Seadies (GF- DF- SF - V)















Wat is het internet toch geweldig.
Ik vond weer 2 nieuwe sites over koken en gezond eten, niet per se gluten vrij, maar zeer inspirerend: http://glutendairyfree.co.uk/en http://www.anjasfood4thought.com/

Van Anja’s site maakte ik een bewerking van haar seaweed sesame squares.
Mijn zoon is allergisch voor zonnebloempitten, dus heb ik deze vervangen door pompoenpitten, rijk aan ijzer, magnesium en eiwit en nog lekker ook!
Ik heb ook wat zeezout toegevoegd, om een tegenhanger te bieden voor het zoete van de agavesiroop en de nori te accentueren.

Het is een snel klaar recept, wel een beetje knoeien, maar het resultaat is een gezond knapperig, mits koel en droog bewaard, goed houdbaar en verslavend lekkere glutenvrije snack!!
Maken dus en meenemen in een trommeltje voor een gezond tussendoortje!

Seadies (9 stuks)

30 g zwart sesamzaad
30 g wit sesamzaad
30 g pompoenpitten
30 g amandelen
1 ½ vel nori
60 ml agavesiroop
¼ tl zeezout

Verwarm de oven voor op 160˚C.

Rooster de zaden een voor een in een droge koekenpan met een dikke bodem, ongeveer 5 minuten. Schud af en toe.
Snijd de amandelen met een scherp mes in de lengte in schilfers.
Doe alle zaden en noten in een kom en voeg het zout toe en knip de nori erboven met een schaar in kleine stukjes.
Meng alles goed en voeg dan de agavesiroop toe. Meng nogmaals goed.

Leg het “deeg” op een bakplaat die je hebt bedekt met een stuk bakpapier en gebruik een siliconen spatel om het mengsel uit te spreiden in een vierkant van 0,8 – 1cm dik. Als het te plakkerig is, maak dan je spatel af en toe nat.
Bak de Seadies 15-20 minuten in het midden van de oven. Laat wat afkoelen op de bakplaat en snijd in 9 stukken als het baksel nog warm is. Gebruik een superscherp mes of een pizzasnijder.
Laat helemaal afkoelen en bewaar in een luchtdicht blik.

My son has an allergy for sunflower seeds so I replaced them for pumpkin seeds, rich in iron, magnesium and protein and very tasty too!
I added some sea salt to create a counterpart for the sweetness of the agave syrup and to accentuate the nori.

It’s a quick recipe, a bit messy, but the result is a healthy and crunchy, provided that you store them cool and airtight, and addictively good gluten free snack!!
Go to the kitchen and make them!
Take them with you in a small container to work, gym or park for a healthy bite!

Seadies ( 9 pcs)

30 g black sesame seeds
30 g white sesame seeds
30 g pumpkin seeds
30 g almonds
1 ½ sheet of nori
60 ml agave syrup
¼ tsp sea salt

Preheat the oven on 160˚C.
Roast the seeds one at a time for about 5 minutes in a dry frying pan with a heavy base. Stir occasionally.
Slice the almonds lengthwise after roasting.
Put all the seeds and nuts in a big bowl and mix with the sea salt. Cut the nori sheets in small pieces, I use a pair of scissors and mix with the rest. Then add the agave syrup and mix well.

Transfer the mixture to a baking tray which is covered with parchment paper and spread it evenly with a silicon spatula. When it is too sticky, wet the spatula from time to time.
Spread it into a square with a thickness of 0,8 – 1 cm and transfer to the oven. Bake the Seadies 15-20 minutes. Let them cool down on the baking tray and cut them into squares when they are still warm. Use a very sharp knife or a pizza cutter.
Store them when they are competely cool in a dry food container

The ultimate cookie (for now!) GF-DF-SF

Als ik geen koekjes meer heb dan word ik onrustig.
Ik wil per se een koekje bij de thee. Maar vandaag was mijn amandelmeel op en ook mijn kokosolie, dus eerst naar de stad voor een rondje fietsshoppen, gelukkig schijnt de zon en voelt het fris en gezond.

Al heel lang heb ik mijn puber beloofd om koekjes te ontwikkelen die je kunt uitsteken met een cookiecutter. Hij had deze namelijk voor me meegenomen uit New York, afgelopen herfst. Jee, zo lang geleden al weer!

Glutenvrije koekjes hebben toch echt de neiging om uit elkaar te vallen, dus bleef het bij beloven en nadenken. Vorige week heb ik de stap genomen, o.k., nu ga ik ze maken! We hebben ze meteen opgegeten, dus vandaag opnieuw aan de slag.

Deze koekjes zijn echt zó simpel, maar zó lekker!
Ik heb ze gedoopt in chocolade, maar ook zonder zijn ze “gewoon” lekker.
Knapperig en zeer smaakvol.

The ultimate cookie (1 bakplaat en nog wat)

150 g amandelmeel (zeer fijn gemalen)
100 g kokosmeel
½ tl zeezout
⅛ tl vanillezaad
¼ cup agavesiroop
¼ cup + 2 el gesmolten kokosolie

Verwarm de oven voor op 180˚C.

Meng in een kom de 2 meelsoorten goed door elkaar met het zeezout en het vanillezaad.
Maak een kuiltje in het midden en voeg de agavesiroop en de kokosolie toe, roer eerst en kneed dan tot een samenhangend deeg. Het is een klein beetje korrelig, dat geeft niet. Druk aan tot een deegbal en laat het 30 minuten rusten.

Rol het deeg uit op een vel bakpapier. Leg op het deeg een vel huishoudfolie.
Maak de deegplak zo dun mogelijk en steek met een cookiecutter koekjes uit of snijd rechthoekjes met een pizzasnijder.

Leg de cookies op een bakplaat die je bedekt met bakpapier en bak ze in het midden van de oven 5-7 minuten tot de randjes gaan bruinen. Blijf erbij want ze verbranden snel!!




When I don’t have any cookies left I become restless.
I really need a cookie with my tea.
But today I was out of almond meal and coconut oil, so I first had to go on my bike in town to fetch everything. Luckily the sun was shining and it was feeling fresh and healthy outside.

For a long time I promised my adolescent son to develop cookies which you can cut out with a cookie cutter. He brought me these ones from New York last fall. Wow, how time flies!

Gluten free cookies have the tendency to fall apart easily, so for a long time I kept on promising and thinking about it. Last week I took the step and I made these wonderful cookies. We ate them all, so today I made another batch.

These cookies are dead simple to make and gorgeous!
I dipped some of them in melted chocolate, but “plain” they are “plainly” good.
Crunchy and very tasteful.

The ultimate cookie ( 1 baking tray and some more)

150 g almond flour (finely grounded)
100 g coconut flour
½ tsp sea salt
⅛ tsp vanilla pod seeds
¼ cup agave syrup
¼ cup + 2 tbsp coconut oil Preheat the oven on 180˚C.

Mix the 2 flours in a bowl together with the sea salt and the vanilla seeds.
Make a hole in the middle and pour in the agave syrup and coconut oil, stir in first and then knead it by hand till the dough comes together. It will stay a bit crumbly, no problem, just press it into a ball of dough and let it rest for 30 minutes.

Roll out the dough on a sheet of baking paper. Put a sheet of cling foil on top of the dough.
Make the dough as thin as you can, ¼ to ⅛ inch, and cut the cookies with a cookie cutter or just cut rectangles with a pizza cutter!

Put the cookies on a baking tray covered with baking paper and bake them in the middle of the oven about 5-7 minutes until the edges begin to brown. Stay with them, because they burn easily!

broccoli-tomaat pasta - broccoli-tomato pasta (GF SF)

Ik ga niets zeggen over het weer, maar over de kleur van het leven, de grijsheid van het bestaan in januari.
Er is zo weinig kleur als ik naar buiten kijk, zelfs het weinige groen is grijs, over alles hangt een sluier van grijs.

Ik probeer zelf er alles aan te doen om me niet grijs te voelen.
• Ik doe veel licht aan in huis
• Ik brand kaarsen
• Ik ga iedere dag een rondje wandelen buiten
• Ik breng kleur in mijn kleding
• Ik kook lekkere en kleurige gerechten


Dit is een makkelijk en heerlijk zacht pastagerecht.
Super als je moe bent en niet zo in de stemming voor ingewikkelde kookkunsten.
Je zult zien, als het op je bord ligt, dat de kleuren je blij maken en de smaak troostend zal zijn, echt comfortfood.

Broccoli-tomaatpasta (3pers)

4 tomaten, in 4-in oven bakken met peper, zout, knoflook, ui en olijfolie
1 stronk broccoli, roosjes stomen
250 g glutenvrije pasta
100 g mozzarella
150 g geraspte kaas
evt. verse basilicum, grof gescheurd
peper en zout, naar smaak

Verwarm de oven voor op 220˚ C.

Snijd de tomaten in kwarten, leg ze op een bakplaat en bestrooi met peper, zout, 1 teen knoflook in plakjes, 1 ui in halvemaantjes en wat olijfolie. Bak de tomaten ongeveer 20 minuten en zet ze apart.
Zet de oventemperatuur op 180˚ C.

Ondertussen stoom je de broccoliroosjes tot ze net gaar zijn en snijd je de bol mozzarella in grove stukken.

Kook de pasta gaar in zeer ruim kokend water met wat zout. Dit is erg belangrijk voor glutenvrije pasta, want er komt veel zetmeel vrij, waardoor de pasta plakkerig wordt als je te weinig water gebruik.

Neem een ovenschaal en giet wat olijfolie op de bodem.
Giet de pasta af en doe de pasta in de schaal, meng met het tomatenmengsel, de broccoli en de kazen en evt. de verse basilicum. Proef en bestrooi met peper en zout naar smaak.

Zet de schaal in de oven en bak nog eens 20 minuten in de oven



I’m not gonna mention the weather, but I want to say something about the colour of life, the greyness of being in January.
There is such a lack of colour, when I look outside, even the small bits of green are grey, there is a grey veil over everything.

I try hard not to feel grey myself.
• I turn on a lot of lights in my house
• I burn candles
• Everyday I go for a walk in the park
• I bring colour to my clothes
• I cook nice and colourful dishes

This is a very easy and soothing pasta.
Great when your tired and not in the mood for great cooking operations and when you have it on your plate, the colours will make you happy and the tastes will comfort you, you’ll see.

Broccoli-tomato pasta (3 pers)

4 tomatoes, in quarters, mixed with pepper, salt, garlic, onion and olive oil
1 stalk of broccoli, in rosettes
250 g gluten free pasta
100 g mozzarella
150 g grated cheese
fresh basil, roughly torn
pepper and salt, to your taste

Preheat the oven on 220˚ C.

slice the tomatoes in quarters, lay them on a baking tray and sprinkle with pepper, salt, 1 clove of garlic in thin slices, 1 onion in half moons and some olive oil. Bake them about 20 minutes in the hot oven and take them out.
Lower the oven temperature to 180˚ C.

In the meantime you steam the broccoli rosettes till they are just cooked. Cut the mozzarella in rough pieces.

Cook the pasta in a large pan with boiling water. It’s important with gluten free pasta to use a big amount of water, because otherwise the starch will turn the pasta very sticky!
Take an oven dish and pour some olive oil on the bottom.
Drain the pasta and cast it in the dish. Mix it with the tomatoes, the broccoli, the cheeses and the basil. Taste and add pepper or salt to your taste.

vadapa (GF - DF - SF) (plat brood 9 - flat bread 9)

Een vadapa is een dunne, krokante pannenkoek, gemaakt van rijstmeel en gevuld met ui, koriander en peper.
Ik heb er nog 2 eetlepels chana dal door gedaan, die ik 30 minuten had laten weken in water. Eigenlijk heet het dan geen vadapa meer, maar een sarva pindi. Ik ben gelukkig geen purist!
Het is ook erg lekker met komijnzaad of sesamzaad en verse gemberwortel.
Het is snel klaar en makkelijk te maken; je kunt ze bewaren en de volgende dag bij de lunch eten, ze zijn dan zelfs als wrap te gebruiken, erg lekker!

Ik vond deze recepten op deze zeer inspirerende site over de Indiaase keuken.

Vadapa (3 stuks)

75 g bruine rijstmeel
50 g ketanmeel
handvol koriander, fijngehakt
1 groene peper, fijngehakt
1 kleine ui, zeer fijngehakt
zout
water

Mix de 2 meelsoorten in een kom.
Voeg de koriander, ui en peper en zout toe en langzaam steeds een scheutje water.
Kneed tot een stevig en soepel deeg.

Vet een koekenpan in met wat zonnebloemolie.
Verdeel het deeg in 3 gelijke delen en maak er ballen van. Maak de deegbal een beetje plat. Leg hem in het midden van de pan en druk met de hand het deeg zo dun mogelijk uit tot je een mooie pannenkoek hebt.
Zet de pan op het vuur en bak ongeveer 3 minuten per kant tot de vadapa goudbruin is.
Op hoog vuur voor een meer zachte vadapa op laag vuur voor een meer krokant resultaat.

Laat de pan eerst afkoelen voor je de volgende bakt.
Tip: onder de koude kraan of meerdere pannen gebruiken!


A vadapa is a thin and crispy pancake, made of rice flour and filled with onion, coriander and green chili.
I also put in 2 tablespoons of soaked (30 minutes) chana dal. Actually it is then called sarva pindi, but I am not a purist!
It's also really nice with some cumin seeds or sesame seeds and freshly grated gingerroot.
It's an easy to make dish; you can store them in the fridge and eat them the next day for lunch as a wrap!
I found these dishes on this wonderfully inspiring website on Indian cooking.

Vadapa (3 pcs)

75 g brown rice flour
50 g sweet rice flour (ketan flour)
handful of coriander, finely chopped
1 green pepper, finely chopped
1 small onion, very finely chopped
sea salt
water


Mix both flours.
Add the rest of the ingredients and slowly add the water to form a stiff but flexible dough.

Grease your baking pan with a little vegetable oil.
Divide the dough in 3 pieces.
Take a piece of dough form it into a ball and make it a bit flatter in your hands.
Put it in the pan and press with your hand till you have a thin pancake.
Put the pan on the gas and bake the vadapa about 3 minutes on both sides.
On high heat for a more soft and on low heat for a crunchy result.

Let the pan cool down before you bake the next one.
Tip: under cold water or use more pans!

allam rasam - gemberrasam - ginger rasam (GF - DF)

Dit weekend maakte ik voor mezelf deze heerlijke Indiase maaltijd, lekker licht en flink pittig.
Vast om in de stemming te komen, want volgende maand vlieg ik met mijn lief naar Zuid-India en gaan we daar een maand rondkijken en -reizen!

In Zuid-India wordt vooral rijst gegeten, op allerlei manieren.
Rasam is een soort soepje dat je overal bij krijgt, opwekkend, pittig en spicy.
Het is zeer eenvoudig te maken; in deze allam rasam heb ik gember gedaan, verwarmend en aardend.
Erbij at ik koolmetzhukkupurathi en maakte ik vadapa’s, krokante rijstpannenkoekjes die ik volgende keer zal posten.

Allam rasam – gemberrasam (4 pers)

2 el zonnebloemolie
1 tl komijnzaad
1 tl zwart mosterdzaad
1 gedroogde rode peper
1 groene peper, ontzaad en fijngehakt
1-3 knoflooktenen, fijngehakt
2 cm gemberwortel, fijngesneden
8 curryblaadjes
½ tl kurkumzout
3 gepelde tomaten (uit blik), grofgehakt
1 handvol koriander, grofgehakt
1 tl rasampoeder*
750 ml water

*rasampoeder is een smaakmaker dat bestaat uit het vijzelen van:
1 tl zwarte peperkorrels
1 tl komijnzaad
8 curryblaadjes
1 teen knoflook

Maak eerst de rasampoeder. Zet even apart.

Verwarm de olie in een soeppan en gooi daarin de komijn, mosterdzaadjes, gedroogde peper, groene peper, knoflook, gember en curryblaadjes. Bak 1 minuutje.
Doe het gas laag en voeg de turmeric toe met de tomaten, koriander, wat zout en laat dit een minuut of 8 zachtjes pruttelen.
Dan is het tijd om het water toe te voegen, het rasampoeder en 1 tl suiker (ik gebruik een stukje goela djawa of palmsuiker).
Breng het aan de kook en laat het nog 5 minuten trekken. Proef en voeg eventueel nog wat zout naar smaak toe. De volgende dag zal de rasam nog pittiger zijn als je de gedroogde peper erin laat zitten!! MMM.

To get in the mood of South-India, where I’ll go next month with my lover to look and travel around for a month!

In the south of India rice is the main staple and they eat it in all ways.
Rasam is a kind of soupy side dish, hat accompanies almost every dish., it’s digestive, hot and spicy.
It’s easy to make; in this allam rasam I put fresh gingerroot, so it is warming and grounding.
With it I ate cabbagemetzhukkupurathi and I made vadapa, crunchy rice pancakes which I will post next time.

Allam rasam – ginger rasam (4 pers)

2 tbs sunfloweroil
1 tsp cuminseed
1 tsp black mustardseed
1 dried red chilli
1 green chilli, deseeded and chopped
1-3 garlic cloves, finely chopped
2 cm gingerroot, finely chopped
8 curry leaves
½ tsp turmeric
3 peeled tomatoes (from a can), roughly chopped
1 handful of coriander, chopped
1 tsp rasam powder*
750 ml water

*rasampowder is a condiment (I think) that you make by rubbing in a mortar the following ingredients:
1 tsp black peppercorns
1 tsp cumin seed
8 curry leaves
1 clove of garlic

Heat the oil in a soup pan and throw in the cumin, mustard seeds, dry chili, green chili, garlic, ginger and curry leaves. Bake 1 minute.
Lower the gas and put in the turmeric with the tomatoes, coriander, some salt and simmer it for about 8 minutes.
Then it’s time for the water, rasam powder and 1 teaspoon of sugar (I use gula djawa, palm sugar). Bring it to the boil and let it simmer for 5 minutes. Taste and put in extra salt if you want. The next day it will be even more spicy when you leave the chili in!! MMM.

Chili hazelnoot crackers – chili hazelnut crackers (GF gluten free – SF sugar free )

Deze crackers zijn echt verslavend lekker.
In december had ik de versie van The Gluten –Free Goddess gemaakt met gepelde hazelnoten, maar ik dacht waarom zou ik de vliesjes niet gewoon opeten, levert weer wat (onoplosbare) vezels op.
Hazelnoten zijn rijk aan vitamine B1,B6 en E en een goede bron van ijzer, magnesium en calcium.
Deze versie is lekker pittig door het gebruik van chiliflakes.
Ze zijn zo klaar, maar pas wel op, ze zijn echt verslavend lekker!!

Chili hazelnootcrackers (1 bakplaat)

100 g hazelnoten, met bruin vliesje
65 g bruine rijstmeel
37, 5 g tapiocameel
3,5 g zeezout
1 el olijfolie
30 ml melk of sojamelk
30 ml water
1 biologisch eitje, losgeklopt

Verwarm de oven voor op 180˚ C.

Rooster de hazelnoten droog in een koekenpan met dikke bodem, een minuut of 10, terwijl je steeds schudt. Laat ze afkoelen en maal ze superfijn.
Meng de gemalen hazelnoten met de rest van de droge ingrediënten.
Maak een kuiltje in het midden en giet 1 voor 1 de natte ingrediënten erbij.
Roer stevig met een pollepel totdat het een enigszins plakkerig geheel is. Als het te plakkerig is, voeg dan lepelsgewijs nog wat rijstmeel toe. Het blijft plakkerig!

Leg een vel bakpapier op je werkblad en schep het deeg erop. Spreid het enigszins uit met een natte spatel. Leg er dan een flink stuk huishoudfolie op en rol het deeg uit tot een zo dun mogelijke plak, 3-4 mm. Hoe dunner het deeg, hoe knapperiger de crackers worden!

Haal het folie eraf en snijd, ik gebruik een pizzasnijder, de deegplak in crackervormige rechthoekjes. Bestrooi ze met wat extra zeezoutflakes en met chiliflakes.

Schuif de voorgesneden deegplak met bakpapier en al op een bakplaat en bak de crackers in 13-18 minuten goudbruin en knapperig. Ze worden nog ietsje knapperiger bij het afkoelen.
Laat eerst afkoelen en breek de deegplak dan in de voorgesneden crackers.



These crackers are gorgeously addictive.
In December I made the version of The Gluten-Free Goddess with peeled hazelnuts, but this time I decided to eat them with the skin on (not the outer one!).

This version is nice and spicy by using chilli flakes.
They are easy to make, but beware, they are truly addictive!!

Chili hazelnut crackers (1 baking tray)

100 g hazelnuts, with the soft brown skin on
65 g brown rice flour
37,5 g tapioca flour
3,5 g sea salt
1 tbs olive oil, extra virgin
30 ml milk or soy milk
30 ml water
1 organic egg, loosely beaten

Toast the hazelnuts in a frying pan or skillet for about 10 minutes till you can smell them. Shake them from time to time.
Let them cool and grind them finely.
Mix the hazelnut flour with the rest of the dry ingredients in a bowl. Make a hole in the middle.
Put in the wet ingredients one at a time and then whisk with a wooden or other firm spoon till you get a thick, somewhat sticky dough. When it’s too sticky add some rice flour.

Put a sheet of baking paper on your bench and place the dough on top of it. Use a wet spatula too flatten the dough as much as possible. Then lay a big sheet of cling film on top of it and with a rolling pin you flatten the dough in a rectangle, till it’s about 3-4 mm. The thinner the crunchier!

Take away the cling film and cut the dough with a pizza cutter in small cracker-like squares.
Sprinkle some extra sea salt flakes (if you like) and chilli flakes on top and put the pre-cut dough in the oven. Bake the crackers in the oven for about 13-18 minutes.
When they cool, they get some more crunch. They must be light-golden.
After cooling you can break them on the pre-cut lines.

Verwarmende wintersoep – warming winter soup (GF gluten free – DF dairy free)

Na gisteren 5 keer kleddernat te zijn geregend, ben ik vandaag met de bus op pad gegaan. En gelukkig werd het droog, zodat ik de terugweg te voet ben gegaan.
Wandelen is een van mijn favoriete vormen van beweging, het is buiten, je kunt het overal doen – in de stad, in de natuur, aan de kust -, je bepaalt je eigen ritme - al naar gelang je behoefte - , het is een eenvoudige manier om van A naar B te gaan – geen files - en het is gratis!

Na een stevig stuk wandelen in dit miezerige, donkere weer is het fijn om thuis te komen, vooral als er dan een heerlijk verwarmend kopje soep op je staat te wachten.
Deze soep had ik vanmorgen gemaakt, zodat de smaken goed kunnen intrekken, de soep wordt er alleen maar lekkerder van.

Verwarmende wintersoep (een grote pan vol)
2 el zonnebloemolie
1 tl komijnzaad
1 tl korianderzaad
snufje hing/asafoetida
2 el droge urad dal*
2 tenen knoflook, fijngehakt
1 el gemberwortel, fijngesneden of geraspt
2 winterwortels, grofgeraspt, 200 g
½ bloemkool, in roosjes, 400g
1 prei, in ringen, 175 g
¼ groene of savooie kool, 250 g, in dunne reepjes
1 handvol peterselie steeltjes, fijngehakt
1,5 l groentebouillon
zeezout, versgemalen zwarte peper naar smaak
citroensap

Verwarm de olie in een grote soeppan.
Bak hier zachtjes het komijnzaad, korianderzaad en de hing ongeveer 3 minuten tot ze bruin worden.
Voeg dan de urad dal, knoflook en gemberwortel toe en laat nog eens 3 minuten meebakken.
Voeg dan alle groente toe en de groentebouillon en breng het aan de kook. Zet het vuur dan laag en doe een deksel op de pan. Laat de soep zachtjes garen, minimaal 30 minuten.
Proef en voeg eventueel nog wat zout en versgemalen peper toe.
Ik pureer de soep, hoeft niet!.
Eet-ze.

* urad dal: of ook wel zwarte mungbonen genoemd zijn een zeer eiwitrijke peulvrucht die in India veel wordt gebruikt, vooral in West-Bengalen en in Zuid-India. Het wordt heel of gespleten of als meel toegepast.

Yesterday I was so lucky to be soaked 5 times on my trips on the bike. Today I decided to take the bus. Fortunately it became dry after my visit to the library and I could continue my way on foot.
Walking is one of my favourite ways of movement, it’s outdoors, you can do it everywhere – in town, in nature, at the coast-, you set your own rhythm – depending on your mood -, it’s an easy way to go from A to B – no queuing and it’s for free!!

After a brisk walk in this miserable, dark weather it’s good to come home again, especially when there is a delicious warming soup waiting for you.
I made the soup this morning, so all the tastes have come together, when you leave this soup it will only become better. (not too long ;)

Warming winter soup(a big pot)
2 tbs sunflower oil
1 tsp cumin seeds
1 tsp coriander seeds
pinch of hing/asafoetida
2 tbs urad dal*
2 cloves of garlic, finely chopped
1 tbs gingerroot, finely sliced or grated
2 carrots, coarsely grated, 200 g
½ cauliflower, in rosets, 400 g
1 leek, in rings, 175 g
¼ Savoy cabbage, 250 g, finely shredded
1 handful of parsley stalks, finely chopped
1,5 l vegetable stock
sea salt, freshly ground black pepper
lemon, only the juice

Heat the oil in a big soup pan.
Sauté the cumin, coriander with the hing for about 3 minutes till they brown.
Then add the urad dal, ginger and garlic and sauté for 3 minutes.
Add all the vegetables and the stock and bring it to the boil. When it’s boiling, reduce the heat and close the pan with a lid. Let it simmer for at least 30 minutes.
Then taste and add salt and pepper to your liking.
I puree the soup with an immersion blender, but it’s not necessary!

*Urad dal: or black mung bean is a pulse originally Indian, full of protein. It is being used whole, split and as a flour, especially in the South-India and Bengal.

amandel-cranberry cookie – almond cranberry cookie (GF – DF – SF-V)

Deze cookies zijn snel te bereiden, ze zijn overheerlijk en ook nog eens gezond.
Wat wil je nog meer zo aan het begin van een nieuw jaar. Nog meer cookies? Nou, ik ben er mee bezig. Koekjes met minder zoet en vet en toch superlekker.
Want ik kan niet zonder een koekje bij de thee, liefst 3 of 4, maar voorlopig houd ik het bij 1 of soms toch 2.

amandel-cranberrie cookies (10 stuks)

100g amandelmeel
25g kokosmeel (Aman Prana)
¼ tl zeezout
¼ tl vanillepoeder
1 tl wijnsteenzuurbakpoeder
60 ml zonnebloemolie
60 ml rijststroop
35 g gedroogde cranberry’s, grofgehakt
35 g amandelen, in de lengte in schilfers gehakt

Verwarm de oven voor op 175˚ C.

Meng de meelsoorten samen met het zout, vanillepoeder en de wijnsteenzuurbakpoeder.
Meng de olie en de rijststroop en giet het bij de droge ingrediënten.
Roer alles nogmaals door elkaar. Voeg dan de cranberries en gehakte amandelen toe, meng goed.
Kneed dan snel met koele hand en vorm 10 koekjes, die je op een bakplaat bedekt met bakpapier legt. Bak de koekjes goudbruin in 10-15 minuten, afhankelijk van je oven. Dus let goed op dat ze niet te bruin worden, want dan worden ze bitter.





These cookies are very quickly to make, they are scrumptious and they are healthy, any way I think so. So, what else do you need at this time of year. More cookies? Well, I’m busy with it. Cookies with less sweet en fat and still delicious.
Because what’s life without cookies, I can’t do without a cookie with my tea. I prefer 3 or 4, but as yet I stick to 1 or maybe 2.

Almond cranberry cookie (10 pcs)

100 g almond meal
25 g coconut flour
¼ tsp sea salt
¼ tsp vanilla powder
1 tsp tartaric acid baking powder
60 ml sunflower oil
60 ml rice syrup
35 g dried cranberries, coarsely chopped
35 g almonds, slivered lengthwise

Preheat your oven on 175˚ C or 350 F.

Mix the dry ingredients in a bowl.
Mix the oil and rice syrup in another and add to the dry ingredients.
Mix everything well. Then add the chopped cranberries and almonds and knead everything quickly with a cool hand.
Form 10 cookies and place them on a baking tray covered with baking paper.
Bake the cookies in the middle of the oven for about 10-15 minutes depending on your oven.
Pay attention at the end of the baking time! They mustn’t brown too much, because they will taste bitter.

teffbagels (GF- DF)

Teff doet mij goed. Het is een volwaardig graan, rijk aan ijzer, magnesium en eiwitten die wij als coeliaken vaak tekort komen. Zeker als je geen vlees eet zoals ik. Ik zie teff als een verrijking. Daarnaast vind ik de smaak van teff ook erg goed. Ik weet dat sommige coeliaken het zwaar vinden, maar zo zijn er ook mensen die zuurdesembrood zwaar vinden. Het is een kwestie van gewenning denk ik. Nu dacht ik zo om de bagels die ik pas ontwikkeld heb te verrijken met teff, zodat het een broodje gezonder werd!! En voilà, hier zijn ze dan en ook erg lekker.

Voor 8 bagels
80 g bruine teff
50 g boekweitmeel
50 g tapiocameel
30 g ketanmeel of kleefrijstmeel
70 g aardappelmeel (let op: geen aardappelzetmeel)
100 g bruine rijstmeel
5 g zeezout
6 g gebroken lijnzaad
9 g xanthangom
9 g gedroogde gist
2 el honing
2 el zonnebloemolie
2 tl ciderazijn
310 ml warm water
1 ei
1 tl suiker (optioneel)

Ga te werk zoals in het recept voor glutenvrije bagels.

Wat mij opviel is dat de bagels na het rijzen wat kwetsbaarder waren, dus schep ze op met een schuimspaan en laat ze zo in het kokende water glijden. Als je ze met de hand pakt vallen ze snel uit elkaar.
Ze werden heerlijk luchtig en 2 dagen na het bakken nog erg goed eetbaar. En dat voor een glutenvrij broodje!!



I love teff, it’s a benefactor for my health. It’s a fullgrain, rich in iron, magnesium, proteins and essential amino acids. All the things we celiacs often deficit. Especially as a vegetarian like me. I see teff as an enrichment. Besides I like the taste of it very much. I know that some celiacs think it’s too heavy for them, but I think it’s the same with people who think that sourdough bread is too much for them. It’s a matter of getting used to.
I developed glutenfree bagels some weeks ago ( see my post of 21 december)and so I decided to make a teff version today.
Et voilà! Here they are and they are good!!

Teff bagels (8pcs)

80 g brown teff
50 g buckwheat flour
50 g tapioca flour
30 g ketan flour or glutinous rice flour
70 g potato flour (no potato starch!!)
100 g brown rice flour
5 g seasalt
6 g broken flax seed
9 g xanthan gum
9 g dry yeast
2 tbsp honey
2 tbsp sunflower oil
2 tsp cider vinegar
310 ml warm water
1 organic egg
1 tsp sugar (opt.)


Line a baking tray with baking paper and sprinkle lightly with corn flour.
On a big plate sprinkle brown rice flour for coating the bagels.

Put all the flours in a big bowl and mix thoroughly with the seasalt, flax seed, xanthan gum and yeast. Make a hole in the middle.

In another bowl you mix well the honey, oil, vinegar and the warm water and then you pour it in the middle of the flour mixture. Add the egg and stir everything powerful with a wooden or other spoon so that a dough emerges. When it’s too sticky you can add a tablespoon of teff at a time. But it must be a thick and sticky dough.


Then with the spoon you scoop a big spoonful of dough into your hand and into the rice flour. Then you form a ball which you form into a bagel. Make a hole in the middle. The rice flour keeps it from sticking. When it’s formed you put it on the baking tray. Make about 8 bagels in this way.
Cover the baking tray with oiled clingfilm and let them rise in a warm spot for at least 30 minutes.

Then heat the oven on 200˚C.
Put a large pan filled with water on the stove and bring it to the boil. Put in the sugar if you want to, it gives the bagels a shiny outlook. It’s not necessary!
When the water boils you cook the bagels 1, 2 or 3 at a time 30 seconds on one side, flip them over and 30 seconds on the other side.
Let them dry a bit on a wire rack and put them back on the baking tray, where you shook off the left corn flour.

At this stage, they are a bit moist, you can sprinkle the bagels with any seeds you want, like sesame seeds or poppy seeds.

Bake them in the hot oven for about 20 minutes.
Depending on your oven it will take 1 or 2 minutes more. Keep a close watch on them at the end of the baking time! They must be golden brown and the underside firm.

They stay on very tasty, also after 2 days, and that for a gluten free roll!!

linzenburgers - lentilburgers (GF gluten-free)

Ik heb een nieuw kookboek aan mezelf kado gedaan: Food for friends.
Het is een vegetarisch kookboek geschreven door de enthousiaste eigenaars en kok van het Food for Friends restaurant in Brighton. Wat zo prettig aan het boek is is dat het rekening houdt met allerlei allergieën en voedselintoleranties, veel recepten zijn glutenvrij en/of zuivelvrij. Het is een lekker boek, kortom!

Uit het boek heb ik de al genoemde en in mijn huis reeds zeer geliefde linzenburgers gemaakt, wel wat aangepast, want dat kan ik toch niet laten! Ze zijn knapperig aan de buitenkant en heerlijk zacht en sappig aan de binnenkant.

Linzenburgers (6 stuks)

150 g rode linzen
1 ui, fijngehakt
1 lenteuitje, fijngehakt
1 teen knoflook, fijngehakt
½ rode paprika, in mini blokjes
100 g mozzarella, in kleine blokjes gesneden
25 g geraspte parmezaan
1 flinke handvol platte peterselie, fijngehakt
zeezout en peper
2-3 el kikkererwtenmeel of ander glutenvrij meel
amandelmeel om ze doorheen te rollen

Doe de gewassen linzen in een pan en bedek ze met ruim koud water. Breng aan de kook en laat ze zachtjes garen met een deksel op de pan – ongeveer 15 minuten. Als de linzen zacht zijn, giet ze af en laat ze in de vergiet afkoelen.

Bak ondertussen de ui, knoflook en paprika in wat olijfolie tot ze zacht zijn, ongeveer 8 minuten.
Doe de linzen in een ruime kom en voeg het uienmengsel toe, samen met de kazen en de peterselie. Mix alles goed door elkaar en voeg zeezout en peper naar smaak toe, proef goed!

Voeg dan het meel toe en roer goed door, het moet een stevig geheel worden waar je burgers van kunt vormen. Als je denkt dat het nog te slap is voeg dan, per lepel!! wat meel toe.

Strooi op een groot bord amandelmeel.
Vorm met de hand 6 ballen van het mengsel en maak er platte burgers van, die je door het amandelmeel rolt zodat je een korstje krijgt. Leg de burgers op een schoon bord, dek af met huishoudfolie en zet ze minimaal 30 minuten in de koelkast. Dan worden ze nog steviger.

Verwarm de oven voor op 200˚C.

Bak de burgers in wat olijfolie in de koekenpan aan elke kant ongeveer 3 minuten voor.
Leg ze dan op een bakblik en bak ze af in de oven, ongeveer 6 minuten.


I gave myself a new cookbook: Food for Friends.

From the book I made the already announced and in my house already beloved lentilburgers; I changed them a bit, because I can’t help myself. They are crispy on the outside and mmmoist and tasty inside.

Lentilburgers (6 pcs)

150 g red lentils
1 onion, chopped
1 spring onion, finely chopped
1 clove of garlic, finely chopped
½ red pepper, finely chopped
olive oil
100 g mozzarella, in small pieces or grated
25 g parmesan, grated
1 big handful of flat-leaved parsley, finely chopped
sea salt and pepper
2-3 tbsp of chickpea flour or an other gluten-free flour
almond flour for coating

Put the washed lentils in a pan and cover them with cold water. Bring to the boil, reduce the heat and simmer until they are cooked – about 15 minutes. When the lentils are soft, drain them well and let them cool.

Meanwhile sauté the onions, garlic and pepper in some olive oil till they are soft – about 8 minutes.
Put the lentils in a large bowl, add the onion mix, and then the cheeses and parsley.
Mix well and season with sea salt and pepper, taste good!
Then add the flour and stir it in well, check the consistency. It must be thick enough to hold together and allow you to make patties; if not, add a little more flour, one spoonful at a time.

Sprinkle almond flour on a big plate.
Make 6 balls of the mixture and gently form patties from them. Coat them with almond flour and put them on a clean plate. Wrap with clingfilm and put them in the fridge for at least 30 minutes, they will set some more.

Preheat the oven to 200˚C/gas mark 6.
When you are ready to cook, pan-fry the burgers in a little olive oil for 3 minutes on either side and then put them on a baking tray. Finish them off in the oven for 6 minutes.

bruine rijst risotto - brown rice risotto (GF gluten free - DF dairy free)

Ik begin dit jaar met wat gezonde recepten, even geen koekjes en taart en andere lekkere hapjes.
Daar moet ik wel bij zeggen dat lekker eten altijd voorop staat, maar we gaan het even wat eenvoudiger doen, enigszins versoberen. Als je van alles wat minder tot je neemt, wat meer gaat bewegen, nu de sneeuw weg is, is dat ook wat gemakkelijker, dan zal je zien dat je vanzelf wat aangekomen pondjes zult kwijtraken.

Ik ben absoluut geen dieet goeroe, maar ik weet wel dat iedereen in de winter wat aankomt, dat is ook nodig, een biologische reactie op de kou en het gebrek aan licht; in de winterstand bewegen we wat minder, zitten we wat meer, met vrienden en familie en nemen daardoor ook wat meer tot ons. Daarom is matigen het beste dieet. Overal wat minder van!

Nu, in het nieuwe jaar heb ik altijd het gevoel van een fris begin; het liefste wil ik nu ook dat het voorjaar meteen begint, met uitbottende takken en wat jonge lichtgroene scheuten uit de grond. Ik wil de ramen opengooien, mijn dikke sokken, jas en muts in de kast proppen en op slippers het leven aangaan.

Helaas, zover is het nog niet, maar om je goed te voelen, is het belangrijk om gezond te eten, een balans te vinden tussen bewegen en rust, een goede nachtrust en wat vooral, voor mij in ieder geval, belangrijk is momenten van niets doen, even naar buiten staren, of weg te dagdromen, om zo weer inspiratie te krijgen.

We worden overvoerd met prikkels en dat is voor mij de nummer 1 uitputter.

Daarom begin ik dit jaar opnieuw met minder prikkels, niet teveel muziek om me heen, 1 ding tegelijk doen, niet te lang achter de computer en af en toe een dagje niet, niet al het nieuws in de wereld willen volgen, niet op elke impuls reageren.
Wat erg goed helpt is iedere keer als je een impuls voelt om weer even iets tussendoor te doen is te stoppen met wat je doet en 3 keer heel bewust in- en uit te ademen. Dit geeft letterlijk rust en ruimte in hoofd en lijf.

Ik maak vandaag een bruine rijst risotto, lekker sober, maar ook gewoon lekker.
Ik eet er een linzenburger bij en gestoomde broccoli.

Bruine rijst risotto (3 pers)

225g bruine basmati rijst
1 ui, gesnipperd
1 teen knoflook, fijngehakt
1 stengel bleekselderij, in blokjes
1 preitje, in fijne ringetjes
1 stuk wortel, in blokjes
½ blik gepelde tomaten, fijngehakt
1 flinke hand platte peterselie, fijngehakt
Zout en peper

Fruit de ui en de knoflook in wat olijfolie in een pan met dikke bodem.
Voeg na 5 minuten de bleekselderij, wortel en prei toe en bak nog 5 minuten mee.
Voeg dan de rijst toe en roerbak zachtjes een paar minuten mee zodat alle korrels glanzen van de olijfolie.
Voeg dan de gepelde tomaten en de peterselie toe, roer alles goed door, breng op smaak met zout en peper en voeg zoveel water toe dat er 2 vingers vocht boven de rijst staat. Breng aan de kook, roer alles een keer goed door en doe dan een deksel op de pan. Kook de rijst ongeveer 30- 40 minuten op het allerkleinste pitje dat je hebt of zet de pan op een warmhoudplaatje. Kijk of de rijst gaar is, roer nog eens goed door en proef of er nog zout of peper bij moet. Als al het water (bijna) is geabsorbeerd gaart de rijst nog even door, dus kun je het gas uitzetten, het blijft nog lang warm.

Je kunt dit gerecht heel makkelijk bewerken door er andere kruiden aan toe te voegen zoals tijm en oregano. Je kunt er kaas doorheen roeren of pijnboompitten.
Ik houd het bij simpel, maar wees vooral creatief!

I’ll start this year with some healthy recipes, for now no cookies, pies and other goodies.

That doesn’t mean that we are gonna eat dull food, no way, for me eating is always about nice food. But we are gonna sober up a bit. When you take less from everything, exercise a bit more, now with the snow gone it’s already much easier, you will loose some extra weight before you know it!

I’m no diet guru, not at all, but what I do know is that everyone gains some weight in winter, this is a necessary, biological reaction to cold and lack of light. In the winter mode we move less, sit more, with our friends and relatives, and take some more of everything. So from now on moderation is the best diet, I think. Just a little less from everything, Less is More!

Now, in this new beginning I got the feeling of a fresh start and I’d love it if spring would begin right now, with it’s developing branches and sprouting young greens. I want to open my windows, throw away my woollen socks, winter coat and cap and start this new year on my slippers.

Unfortunately, it’s not spring yet, but to feel good anyway it is important to eat well, find a balance between movement and rest, have a good night sleep and above all, at least for me it is, to plan moments of doing nothing, to just stare out of the window, to take time to daydream, in order to restore inspiration.

We are being overloaded with stimuli and for me that is energy-burner no.1.

That’s why I begin this year with less stimulation, in any sense, less music, less eating and drinking, doing 1 thing at a time. For me a big help is focussing on my breath; everytime a new stimulus comes up I stop doing and breathe 3 times in and out, feeling the breath. This brings rest and space in my body and mind.

Today I’m making a brown rice risotto, nice and sober. I eat it with a lentil burger and some steamed broccoli.


Brown rice risotto (3 pers,GF, DF)

225 g brown basmati rice
1 onion, medium, sliced
1 clove of garlic, finely chopped
1 stick of celery, finely diced
1 small leek, in fine rings
1 small carrot, or 1 piece of winter carrot, finely diced
½ can of plum tomatoes, chopped with juice
1 handful flat-leaf parsley, roughly chopped
salt and pepper
olive oil
warm water

Sauté the onion with the garlic in the olive oil in a saucepan with a heavy base for about 5 minutes.
Then add the celery, leek and carrot and sauté for another 5 minutes.
Add the rice and stir it thoroughly so that all the rice grains are covered with oil. After some more minutes, add the plum tomatoes and the parsley, stir well and season with sea salt and pepper. Pour in the water till there is a 2-finger amount of it above the rice. Bring it to the boil and put a lid on the saucepan.
Cook the rice about 30-40 minutes on a very low heat, you can also use a hot plate.
When the water is absorbed or nearly, stir the rice well, and taste. When necessary add some more seasoning. You can put out the gas and the rice will stay warm for a long time; it also cooks a bit more.

You can easily jazz this dish up by putting in fresh herbs like thyme or oregano or you can add some cheese if you want to.
I keep it simple, but be creative!
