Almond cinnamon buns – amandel-kaneelbroodjes (GF-DF-SF)

This is such a weird spring, I still have the feeling that it’s January or February.
My taste buds were already in the mood for strawberries, fresh green spring leaves, asparagus, new potatoes and young herbs from the garden. But for me it’s too cold now, too dark and my energy level goes down again, as if my body is preparing for another winter period. I want cinnamon, apple, sauerkraut, pumpkin, hearty soups and stews. I want hot tea and flaming wood fires.
But no, it’s the month of May, the trees are blooming, everywhere green leaves are appearing, there are ducklings in the canal in front of my house and the young rabbits are chasing each other in the bushes of the dike alongside.

I decided to make something according to my autumnal taste: cinnamon buns.

I already have made several recipes, also on this blog, but after trying and studying on the internet I created this really lovely, no sugar added, soft and appealing cinnamon buns.
Even the 16 year old likes it, and that means something!

Almond cinnamon buns (10 pcs)

Dough:
350 g almond flour, super fine ground
2-4 tbsp coconut flour
½ tsp sea salt
½ tsp tartaric acid baking powder
60 ml coconut oil, melted
2 tbsp honey
2 organic eggs
1 tbsp ground flax seeds in 2 tbsp water

Filling:
2-4 tbsp honey
75g chopped walnuts
75g chopped raisins
2 tbsp ground cinnamon

Pre heat the oven on 180 ˚C.
Put ready 2 sheets of 30x40cm cling film
Prepare a baking tray with baking paper.

In a big bowl mix the almond flour well with salt and baking powder.

The coconut flour I only use in the end, depending on the wetness of the dough. I get my eggs from a local producer and they are always different in size.

In a smaller bowl you mix the coconut oil with  honey, flax seed mixture and the 2 eggs till it’s a homogenous mix. This you stir into the dry ingredients and mix everything well with a spoon.

As I said, at this time you decide if you add some coconut flour, 1 tablespoon at a time. The dough will stay sticky, but not too. So no more than 4 tablespoons are needed, otherwise the cinnamon buns will turn out dry. I mix it in by hand, then I can feel the mixture changing.

Put 1 sheet of cling film on your workbench and put the dough on top of it. Press it down a little by hand. Then put the other sheet on top of it and roll the dough out in a rectangle of 25x35cm. Remove the top sheet of cling film and drizzle the honey on the dough. Then sprinkle the nuts, raisins and cinnamon on the dough. With the first layer of cling film you can roll up the dough in a nice sausage shape. Cut with a sharp knife into 10 disks and put them, with some space between them, on the baking tray and bake the almond cinnamon buns 15-20 minutes in the oven till they are golden brown. Check from time to time that the buns are not getting too dark.
Let them cool for at least 10 minutes on the tray before transferring them to a wire rack.

Amandel-kaneelbroodjes (10 stuks)

Deeg:
350 g fijngemalen amandelmeel
2-4 el kokosmeel
½ tl zeezout
½ tl wijnsteenzuurbakpoeder
60 ml kokosolie, gesmolten
2 el honing
2 biologische eieren
1 el gemalen lijnzaad in 2 el water

Vulling:
2-4 el honing
75g gehakte walnoten
75 g gehakte rozijnen

Frittata from scratch (GF-SF)

Leftovers, we all have them from time to time .
No problem when you keep them cool and eat them for example next day for lunch.
You can also be a little more creative and instead of heating something up, whipping it up into a totally new dish, from scratch.
I had a leftover cooked potato, some steamed broccoli, 4 cherry tomatoes and a stalk of celery. In my pantry there are always onions, garlic and eggs, and I have herbs on my balcony, so in half an hour I made this tasty frittata.

Frittata from scratch (2-4 pers)

1 cooked potato, in cubes
1 onion, finely sliced
1-2 cloves of garlic, finely sliced
some steamed broccoli, cut roughly
4 cherry tomatoes, cut in 4
1 stalk of celery, finely diced
4 organic eggs, whisked with a tablespoon of water
fresh herbs, cut roughly
1 handful of grated Parmesan
olive oil
pepper and salt

In a frying pan heat some olive oil and fry the onion, garlic and celery cubes softly with a pinch of salt for 8 minutes. Stir occasionally.
Add potato cubes and broccoli and bake together for another 4 minutes, then add tomatoes and stir them in and let them soften a little.
In the meantime break the eggs in a bowl, pour in a dash of cold water, salt, pepper, fresh herbs and some grated Parmesan, mix well with a fork.
Pour the egg mixture in the frying pan and on your lowest heat let the frittata bake for about 10-15 minutes, depending on your gas flame and the size of the pan.
I pop the frittata in the oven for the last 5 minutes on 180 ˚C to get that brown finish. But you can also put a lid on top of the pan and let the frittata cook on the stove.
Serve with some salad and you have a lovely lunch dish.

Frittata from scratch (2-4 pers)

1 gekookte aardappel, in blokjes
1 ui, fijngehakt
1-2 tenen knoflook, fijngehakt
1 stengel bleekselderij, in kleine blokjes
wat gestoomde broccoli, grof gehakt
4 cherry tomaatjes, in 4
4 bio eieren, losgeklopt met een eetlepel water
verse kruiden, grofgehakt
1 handje geraspte Parmezaan
olijfolie

Date-almond balls – dadel-amandel balletjes (GF-SF-DF-V)

It’s always good to have some snacks with you, when you’re a celiac on the road.
Here in Holland there is not so much to buy when you’re doing a day hike in nature or even in town visiting a museum.
Sometimes you can buy a bar or something like that, but they are packed with sweeteners, natural or not and pretty expensive too.
These naturally gluten free and healthy date-almond balls I made a while ago are just the right snack for this in-between-moments when your belly starts rumbling and you are not ready for lunch or dinner yet.
Furthermore they are delicious  and look very fancy on a tea party as well!!

recipe adapted from Anja's Food for Thought

Date almond balls (20 pcs)

50 g almonds
40 g pistachios
40 g hazelnuts
2 tbsp dried cranberries
50 g pitted dates
15 g shredded coconut
1 tbsp cocoa powder
1 tbsp maple syrup or honey
1 tbsp coconut oil
1 tsp vanilla extract

Soak the nuts for an hour in a bowl of water, then drain them. It is said to be more healthy, but the main thing is that they become juicy.

First grind the nuts roughly and then put the rest of the ingredients in the blender and blend till it forms a stiff dough. You will have to scrape the sides with a spatula all the time in between pulsing.
Put the dough on a plate and roll into nice balls.
For this bonbon/truffle look just roll them in some shredded coconut, cocoa powder, very finely chopped nuts or chocolate. MMM, enjoy!

Dadel-amandel balletjes (20 stuks)

50 g amandelen
40 g gepelde pistachios
40 g hele hazelnoten
2 el cranberries
50 g ontpitte dadels
15 g geraspte kokos
1 el cacaopoeder
1 el maple syrup
1 el kokosolie
1 tl vanille extract

MMM, geniet!

Socca (GF-DF-SF-V)

The funny thing about the changing of the seasons is that it’s also a change in my appetite.
In winter I can crave for hearty stews with pumpkin and sauerkraut with boiled potatoes and I love the warming spices in Indian food. But when spring has arrived I long for other flavors. I want bitter greens, citrus fruits, I eat a salads now and then, although it’s a little too cold for me yet and I turn to Mediterranean food, I want the sun on my plate.

Every season there are some dishes coming back in my kitchen again and again.
Socca is one of them. It’s a traditional dish from Nice, made from chickpea flour and really easy to make. You can eat it as a side dish, a snack or a flat bread, you can even turn the socca into a pizza when you top it with some roasted tomatoes, onions and olives.
Originally socca is made in a flat copper pan which is put in a boiling hot pizza oven. I don’t have this equipment, so I make it in my oven on the highest heat in a cast iron skillet. It works and it’s delicious.

Socca

125 g chickpea flour
350 ml water
a pinch of seasalt
freshly ground black pepper
 2 tbsp olive oil

cast iron skillet, 23cmØ

sift the flour in a bowl and make a well in the middle. Pour in the water bit by bit and stir together to a thin batter. Stir vigorously to stir out the lumps. Add salt and pepper and stir in the olive oil. Let it rest for half an hour.

Pre heat the oven on highest heat and oil the skillet lightly with some olive oil. Put the skillet in the hot oven for some minutes and when it’s hot take it out (take care it will be real hot!). Pour in half of the socca batter and put it back into the oven. Bake the socca till it’s dry and golden brown . It will bubble and brown on the edges. Good! Socca is a rough type not a fine crepe. Take it out of the skillet and repeat the proces.
Cut it into pieces and maybe serve with some extra sea salt and pepper. Eat as you like it. With some roasted tomatoes and some goat’s cheese or just as it is. Close your eyes and imagine you’re in the Provence. The taste is great!!

Socca

125 g kikkererwtenmeel
350 ml water

celeriac soup with a hazelnut picada - knolselderijsoep met een hazelnoot picada (GF-DF-SF-V)

Last week I made this soup for some friends and we all loved it!
It’s a heart warming soup for a cold day, the hazelnut picada gives it a nice crunch and tangy bite.
The word picada is not precise, the Catalan picada is a similar mixture, made in a mortar, but added to a dish at the end of the cooking time as a binder and some sort of secret touch. But I like the name and the word just popped up in my mind when I was thinking about it and eventually made it. What’s in a name, anyway!
Just make it and see what happens when you take this first bite!

Celeriac soup (4 pers)

1 celeriac, medium, peeled and in 2 cm chunks
1 onion, chopped
1 clove of garlic, chopped
12 stalks of parsley, chopped finely
1 big leek, in small rings
4 medium potatoes, peeled and in 2 cm chunks
1 l vegetable stock or boiling water

In a soup pan pour some olive oil and sweat the onion, garlic and parsley stalks with a pinch of salt for 5 minutes.
Add the leeks, stir them in and bake for another 3 minutes.
Add potatoes and celeriac, stir them in too for another 5 minutes with the lid on.
Then add water or stock and bring to the boil. Simmer till the veggies are cooked.
Add some more salt and pepper to your taste, blend the soup and serve with this great picada.

Hazelnut picada

60 g brown hazelnuts
zest and juice of an organic lemon
olive oil
pepper and salt
1 big tbsp fresh mint, chopped

Roast the hazelnuts in a dry, heavy frying pan. Let them cool.
Crush the hazelnuts roughly  in the mortar, add lemon zest, freshly ground pepper, salt, 1-2 tablespoons of lemon juice and 1-2 tablespoons of olive oil. Grind together, but not too fine, the hazelnut chunks must stay big enough for a good crunch. Stir in the mint, don’t crush it, it will become bitter!
Put a big spoonful on top of your celeriac soup.
Enjoy!

Knolselderijsoep (4 pers)

1ui, fijngehakt
1 knoflookteen, fijngehakt
12 steeltjes peterselie, fijngehakt
1 grote prei, in ringen
1 l groentebouillon of kokend water

First of all I want to thank Roeb for my lovely new banner, I love how he has the patience to transform one of my India pictures into this new feature, I don't ;-)
(By the way, Roeb is my creative soulmate!!)

Oeufs en cocotte, it sounds pretty and quite fancy!
Literally it means eggs in a dish or eitjes in een pannetje, not half as nice as en cocotte, it sounds a bit frivolous, like a summer dress in a breeze.
Although it’s somewhat grey today we already had some really nice spring days, on which it was possible to wear skirts and heels, for a few hours, but ok!

I love springtime, everything is growing so fast, you almost can see the leaves unwrapping. It’s a time of all our senses, it smells good, the birds are starting to whistle already in the early daylight, the new nettles are very, very prickly (ow!) , all these shades of baby green are a joy for the eye and the taste of all these new leafy greens is so strong and poignant and what feels better than the first rays of sunlight on your wintery skin!
It’s the time of rejuvenation, of leaving behind old skin, and starting afresh, a new life, a new beginning, light!

This dish perfectly fits in the idea of a light and healthy starter.
Eggs are full of protein, vitamins A, B11, B12, E and D and contain phosphorus, iron and selenium.
Although they contain cholesterol, there is now a lot of evidence that it’s not the cholesterol in eggs that increases your cholesterol, but it’s the intake of saturated fats and trans-fats from all kinds of junk food and processed foods.

I am not going to make propaganda for eating more eggs but I do want to insist on using Organic Eggs. In short: they taste better because the chickens get better food and have a much better life; did you ever see a battery cage?

O.k.  let’s go on to the recipe:

Oeufs en cocotte (4 pers)

4 organic eggs
4 tbsp crème fraîche
4 tbsp grated goat’s cheese
4 tbsp white wine (optional)
2 gluten free crackers or slices of bread, crumbled
Butter
2 tbsp of freshly chopped herbs, like cress, chives, chervil, parsley etc.
4 ramekins

Pre-heat the oven on 180 ˚C.
Put on the kettle for boiling water.

Butter the ramekins very well.
Break an egg in every one.
In a bowl mix the crème fraîche, cheese and white wine with some salt and pepper and divide it over the eggs.
Divide the cracker- or breadcrumbs over the four eggs and some small knobs of butter.

Put the ramekins in an oven tray and pour in the boiling water gently till halfway of the ramekins.
Put the oven tray carefully in the middle of the oven and bake the eggs about 20 minutes, till they feel firm on the touch.
Sprinkle the herbs on top and serve!
Happy eggs!

Oeufs en cocotte (4 pers)

4 biologische eitjes
4 el crème fraîche
4 el geraspte pittige geitenkaas
4 el witte wijn (kan je weglaten)
2 glutenvrije crackers of sneetjes brood, verkruimeld
Boter
2 el versgehakte kruiden als bieslook, tuinkers, kervel, peterselie, etc
4 ramequins
