Crunchy chocolade-haver-boekweitcookies – crunchy chocolate oat and buckwheat cookies (GF-DF-V)



Hallo allemaal,

Vorige week was ik in Gent, de dochter van mijn vriendin had er een expositie. In een oude wasserij, onverwarmd, nat en koud dus. Gelukkig had ik op internet gelezen dat Madam Bakster in de buurt zat en daar heb ik heerlijk kunnen opwarmen onder het genot van een mooi glas thee en een glutenvrije reep.
Helaas gebruikt Madam Bakster geen glutenvrije haver, anders zou er nog veel meer keus zijn uit de taartjes die zij daar vers bakt. Uit haar boek, alle recepten 100% plantaardig, bakte ik mijn versie, want ze gebruikt vaak ook speltmeel, van haar kruimelige chocolade-havercookies.



Je hebt nodig:
1 lijnzaad ei (maal 1 el lijnzaad fijn en voeg 3 el water toe, laat een paar minuten staan zodat een slijmerig papje ontstaat)
63 g havervlokken, gemalen tot meel
5 g wijnsteenzuurbakpoeder
35 g rietsuiker
1 snuf zout
75 g kokosolie (halfvast)
1 tl vanille-extract
1 tl kaneel
50 g walnoten, grofgehakt
50 g chocolade, grofgehakt
15 g havervlokken
evt. 1-3 el water, als het deeg te droog blijkt

hoe maak ik ze:
Maak het lijnzaad ei en zet opzij.
Verwarm de oven voor op 180°C.

Meng havermeel, boekweitmeelmix, bakpoeder, rietsuiker en zout. Voeg de halfvaste kokosolie toe en kneed met de hand of keukenmachine tot de kokosolie goed is vermengd en geen klontjes meer bevat.
Voeg dan het lijnzaad ei, kaneel en vanille extract toe en kneed verder. Voeg eventueel 1 tot 3 eetlepels water toe om het deeg wat smeuïger te maken. Dit is zwaar werk!

Voeg dan gehakte walnoten en chocolade toe met de 15 g havervlokken. Kneed tot een stevig geheel. Vorm hieruit 12 balletjes, maak ze plat en leg op een met bakpapier beklede bakplaat. 

Bak de cookies in het midden van de oven, ongeveer 15-20 minuten, tot de randjes en onderkant goudbruin worden.

Laat ze afkoelen op een bakrekje. Ze zijn echt zalig en ik hou van dat lichte kokosaccent door het gebruik van eerste persing kokosolie.



Last week I visited Gent, to help out the daughter of my friend who had an exhibition in an old, abandoned laundry factory, without any heating. Cold and wet it was. Fortunately I read on the internet that Madam Bakster (something like Baking Lady) had opened a coffee bar nearby so I could warm up with a very nice cup of tea and a gluten-free bar. It’s a pity that Madam Bakster does not use gluten-free oatmeal so I could not taste one of her other sweet treats. But I bought her book, the recipes are 100% plant-based, and I adapted one of the recipes into these very tasty, crunchy chocolate chip oatmeal cookies.

You need:
1 flax egg (grind 1 tbsp of flax seeds fine, mix with 3 tbsp water, set aside for some minutes till it forms a slimy paste)
¾ cup oat flakes ground into flour
1 tsp baking powder
2 heaped tbsp of cane sugar
1 pinch of salt
¾ cup coconut oil, softened
1 tsp vanilla extract
1 tsp cinnamon
½ cup chopped walnuts
⅓ cup chopped dark chocolate
¼ cup oat flakes
1-3 tbsp of water, when the dough turns out too dry


 How to:
First make the flax egg and set aside.
Pre-heat the oven on 375 °F/180°C.

Mix oat flour, buckwheat flour mix, baking powder, cane sugar and salt. Add the softened coconut oil and start kneading till the coconut oil is well incorporated without any lumps.
Add the flax egg, vanilla extract and cinnamon and knead, by hand or machine, into a sturdy dough. This is hard work! 
When the dough stays too dry add 1-3 tablespoon(s) of water to the mixture.
Then add chopped walnuts and chocolate and the oat flakes and combine everything.

Make 12 small balls and flatten them out into nice round cookies and put them on a baking tray with baking paper.
Bake in the middle of the oven for about 15-20 minutes till the edges and bottom are colouring golden brown.


Let them cool on a baking rack. They are really delicious and I love the hint of coconut from the first pressing coconut oil.

buckwheat apple muffins (GF- SF- V)


On this really gorgeous sunny november friday I just got the impulse to start blogging again.
It was never on my mind that my summer break would last till now, but it just happened ;-)

First I went to Thailand with C. and we had such a great time with our old and new friends; we discovered some new upcoming areas in Bangkok, made a lot of pictures, ate the best food, since we now went to dinner with our Bangkok friends who know the best places to eat out. We went to the coastal area near the Birma border, which we visited as well. 
After coming back to Holland 2 of our best Thai friends came to Rotterdam and stayed with us for a week!! We had so much fun, it was their first time in Holland  and seeing your own country through the eyes of a visitor is so refreshing. We had a holiday too!!

By the way, I did a Thai vegan cooking class!! I will blog about that another time.




As you can see time went by (and Blogger is doing strange things again??)

For my health I did an elimination diet for 6 weeks to find out that potatoes are triggering my immune system and develop inflammation in my joints. It was not too hard, the diet, pure vegan for 4 weeks and after that introducing all foods again. It kept me quite occupied and I fell ill rather badly after introducing potatoes. But now I am feeling much better and I want to stick as much as possible to a vegan diet. I will eat an egg, some yoghurt and a piece of salmon from time to time, because I can feel rather weak and then I know that I need a little extra.

Since 2 years I am a member of a great yoga community on the internet and just this week I started sharing recipes there as well for the members. When you're interested you can check out on YouTube where Melissa West, my yoga teacher, shares weekly free yoga videos!!
I am really excited about this new adventure. It boosts my creativity and so I am back blogging and sharing with you again.

2 Weeks ago we did an at home yoga retreat in the weekend and I contributed with these tasty vegan muffins:




Buckwheat apple muffins (SF-GF-Vegan) (6-8)

dry ingredients:
3/4 cup buckwheat flour
1/2 cup almond flour
1 tsp tartaric acid baking powder
1 big tsp cinnamon
1/4 tsp sea salt

wet ingredients:
1 cup applesauce
1 large mashed banana
2 tbsp ground flax seeds in 2 tbsp water, let sit for 2 minutes
2 tbsp agave syrup or honey orother sweetener,or leave it out completely
2 tbsp extra virgin olive oil or melted coconut oil
1 tsp vanilla extract

1/4 cup chopped walnuts

Pre-heat your oven on 180 degrees C. Line a muffin pan with cupcake liners. 

In a big bowl mix the dry ingredients. Set aside.

In a smaller bowl mix the wet ingredients. If using coconut oil, softly melt the oil with the cinnamon, before adding to the applesauce and banana mixture.

Scoop the wet into the dry ingredients and mix quickly and well with your spoon.
Spoon the batter/dough into the prepared muffin pan, sprinkle each one with some chopped walnuts and bake these delicious muffins into the middle of the oven for about 25 minutes. Let them cool before you remove them from the pan.



boekweit appel muffins (SF-GF-V)

 droge ingrediënten:
3/4 cup boekweitmeel
1/2 cup amandelmeel
1 tl wijnsteenzuur bakpoeder
1 flinke tl kaneel
1/4 tl zeezout

natte ingrediënten:
1 cup appelmoes, vers gemaakt
1 grote rijpe banaan, fijngeprakt
2 el gemalen lijnzaad, in 2 el water 2 minuten geweld
2 el agave siroop, honing of andere zoetmaker, kan ook weggelaten worden!!
2 el extra virgin olijfolie
1 tl vanille extract

1/4 cup gehakte walnoten

Verwarm de oven voor op 180 graden C.
Bekleed een muffin pan met papieren vormpjes.

Meng alle droge ingrediënten in een grote kom. Zet even apart.

Meng in een kleinere kom de natte ingrediënten goed door elkaar en giet deze bij de droge ingrediënten.
roer snel door elkaar en schep een flinke eetlepel in elke muffin vorm.
Strooi wat gehakte walnoten op elke muffin en bak deze heerlijke herfstmuffins in het midden van de voorverwarmde oven ongeveer 25 minuten. Laat afkoelen voordat je ze uit de vorm haalt.
Geniet ervan en laat me horen wat je ervan vindt!

madeleines (GF)

What can I say?
Make them and try them, they are delicious.

I bought the madeleine mold in France (where else!) in a wowee hypermarché.
I love them, it’s a village on it’s own; they have literally everything, from bread to bowling tools, fresh fish to all kinds of canned fish and other goodies, the “latest” fashion items, shoes, underwear, books, great wines, organic food, local products, glass and tableware etc. You can dine there, let your shoes repair, do your banking business, get the cheapest fuel.
After shopping there half of your day is gone and you’re dead tired.
There is some strange (no day)light and aircon atmosphere and it’s so big.
But, you can enjoy yourself for quite a time, and spent your money, Pff.

Back to baking business.
I read a lot about making madeleines (Yes, also Proust) and tried some recipes. I still remember the madeleines I ate when I was 10 years old in a very small village bakery in the Dordogne. They were heaven.

These beauties are no remake, because they are gluten free and I decided to use buckwheat flour and make them far less sweet than they are usually. The buckwheat gives them more bite and a nuttiness I really like.
I hope you do too.


Madeleines (15 small ones)

75 g buckwheat flour
25 g fine almond flour
¼ tsp cinnamon
½ tsp acid tartar baking powder
pinch of salt
1 tbsp candied orange peel, very finely chopped
50 g cane sugar,ground into icing sugar
2 organic eggs
1 tbsp honey
seed of half a vanilla bean
50 g organic butter

Melt the butter first and set aside.

Mix the 2 flours with the cinnamon, baking powder and salt in a bowl.

With a hand mixer mix the 2 eggs with the icing sugar for some minutes.
Add the honey and vanilla seed and mix again for some minutes.

Sift in the flour mixture in 2-3 parts and fold it in with a spatula.
Add the orange peel and fold that in too.
Lastly stir in the butter and fold it in gently.

Cover the bowl with cling film and let the dough rest for at least 2 hours in the fridge. You can also make the dough in the evening and bake the madeleines first thing in the morning.

Before you start baking the madeleines, pre-heat the oven on 220˚C.

Grease the madeleine mold and scoop the dough in, not more than ¾ full.
Bake the first batch in the hot oven for 6 minutes, then lower the heat to 180˚C and bake them off for another 5 minutes.

Remove from the oven and cool them on a wire rack. Bake the second batch.

Eat them as they are, or with some Greek yoghurt and jam or strawberry compote I made.



Madeleines (15 kleintjes)

75 g boekweitmeel
25 g zeer fijn gemalen amandelmeel
¼ tl kaneel
½ tl wijnsteenzuur bakpoeder
snufje zout
1 el sinaasappelsnippers, fijngehakt
50 g rietsuiker, tot poedersuiker gemalen
2 biologische eieren
1 el honing
zaad van ½ vanilleboon
50 g biologische boter


Smelt eerst de boter en zet deze apart.

Meng de 2 meelsoorten met kaneel, bakpoeder en zout.

Mix de 2 eieren met een handmixer samen met de poederrietsuiker een aantal minuten tot een dik, schuimig mengsel. Voeg de honing en het vanillezaad toe en mix nog een paar minuten tot alles goed gemengd is.

Zeef steeds wat van het meelmengsel erbij en spatel het door het eimengsel.
Voeg de sinassnippers toe en spatel er door.
Als laatste spatel je de afgekoelde boter er voorzichtig door.

Je madeleine deeg is nu klaar.
Bedek de kom met huishoudfolie en laat minstens 2 uur in de koelkast rusten. Je kunt het deeg ook ‘s avonds maken en de madeleines ’s morgensvroeg bakken!

Voordat je de madeleines gaat bakken verhit je de oven voor op 220˚ C.

Beboter de madeleinevorm en vul de vormpjes ongeveer voor driekwart.
Bak de madeleines eerst 6 minuten in de hete oven, verlaag dan de oventemperatuur naar 180˚ C en bak ze nog 5 minuutjes.

Laat ze afkoelen op een rekje en eet ze zoals ze zijn of met dikke yoghurt of zure room en zelfgemaakte jam.
Ik maakte deze aardbeiencompote nog van de laatste heerlijke Zuid-Hollandse aardbeien van mijn speciale marktgroentevrouw!!

casse-dents or croquants aux amandes (GF-DF)


We had a wonderful time in the Provence this summer.
It was a big feast of colors, odours, nature vs. (old) culture, love and peace, tastes, visits and meetings with new and old friends.
After, I think, 25 years we came back to this beautiful, vibrating place in France.

It’s full of farmer’ markets and local producers are selling their beautiful vegetables, chèvres, honey, wines, olives and olive oil everywhere. A lot of the produce is organically grown.
I had totally forgotten the true taste of a sun ripen tomato and peaches and apricots straight from the tree.

The pace in the Provence is slow, it’s slow cooking, slow dining, slow living, slow enjoying, slow petanque, slow shopping, slow walking; the sun is there almost every day, the mountains, the old landscape, the houses, villages, hameaux, the flowers, the fruits all had the time to grow.
I love it!! I want to be there more often and we will!

The only BUT for a celiac patient are the patisseries, they are all gorgeous, but only to look at for me, there are no petits gateaux pour moi!
When I had my birthday I found glutenfree meringues and I made these beauties with fresh berries and crème fraîche, mmm.


Today I made gluten-free croquants aux amandes or casse-dents (break your teeth’s! So beware).
They are really crunchy, partly because there is no use of butter or oil, only the natural fats from the almonds are in.

Casse-Dents or Croquantes aux Amandes (GF – DF)

100 g almonds
200 g rice flour (I use Dove’s Farm)
75 g raw cane sugar
pinch of salt
1 tbs orange zest or candied orange peel
2 organic eggs
2 tbs orange blossom water

Pre-heat the oven on 190˚ C

Roast the almonds with the skin on in a casserole with a thick bottom about 10 minutes. Set them aside and let them cool. Then chop them roughly with a big knife.

Mix the dry ingredients, make a little well in the middle and put the eggs in with the 2 tablespoons of orange blossom water.
Mix with a fork and then throw in the chopped almonds and knead with one hand.
Form 2 logs, flatten them with your hands and lay them on a piece of baking paper on the baking tray.
Bake 10 minutes in the oven, then turn them and bake another 10 minutes.

Take them out of the oven, let them cool 5 minutes and then slice them with a very sharp knife. Place them back in the oven for another 10 minutes, let them cool completely.
Enjoy in the morning with a nice café crème or in the afternoon with an infusion of verveine. They are also great to take with you on a brisk walk! Enjoy!!

boterkoek - buttercake(GF - SF)

Before I physically go on holiday I promised to put this recipe on the blog.
My 15 year old loves boterkoek/buttercake and whenever my mother comes over she brings one especially for him. I never tried to make a gluten-free version, till now.
So, together with my son we made this lovely boterkoek and, although it's a bit crumbly, the taste is heavenly and the texture is airy and brittle.

Buttercake (GF – SF)
Special mold 18cm Ø

75 g brown sugar or 75 g brown rice syrup
70 g room temperature butter
2 egg yolks
pinch of salt
vanilla seed from 1 vanilla pod
140 g fine rice flour

Pre-heat the oven on 175˚ C.
Prepare your baking mold.
With a handmixer mix the butter, sugar/rice syrup, eggyolks, salt and vanilla well.
Stir in the rice flour and knead quickly with a cool hand.
Scoop the dough in the mold and make it smooth with your hand.
Bake the buttercake in 30 minutes. Let it cool completely before removing from the mold.



Boterkoek (GF - SF)
bron: Glutenvrij bakken, Rinie ten Have-Wolterinck
Speciale boterkoekvorm 18cmØ

75 g lichtbruine basterdsuiker of 75 g rijststroop
70 g zachte roomboter
2 eidooiers
snufje zout
vanillezaad uit 1 peul
140 g fijne rijstmeel

Verwarm de oven voor op 175˚ C.
Vet de vorm in en/of bekleed met bakpapier.
Mix met een handmixer de boter, basterdsuiker of rijststroop, eidooiers, zout en vanille goed door elkaar. Roer het rijstmeel erdoor en kneed snel met koele hand.
Schep het deeg in de vorm en druk gelijkmatig uit met je hand.
Bak de boterkoek 30 minuten en laat helemaal afkoelen voor je hem uit de vorm verwijdert.

Orange scented amaretti – sinaasappelbloesem amaretti(GF- DF)


I was craving for a cookie today, I definitely needed something sweet.
Something quick, something tasty.
A cookie that lasts when I take it out, no crumbly thing but crunchy and firm.
I made these wonderful gluten-free amaretti.
Just try it and convince yourself.

Orange scented amaretti (14 pcs)
printversion

100 g almond flour
100 g cane sugar
1 egg white
1 tbsp candied orange peel
1 tbsp orange blossom water
14 whole almonds

Pre-heat the oven on 200˚ C and cover a baking tray with some parchment paper.

Put the cane sugar in a small food processor and blend it till it’s less coarse, about 1 minute.
Add almond meal and orange peel and blend everything together for another 15 seconds.

In a big bowl whisk the egg white till it begins to form white foam, not totally till it peaks, let’s say about half way.

Stir in the dry ingredients and mix till a dough forms.

“Wash” your hands in orange blossom water and roll small balls from the dough which you put on the tray. Depending of the size you can make 10 – 20 amaretti.
Push in the whole almonds and bake the amaretti for about 10-12 minutes till golden brown.


Sinaasappelbloesem amaretti (14 pcs)

100 g amandelmeel
100 g rietsuiker
1 eiwit
1 el geconfijte sinaasappelsnippers
1 el sinaasappelbloesem water
14 hele amandelen

Verwarm de oven voor op 200˚ C en bedek een bakplaat met bakpapier.

Doe de rietsuiker in een keukenmachine en maal tot het een stuk fijner is, ongeveer 1 minuut.
Voeg het amandelmeel toe met de geconfijte sinaasappelschil en maal alles nog 15 seconden samen.

Klop het eiwit los in een grote kom tot het flink schuimig wordt, zo halverwege tussen vloeibaar en compleet stijf.

Roer de droge ingrediënten erdoor tot er een deeg ontstaat.
“Was” je handen in het oranjebloesem water en vorm balletjes van het deeg die je op de bakplaat legt. Afhankelijk van de grootte kun je 10 tot 20 amaretti maken.
Druk een amandel in ieder bolletje en bak de amaretti in 10-12 minuten goudbruin.

The ultimate cookie (for now!) GF-DF-SF

Als ik geen koekjes meer heb dan word ik onrustig.
Ik wil per se een koekje bij de thee. Maar vandaag was mijn amandelmeel op en ook mijn kokosolie, dus eerst naar de stad voor een rondje fietsshoppen, gelukkig schijnt de zon en voelt het fris en gezond.

Al heel lang heb ik mijn puber beloofd om koekjes te ontwikkelen die je kunt uitsteken met een cookiecutter. Hij had deze namelijk voor me meegenomen uit New York, afgelopen herfst. Jee, zo lang geleden al weer!

Glutenvrije koekjes hebben toch echt de neiging om uit elkaar te vallen, dus bleef het bij beloven en nadenken. Vorige week heb ik de stap genomen, o.k., nu ga ik ze maken! We hebben ze meteen opgegeten, dus vandaag opnieuw aan de slag.

Deze koekjes zijn echt zó simpel, maar zó lekker!
Ik heb ze gedoopt in chocolade, maar ook zonder zijn ze “gewoon” lekker.
Knapperig en zeer smaakvol.

The ultimate cookie (1 bakplaat en nog wat)

150 g amandelmeel (zeer fijn gemalen)
100 g kokosmeel
½ tl zeezout
⅛ tl vanillezaad
¼ cup agavesiroop
¼ cup + 2 el gesmolten kokosolie

Verwarm de oven voor op 180˚C.

Meng in een kom de 2 meelsoorten goed door elkaar met het zeezout en het vanillezaad.
Maak een kuiltje in het midden en voeg de agavesiroop en de kokosolie toe, roer eerst en kneed dan tot een samenhangend deeg. Het is een klein beetje korrelig, dat geeft niet. Druk aan tot een deegbal en laat het 30 minuten rusten.

Rol het deeg uit op een vel bakpapier. Leg op het deeg een vel huishoudfolie.
Maak de deegplak zo dun mogelijk en steek met een cookiecutter koekjes uit of snijd rechthoekjes met een pizzasnijder.

Leg de cookies op een bakplaat die je bedekt met bakpapier en bak ze in het midden van de oven 5-7 minuten tot de randjes gaan bruinen. Blijf erbij want ze verbranden snel!!




When I don’t have any cookies left I become restless.
I really need a cookie with my tea.
But today I was out of almond meal and coconut oil, so I first had to go on my bike in town to fetch everything. Luckily the sun was shining and it was feeling fresh and healthy outside.

For a long time I promised my adolescent son to develop cookies which you can cut out with a cookie cutter. He brought me these ones from New York last fall. Wow, how time flies!

Gluten free cookies have the tendency to fall apart easily, so for a long time I kept on promising and thinking about it. Last week I took the step and I made these wonderful cookies. We ate them all, so today I made another batch.

These cookies are dead simple to make and gorgeous!
I dipped some of them in melted chocolate, but “plain” they are “plainly” good.
Crunchy and very tasteful.

The ultimate cookie ( 1 baking tray and some more)

150 g almond flour (finely grounded)
100 g coconut flour
½ tsp sea salt
⅛ tsp vanilla pod seeds
¼ cup agave syrup
¼ cup + 2 tbsp coconut oil Preheat the oven on 180˚C.

Mix the 2 flours in a bowl together with the sea salt and the vanilla seeds.
Make a hole in the middle and pour in the agave syrup and coconut oil, stir in first and then knead it by hand till the dough comes together. It will stay a bit crumbly, no problem, just press it into a ball of dough and let it rest for 30 minutes.

Roll out the dough on a sheet of baking paper. Put a sheet of cling foil on top of the dough.
Make the dough as thin as you can, ¼ to ⅛ inch, and cut the cookies with a cookie cutter or just cut rectangles with a pizza cutter!

Put the cookies on a baking tray covered with baking paper and bake them in the middle of the oven about 5-7 minutes until the edges begin to brown. Stay with them, because they burn easily!

amandel-cranberry cookie – almond cranberry cookie (GF – DF – SF-V)

Deze cookies zijn snel te bereiden, ze zijn overheerlijk en ook nog eens gezond.
Wat wil je nog meer zo aan het begin van een nieuw jaar. Nog meer cookies? Nou, ik ben er mee bezig. Koekjes met minder zoet en vet en toch superlekker.
Want ik kan niet zonder een koekje bij de thee, liefst 3 of 4, maar voorlopig houd ik het bij 1 of soms toch 2.

amandel-cranberrie cookies (10 stuks)

100g amandelmeel
25g kokosmeel (Aman Prana)
¼ tl zeezout
¼ tl vanillepoeder
1 tl wijnsteenzuurbakpoeder
60 ml zonnebloemolie
60 ml rijststroop
35 g gedroogde cranberry’s, grofgehakt
35 g amandelen, in de lengte in schilfers gehakt

Verwarm de oven voor op 175˚ C.

Meng de meelsoorten samen met het zout, vanillepoeder en de wijnsteenzuurbakpoeder.
Meng de olie en de rijststroop en giet het bij de droge ingrediënten.
Roer alles nogmaals door elkaar. Voeg dan de cranberries en gehakte amandelen toe, meng goed.
Kneed dan snel met koele hand en vorm 10 koekjes, die je op een bakplaat bedekt met bakpapier legt. Bak de koekjes goudbruin in 10-15 minuten, afhankelijk van je oven. Dus let goed op dat ze niet te bruin worden, want dan worden ze bitter.





These cookies are very quickly to make, they are scrumptious and they are healthy, any way I think so. So, what else do you need at this time of year. More cookies? Well, I’m busy with it. Cookies with less sweet en fat and still delicious.
Because what’s life without cookies, I can’t do without a cookie with my tea. I prefer 3 or 4, but as yet I stick to 1 or maybe 2.

Almond cranberry cookie (10 pcs)

100 g almond meal
25 g coconut flour
¼ tsp sea salt
¼ tsp vanilla powder
1 tsp tartaric acid baking powder
60 ml sunflower oil
60 ml rice syrup
35 g dried cranberries, coarsely chopped
35 g almonds, slivered lengthwise

Preheat your oven on 175˚ C or 350 F.

Mix the dry ingredients in a bowl.
Mix the oil and rice syrup in another and add to the dry ingredients.
Mix everything well. Then add the chopped cranberries and almonds and knead everything quickly with a cool hand.
Form 10 cookies and place them on a baking tray covered with baking paper.
Bake the cookies in the middle of the oven for about 10-15 minutes depending on your oven.
Pay attention at the end of the baking time! They mustn’t brown too much, because they will taste bitter.
