive oil
Pepper and salt

Put on the gas a big pan with water, for blanching the winter purslane.

In a soup pan heat some olive oil and bake the onion softly with a pinch of sea salt for 8 minutes.
Add the roughly chopped celeriac and potatoes, give it a stir and add gingerroot, bay leaf, pepper and salt and water or stock. Bring to the boil and let it cook about 20 minutes till the veggies are tender.

In the meanwhile you blanch the washed purslane in the other pan with boiling water for 2 minutes. Drain, rinse with some cold water and blend in a small kitchen blender or with a stick blender. Set aside.

When the veggies are done, fish out the bay leaf and ginger slice from the soup and use the stick blender to make a smooth soup, taste and add pepper and salt when necessary. Stir in the purslane and you’re done. Serve in a nice bowl and enjoy you’re quick afternoon break soup!

A scoop of parsley pesto is a great addition too, recipe follows!


Knolselder-winterposteleinsoep (3 pers)

500 g knolselderij (helft van een grote), geschild en in grote broken
2 middelgrote aardappels, geschild en in 4 gesneden
1 ui, fijngehakt
1 cm schijfje gemberwortel
1 laurierblad
750 ml water of groentebouillon
2 flinke handen vol winterpostelein
Olijfolie
Peper en zout

Zet een pan water op het gas, dit is om zo meteen de postelein te blancheren.

Verhit wat olijfolie in een soeppan en fruit de ui zachtjes een minuut of 8 met een snuf zout.
Voeg dan de brokken groente toe samen met de gemberwortel en het laurierblad. Roer even door en voeg dan water of bouillon en peper en zout naar smaak toe. Breng aan de kook en laat ongeveer 20 minuten zachtjes koken tot de groentes zacht zijn.

Ondertussen blancheer je de gewassen winterpostelein 2 minuten in de pan met kokend water. Giet af, spoel af met koud water, laat even uitlekken en pureer met staafmixer of in de keukenmachine. Zet apart.

Als de groentes gaar zijn vis je het schijfje gemberwortel en het laurierblad uit de soep, pureer je de soep met de staafmixer. Proef en voeg eventueel peper en nog wat zeezout toe. Roer de gepureerde winterpostelein door de soep en klaar is Kees!
Schep in een mooie kom en geniet van je snelle en heerlijke namiddagsnack!!

Een schepje peterseliepesto is er ook erg lekker door, recept volgt!

Dark and rich vegetable broth – rijke groentebouillon (GF-DF-SF-V)


Today I give you my recipe for a rich and dark vegetable broth, made of left-over vegetables I have left in my fridge. It is a very nice earthy broth, you can keep in the fridge for a week or freeze or use right away in your favorite soup.
For a  rich flavor use a variety of vegetables like carrot, leek , parsley stalks and celery, but you can use less or add some mushrooms, turnip or other root vegetable. You can use the bottom parts of  the celery and the leek or the parts you normally cut off and throw away. When you use parsley, keep the stalks in a plastic bag or a little humid kitchen towel in your vegetable drawer.

So keep all the trimmings and cut off pieces for some days and make a broth!

The darkness and earthy flavor in this soup you get from browning the vegetables first in some olive oil, before simmering. It is an ideal broth for warming hearty autumn soups or stews.

Dark and rich vegetable broth (1 ½ l)

1 onion, unpeeled with
2 cloves pushed in
1 clove of garlic, just crushed under your knife
1 piece of winter carrot or some smaller ones, washed and cut in big chunks
1 piece of celery or some (old) celery stalks
1 piece of leek
Parsley stalks, washed
2 bay leafs
Some fresh sprigs of thyme
15 black pepper corns
1 tsp of course sea salt
Pinch of cayenne pepper
1 ½ l water

Pour some olive oil in a casserole and bake the onion, garlic, carrot, leek, celery, parsley stalks, turnip (all veggies) on medium heat till they brown, stir occasionally.
Add salt and herbs and the water, bring to the boil and let it simmer softly with the lid on about 30 minutes.
Drain, using a colander and some cheesecloth and your dark and rich vegetable broth is ready for further use! Enjoy!


Rijke groentebouillon (1 ½ l)

1 ui, ongeschild en met
2 kruidnagels erin gestoken
1 knoflookteen, geplet onder je mes
1 stuk winterwortel of wat kleine wortels
1 stuk bleekselderij of selderijknol
1 stuk prei
Peterseliestengels
2 laurierblaadjes
Wat verse tijm
15 zwarte peperkorrels
1 tl grof zeezout
1 snuf cayennepeper
1 ½ l water

Verwarm wat olijfolie in een grote braadpan en fruit hierin, op halfhoog vuur, de ui en de andere groentes tot ze bruinen, roer af en toe door.
Voeg dan het zout en alle kruiden toe en het water en breng aan de kook. Laat met het deksel op de pan alles 30 minuten zachtjes sudderen. Giet af in een met kaasdoek bekleedde vergiet.
Je donkere en rijke groentebouillon is klaar voor gebruik. Geniet!

celeriac soup with a hazelnut picada - knolselderijsoep met een hazelnoot picada (GF-DF-SF-V)

Last week I made this soup for some friends and we all loved it!
It’s a heart warming soup for a cold day, the hazelnut picada gives it a nice crunch and tangy bite.
The word picada is not precise, the Catalan picada is a similar mixture, made in a mortar, but added to a dish at the end of the cooking time as a binder and some sort of secret touch. But I like the name and the word just popped up in my mind when I was thinking about it and eventually made it. What’s in a name, anyway!
Just make it and see what happens when you take this first bite!

Celeriac soup (4 pers)

1 celeriac, medium, peeled and in 2 cm chunks
1 onion, chopped
1 clove of garlic, chopped
12 stalks of parsley, chopped finely
1 big leek, in small rings
4 medium potatoes, peeled and in 2 cm chunks
1 l vegetable stock or boiling water

In a soup pan pour some olive oil and sweat the onion, garlic and parsley stalks with a pinch of salt for 5 minutes.
Add the leeks, stir them in and bake for another 3 minutes.
Add potatoes and celeriac, stir them in too for another 5 minutes with the lid on.
Then add water or stock and bring to the boil. Simmer till the veggies are cooked.
Add some more salt and pepper to your taste, blend the soup and serve with this great picada.


Hazelnut picada

60 g brown hazelnuts
zest and juice of an organic lemon
olive oil
pepper and salt
1 big tbsp fresh mint, chopped

Roast the hazelnuts in a dry, heavy frying pan. Let them cool.
Crush the hazelnuts roughly  in the mortar, add lemon zest, freshly ground pepper, salt, 1-2 tablespoons of lemon juice and 1-2 tablespoons of olive oil. Grind together, but not too fine, the hazelnut chunks must stay big enough for a good crunch. Stir in the mint, don’t crush it, it will become bitter!
Put a big spoonful on top of your celeriac soup.
Enjoy!



Knolselderijsoep (4 pers)

1 knolselderij, medium, geschild en in blokjes van 2 cm
1ui, fijngehakt
1 knoflookteen, fijngehakt
12 steeltjes peterselie, fijngehakt
1 grote prei, in ringen
4 middelgrote aardappelen, geschild en in blokjes van 2 cm
1 l groentebouillon of kokend water

Verwarm wat olijfolie in een grote soeppan en zweet daarin de ui, knoflook en peterseliesteeltjes ongeveer 5 minuten.
Voeg de preiringetjes toe en bak deze 3 minuten zachtjes mee.
Voeg dan aardappel en knolselderij toe en bak nog eens 5 minuten mee met een deksel op de pan.
Voeg dan water of bouillon toe en breng de soep aan de kook. Laat zachtjes de groentes gaar worden.
Voeg wat zout en peper naar smaak toe, blender de soep en serveer met deze heerlijke hazelnoot picada.


Hazelnoot picada

60 g bruine hazelnoten
rasp en sap van 1 bio citroen
olijfolie
peper en zout
1 volle el verse munt

Rooster de hazelnoten in een droge koekpan met dikke bodem. Laat afkoelen.
Plet de hazelnoten in een stenen vijzel, niet te fijn, ze moeten een bite blijven houden.
Voeg citroenrasp, peper en zout, 1-2 el citroensap en 1-2 el olijfolie toe en meng ze in de vijzel.
Roer als laatste de fijngesneden munt erdoor, niet kneuzen, dan wordt het bitter!
Schep een grote eetlepel op de knolselderijsoep en geniet!
